Welcome to our beautiful city and to the fourth edition of the second season of “The Sibenik Times”. It’s a big week for the Sibenik County with plenty of things to do and see. A week of events in which we can enjoy not only the tastes and aromas of cuisines but also the sights and sounds of brass bands and processions. Firstly the town of Skradin is hosting an Eco Fair in which naturally based products will be on offer to try and buy. The event will last for two days from the 1st to the 2nd of May and after the previous years it should prove to be a big hit. I personally am a fan of naturally grown and produced foods and drinks and avoid GM enhanced foods like the plague. The second, and by no means less important event, is the Day of the City of Vodice. Although this special day for the city is only on one day the program is full and will last a full week. City Days are very important in Croatia and are greatly respected and always pull big crowds. The city is Vodice is one of the most picturesque not only in the Sibenik County but also on the Dalmatian coast. If you have time to catch up with one of the events whilst in the area I would strongly recommend it, if only to use it as an excuse to visit Vodice. With all these events and happenings I’m keeping my fingers tightly crossed that the weather doesn’t let us down. If we are to believe what the forecasters tell us, and I don’t, then we’re in for a mixed week. However my optimistic side tells me that the sun will shine non-stop. «

TOURIST SEASON OFF TO A SUCCESSFUL START More than 60,000 tourists have spent their Eastern holidays on the Adriatic coast, as many as during the best past Croatian tourism seasons. It was also ten per cent more than expected, according to the daily Slobodna Dalmacija. Istria welcomed 30,000, and Split-Dalmatian county 6,500, tourists. Two hundred hotels were open on the Adriatic coast. According to the Zadar tourist board, the Zadar area was visited by 5,000 to 6,000 tourists. Zadar tourist board head Zvonko Supe said today (Tues): "This was the best Easter since the end of the war. It appears the season will be good despite many negative prognoses. We are pleased that so many tourists from Austria, Germany, Slovenia, Spain and Hungary were here this year. Also, thanks to Ryanair, we have had 450 guests from Scandinavian during the last three days."
Supe added that many Croats had also visited Zadar this year. With 3,500 passengers thus far in April, Zadar airport has had double the number compared to the same month last year, according to the 057info.hr website. Most passengers arrived on Ryanair from London, Edinburgh, Dublin, and Stockholm and on Germanwings from Cologne and Stuttgart. In the last three days, Split airport has seen the arrival and departure of 6,000 tourists, of whom 4,500 were foreigners. Twenty per cent of the hotels on the coast have reported better results than last year. According to the Dubrovnik tourist board, around 5,000 guests spent their Easter holidays in the Dubrovnik area, an increase of 30 per cent compared to last year. Most guests were from Spain, France, Great Britain, Italy and Japan, but there were also many Croats.
CROATIA MULLS SUNDAY OPENING HOURS The Croatian government is considering proposals to allow retailers to open on Sundays, it has been reported. Currently, retailers in the popular Adriatic destination can only sell on a Sunday during summer, when most tourists visit the country, the Croatian Times reported. But pressure from several towns in the Balkan nation and the Croatian Chambers of Trades and
Crafts could lead to extended hours all year round. Referencing an article in Poslovni Dnevik, the Croatian Times claims that Prime Minister Ivo Sanader is close to reversing the regulation, which was initially introduced in January of this year. Regardless of shop opening hours, Croatia has reportedly attracted 60,000 tourists already in 2009, according to statistics published by Slobodna Dalmacija.

CROATIAN ISLANDS VOTED AS THE MOST BEAUTIFUL IN THE WORLD The readers of the Spanish issue of the Conde Nast Traveler magazine has awarded the first prize to the "islands of the Croatian Adriatic" in the category of the most beautiful islands in the world. Readers of the magazine in voted in fifteen categories, for the best city hotel, best resort, best wellness-central, the best destination, beautiful city, beautiful island, the best airli-
ne company and others. In the strong competition from the Greek islands, Corsica, Puerto Rica and Mauritius, the most beautiful islands in the world were awarded to "the islands of the Croatian Adriatic." Interestingly, the readers couldn’t decide which island of the many Croatian islands is the most beautiful. Hence they awarded the prize to them all.
The Croatian Government adopted a strategy for the promotion of nautical tourism over the next ten years, according to which no more than 15,000 berths would be built during that period, as opposed to 33,000 as initially planned by regional authorities. The strategy specifies 15 top locations, which are: Rovinj, Pula - St. Katharine, Rijeka - Porto Baros, Novalja, Pakostane, Zadar, Sibenik - Mandalina, Dugi Rat, Split - Znjan, Marina, Vis, Dubrovnik - Gruz, Slano, Orebic and Vela Luka. Over the next ten years the Croatian Government estimates and plans to construct 5 thousand new berths in existing ports and marinas; 5 thousand berths will be built in new locations along the Croatian coast and islands, as well as 5 thousand sites for the accommodation of vessels on land, i.e. dry docks. Further plans include the building of marinas for mega-yachts close to airports and large cities where currently the already existing infrastructure is not able to accommodate large vessels. All the mentioned steps are expected to secure growth in the nautical tourism in Croatia during the next ten years at estimated rate of 10 percent. Croatian Adriatic is one of the leading nautical destinations on the world and the Croatian Government is taking steps to secure that position.

THE FIRST SOLAR-POWER PLANT WILL BE BUILT IN SIBENIK The first Croatian solar-power plant will be built in Promina municipality, northeast of Tribunj, in Sibenik-Knin county. The municipality’s urban plan reserves around 250 hectares of land for the power plant, the daily Jutarnji list has reported. If the local government agrees, the first solarpower plant will be build by the Zagreb Nexus investment fund. Nexus representatives Miha Jager and Marko Mahek said today (Tues) the solar-power plant would have a capacity of 60 MW, 10 MW
more than the first and only European solar-power plant in Spain. The plant, construction of which will take two years and employ 300 workers, will cost around 80 million Euros. Once finished, the plant will employ almost 100 workers, 80 per cent of whom will be specialists. The Nexus representatives added that Croatian technology and equipment would be used in construction of the plant. Jager and Mahek added Nexus wanted to build another solar-power plant near the town of Drnis.

CROATIA - ONE OF THE COOLEST DESTINATIONS FOR THE BRITS British newspaper "Mirror" selected Croatia, Egypt, Turkey and Hungary as the most attractive and the coolest destinations for British tourists for this year. "Mirror" claims that, because of the global financial crises if holidaying in one of these four countries you’ll get the best value for your money. Although Greece and Spain remain high on the holiday wish list, the real bargains are outside the Euro Zone, where you can enjoy the sun, sea and fine food for much less. In Croatia prices for hotels, restaurants, spa centres, and boat travel, are usually around 20 percent lower than in other European countries.
SIBENIK SCHOOLS OFFER SPECIAL PROGRAM The maritime school "Adriamare" in Sibenik is starting a new educational programme the aim of which is to teach seafarers how to deal with pirates. Adriamare head Nikolina Cigic said today (Weds) Croatian seafarers would be among the first in the world to learn about pirates and their tactics and aims. Cigic added students would also learn how to avoid their ambushes and how should one behave if captured by pirates. The educational programme will also provide information about negotiating with pirates, the daily Slobodna Dalmacija has reported. Captain Gordan Baraka, one of Adriamare’s founders, said: "At this moment, more than 20,000 Croatian sailors are on 5,000 to 6,000 ships around the world, and that is a huge number. All of them are potential
victims of pirates, who are becoming the global threat of the 21st century." In its educational programme, Adriamare will use the experience and knowledge of Israeli maritime companies, the ships of which pirates avoid because Israeli crews know how to deal with them. The programme has been set up according to the criteria of the International Maritime Organization (IMO). Lecturers will be Croat seafarers, maritime inspectors, managers and captains who have dealt with or been captured by pirates. The course will start in June. Adriamare was the first school to offer educational programmes for seafarers on safety on the sea 20 years ago, and it hosted a world conference on safety on the sea two years ago. The school is also planning a world conference on piracy.

Primošten is certainly one the most beautiful places on the Adriatic coastline. It gets its name from the peninsular on which it is situated and which until the 16th century was detached from the mainland. In 1542, in the days when the Turkish were conquering the area, the local inhabitants built a movable bridge together with towers and fortifications so they could defend themselves from enemies. When the Turkish retreated and the threat of invasion ceased the bridge was destroyed and in its place an embankment was constructed which is still in place today. Today a network of narrow side streets criss-cross the peninsular with typical Dalmatian walls, buildings and architecture. The town’s skyline is dominated by the church St. Jurja, whose
foundations were laid in 1760. Inside this beautiful church are kept precious paintings such as The Virgin Mary (which has a solid silver frame) and St. Maria with St. Luke (painted in 1719) as well as a graveyard with a spectacular panorama. This, however, isn’t the oldest church in the area. This honour goes to St. Jere which was constructed in 1460 and is located in Široke near to Primošten. Due to the location and climate, Primošten has been recognised as a tourist destination for a long time. In fact tourist development goes back at least fifty years. The symbol of tourism in the area is the hotel complex Primošten, which despite being damaged in the Homeland War and losing some of its capacity, has kept its image and has been renovated
in the last few years. Primošten also has a strong history with wine production and olive growing and with these roots has developed “rural” tourism recently in the surrounding countryside. Apart from the already established production of domestic smoked ham (pršut) and cheese, the area is also now famous for the development of ecologically friendly foods including chick peas, lentils, beans and of course the unmistakeable olive oils. The most well known product of this area is almost certainly the red wine “Babić”, which is produced from grapes grown in the Bucavac region. These vineyards have the official status of a monument to “peoples work” and a painting depicting them hangs from a reception hall in the UN headquarters in New York. In
close proximity to Primošten lies the marina Kremik. The beauty of this marina is unique on the Adriatic Sea and it is certainly one of the safest and most well protected marinas in the region. It is defended from winds from all four points of the compass and is well used by mariners from all over the world, there are also an organised diving and surfing clubs. It is also possible to anchor yachts, with a draft up to 3.5 meters, close to the town of Primošten. But care must be taken because the port is open to winds from the south and west and good attention must be taken when mooring and anchoring. Apart from the rich gastronomic offer the town has to offer there are a number of other interesting activities for guests. For younger guests and the “yo-
ung at heart” a disco, “Aurora” is situated on the hill overlooking the town, which is in fact the largest in this part of the Adriatic. Two important events for the area are the traditional “Primošten Festival” and the “Primošten delicacies” which are held in the first week of August. Also mention must be made of the art gallery “Sfere” as well as the ambient gallery “Kamene Sfere”. In Primošten there is also a ballet school, run by the famous ballet experts Ane Roje and Oskar Harmoš. There are also plans to turn the Orson Welles’s former villa into a museum. The world famous actor fell in love with the area so much that he planned to live here permanently; unfortunately his premature death ended his dream of enjoying his Primošten vision. «

Eco & Ethno Fair 2009 in Skradin Once again the city of Skradin will play host to another Eco & Ethno Fair. For two days from the 1st till the 2nd of May stands and stalls will fill the streets of Skradin with the exotic flavours and enticing scents. The fair is gaining in popularity year after year and this time the fair should prove to be bigger and better than even before. So what does our host for these two days offer us in terms of gastronomy? Skradin has in many ways kept its rich traditional history and this can be seen best in the cuisine still served there today.
Delicacies at the Skradin table
The unusual geographic position of Skradin is reflected in the characteristic, intense and sometimes exotic aromas at the richly laid out Skradin table. The river embracing the sea and the inland meeting the Mediterranean blend into a truly remarkable cuisine which includes almost everything. Fish delicacies, both of sea and river variety, among which eel and trout hold a special place. Supreme prosciutto ham dried in the north-eastern
bora wind of the Skradin hinterland and meat specialties from cattle freely grazing in nature. Fruits and vegetables grown far away from cities and pollution. At the Skradin table everyone will find something to their taste! Let’s try and open your appetite with a few specialties from Skradin.
Delicacies from times past you simply must taste!
Skradin cake is a delicacy made of almonds, walnuts and honey which was once prepared for newlyweds for their first wedding night. Skradin veal risotto is carefully cooked for eight, nine, sometimes eleven hours. Soup stock made of cooked rooster, beef and baby beef is poured over from time to time during cooking. At the end a little prosciutto ham is added to
enrich the flavour. Of ordinary spices salt, pepper and nutmeg are used while others will remain the cook’s secret. According to tradition, the Skradin risotto is prepared only by men. Koprtlje are an unusual archaic delicacy. Small sticks of prosciutto ham and bacon are wrapped in lamb offal and cooked with chunks of dried meat. Sausages from the Skradin hinterland are spiced with nutmeg and juice from garlic soaked in white wine. Cold Skradin eel brodetto served with polenta made from corn flour ground in the Skradinski Buk mills. Ćokalice are small fish which live between the upper layer of fresh water of the River Krka and the lower layer of salt sea water. Homemade jams from service berries, strawberry-tree berries and figs with herbs. «
PEKA - DISHES COOKED UNDER A METAL BELL Skradin is well known for its preparation of dishes under a large metal or ceramic cover. It is used to cover the food and then coals and hot ashes are scattered on top. This way the food stays succulent and has a specific flavour. Lamb or veal prepared in this way is especially appetizing but also octopus or rooster with side potatoes and vegetables. At Bribirska Glavica the evidence of a rooster prepared in this manner has been discovered dating from the Liburnian period!!

Mr. Josip Brnadi •• The city has organized a week full of events, which ones will you attend? Actually, the City of Vodice together with all sporting and cultural associations are the joint organisers of all the events planned during the “Day of the City.” As Hotel Punta is situated right next to the St. Cross church from which the main procession will start we will prepare a buffet table with traditional cakes and drinks and treat all the participants of the procession. Also we will arrange accommodation for all the participants of the bicycle race as well as awarding the winner with a gala lunch in the hotel. •• How has “Dan Grada” changed since you were a child? “Day of the City” of Vodice wasn’t celebrated on this date through my childhood, in fact it was celebrated on the city’s independence day at the beginning of November.
•• What are your opinions about the current summer season in Vodice? My opinion for the coming season is that this current financial crisis can’t completely destroy the whole season. Given the fact that we are one of the closest destinations, as far as warm seas are concerned, in the whole of Europe means that we are currently in a much better situation than other Mediterranean destinations. My opinion is that we will have a total minus of 5% on last year, which would mean that are normal 5 – 10% increase that we have experienced over the last few years would be hard to reach. I have to mention that last years drop in the amount of guests from Italy, who are our traditional guests, is worrying and something we need to work on. As far as the business of Hotel Punta is concerned for the first four months of this year we have seen an increase of
30%, which is much more than we had expected. •• What are your expectations for Hotel Punta for this year? Like every year Hotel Punta will continue to maintain the trend of increasing the number of incoming guests, overnight stays and the overall financial result though varying offers and by raising the quality of our service. We will continue to provide our guests the best standards in service, comfortable surroundings and looking after every guest in the way we know. When guests come back to the hotel this is the best advert for us. Of course, the management of the whole destination plays an important role in the whole strategy of Vodice, because without a strategy and a clear vision the whole resort will not be able to achieve the required results. «

Zapravo, Grad Vodice je zajedno sa svim sportskim i kulturnim udrugama, organizator svih događanja povodom "Dana Grada", a naš hotel "Punta", kako se nalazi uz crkvu sv. Križa od koje kreće procesija na Dan Grada, pripremi stol sa autohtonim kolačima i pićima, te počastimo ljude koji sudjeluju u toj procesiji. Također sudjelujemo i u oranizaciji smještaja sudionika biciklističke utrke, te u proglašenju pobjednika utrke sa svečanim ručkom u hotelu. •• Je li se proslava “Dana grada” promijenila odkad ste Vi bili dijete? "Dan Grada" kroz moje djetinjstvo se nije slavio na ovaj datum, već je to bio "dan oslobođenja" Grada - početkom 11. mjeseca. •• Kakva će po Vama biti ovogodišnja sezona u Vodicama? Moje mišljenje za nadolazeću sezonu je da ni nas ova kriza nemože totalno zaobići, premda sa činjenicom da smo najbliže toplo more u Evropi na turističkom tržištu trenutno stojimo bolje od drugih mediteranskih destinaci-
ja, prognoziram da će ukupni minus biti oko 5%, s tim da treba računati da neće biti onog kontinuiranog godišnjeg porasta od 5-10% s kojim smo dosad uvijek radili. Turisti će se odricati nekih drugih putovanja (kao što imamo podatke o padu posjeta turista Pragu, Londonu, itd.), dok se odlaska na ljetovanje neće odreći, eventualno će se smanjiti potrošnja u restoranima i trgovinama. Moram napomenuti da prošlogodišnji pad dolazaka, inače vjernih gostiju iz Italije moramo prekinuti i nekim ad hoc akcijama taj trend vratiti na prijašnje nivoe. Što se tiče poslovanja hotela "Punta" za prva 4 mjeseca ove godine, bilježimo porast od gotovo 30%, što je više nego dobra najava nadolazeće sezone. •• Kako biste Vi u tri riječi najbolje opisali proslavu “Dana grada”? Kao i svake godine, hotel "Punta" će nastojati održati trend povećanja broja dolazaka, noćenja i financijskih rezultata kroz različitosti ponude i podizanja kvalitete usluge. Nastojimo našim gostima pružiti što bolju uslugu, osjećaj ugode i pristupačnosti svakom gostu, a
gost koji n a m se ponovno vrati nam je najbolji pokazatelj našeg načina poslovanja. Naravno, menadžment destinacije treba odigrati važnu ulogu, jer bez strategije i vizije destinacije nemogu se ostvarivati rezultati kojima se teži. «

city History of the Sibenik excels among all Croatian towns on the Adriatic coast by its unique location in a picturesque and large bay, at the mouth of the Krka River. Created initially as a fortification or a campus, beneath the St. Michael’s Fortress that still dominates the town, Sibenik was mentioned for the first time in 1606, in a document issued by the most important of Croatian rulers - the king, Petar Kresimir IV. Sibenik obtained its status of a town in 1298, when the Diocese of Sibenik was established. A view of Sibenik reveals the unique harmony of urban poetics of the town and its natural surroundings. The harbor, connected with the open sea by the St. Anthony Strait, has been the initiator of development of sailing, trading and the overall economic prosperity of the town for centuries. At the entrance into the straight, there is the fortress of St. Nicholas, the most important renaissance fortress at the eastern coast of the Adriatic. The town is surrounded by the fortresses of St. Michael, St. John and Subićevac that, together with the fortress of St. Nicholas, make the symbol of the centuries long no subjugation of Sibenik, confirmed in the recent Homeland War. St. Jacob’s, the cathedral of Sibenik, built for over a century, is a testimony of persistency, sacrifice and belief of the generations of inhabitants of Sibenik. By many things it is unique not only in Croatian architecture, but in European design as well: it is entirely built of stone, no other material being used; it is unique by the brave structure of stone slabs and ribs, with no binding material; it is also unique among renaissance churches by its trefoil front facade; finally, it is unique by the harmony of its architecture and the row of 71 realistic sculptural portraits around the apses. Documents preserved from the time of building of the cathedral evidence contributions from the entire community to its building, but from many individuals as well, including large number of domestic stone-dressers, builders and arti-
sans. The most important among them is Juraj Matejev Dalmatinac, who came from Zadar and who the town of Sibenik commissioned in 1441 to take over the job of the proto-master of the cathedral of Sibenik. The cathedral and the nearby renaissance town hall, other churches, palaces, and the Prince’s Palace presently housing the County Museum, make probably the most beautiful town square of the Croatian urban heritage. In the 15th, and the 16th century Sibenik was among the Croatia’s most important centers of humanism and renaissance. They're lived and worked writers Juraj Sižgorić, Antun and Faust Vrančić, Petar Divnić and Ivan Polikarp Severitan, composers Ivan Sibenčanin, Julije Skjavetić and Ivan Lukačić, historian Dinko Zavorović, painters Nikola Vladanov and Juraj Čulinović, printers Martin Kolunić - Rota, Horacije Fortezza and Natal Bonifacij, and many sculptors and builders of the Juraj Matejev Dalmatian's circle. The scientist and visionary, lexicographer and writer, philosopher and teologist, Faust Vrancic, is the best known figure of the Croatian renaissance. The writer of the first Croatian dictionary as well as the author of the famous book of inventions, Machinae novae. Among many ideas, there outstands the drawing of homo volans, the flying man, the first printed picture of a parachute flight in history. The 14th century church and monastery of St. Francis, the first Croatian national shrine of St. Nikola Tavelić, has been an important ecclesiastical and cultural center for centuries. In the monastery collection, there are over 150 incunabula and that many valuable manuscript codexes, including the famous Sibenska molitva, the first Croatian poetry text written in the Latinism script. In the church, there are organs made by well-known Croatian organ designer of the 18th century, Petar Nakić, preserved in the original form. The present vivid cultural life of Sibenik is evident in the traditional International Children Festival of Sibenik. «

The cuisines of Sibenik The cuisine of Sibenik and the islands follows the trend of modern nutritional cooking. The brief thermal preparation of foodstuffs (mainly boiling or grilling) and plenty of fish, olive oil, vegetables and homegrown herbs found near the sea is why this cuisine is considered to be very healthy. Meals along the Dalmatian coast are heavily influenced by their Italian ancestry which is why the coastal resorts tend to fill up with Italians in summer. Often the meals begin with a nice plate of pasta; black risotto or spaghetti in squid ink sauce is especially popular. Dalmatian cuisine relies heavily on the fresh fish and seafood that are caught (or farmed) offshore. Look for sea bass, grouper, scorpion fish, pilchards, mackerel, squid and sea bream. Fish is usually grilled with local olive oil, garlic and lemon. Regions with an abundance of fresh water are famous for their frog, eel and river crab dishes. Meat isn't forgotten either. Thin slices of smoked Dalmatian ham (pršut) are often on the appetizer list. Lamb is popular

either boiled or baked. Dalmatian pasticada is a meat stew (beef stuffed with lard and roasted in wine and spices) often served with gnocchi. One local delicacy is dishes baked under an iron bell this is a traditional method of cooking meat and vegetable dishes in a metal dome buried in glowing embers. If you plan on trying this style of cooking then restaurants will normally need up to 3 hours notice in advance to prepare the food, although it is well worth the wait. Connoisseurs of cheese must try all the different cheeses on offer. In the markets one finds a thick white cheese sold in little plastic sacks and usually eaten, as an accompaniment to a salad, with salt and pepper. Paski sir, a hard cheese from the isle of Pag, is an excellent cheese and one of the most reputed. Typical Dalmatian desserts win the heart with their simplicity. The most usual ingredients include Mediterranean fruit, dried figs and raisins, almonds, honey, egg. Famous wines include Dingac and Postup then there are Posip and Grk, etc. And also Prosecco
(a sweet dessert wine), the very strong grape (loza) and herbal brandies (travarica, grapes with medicinal herbs) and liqueurs. The Croatian beers most frequently drunk are Ozujsko beer and Kariovacko beer, both of which are excellent. Foreign beers tend to be more expensive, so unless you have a preference for a particular foreign beer you’ll do no wrong choosing Croatian. The Sibenik County offers a wide range of places to dine. They range from rustic charm to silver service, catering for all manner of special occasions. The menus of restaurants in Sibenik are mainly based on local specialties. Although recently a wider variety of cuisines has emerged. The working hours of most restaurants are from 11.00 - 24.00, although it is normally never a problem if you wish to stay longer. The price includes taxes, but the service charge is almost never included and is not mandatory. It is a customary, however, that if you are satisfied with the service a 10% tip of the total amount is usually a fair tip.«

Zaton A village in the north-western part of Šibenik harbor in a bay of the same name, only 10 km from Šibenik. Near the village, on a bend, is "Tradan" Cave, where various archeological remains from the Neolithic to the Roman Age were discovered. These include coins of the Emperors Traian and Justin, and stone utensils. Like all ot-
her settlements, Zaton was also damaged by the Turks in 1576 - 1577. An asphalt road links Zaton with the Adriatic Tourist Road. More recently Zaton has become interesting for visitors because its lovely pine woods, bays and complete peace offer a pleasant holiday.
The Sibenik County Sibenik-Knin County is a county in Croatia, located in north-central Dalmatia. Its center is Sibenik; other notable towns are Knin, Drniš and Skradin.
The county covers 3000 km² and has over 110 000 inhabitants. It also includes 242 islands and national parks Krka and Kornati.
The City Hall is located in the central city square (Trg Republike Hrvatske), formerly known as Plathei Communis. It is a very harmonious and airy Renaissance style building built from 1533-1536. The ground floor includes porch with
semi-circular arches supported by columns, which was an access to the former public utilities offices. On the first floor is the representative hall in which city councilmen would meet. In December 1943, during allied air
strikes, the City Hall building was completely destroyed and was restored after the war, in its original shape and appearance, and the internal area was organized and equipped in accordance to the needs of new functions.

Medieval Mediteranean Garden of St Lawrence Monastery (MMG) in Šibenik was restored and opened on 6th November 2007 after being forgotten about for a hundred years. MMG is an integral part of the St Lawrence Monastery and an integral part of the programs that the Sibenik Private Gimnasium has

Dinara Mountain Dinara is a mountain range, 20 km long and 10 km wide and at the same time, it is the highest mountain peak in Croatia (1831m). It is famous for the longest cliff in Croatia, which is 6 km long. Dinara is the first Croatian mountain of proven natural beauties and special aesthetic experiences, even a source of inspiration for poets (Petar Zoranić: Planine (Mountains), 1536). It provides inexhaustible potentials for hunting, riding, trekking, alpinism, cave exploration, speleology, kite-flying, paragliding, bike and SUV tours and other forms of day-trips, nature and adventure tourism. To climb Dinara, one must be experienced in mountaineering, even though approach roads are marked at various spots.

Bring the evaporated milk and regular milk to a very gentle boil in a double boiler. While waiting for the milk to boil, in a separate bowl mix together the yolks, granulated sugar and vanilla sugar at medium speed with a mixer. Add flour to the yolk mixture until blended. Remove 2 cups of milk from the double boiler. Add this milk to the flour mixture while continuously beating at low speed. When blended, return this mixture to the milk still in the double boiler and continue to cook until thick while stirring very frequently. Mix together gelatin with the cold water, let stand for 1 minute and then add boiling water, mixing well with a fork or small whisk. Add the gelatin to your custard mixture in the double boiler and continue to cook for about 5 minutes, continually stirring as it
thickens. Cool custard in ice water when removed from heat. In a separate bowl, beat the whipping cream until peaks form. Fold the whipped cream into the cooled custard (make sure the custard has cooled to room temperature before adding the whipped cream). Refrigerate this mixture for about 20 minutes so that it stiffens a bit and is easier to spread. Trim the edges of the puff pastry sheets to fit a deep tray or baking dish. Place one layer of puff pastry on bottom. Spread evenly with custard and then place second layer of puff pastry on top, pressing down slightly. Refrigerate for at least 4 hours. Sprinkle with powdered sugar on top prior to serving and cut into oblong pieces. Garnish with strawberry fans or chocolate dipped strawberries if so desired
