Commentary – Times of Change Change seems to be the inevitable thing. Even when life seems pretty well stabilized we just can’t resist tinkering with it. Try to avoid change and it persistently comes knocking on your door. Change is the kind of thing that you have to get with or it threatens to run right over you. To make it sound more appealing they like to call it “transformation”. When you hear that you know there’s going to be trouble. People are always saying that change is good. Generally, that means that you’re about to be roped into something that you didn’t want in the first place. At a minimum, change includes some discomfort and after that it usually costs money or time or it hurts. Change also entails a certain amount of risk. No wonder the thought of change makes most of us feel reluctant if not downright exhausted. The vaunted rewards are never assured and frequently long postponed. It’s also true that the pace of change seems to be accelerating. Technology, as an example, has opened the door to vast areas of knowledge and interest but it has also made our lives more neurotic and anxious. Where did I put all the manuals, modules and sets of instructions for all this equipment? I can hardly reset my clock without a struggle these days. Luckily, the basic information about anything and everything is on the internet. Once I search the net and find the instructions I can simply move my wireless lap top next to my clock and recalibrate it to the accurate time. I feel suspiciously uneasy that somehow I’m not really winning here. While the real lessons of life are relatively immutable, most of the functional knowledge in any five year period quickly becomes obsolete. Simple communication today requires that whole new vocabularies be learned several times over in a lifetime. Translation is necessary for the truncated jargon that fits the digital window of a palm-sized device. Letter writing is a lost art now. A lexicon of Twitter phraseology is what we need today to construct a sentence. What will be the historic relevance of our email or for that matter, our digital photos? What will we truly have to say for ourselves? What have I received in exchange for this persistent change and restlessness in my life? Amazing benefits, actually. I’ve been introduced to the astounding universe of streaming, the pod cast and the music download; information, thought and comment are everywhere in the ether, freely available as soon as I boot up my computer. More than I ever hoped to find is at my fingertips. I’m not sure what to do with it all. It’s richness to be sure and I feel incompetent in the presence of this wealth. Yes, it comes at a cost. There’s a lot less peace of mind. I’m in touch every moment and the world is breathing hotly down the back of my neck. Embrace change? It’s about to swallow me whole. Peace and quiet are not the norm but exist in the interruptions within the avid flow of activity. Life is the process of change, it’s growth that is optional. Your sense of humour is your last defence in the face of change. JK

Recipe of the Week Biker Ribs 6 racks baby back ribs, cut into 3 -4 rib portions Sauce: 3 bottles, 15 oz. (425 mL) each of purchased hickory-flavoured barbeque sauce (try Cattle Boyz) ½ cup orange juice concentrate ½ cup lemon juice 12 garlic cloves finely minced ½ cup Worcestershire sauce 2 teaspoons Tabasco sauce ½ cup molasses ½ cup lightly packed brown sugar for sauce: Combine all sauce ingredients in a large pot. Bring to a boil and then simmer for 30 minutes. Season with salt and freshly ground pepper. Refrigerate until ready to use. for ribs: 1.Place rib portions in a large pot of boiling water. Bring to a boil, reduce heat, and simmer about 1 hour or until meat pulls easily away from the bone. Remove ribs and place on clean, dry baking sheets. Cool in refrigerator. These ribs can be prepared a day ahead of time and kept chilled. 2.Preheat oven to 300 degrees F. (150 degrees C). Coat ribs generously with sauce. Cover with aluminum foil and bake in preheated oven for 1 hour. Remove from oven. 3.Heat grill to medium-low. Place ribs on grill and baste with additional sauce until ribs glisten, about 20 – 30 minutes. Remove and serve with lots of paper towels.

LIGERS?? What happens when a male lion and a female tiger breed? A Liger - the largest of all felines. A liger looks like a giant lion with diffused stripes and some male ligers grow sparse manes. These massive creatures are 10 feet long on average and weigh about 700 lb (320kg). Ligers love swimming - trait common to tigers but lacking in lions. Ligers have been bred in captivity, deliberately and accidentally, since shortly before World War II. The largest liger alive today is appropriately named Hercules and lives in Jungle Island in Miami.
