HALTER RANCH New Wines from an Old Ranch by Michael Cervin
T
he long drive of curved roads under a canopy of oaks rewards you as you finally enter the old property known as Halter Ranch. The 1880s Victorian house and old silo and barn seem perfectly suited to the spot. By contrast, the tasting room, built in 2005, is modern, with a curved bar, warm wood tones and hip track lighting embedded into the wood beams. Halter Ranch is a 960acre ranch, with 250 acres planted to grapes, both Bordeaux and Rhône-style varieties. The focus is on estate wines, showcasing the property’s strengths. From Rosé to Sauvignon Blanc, Syrah to Cabernet Sauvignon, Halter Ranch combines history with awardwinning, unique wines suited to the exact place they are made. The focus is on Rhône varietals, specifically Syrah, though Cabernet Sauvignon is also one of the main reds. The property was originally part of a 3,000 acre ranch dedicated to cattle, hay and barley production. Today, the focus is wine. Mitch Wyss has been a farmer for 25 years, farming 200 acres

of kiwifruit and sugar plums. He never had experience with grapes before. “I was just Irish enough to think that a vine is a vine,” he said, referring to the kiwi vines he used to grow. But he got a crash course in viticulture when Swiss businessman Hansjörg Wyss (no relation) bought the property in 2000. Wyss asked Mitch, and his wife Leslie, to develop the vineyard and winery with the dream of creating a world-class estate vineyard. They began by soil mapping the entire area to determine the varieties they would plant. In the end, 19 different varieties were planted, including six different clones of Syrah and even a little Grenache Blanc, Cinsault and Tannat. One of the reasons for 19 varieties means that there are abundant blending options. The goal was always to “make a world-class estate vineyard” Leslie said. “After all, what we’re doing here is Halter Ranch. We’re not interested in making a lot of wine from everywhere. We believe this place has significant growing conditions,” she added. And that sense of place in important to consumers, especially in today’s economic conditions. wine from a non-descript area, but Paso Robles’ star is on the rise and the cache of the area, plus award- winning wines speaks for itself. In fact, Halter Ranch’s 2005 Cabernet Sauvignon just won a gold medal and the coveted Best of Class Award at the 2008 Central Coast Wine Challenge and the 2005 Estate Syrah was named Best Red Wine out of the entire competition. Part of that is meticulous farming. “We’re producing two to three tons of fruit per acre and two clusters per shoot, in some cases one cluster per shoot,” Leslie says. Bill Sheffer came on board as winemaker in part due to the precise conditions the property offered. “The Halter Ranch vineyard is a winemaker’s dream,” Sheffer said. “The quality of the fruit coming off this vineyard is very high and will only continue to improve as the vineyard matures,” he added. Sheffer is well known in the Paso Robles area having worked at wineries like J. Lohr, Adelaida and Eberle. Additionally, Mitch serves on the board of the Central Coast Vineyard Team, a local organization which promotes sustainable agriculture. “In the big picture, sustain-

Wine clubs are pretty standard, but Halter Ranch has tweaked the idea and come up with some wining combinations. Yes, standard club offers a 20 percent discount. But if you upgrade to the Owners Club, you’ll receive a 25 percent discount, of course the requirement is to purchase multiple cases in order to get the discount. As a bonus, Owners Club members get wines about a month before the public release date. Halter Ranch also allows members to choose their own shipment options. Additionally, they offer a toll free “concierge line,” so that if you visit Paso Robles, they’ll be pleased to offer suggestions about places to stay, eat, taste other wines and places of interest to visit. For all this you might think the tasting fees would be pricy. But the fee is a simple $5 and is waived with any wine purchase. A selection of cheeses, cured meats, dipping oils and crackers allows you to have a spontaneous picnic outside under the olive trees, or near the outdoor fireplace on the flagstone. Fresh bread is brought in on Fridays. Halter Ranch Honey is also available. “The bee keeper puts his boxes here and bottles especially for us so we get the honey from the hives on the ranch,” Leslie says. Local Winery Makes Good – Adelaida Cellars Soars to the Top
F
or many of us, hearing stories about the success of someone local brings joy to our hearts. Such accounts take on a slightly different meaning when the subject is actually a homegrown business, but they are nonetheless refreshing because companies often withstand the same ebb and flow of success as their human counterparts. “Born and raised” on Paso Robles’ west side in the 1980s, Adelaida Cellars has finally received its due recognition with wines produced from exceptional estate vineyards in the Santa Lucia Mountains. That land supports two sustainable agricultural enterprises with a combined staff of two dozen.
A good neighborhood The Adelaida District is profoundly affected by an afternoon marine layer that helps develop essential acidity and mature tannins in the grapes. Furthermore, shallow chalky mountain soils control vine vigor, resulting in low grape yields and intense wine flavors. Longtime residents of Southern California, the Van Steenwyk family purchased Hilltop Ranch along Adelaida Road in the late 1970s as an investment. The steep, contouring slopes – home to several hundred acres of walnut trees – are situated 14 miles from the coast with elevations up to 2,000 feet. The family soon acquired nearby Viking

Ranch, adding more orchards to the existing walnut-growing business. Meanwhile, John Munch launched Adelaida Cellars in 1981, making wine in leased space with fruit from local vineyards. He would continue as such until he met the Van Steenwyks in the late 1980s. “Our county farm advisor was already suggesting that we plant wine grapes, so the timing was right,” said Elizabeth Van Steenwyk. A 1991 agreement established Munch as the winemakermanaging partner while the Van Steenwyks constructed a facility on Hilltop Ranch and began developing vineyards. Viking Ranch was planted with 10 acres of Cabernet Sauvignon and Syrah in 1991. “Considerably warmer than our Hilltop Ranch, Viking Estate Vineyard is flanked by two adjoining ridges that shelter its 1,600-foot elevations,” said Van Steenwyk. The next breakthrough occurred in 1994 when the family purchased part of the nearby Hoffman Mountain Ranch, including most of the vineyards developed by Dr. Stanley Hoffman in 1964. Originally planted with 32 acres of Pinot Noir and other varieties, this is the oldest Pinot Noir vineyard throughout the south-central coast of California. “We named the planting ‘HMR Estate Vineyard’ to honor its noble beginnings,” said Van Steenwyk, “but it also provided our enterprise with instant credibility.” Pedigree status notwithstanding,
WINE COUNTRY THIS WEEK WINE COUNTRY NEWS considerable care was needed to bring it back to commercial standards after years in fallow. The vision of Dr. Hoffman should not be taken for granted. The west side of Paso Robles was a rugged place in the early 1960s and hardly an established wine region. The buzz surrounding this undertaking intensified when he contracted legendary wine consultant André Tchelistcheff. In 1999, the Van Steenwyks bought out John Munch to become the sole proprietors of Adelaida Cellars.
The Vineyards Have Spoken Setting their sights on complete vineyard control in order to make the best wine possible, the Van Steenwyks continued to develop other properties after Viking and HMR. Bobcat Crossing, along the slaloming road to the winery, was planted in 2002 with Muscat Blanc for an ice wine, and three Portuguese grape varieties for a Port. Situated on the ridgeline above HMR, Anna’s Vineyard was planted with 18 acres of Syrah in 2002-03. It resulted from a cooperative experiment with Cal Poly, and is composed of numerous clone and rootstock combinations that contribute great complexity to the wines. Anna’s was extended in 2005-06 with nine more acres of Rhône varieties. In 2004, Michael’s Vineyard was planted on a dome-like knob between HMR and Viking with 18 acres of dry-farmed heritage clone Zinfandel. Finally, Viking Ridge Vineyard was completed in 2007 on a 1,900foot ridgetop across a ravine from Viking Estate Vineyard. This nineacre site is a mixture of Cabernet Sauvignon, Cabernet Franc, Malbec and Petite Verdot.
Go Where the Wine Critics Go The winemaking style of Adelaida Cellars took a dramatic leap forward when Winemaker Terry Culton was hired in 2003 after a tenure at “Pinot University,” the Calera Wine Company. His concentrated New World, but not over-the-top wines have received superlative reviews from the media including Bon Appetit, Connoisseurs’ Guide, Decanter, Santé, Wine Advocate, Wine Enthusiast and Wine & Spirits.
Feed the soil, and the soil will feed the vines. The lean mountain soils in Adelaida’s vineyards would slowly wash away if sustainable practices were not used as a safeguard against heavy winter rain. Sustainability, and the inherent use of cover crops, manifests healthy soils via a comprehensive approach to vineyard management that encompasses soil conservation, vine hydration, nontill farming (all vineyards except Michael’s), and pest and weed control. It has everything to do with being good stewards of the land – a commitment the Van Steenwyks learned from their grandparents and will pass to the next generation Adelaida Cellars is located at 5805 Adelaida Road in Paso Robles. Tolosa Blends Fine Wine, Fine Art to Benefit Local Schools Tolosa Winery has commissioned six local artists to participate in their inaugural fund-raising event, Barrels R Art. “Our mission is to provide a platform for local artists to apply their talent and showcase their creative synergies to another great art form: the creation of wine,” said Bob Schiebelhut principal at Tolosa. Each artist was given a 60 gallon barrel to transform into their unique work of art. Each barrel will be a one of a kind original. The barrels will be on display in the Tolosa Tasting Room from July 26th to September 5th. There will be a gala dinner auction held at the winery on September 6th with legendary auctioneer Gil Stork as Master of Ceremonies. Guests will have a chance to mingle with the artists and bid on the individual art barrels. The elegant evening will be catered by the incomparable Megan Loring and paired with Tolosas fine wines. TEACh Foundation (The Endowment for the Advancement of Children) was chosen as the beneficiary for the evenings proceeds. The timing for this funding for the local schools couldn’t be more fortuitous with the recent state-wide budget cuts. The TEACh Foundation goal is to build a permanent endowment that will directly be distributed to the San Luis Coastal Unified School District – the funds support all schools grades K-12 in San Luis Coastal Unified. “The money raised will go directly to the classroom, allowing students to
participate in programs that they may not normally be able to receive,” Maria Slavin, TEACh Foundation President, said. “Our mission statement is, a quality education is a lifetime gift .We hope the endowment will continue to grow even after we are a all long gone,” commented Ms. Slavin. T
he undulating hills and passes that make up Highway 46 West from Paso Robles to Cambria are an exotic mystery. As soon as you think you’ve seen everything, something else pops up. Whether it’s a new winery or spotting deer in a field or an owl flying overhead, the combination of man and nature has created one of the true gems of the Central Coast. It is in this unique place, some 12 miles from the Cambria coast and 9 miles from Templeton and Paso Robles that John Somogyi built Rocky Creek Cellars. With small production and little fanfare, Somogyi has found a niche that is as unique as the winery he built. Flying in the face of convention, Rocky Creek wines are not just hand-crafted and fussed over by their owner and winemaker, they are low alcohol, longtime barrel fermented without benefit of stainless steel. Their character is as unique as their story and their flavors stand out even in a sea of wines from the Paso region, all of which

deserve some consideration. “I want the wines to speak for themselves,” says Somogyi, a native of Hungary before settling here on the Central Coast. “I want the Cab to be a real Cab and the Zin to be a real Zin,” he says. Rocky Creek is one of the few places where wine tasters are treated to wines from the 2000 and 2001 vintages and they are not taken out of a wine library. “I think wine needs to age a long time. It’s like most things in life – it takes time to get really good,” says Somogyi. Yet, with the hand-crafted wines, aged in neutral oak over long years, Rocky Creek’s price points are fair and consistent, even low one might say. It wouldn’t be right, though, to simply call the wines a tremendous value, though they are. They are top notch, delicious and nuanced wines for whatever price and they will continue to age well or drink well now. Focusing on only red wines, Somogyi works with Mike DeBellis, his longtime winemaking partner to craft Rocky Creek wines. “Mike and I have been making wine www.winecountrythisweek.com
together since the ’90s and he’s going to retire soon,” says Somogyi. “I’m going to go into semi-retirement retire, too and let Dustin and Mike run it. I’ve got things I want to do,” he laughs. Dustin is Somogyi’s son who is the Assistant Winemaker. Somogyi uses only local fruit, growing some of it himself and purchasing from two other growers in the Paso Region. At about 1200 cases a year, Rocky Creek is a true boutique winery staying true to the designs of its owner and winemaker. “The proof is in the pudding,” says Somogyi. “This is a great climate here. I get a lot of rain because we’re closer here to the coast. The rain doesn’t make it over York Mountain, so it stops and dumps here. And when it’s 100 degrees in Paso Robles, it’s 80 here,” he says. “Just perfect.” Rocky Creek Cellars pursues that perfection each day in the unique growing region of Highway 46. Café Vio was on the verge of closing. Having been opened at a building known in Paso Robles as the Granary, near the railroad crossing, the café was sinking into a morass of pre-packaged foods and a bit of coffee. Yet the local constituents, in love with their gathering place, simply refused to let it die and help came in the form of Alan and Nina Courtney, Café Vio’s own Calvary who arrived in October of last year. “I love my little place,” says Nina Courtney, who is truly at home here. “I just saw the potential to make some changes and we did that and now, things are looking up.” Gathering advice from a group of regular customers she and Alan refer to as “The Board of Directors,” the pair got rid of the pre-packaged foods and hired a professional chef to at once simplify the menu and charge it with new quality and life. The menu now includes fresh breads and pastries baked right on the premises, meats that the Chef prepares himself in the kitchen whether roasting succulent turkey or preparing lean pastrami for the delicious sandwiches, and a focus on fresh produce. “And the coffee is still the very best in town,” says Nina. “It has to be because my husband loves, and I mean loves, good coffee.” Open daily for breakfast with a fresh menu featuring egg specialties and fresh pastries, the Courtneys have seen to it that Café Vio stays open until past dinner time. “One thing the Board told us was that the previous owners closed too much,” says Nina. “So, we’re open now from early morning until sometime after the last few customers leave which is usually around 7 or 8 o’clock.” The lunch menu serves as well for a dinner menu and customers seem to prefer it that way. The ambience of the place has changed as well. Simple white walls have now been replaced by warm colors with plenty of artwork including one whole section dedicated to Western art. “We have a new artist each month and it’s been such a treat,” says Nina. “We have the artists come in every second Friday of the month and feature their work and it’s been really popular.” The restaurant itself is broken up into separate “living rooms” each connoted by a different color scheme and various kinds of comfortable furniture. From couches to cushy chairs to kitchen tables for larger groups, Café Vio feels very much like homemade and it’s that atmosphere that keeps regulars coming back. The food is exceptionally good with the meats as tender and juicy as they can be. Fresh produce adorns the sandwich plates and homemade dressings, freshly baked breads and freshly brewed teas and coffees are in constant demand. In short, Café Vio has once again put the life back in Vio.

INTELLIGENCE FOR THE WINE CONSUMER

What is the proper way to taste and evaluate wine? There are no right or wrong answers when it comes to deciding what you sense when you taste wine. Always remember that your own impressions mean more than what others get from it. After examining the appearance of the wine – observing clarity and color – smelling and tasting follow. The wine’s aroma provides a hint of the wine’s character, however, there are almost always unexpected impressions that come after that first sip is taken. With no more than one-third of a clear, clean wineglass filled with wine, grab the stem of the glass with the base still flat on the table and swirl it in small circles. The purpose of this is to aerate the wine, letting oxygen mix with it and bring forward its natural aromas and flavors. Then take one to three short sniffs with your nose inside the glass. Pull away from the glass and think about your immediate impressions of what you just smelled. Ask yourself first whether the wine smelled “clean.” By this I mean that it has no obvious faults. If you drink wine on a regular basis, a bad wine with aromas that are “off” will stick out immediately. If nothing seems out of the ordinary, the next question to consider is whether the wine aroma is typical of its grape varietal. In other words, if you smell a Pinot Noir, does it have the familiar aromas of cherry and herbs that are normally associated with Pinot Noir? If you are not familiar with the typical “nose” characteristics of the grape, simply concentrate on what comes to mind upon the first few sniffs. Sip the wine. Some people taste by swishing the wine around in their mouth, like mouthwash, to get a full impact on the palate. Others suck in some air with wine, like slurping, in order to mix

more oxygen with wine. Whatever method you choose, the important thing is to concentrate on your first impressions of flavor and texture. Think in broad terms first, then narrow down your impressions. Ask yourself, “is the wine light, medium or full body?” Is it filled with bold fruit flavors or is the fruitiness more subtle? Is it complex with a multitude of flavors, or is it simple, easy to drink? Is it sweet or dry? Crisp or mellow? Does it have a good balance of impressions or is one component dominant? Does it leave you wanting more? Take another sip and narrow down your impressions a little further. Are the fruit flavors light, like cherry, or more concentrated with dark fruits like black cherry? Are there additional impressions of texture from tannin, which gives red wine its drying, mouthpuckering effect? Does the wine have flavors imparted by oak barrels, sometimes referred to as a vanilla-like flavor? After your final sip, think about the wine’s “finish.” This refers to the lingering flavors, or lack of, that remain after the wine leaves the mouth. The best wines in the world often posses a “long” finish; a rich, elegant residue that leaves you wanting more. Donati Family Vineyard 2005 Claret Perfectly Paired with Gorgonzola Crusted Filet Mignon
When Mitch Bakich, hospitality manager for Donati Family Vineyard was considering who might be the best person to ask for a recipe to pair with the 2005 Donati Family Vineyard Claret, he knew just where to go for an answer. When he asked his old friend, Chef Carlos Ruiz of the historic Inn at Tres Pinos in San Benito County what he would suggest the chef quickly replied, “A big red wine like the Claret needs a dish that can stand up to it. I’ve got the perfect dish in mind: the Gorgonzola Crusted Filet Mignon with Sweet and Spicy Walnuts and Claret Reduction. “Donati Family Vineyard is a small family-owned vineyard and winery that sources its fruit from its Estate Vineyard in Paicines, California and produces award-winning Bordeaux-style blends at the winery in Templeton,” says Mitch. “By design,” he explains. “the Donati Family Vineyard Claret is a wine that focuses on fresh, forward fruit. To achieve the excellence for which the wine is noted, winemaker Dan Kleck’s touch starts in the vineyard and continues as select lots of 100% estate-grown fruit, harvested and fermented by specific vineyard block, are identified and reserved during the barrel aging process during which the wine is matured in 50% French and 50% American oak barrels. This special attention gives the 2005 Claret its inherent fruit intensity, gracefully integrated with top cooperage, producing a racy wine with blackberry fruit freshness against a backdrop of oak, with supple tannins and a long lingering finish.” Mitch totally agrees with Chef Carlos that the Claret is an excellent companion to the spicy and robust flavors of the melted Gorgonzola and walnut topping for the steak. A pixie-ish note, which also is sound advice, is incorporated into the ingredient list by Chef Carlos who recommends one 750ml bottle of Donati Family Vineyard Claret (1/2 cup for the steak and the rest to enjoy with the meal). GORGONZOLA CRUSTED FILET MIGNON WITH SWEET & SPICY WALNUTS AND CLARET REDUCTION INGREDIENTS For the Walnuts: • 1 large egg white • 1 tablespoon water • 4 cups California Walnut halves, about 1 pound • 1/3 cup granulated sugar • 2 teaspoons coarse salt • 1-1/2 teaspoon ground cumin • 1/2 teaspoon cayenne pepper • 1/4 teaspoon garlic powder For the Filet Mignon • 1 tablespoon butter • 1/2 cup minced white onion • 3 cloves garlic, minced • 1 tablespoon chopped fresh thyme • 3/4 cup low-sodium beef broth • 1 750ml-bottle Donati Family Vineyard Claret (1/2 cup for the recipe, the rest to enjoy with the meal) • 1 tablespoon vegetable oil • 4 filet mignon steaks (1 1/2 inch thick) • 3/4 cup crumbled Gorgonzola Piccante • 1/4 cup panko bread crumbs

DIRECTIONS Sweet & Spicy Walnuts In large bowl, whisk together egg white and water until foamy; add walnuts and mix until all nuts are coated; drain excess liquid. In small bowl, combine sugar, salt, cumin, cayenne pepper and garlic powder. Stir dry ingredients into walnuts until evenly coated. Spread walnuts on non-stick baking sheet. Bake in 325°F oven for 20 to 25 minutes, stirring twice, until nuts are lightly browned. Allow to cool on baking sheet. (Nuts will become dry and crispy as they cool.) Store in air-tight container. Gorgonzola Crusted Filet Mignon Melt butter in a skillet over medium heat. Add the onion, garlic and thyme. Cook, stirring constantly, until onion is tender. Stir in the beef stock, scraping any onion bits from the bottom of the pan, then stir in the Claret. Bring to a boil and cook until the mixture has reduced to about 1/2 cup. Set aside. This may also be made ahead of time and reheated. Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a cast-iron or other oven-safe skillet over high heat. Sear steaks quickly on both sides until brown, then place the whole pan into the oven. Roast steaks in the oven for about 15 minutes for medium rare – with an internal temperature of 145 degrees F (63 degrees C). You may adjust this time to allow the steaks to finish just below your desired degree of doneness if medium is not what you prefer. Remove from the oven, and place on a baking sheet. Stir together the panko crumbs and Gorgonzola. Top each steak with Gorgonzola mixture and Sweet & Spicy Walnuts. Preheat the oven’s broiler. Place steaks under the preheated broiler until the cheese topping is browned and bubbly, 3 to 4 minutes. Remove from the oven, and let stand for at least 15 minutes before serving. Serve with warm Claret reduction. Pair with 2005 Donati Family Vineyard Claret

If an afternoon of driving the picturesque back roads of California in search of a truly great little winery is your idea of a day perfectly spent, then head toward Highway 41, east of Paso Robles and look for Chateau Margene. You can then count yourself among the lucky few who have found this oasis of excellence and had the opportunity to enjoy their fabulous Cabernet and Cabernet blends. As they always completely sell out their 3000-case production every year, joining one of their three wine clubs is usually the only way to ensure that you’ll be able to get more of their wines without the necessity of another road trip. And you will want more. Michael and Margene Mooney celebrated their first vintage in 1997. Their goal was to do one thing and do it well … produce worldclass Cabernet. They succeeded by employing a philosophy that few business schools would promote. Low yield, labor intensive wine making. With a mere five and a half acres of vineyard, the Mooneys intentionally keep their tonnage at about two per acre, compared to some larger winery operations that coax up to eight tons per acre out of their vineyards. This gives each vine the opportunity to take full advantage of the superior soil and growing conditions that the Paso Robles Appellation offers. The emphasis is quality over quantity. At Chateau Margene each grape cluster is hand picked and hand sorted. The fruit is de-stemmed, whole berry, and gently dropped into open-topped fermentation bins, then aged in French oak barrels for over 24 months. The vineyard practices sustainable farming and only a bare minimum of chemicals are used in the grape growing and winemaking processes. These are thoroughly pampered grapes and the result is phenomenally dark, fruit-forward wines. Says Michael Mooney, “We didn’t enter into this with a mindset of growing a big, commercial winemaking operation, but rather to create a small boutique winery that focused on quality. It was our dream to produce the best Cabernet and Cabernet blends from the Paso Robles Appellation. Making these wines is truly our passion.” The tasting room experience at Chateau Margene is in keeping with their philosophy of quality over quantity. The small tasting bar is located right in the middle of the barrel room, but don’t stay there. Wander out to their deck for one of the best tasting experiences to be had on the Central Coast. With the gentle sound of jazz music wafting in the air and a stunning view of the tree-studded hills of Creston in front of you, there is no better spot than one of the comfy couches at

Now, with summer under way, the Santa Maria Valley is once again preparing for a sizzling barbecue season, with one local barbecue landmark, the Far Western Tavern, celebrating its 50th year under the same family ownership. To help feed this sizzling phenomenon, the Santa Maria Valley Chamber of Commerce and Convention & Visitor Bureau is offering an expanded new version of its Santa Maria Style Barbecue booklet,
inclusive of recipes, restaurant recommendations and more. The traditional cuts are top-block sirloin and tri-tip, a triangular bottom sirloin cut that originated in the Santa Maria Valley. Today, Santa Maria Style Barbecue is enjoyed across the region at restaurants, events and celebrations, providing a perfect complement to the wines, strawberries and other locally grown flavors of the Santa Maria Valley. One of the more famous landmarks for Santa Maria Style Barbecue is the Far Western Tavern in the coastal hamlet of Guadalupe, which was founded by Clarence and Rosalie Minetti in 1958. Today, as it celebrates its 50th anniversary in 2008, the restaurant is still going strong. Clarence and Rosalie remain regulars at the restaurant, but the day-to-day operations are now managed by their three children. “I think that our restaurant reflects the sense of heritage, family and community that is the foundation of Santa Maria Style Barbecue,” says Susan Minetti-Righetti, who also operates Susie Q’s Brand, specializing in artisan foods and barbecue seasonings based on local recipes. “At the same time, we are making sure that we keep pace with contemporary tastes in food and wine.”
• 1 tablespoon salt • 1/2 teaspoon black pepper • 1/2 teaspoon garlic salt • 1 prime top sirloin steak (3" thick), or tri-tip • Red oak logs, or charcoal and oak chips Directions: First, oakwood logs are placed in a pit with movable grate and burned until red-hot. Backyard chefs also can use charcoal mixed with oakwood chips and bark available at local markets. Once lit, the fire should be hot but not blazing. Season the meat with salt, pepper and garlic salt to your desire or try some of our local traditions with Susie Q’s Santa Maria Style Seasoning or F. McLintock’s BBQ Chef Seasoning. Do not trim off the fat before putting the meat on the grill. By placing the fat side over the fire first, the juice will come up through the meat and make it tender. Sear the lean part of the meat over the fire for 5 to 10 minutes to seal in the juices, then flip over to the fat side for 30 to 45 minutes, depending on the size of the cut and the desired degree of doneness. When juice appears at the top of the meat, it is time to flip for another 30-45 minutes. The fat can easily be trimmed after cooking. It is important to slice tritip against the grain the long way, not across the triangle. It won't be a uniform cut but it will be more tender.

This group of images is part of an ongoing project of photographic preservation.

Kam Jacoby finds original locations and re-photographing people and places that were captured on film in this valley during the past 133 years or so. He then scans in the original image and combines that with the new image of the same location in present day. “I grew up in Lompoc and my personal history is inextricably linked to this place. When I started looking through the photographs housed in the Lompoc Historical Society … I was mesmerized, not only by the wonderful images, but by the realization that my own experience of growing up in Lompoc is just one of a myriad of stories that make up the history of this town. Thousands of others have lived, loved, triumphed, and struggled on these same streets that hold my memories. Looking through old photographs of Lompoc, particularly those in which people are an essential elements, has reawakened my interest in this place I call my hometown. ‘Reds, Whites and Blues’ Hits the Beach in Santa Barbara Now in its fifth year, the ever-popular Reds, Whites & Blues California Wine Festival is scheduled for July 18-19 at Chase Palm Park in Santa Barbara. For the price of a ticket, festival goers get unlimited wine tasting rights to nearly 400 premium California wines from more than 100 wineries from every wine region in the state. Accompanying the
wide array of wines will be craft breweries, hot and cold appetizers, fresh cut fruits, perfectly barbecued prime beef, artisan cheeses and specialty breads offered by top area restaurants and food purveyors. Music is a big part of this oceanside party and a red hot blues band will provide the “blues” portion of the “Reds, Whites & Blues” theme at the beachfront fest. A jazz pianist will entertain VIP’s in their own tented “pavilion.” VIP Weekend Pass ticket holders get into the event an hour early – a preview tasting privilege – and have exclusive access to this tented area in which to sample reserve level wines and appetizers.
Silent Auction Benefits Foodbank of Santa Barbara County Wine collectors and everyone wishing to support Foodbank of Santa Barbara will have a chance to inspect and bid on ultra premium wines, magnum and double magnum bottles, many autographed by the winemakers, along with tropical vacations, one-of-a-kind objects d’art and other unique items. 100% of the net proceeds from this exciting auction is donated to Foodbank of Santa Barbara. In previous years, over $10,000 has been generated by the silent auction.
Friday Night Rare/Reserve Wine Tasting Under the Stars! The elegant outdoor “Sunset Reserve and Rare Wine Tasting” event is scheduled for Friday night, July 18 from 6:30 to 9 p.m. Live smooth jazz provides a sound track for the festivities as lucky ticket holders are greeted with a sparkling Champagne, then are free to roam the plaza and sample dozens of rare vintage wines and delectable cuisine from many of the area’s top chefs.
