SORT THIS OUT CELLARS by Mark Storer

W

alt Disney was fond of saying, “quality will out,” by which he meant that if you did something very well, better than the competition or at least good enough to be noticed, you’d achieve what you wanted to achieve. It may well be because of that lesson, taught to so many Disney employees, that Jeff Munsey and Mike Cobb created Sort this Out Cellars, a winery with wines as unique as the name of the company. “We think of ourselves as a couple of degenerate gamblers turned winemakers,” says Munsey. “We try simply to make the very best wine we can.” Actually, Munsey and co-owner Cobb are Disney alums that partnered up to create great wines. They’re not just any Disney alums, either. “I was the Operations Manager and Mike was the sommelier and wine buyer for Club 33 at Disneyland.” Club 33 is the exclusive members-only club started by Walt Disney himself. It’s a dinner and events club located in New Orleans Square in Disneyland, well hidden above the Pirates of the Caribbean and with an entrance as non-descript as it is famous. A door stands along the street, not far from the Pirates ride and is simply emblazoned with the number “33” at eye height. But if you’re not a member, don’t bother knocking. You won’t get in. Munsey and Cobb left Disney some years ago and together, migrated with their families to the Central Coast. “Our goal is to make as diverse a selection of wine as possible from fruit grown all over California,” he says. Sort This Out Cellars owns no vineyards and doesn’t want to. Neither Munsey nor Cobb want to be farmers. “We’re in the entertainment business and wine is entertaining,” says Munsey. “At the end of the day, the wine in the bottle has to meet peoples’ expectations.” Perhaps that’s why Sort This Out itself is based in several places throughout the

Golden State. “We source grapes from all over the place, but we produce our wines in Templeton and our tasting room is in Buellton,” says Munsey. The duo chose Buellton because, “when you think about it, it’s kind of the gateway to the whole state’s Wine Country,” Munsey adds. “North of www.winecountrythisweek.com

here, there are wine grapes from east to west virtually all over.” The other practical reason for putting the tasting room in Buellton was to tap into the L.A. and Orange County travel markets. “It’s about 60 miles from here to San Luis Obispo and that’s the 60 miles that people who make day trips up here from L.A. don’t want to drive,” says Munsey. “We wanted to put ourselves where people are coming to really get away, find a unique place to taste and purchase wines.” It was during their time with Club 33 that the two were able to learn more about wine and winemaking. When Disney sought to open California Adventure Theme Park, the plan included putting in a small working winery. The food and beverage staff, including Munsey and Cobb was sent to research wineries around the state. “We got to see everything from little mom and pop operations who produce 1000 cases of wine each year all the way up to the Francsican operation having lunch with the owners,” says Munsey. “We learned what dedication and hard work had to be put into this.” Still, Munsey claims that in the first line of Sort This Out’s business plan, there’s a sentence that says, “we want to treat our customers like family three to four days a week, so that we can be with our families three to four days a week.” So far, they’ve been successful at that task. The wines of Sort This Out Cellars are all named and themed with a kind of Las Vegas, 1940s, ’50s and ’60s feel. “We source grapes from many different places,” says Munsey. “We didn’t want to call this wine our ‘Merlot’ when next year, those grapes may come from a completely different vineyard and be fermented and made differently.” To that end, the wines have names like Money Pays Merlot and Hardways Cabernet Sauvignon, the latter of which features a portrait of a pair of dice each with two dots facing up. “Each of the names has meaning in the gaming industry. There are also the “suited” wines as they are known, named after a term

WINE COUNTRY THIS WEEK WINE COUNTRY NEWS for poker cards, and they include Pinot Grigio, Sangiovese and a rosé of Sangiovese. The “suited” wines sell for under $20. Finally, Sort This Out Cellars makes a Super Tuscan, this year it’s 85 percent Sangiovese and 15 percent Cabernet Sauvignon, called the Cardiff Giant. “We took the name from this terrible old movie that both of us loved,” he says. The story is about a couple of farmers who are losing money on their farms and so they decide to build a ten and a half foot giant, bury it on the farm and have some workers dig it up later. Convinced they’ve found something important, the workers turn the giant over to the farmers who put it in their barn and charge money to see it. “It’s based on a true story and is considered to be the great American hoax,” says Munsey with a laugh. “P.T. Barnum apparently offered the farmers $150,000 for the giant but they refused. Later, he built his own and claimed it was the original,” he adds. “We loved the story of that and how it was pure entertainment.” The duo is not out to hoax anyone when it comes to their wines, though. “We’re all about quality in the bottle,” says Munsey. Walt Disney also believed in telling stories. He knew that if his films and his theme parks, had good stories behind them, people would come again and again. “All of our wines, in some way or the other, are based on some Las Vegas stories we have or something similar,” says Munsey. “People want to be entertained and we want to entertain them.” In the end, it seems there’s very little to sort out after all – a story of two guys who sought simply to produce diverse, premium wines and follow their passion to share them with others. www.winecountrythisweek.com

PREMIER ACCOMMODATIONS SLO County Sitters: An Answer to an Age-Old Problem by Mark Storer While it has become rather common to see young or newly married couples making the rounds of the Central Coast Wine Country, the fact is, childless folks are still the minority among wine drinkers in America. That means that a lot of people who want to experience the joys of a day of wine tasting or a night out in Wine Country have to make arrangements to leave the kids at home, with a relative willing to help out or a babysitter, right? Well, not anymore. Enter Tina Porter to the Central Coast wine scene. A true entrepreneur, Porter became aware of a need that wasn’t being filled and so she began to do her research to find out how to fill it. The result is SLO County Sitters Incorporated. “My husband and I travel quite a bit and I have a one-year-old daughter and a threeyear-old daughter and I saw in other places

what we didn’t have on the Central Coast – a qualified nanny and sitter service like you find in Europe and other places,” says Porter. SLO County Sitters isn’t just a group of people who will come to your hotel and watch your children, either. “We screen everyone who works for us rigorously,” says Porter. “I have a pre-school teacher who works for me who says her school didn’t screen her this well.” Indeed, all of Porter’s sitters and nannies are folks with backgrounds in childcare. “We don’t just come and watch the kids. We provide age-appropriate activities and educational games and we never rely on the television to baby-sit the kids,” says Porter. Anglim 2005 Best Barrel Blend Perfectly Paired with Six-Spice Beef Short Ribs As autumn wanes and winter approaches, we start to crave rich, hearty foods and fuller wines to accompany them. One of Steve and Steffanie Anglim’s favorites is beef short ribs; they are relatively easy to prepare, and will satisfy both elegant dinner-party guests and hungry four-year-olds. Steve Anglim borrowed this recipe from one published in Food & Wine (April 2008) by Shea Gallante from Promiscuous Food: Recipes that Pair with Many Wines, to pair with his 2005 Best Barrel Blend. This Rhône red blend comprised of 45% Mourvèdre, 45% Syrah, and 10% Grenache has a very rich, earthy character that beautifully compliments the succulent spice of the beef. Steve serves these ribs with plenty of pan sauce and chunks of bread for capturing every delicious drop. If they are lucky enough to have leftovers, the Anglims shred some of the beef and add corn tortillas and hot sauce for a mid-week feast. SIX-SPICE BEEF SHORT RIBS • 1 tablespoon dried porcini mushrooms (mixed is OK too) • 1-1/2 teaspoons black peppercorns • 1 teaspoon kosher salt • 1-1/2 teaspoons ground coriander • 1-1/2 teaspoons powdered ginger • 1-1/2 teaspoons smoked sweet paprika • 1/2 teaspoon ground cloves • 5 pounds beef short ribs, 1 inch thick, boned and trimmed of excess fat • 2 tablespoons extra-virgin olive oil • 1 medium onion, thinly sliced • 1 large carrot, thinly sliced • 2 inner celery ribs, thinly sliced • 2 garlic cloves, thickly sliced • 2 cups dry red wine, such as the Anglim 2005 Best Barrel Blend • 2 cups beef stock or low-sodium broth • 1/4 cup sugar Preheat the oven to 300°. In a spice grinder (a clean coffee grinder will do, too), pulse mushrooms, peppercorns and salt to a fine powder. Add the coriander, ginger, paprika and cloves and pulse to combine. Rub the spice blend all over the beef short ribs. Heat the oil in a large skillet. Add the short ribs and brown over moderate heat, about 12 minutes. Scatter the onion, carrot, celery and garlic in a medium roasting pan. Set the short ribs on top, cover tightly with foil and roast for about 2-1/2 hours, until tender. Meanwhile, pour off the fat in the skillet and return it to high heat. Add the wine, stock and sugar and bring to a boil, scraping up any bits from the bottom of the pan. Simmer over moderately high heat until reduced to 1 cup, about 15 minutes. Transfer the glaze to a heatproof cup. Preheat the broiler. Transfer the short ribs to a plate and pour the pan juices and vegetables into a bowl. Skim off all of the fat. Transfer the pan juices and vegetables to a blender. Add 1/2 cup of the glaze and puree the pan sauce until very smooth. Return the short ribs to the roasting pan and brush with 1/4 cup of the glaze. Broil 8 inches from the heat for about 3 minutes, until caramelized and sizzling. Turn the ribs and repeat the process with the remaining 1/4 cup of glaze. Serve the ribs with the pan sauce. MAKE AHEAD The short ribs can be prepared through Step 3 and refrigerated overnight. Broil just before serving.

You know it by looking at it, you know as soon as walk up the path and in the door that this is a spot that simply belongs right where it is, doing exactly what it is doing. That, in a word or two, would describe the Cambria restaurant known fondly – and to many – as Robin’s Restaurant. Located in a charming and nicely weathered old home in this historic seaside town, they offer an eclectic menu that has pleased locals and visitors since they opened their doors in 1985. The interior (with its fireplace) and the spacious, multi-leveled heated deck surrounded by flowers and vines are a bit eclectic as well, and it all blends together to match the setting, just as owner Shanny Covey intended it to be: warm, informal, comfortable and unique. And it should be noted that those gardens are the perfect setting for a small reception. So how to define “eclectic” when it comes to menus? Well, how about

If that is not what eclectic means, then we are looking at different dictionaries. But, it all somehow works, and wonderfully so. here “fine wine begins at the vine...”, San Marcos Creek Vineyard specializes in small lots of handcrafted, single-vineyard, estate-grown and produced varietals. They are a family-owned and operated vineyard and winery. In the early 1990s, Fling and Annette Traylor began looking for a way to retire to the scenic Central Coast, not a lazy retirement, but something that would get them involved with the community and provide some fun and excitement. They decided to take advantage of the area’s increasing, but still fledgling, reputation for quality winegrapes, and planted 43 acres on the property they had purchased in 1980 just five miles north of Paso Robles. San Marcos Creek Vineyard was established in 1992, and successfully developed contracts with several local wineries such as Peachy Canyon Winery, Meridian Vineyards, Castoro Cellars and more recently J. Lohr Vineyards & Wines, Treana Winery and Rosenblum Cellars. However, as the Traylors became more involved with the Paso Robles wine industry, their plan for a quiet retirement of growing winegrapes gradually evolved into plans for a winery, a tasting room, and a bed and breakfast! As curious passersby watched, a striking set of buildings gradually began to take shape

alongside Highway 101. As people who know him will attest, Fling doesn’t do things halfway. He believes that “a solid work ethic and sweat equity can make a great deal of luck and magic happen...” So it should come as no surprise that the San Marcos Creek facilities are top notch, featuring state-of-theart processing facility and a fully equipped onsite laboratory. With the expansion of their “retirement” dream Fling and Annette were also able to realize another dream, that of developing a family business. To that end, daughter Catherine Winter and her husband Brady came on board in 2002, and are operating partners in San Marcos Creek Vineyard. Brady now heads up the winemaking aspect of the label along with longtime local winemaker, Paul Ayers while Catherine manages the tasting room and handles the financial side of the business. established with their first crush in September of 2002 and then the bottling of 653 cases in July of 2003. Currently their production has grown to 4,500 cases per year of their fine estate wines. The San Marcos Creek Vineyard lineup draws from many regions: Bordeaux, the Rhône Valley, Italy, and – of course – California, are all represented in the list of current releases which includes White Merlot, Cabernet Sauvignon, Zinfandel, Merlot, Syrah, Nebbiolo, Petite Sirah and Late Harvest Zinfandel along with some new Proprietary blends. Paso Robles Digital Film Festival Uncorks in Wine Country Nov. 20-25 In the heart of Central California’s “Cowboy Wine Country,” the inaugural Paso Robles Digital Film Festival (PRDFF.com) will take place Thursday, November 20 through Tuesday, November 25. The theme for year one of what will be an annual festival examining the film industry in the digital age is “Music In Film.” Headlining music acts include The Bacon Brothers (actor Kevin Bacon and his brother Michael), folk legend Ramblin’ Jack Elliott, The Kyle Eastwood Band, The Brubeck Institute Jazz Quintet and more. PRDFF will be Webcast worldwide and filmed for a DVD under the auspices of veteran event producer Benford Standley. In 1995, Standley produced one of the first live multimedia Internet cybercasts, and has continued to incorporate pioneering digital technologies into his projects and productions, which include hundreds of events ranging from Wild West Shows to music and arts festivals. PRDFF highlights include: “Make My Saturday,” a tribute to the musical and cinematic genius of Clint Eastwood that includes screenings of the Eastwood-directed Honkytonk Man (starring Eastwood and his son Kyle) and Bronco Billy; the documentary Martin Scorsese Presents Clint Eastwood’s Piano Blues, produced by PRDFF advisor Bruce Ricker, who will moderate a panel on Eastwood’s company Malpaso; and a screening of the Ricker-directed Tony Bennett: The Music Never Ends.

On Sunday, November 23, Academy Award-winning film editor Joel Cox will receive PRDFF’s “Paderewski Lifetime Achievement Award for Contribution to the World of Music and Movies.” Cox has worked with Eastwood for thirty years on films including Bird, Million Dollar Baby, Mystic River, Changeling and Unforgiven, for which he won an Oscar. In sync with the “Music In Film” theme, documentaries to be screened also include: Martin Scorsese’s The Last Waltz, the Bob Dylan documentary No Direction Home, D.A. ary Eberle is a man who lives with passion – passion for life, passion for wine, and, most importantly, a passion for Paso Robles. His vision to create a world-class, wine-growing region began in 1973 when he founded the fourth winery in Paso Robles (there are now nearly 200) and the first local winery to distribute wines on a national and international basis. After creating the Paso Robles Appellation in 1983, Gary dedicated his life’s work to educating people about the region as a whole and, specifically, about his own Eberle wines. All that passion paid off. To date, Eberle is one of the highest awardwinning wineries in the United States. Emulating the festive occasion established by vignerons in the Beaujolais region of France, Adelaida Cellars presents its Annual Beaujolais Nouveau Celebration at 6 p.m., Friday, November 21, to salute the first release of the 2008 Central Coast vintage. Chef Claude Chazalon of Safran Caterer will prepare traditional French peasant fare to accompany Adelaida’s 2008 Gamay Noir. The cost is $25 per person or complimentary to all wine club members. Last year’s Beaujolais Nouveau Celebration was completely sold out when more than 100 guests dined on Chef Chazalon’s traditional coq au vin and the 2007 Gamay Noir. This year, he will be serving duck and pork cassoulet accompanied by a salad and dessert. As in France, Adelaida’s Beaujolais Nouveau is made from the Gamay Noir grape (precisely Gamay Noir à Jus Blanc). Unlike most red wines, Beaujolais Nouveau is intended for immediate consumption and thus, is fermented and then bottled without barrel or bottle aging prior to release. “Our Gamay Noir was made according to the traditional Beaujolais model of macération carbonique where whole grape clusters are fermented without crushing,” said Winemaker Terry Culton. “Yeast penetrates the skins so that each grape functions like a microfermenter. The result is a fruit-forward wine with vivid aromas.” Grapes for Adelaida’s 2008 Gamay Noir were harvested September 2 from the winery’s HMR Estate Vineyard in west side Paso Robles. One acre of Gamay Noir was planted in 1964 on what was then called Hoffman Mountain Ranch. The historic vineyard also boasts the oldest Pinot Noir vines along the South Central Coast. The Old World Beaujolais Nouveau celebration is officially launched at midnight on Beaujolais Nouveau Day, the third Thursday of November.

Situated 14 miles from the Pacific Ocean at nearly 2,000 feet of elevation, Adelaida Cellars is one of the most respected wineries along California’s central coast. T

he name Jerry Lohr is nearly synonymous with the Paso Robles wine industry. He has been at the wine game over 30 years and in that time has helped place Paso Robles and Monterey counties squarely on the world wine map. Originally from South Dakota roots, Jerry opened his first “wine center” in 1974 in San Jose, a time when wine didn’t hold the caché it does now. Understanding the viability of the growing regions in San Luis Obispo County, he opened a second wine center in Paso Robles in 2001. The success of both tasting rooms, reflecting the different geographic regions, is a testament to Lohr’s ability to envision the future of Paso Robles. “We focus on flavor from vineyard to bottle,” says winemaker Jeff Meier. The tasting room features an incredible diversity of wines including the limited production J. Lohr Vineyard Series. These are wines comprised of Cabernet Sauvignon,

Chardonnay, Pinot Noir and other standard varietals. The J. Lohr Estates are widely available wines and include their popular, if unusual, Valdiguié, a light, simple red wine similar to Gamay. “Valdiguié is a red wine with training wheels,” Meier says. “It’s suited to a nouveau style of red wine, sort of like Beaujolais on steroids. It’s a novelty, but it sells well, and we even have international distribution.” They produce approximately 14,000 cases of Valdiguié. The Cypress Vineyards label aims for everyday drinkability and include Sauvignon Blanc, Merlot and White Zinfandel. The tasting room, located near the airport is open, spacious and bright, with exposed wood trusses and mottled stained concrete floors. The homey, schoolhouse feel welcomes guests and is a decidedly unintimidating place. The array of wines offered is vast and available at a variety of price points. Gift items like silk clothing, tampanades and preserves from a local caterer are available for purchase. J. Mrs. Clause Will Light Up Downtown Paso Robles at Holiday Lighting Ceremony, Friday, November 28th The 22nd annual “Holiday Lighting Ceremony” will officially bring holiday décor to downtown Paso Robles on Friday, November 28th, the Friday after Thanksgiving. The tradition will find Mrs. Santa Claus and other costumed characters gathering at the downtown city park bandstand at 5:30 p.m. They will be joined there by townspeople dressed warmly. Just before 6 p.m. candles and songbooks will be distributed. Highway 46 West Wineries Friday Night Wine and Cheese The Highway 46 West Wineries Group is gearing up for the Holiday Friday, December 12, Night Wine and Cheese Evening. No worries about the weak dollar if you want to travel to France or Italy and do some wine tasting this year. You can have all of the ambience of a Mediterranean villa in Paso Robles at Villa Valdemosa, a 10-acre estate with a luxurious bed and breakfast inn – just 10 minutes east of downtown Paso, and yet a world away. Vineyards are under development on the property for a boutique winery planned for construction next year. Perched on a hilltop, the inn offers “forever” views of surrounding vineyards, olive groves and lavender. A range of well-appointed suites — called “Bordeaux,” “Petite Syrah” and “Syrah” – are available at prices that undercut the rates of area hotels that have much less to offer. Owner Tom Roebuck is himself a winemaker and you might even talk him into serving up his private reserves, such as the 2003 Mystral, a gold-medal-winning red blend. While you won’t see a television screen in the 5,000-square-foot villa, you will be soothed by the strains of Mozart from an extensive stereo network. You might even be treated to some live grand piano or guitar music, courtesy of local musicians who occasionally drop by. Near-term plans include hosting house concerts, and cinema and wine under the stars. In the mornings, guests who stay in the 400-square-foot Bordeaux suite, which offers a soaking tub and a walk-in waterfall shower, may step into the loggia, where a real fireplace takes the chill off the morning air. There, they may join other early risers for gourmet coffee, teas and fresh pastries, muffins or scones to tide them over till breakfast is served at 9:30, typically a soufflé or perhaps individual mushroom omelets and apple chicken sausage prepared by Tom, a seasoned European traveler who has lived in France. Kicking off PCPA’s 45th Anniversary Season is the enduring and endearing holiday family favorite, Irving Berlin’s White Christmas. This new stage adaptation is based on the celebrated movie and tells the story of two show biz buddies, World War II Army vets, putting on a show in a picturesque Vermont inn, and finding their perfect mates in the bargain. The marvelous Irving Berlin scores includes “Count Your Blessings,” “Sisters” and the classic title song, “White Christmas,” the best selling recording of all time. Featured in PCPA’s cast is Colum Parke Morgan (Godspell, The Imaginary Invalid) playing Bob Wallace, the role originated by Bing Crosby. His buddy, Phil Davis played by Danny Kaye in the Paramount Pictures film, will be played by Michael Jenkinson (Ragtime, Hot Mikado). On the silver screen Rosemary Clooney played Betty Haynes; in PCPA’s production, that role will be handled by Elizabeth Stuart (Ragtime, The Weir), while her sister, Judy, will be played by guest artist Natasha Harris (Ragtime, Hot Mikado). Rounding out the cast will be resident artists Peter S. Hadres as General Waverly, Vanessa Ballam as Rita, Andrew Philpot as Ezekiel Foster and Corey Jones as Ralph Sheldrake. And returning to the PCPA stage as guest artist in the role of Martha, the inn’s proprietress, is Kitty Balay Genge. f wine is art then Kris Curran and Bruno D’Alfonso are artists; and they’re not just run-of-the-mill artists, either: both are passionate about wine and winemaking. Natalie Lawrence, the manager of the D’Alfonso-Curran Tasting Room (formerly TRIO), tells a story about a dinner she had with them about ten years ago. “My daughter was 11; Bruno and Kris spent the entire evening explaining wine. They talked about how to remove the cork, why you smell it, how to swirl the glass and why you want to, what to smell for, and the fact that, when you swirled the wine around in your mouth, it opened up new levels of aroma and taste. To this day, my 21-year-old daughter is the biggest wine snob I know,” she laughs. She shared this story to illustrate the passion that Curran and D’Alfonso have for wine, for learning, for excellence, even in the most mundane of settings. There’s so much more to their story, of course. Kris Curran, who met Bruno, and started to work for him at Sanford full-time while attending SBCC, began her career at Cambria after graduating from Fresno State. She then moved on to Koehler, put SeaSmoke

on the map with her award-winning Pinot Noir and is now the Director of Winemaking for Foley, all while bottling under her own label since 1997 with her first ever Pinot Noir. Bruno D’Alfonso was the first formally educated winemaker in the Santa Rita Hills, and began his career with Sanford Winery. “He brought a whole new style to the art of making wine,” said Natalie, “because he brought science to the art of winemaking.” His labels are augmented by his Italian varietal Di Bruno wines, as well as his Badge Pinot Noir and Chardonnay, both of which are made of fruit from the Santa Rita Hills. wines in a relaxed, comfortable setting. The D’Alfonso-Curran Wines Tasting Room in Solvang is patterned after that. Natalie commented that while interviewing Bruno for the winery’s newsletter, he said, ‘I fight for the intellectualism of wine.’ Translated, that simply means that D’Alfonso and Curran remove the mystique of winemaking, honoring the science that blends with art, like any true alchemist. From Curran’s Spanish-influenced Grenache Blanc and Tempranillo to D’Alfonso’s Italian flourishes of Pinot Grigio and Sangiovese, these wines are tinged by the Old World craftsmanship and come from fruit grown in the Santa Ynez Valley AVA and the Santa Rita Hills AVA.
