ORCHID HILL WINERY Transplants, Émigrés and Great Wine by Mark Storer
I
n the movie, Adaptation, Chris Cooper plays John Laroche, an obsessed orchid hunter who represents the deepest passion of those who love the elusive and beautiful flower. Like an orchid, great wine can at times hide, under the trellises, in vineyard corners and cranny’s and it takes not just skill, but passion to find what’s hidden there. So it is that perhaps Orchid Hill Winery on Highway 46 West in Paso Robles is aptly named. Owner Mike Schenkhuizen’s wife has a passion for the rare flower and it only seemed natural that as the two planted vineyards in this unique and rare place, they would name their winery after the orchid. “I first bought property here in 1999,” says Schenkhuizen. “It was such a beautiful place and I wanted to grow grapes and everyone I knew said Paso Robles was the place.” Although Schenkhuizen continues to run a thriving business in Hayward, which manufactures parts for the high-tech and medical industries, “This life is so much better,” he says. “Running a business is running a business, but I’d rather be here making wine.”

Orchid Winery is now a 24-acre vineyard on 51 acres in the Templeton gap. 2007 saw the opening of the tasting room on Pine Street in downtown Paso Robles. Orchid Hill Winery produces about 3400 cases of wine a year. Purchasing some grapes, but growing as much estate fruit as possible, Schenkhuizen has focused on Pinot Noir, Zinfandel, Syrah, Grenache and Viognier as well as Sangiovese and Pinot Grigio. “Not too long ago, Pinot Noir wasn’t really grown up here,” he says with a laugh in his voice. “But here on the west side, we’re doing great Pinots, I think.” Indeed, others think so, too as Orchid Hill’s Pinots have received a 90point rating from Wine Enthusiast. The winery’s Zinfandel garnered a 91-point rating from Wine Spectator. “We were part of a co-op early on when we first started,” says Schenkhuizen. “We were the first co-op in the Paso Robles region.” The co-op included Orchid Hill, Silverstone, Hug Cellars and Per Bacco wineries. Per Bacco has since moved down the Cuesta grade to the cooler climes of San Luis Obispo. Silverstone still has roots in Paso Robles and, in fact, Silverstone’s Dan Kleck is the head www.winecountrythisweek.com
winemaker at Orchid Hill. “He’s a freelance winemaker and he’s very good at it,” Schenkhuizen says. “Along with Dias Ruiz, our vineyard manager, it’s a good team.” The vineyard is reminiscent of the Piedmont region of Italy or even Alsace between Germany and France. “Our vineyards are so hilly, we can’t even think of using mechanical harvesting equipment,” Schenkhuizen says. “It’s just too steep.” That steepness, of course, provides good drainage, which allows the vines to stress to a certain point and, as is the irony of winegrape growing, stressed vines yield beautiful wines. Combined with the ideal warm morning sun and cool afternoon breezes of the Templeton gap, Orchid Hill is ideally situated to grow wonderful fruit. Schenkhuizen was born in Jakarta, Indonesia to Dutch parents. From there, the family immigrated to Holland and then, in 1959, to San Francisco. It was there that he got an education and founded a company and career in the world of high tech. “I didn’t know much about wine at first, but I like it a lot,” says Schenkhuizen echoing so many recent transplants to the world of wine-

The passion he and his wife had for growing things, however, is quite evident now in their winery dedicated to orchids. “I love the changes around me,” says Schenkhuizen. “I mean, we’re growing Grenache which has been really great. It’s become our flagship wine now,” he says. “I was looking for a place to set up [a winery] and basically learned, if you do it right, you’ll pay for the mortgage, too. I thought, ‘hey, that’s great!’ and it really was.” In just a few short years, Orchid Hill has enjoyed manageable growth, award-winning wines and representation by Southern Wine and Spirits. “We’re heavily represented in restaurants in both the Bay Area and in San Diego,” he says. The wines are also available out of state in Arizona, Nevada, Connecticut and others. Still, the focus is on small batches of quality wine. After all, as a manufacturer, Schenkhuizen knows how to control good production. “The wine industry is growing so rapidly,” says the émigré. “We are the new kid on the block but, we’re starting to make some noises, I suppose.” Those noises have been building ever so gently to a crescendo of consistently quality wines, produced with passion and looked after, as a botanist cares for the greenhouse – with love and attention. It’s no wonder the accolades keep coming in. This new kid on the block seems committed to stick around and make himself at home. VILLA VALDEMOSA
A Romantic Tuscan-Style Bed & Breakfast Inn by Leah Kolt
N
o worries about the weak dollar if you want to travel to France or Italy and do some wine tasting this year. You can have all of the ambience of a Mediterranean villa in Paso Robles at Villa Valdemosa, a 10-acre estate with a luxurious bed and breakfast inn – just 10 minutes east of downtown Paso, and yet a world away. Vineyards are under development on the property for a boutique winery planned for construction next year. Perched on a hilltop, the inn offers “forever” views of surrounding vineyards, olive groves and lavender. A range of well-appointed suites — called “Bordeaux,” “Petite Syrah” and “Syrah” – are available at prices that undercut the rates of area hotels that have much less to offer. For as little as $165 per night (stay mid-week for two nights and save an additional $50), travelers can relax in a spacious room with private bath and patio, or take a dip in the outdoor pool and spa, while enjoying a sunset view and wine tasting. Owner Tom Roebuck is himself a winemaker and you might even talk him into serving up his private reserves, such as the 2003 Mystral, a goldmedal-winning red blend. While you won’t see a television screen in the 5,000-square-foot villa, you will be soothed by the strains of Mozart from an extensive stereo network. You might even be treated to some live

grand piano or guitar music, courtesy of local musicians who occasionally drop by. Near-term plans include hosting house concerts and cinema and wine under the stars. In the mornings, guests who stay in the 400square-foot Bordeaux suite, which offers a soaking tub and a walk-in waterfall shower for only $235 a night, may step into the loggia, where a real fireplace takes the chill off the morning air. There, they may join other early risers for gourmet coffee, teas and fresh pastries, muffins or scones to tide them over till breakfast is served at 9:30, typically a soufflé or perhaps individual mushroom omelets and apple chicken sausage prepared by Tom, a seasoned European traveler who has lived in France. “I love the Mediterranean culture, especially France. When the French find out you are a winemaker, they really open up to you,” says Tom, who is a member of the local French Club in Paso Robles, where he has the chance to practice speaking the language and meet others interested in food, wine and French culture. Villa Valdemosa is a favorite spot for honeymooners who have wed at nearby Stillwater Winery, or at other “back roads” wineries. A special Champagne brunch is served to the newlyweds. The villa also hosts catered private parties and events for up to 50 people. A cancer survivor, Tom likes to host charity benefits, too. Two new suites under construction will be completed soon. Emillion,” decorated with the vibrant color schemes of their namesake Old World regions, will offer king-size sleigh beds, private baths, Jacuzzi tubs and private patios with sunset views. These 400square-foot suites go for $250 per night. Like the original rooms, the new suites will each include a flat-panel DVD system and free access to a selection of more than 500 movies. To finance the expansion, Tom is creating an opportunity for private individuals to invest $5000-$10,000 for an above-market return (6%) for up to two years. “There will also be B&B and winery benefits – fun things like special dinners, exclusive winery and B&B packages,” he explained. “It will be a lot of fun for those involved. I am calling it the Founders Club.” Tom’s vineyard is staked and the vines will soon go in – not the typical Cab and Chardonnay but Rhône varieties such as Mourvedre, Viognier and two or three clones of Grenache, as well as a Bordeaux known as Alicante Bouchet, since Tom’s specialty is unique blends. Tom believes the location of the villa in the heart of the Paso wine country is ideal. “We’re jut 10 minutes from the restaurants, shops and tasting rooms in Paso Robles, and only 45 minutes or so from Cambria, the Hearst Castle and San Simeon. Winemaker Profile: Tolosa Winery

L
arry Brooks is an artist and good artists find good mediums with which to work. Brooks has certainly found that medium in Tolosa Winery in San Luis Obispo. With 750 acres under vines, Tolosa is something of a powerhouse in this microregion of the Central Coast. There are only 3,000 acres under vines in all of San Luis Obispo and that means that nearly a third of them are planted and owned by Tolosa. But like their winemaker, Tolosa is not about ostentation and quantity. Producing about 25,000 cases of wine a year, Brooks heads up what amounts to a medium sized winery. “I’ve kind of got the best of both worlds because I have the resources of a large facility with the focus and concentration of a small boutique winery,” he says. Indeed, Brooks himself bridges a few worlds, too. With a degree in plant sciences and a minor in art history and a childhood love and focus on literature, Brooks brings creativity, knowledge and research to his work as a winemaker. Before coming to Tolosa, he was executive winemaker for the Chalone group and began his career with

Acacia winery. In the ’90s, Brooks managed all of Chalone’s vineyards and wineries and this allowed him to get a feel for the San Luis Obispo region. “I really like the technical side of winemaking,” says Brooks. “The real trick is how you apply it. It’s like knowing how to dance technically, but not allowing for feel,” he says. “It comes down to understanding really quickly what it takes to get this certain batch of winegrapes to be their best.” Brooks makes wines solely from estateproduced fruit at Tolosa. “We sell most of our fruit,” says Tami Carija, Tolosa’s Director of Sales and Marketing. “Larry is able to work with the top 10 percent of what we grow and that’s the wine that will have Tolosa on the label.” The large facility maintained by Tolosa owners Bob Schiebelhut and Jim Efird is mostly a custom crush facility where other winemakers come to produce their wines. Tolosa’s brand focus is on producing quality wines in relatively small batches and the primary focus is on beautifully crafted Chardonnays and Pinot Noirs. “I tend to get into a rhythm once we get started,” says Brooks. Working from early in the morning until late in the evening when www.winecountrythisweek.com
harvest comes, Brooks breaks his day up into vineyard time, tasting time and lab and barrel time. “I like to get together with some of the folks here, our production manager and a few others, who have good strong palates and taste in groups.” The 2007 vintage may well be one of the best yet at Tolosa Brooks says. The combination of a dry spring and no real heat spikes allowed the fruit to ripen and mature evenly and the result, “is really great wine,” he says. Tasting through barrels of the ’07 Pinot Noir and Chardonnay, I can only say that he’s absolutely right. The balance, flavor profiles, color and aromas are all so striking and so very good. “In a vintage like that,” says Brooks, “I don’t have to do very much except not screw it up.” Tolosa’s wines are the cornerstone of the small but powerful San Luis Obispo region. But it takes more than quantity to make great wine, it takes nuance, character and focus. It takes an artist like Larry Brooks to bring the region to full bloom. INTELLIGENCE FOR THE WINE CONSUMER

Why do wines made from the same varietal taste different among various producers? The reasons are many fr om differences in the climates of the various grape-growing regions, to the type of soil under the vines, to the choices made in the method of production. Starting with climatic differences, grapes grown in cooler climates retain a higher level of acidity than the same grape grown in a warm climate. Higher acidity will produce a crisper, more refreshing texture in the wine. On the other hand, grapes grown in warmer climate will have less acidity, greater ripeness, and thus a higher alcohol content when fermented, and produce a wine with a fuller, rounder body.Chardonnay grown in each of these two disparate environments produces two very different wine styles. This difference in crispness verses fullness is sometimes referred to as a difference in mouthfeel. The addition of oak in the fermentation or aging process also contributes to mouthfeel in the wine compared to one that gets little or no contact with oak. Soils vary greatly around the world and even throughout California s many wine regions. Soils might be composed of chalk, lime-
stone, clay, sand, gravel, loam or other components that may impart a unique flavor to the wine. For example, some people claim that grapes grown in the Rutherford area of Napa produce wines with an identifiable “Rutherford dust” character, described usually as a herbaceous spiciness.In addition to the above reasons, other factors, such as whether a wine is filtered or blended with another grape, will create a producer s overall style and character and thus differentiate it from other producers’ wines made from the same grape.

17th Annual Basil Festival Set for August 16, 17 An action-packed weekend is planned for the 17th annual Basil Festival on Saturday and Sunday, August 16 and 17 at Lone Madrone Tasting Room and Organic Herb Farm. Lone Madrone is located at 2485 Highway 46 West in Paso Robles (the old Sycamore Farms property). Proceeds from this year’s event will benefit KCBX FM public radio, with a portion going to the Paso Robles Boys & Girls Club. This year’s festival takes advantage of the lovely Paso Robles

summer evenings by running from noon until 8 p.m. on Saturday night. Patrons will discover the refreshing taste of basil beer and basil ice cream, great wine and local cuisine while grooving to the tunes of local musicians Three-Quarter Time and Ras Danny and the Reggae All-Stars. There will be a pesto contest on Saturday judged by local celebrity judges. Prizes will be awarded in three categories: traditional pesto, original/creative recipe and crowd favorite. All pesto contest entrants will receive a complimentary 250 ml bottle of Olio Nuevo organic olive oil. Pesto entries must be checked in by 1 pm on Saturday, with a minimum of 2 cups per entry and must be accompanied by an entry form. Festival goers may purchase pesto sampling tickets for $3, which allows a vote for crowd favorite. Judging starts at 2 p.m., with winners and prizes announced at 3:30. And then went inside and were confronted by one of best wine (and wines by the glass) lists around. The food is also a long way above anything you might have found in this charming seaside town at the turn-of-thecentury. KELSEY SEE CANYON VINEYARDS An Experience as Welcoming as the Wines Just off San Luis Bay Drive, south of San Luis Obispo, See Canyon Road gently winds its way among oaks, sycamores and pines, revealing a fresh vista at every turn. Maneuvering the curves between hill and creek, the road is home to a variety of farm stands, rushes of wild flowers and the occasional rogue peacock. And, while See Canyon has a beauty all its own, it’s also home to one of the most welcoming wineries in San Luis Obispo County: Kelsey See Canyon Vineyards. Just a few short minutes into the canyon, an opening in the trees gives way to a vineyard view, complete with strolling peacocks, a sunny porch and purposely strewn wine barrels decorated with every sort of welcome. When you step into the tasting room, you’re likely to be greeted by Dick or Delores Kelsey, or one of their welcoming staff members. With a host of approachable wines for firsttime tasters and aficionados alike, the Kelseys focus on making the tasting experience as welcoming as their wines. “If you like it, it’s a good wine. It’s as simple as that,” explains Dick. But the real treat is just outside, where winemaker Harold Osborne is hard at work

WHEN YOU GO: Be sure to ask about the labels. A small whiteboard above the on-site bottling line captures future quips for the bottles. From the 2006 “in-a-gadda-da-vino” Estate Chardonnay: “Surely all you groovy freaks will tune into this iron butterfly of Chardonnays. Like a walk in the Garden of Eden (In-A-Gadda-Da-Vida) this Chard lays down a dense fog of tropical fruit aromas, as dense as Mary Jane at a ’60s rock concert and ends with a viscous texture, as thick as a lava lamp.” The labels, like the wines, are Harold’s creations. monitoring the barrels, the bottling line, a nest of baby birds and the surf report. Harold has been working with the Kelseys since 2001, though he is pushing 40 years when it comes to winemaking experience. After beginning his career in Napa in the 1970s at Schramsberg, two wines prompted a move to the Central Coast in the early ’80s. “It was the 1977 Chateau Montelena California Chardonnay. I had to find out where the fruit was from,” Harold reminisces. “It turned out it came from Tepusquet Vineyards in the Santa Maria Valley. Later, Beringer’s Los Hermanos label had the same effect, and, after learning their fruit came from the Tepusquet Ranch, I thought to myself ‘boy, this area is really worth looking at.’” So, without a job, Harold picked up and moved to the Central Coast, first working for Maison Deutz (now Laetitia) until 1987 then for Kendall-Jackson in Cambria until 2001, all the while building a career as a flying winemaker, consulting with wineries in Australia, New Zealand, France and California. As Harold was busy making wine around the world, Dick Kelsey was building a barn to store his antique vehicle collection, his www.winecountrythisweek.com
chosen retirement hobby. Then one morning it happened. “I woke up, I looked at the barn and I thought to myself: this could be a really good spot for a winery.” That afternoon, and a couple of fortuitous phone calls later, Kelsey See Canyon Vineyards was born. Within months, he met Harold. The two became fast friends, and have worked together and shared a lot of laughter since, building the winery to Harold’s hands-on standards, and growing the Kelsey See Canyon label from the ground up. Kelsey See Canyon currently offers 11 wines for tasting, including highly praised Chardonnays, Apple Chard, Apple Merlot, incisive reds, a white Pinot Noir and a handful of sparkling varietals inspired by Harold’s work overseas. “Harold doesn’t have to ask anyone about doing anything,” Dick laughs, “He’s the guy that knows, so we let him work his magic.” So far this year, Harold’s magic garnered 27 medals, including two double golds from the San Francisco Chronicle. As for Harold’s philosophy on winemaking, he insists that it be hands on at all times to ensure the finished

product is inviting to patrons. “The key is immediate drinkability,” Harold explains. “Wine should be fruit oriented, with balanced tannin, alcohol and acidity levels from start to finish. A wine can be great in two years; it doesn’t have to be a 20-year wine to be a great wine. Then you have to hope and wait to see if it will be good. Who wants to wait that long?” And so Harold and Dick focus on making wines as inviting as their locale, having as much fun as possible along the way. “It’s about a good experience,” says Dick. “We enjoy every day of this experience, in the winery and in the tasting room. The older I get, the more I believe in fate. A lot of things had to line up in my life for me to be able to do this. RIO SECO VINEYARD Batting a Thousand by Michael Cervin
F
or most people, baseball is nothing like wine. But for Tom Hinkle, the two are interrelated. Tom was a former Major League Baseball scout, visiting high school, college and semipro games, searching for the best young talent out there. “But I never really had time to taste wine,” Tom said. He was busy scouting, though occasionally he’d stop by wineries in Napa just to look around. He planted vineyards on his property in Paso Robles in 1997 and began the wine game while still scouting across the U.S. Having since retired from 28 years of scouting, Tom and his wife Carol now spend their time farming, making and selling wine and running the tasting room. The tasting room is a red barn with a trellised patio covered with grapes that provide shade. The views from this covered porch are vintage Paso Robles; gentle rolling hills, punctuated with mature oak trees, brown grass and glimpses of nearby vineyards. Tom sprayed the interior walls with a protective coating to help keep it cool inside and set up a functional, if modest, tasting area. The wood bar is all hand made, worn and full of character. In addition to the wines, Tom produces olive oil from trees on his 63-acre property. He just likes the challenge of something new. Rio Seco is a hands-on winery with Tom and Carol doing just about everything themselves. That includes Tom learning the art of winemaking. “Do I have formal training? No,” Tom grins. “Hours on the crush pad? Yes!” Tom’s a believer that you learn by doing, something he picked up at college at Cal Poly Pomona. “Making wine isn’t rocket science,” Tom says. Plus there’s the advantage of having a supportive winemaking community near him. And perhaps the toughest part of making wine? “You ruin a lot of clothes,” he says. The wines run the gamut from a light Roussanne to a hefty white blend called VIO RIO, a blend of Orange Muscat and Viognier, which the Hinkles affectionately call “mama’s moonshine”

because of its 16.6 percent alcohol. Rio Seco is especially known for its Cabernet Franc as well as Syrah, Cabernet Sauvignon and their award-winning Zinfandels. Their reds are all mild tannin wines, meant to be consumed soon. Four times a year they offer a Texas Hold ’em tournament where the grand prize is a free oneyear wine club membership. “Not only do we have Texas Hold ’em … we are best known for our Friday Night Concert Series,” Tom adds. “Live music, barbecue and wine for $8 – all summer long. We’ve been doing this for six years now. It’s family friendly and really great music!” The tasting fee is $5 and is applied towards any wine purchase. No wines are off limits, so if it’s open, the Hinkles will pour it. Rio Seco Vineyard is located at 4295 Union Road in Paso Robles and they are open from 11 a.m. to 5 p.m. daily. Tolosa Blends Fine Wine, Fine Art to Benefit Local Schools auctioneer Gil Stork as Master of Ceremonies. Guests will have a chance to mingle with the artists and bid on the individual art barrels. The elegant evening will be catered by the incomparable Megan Loring and paired with Tolosas fine wines. TEACh Foundation (The Endowment for the Advancement of Children) was chosen as the beneficiary for the evenings proceeds. The timing for this funding for the local schools couldn’t be more fortuitous with the recent state-wide budget cuts. The TEACh Foundation goal is to build a permanent
endowment that will directly be distributed to the San Luis Coastal Unified School District – the funds support all schools grades K-12 in San Luis Coastal Unified. “The money raised will go directly to the classroom, allowing students to participate in programs that they may not normally be able to receive,” Maria Slavin, TEACh Foundation President, said. “Our mission statement is, a quality education is a lifetime gift .We hope the endowment will continue to grow even after we are a all long gone,” commented Ms. Slavin.

Tolosa Winery has commissioned six local artists to participate in their inaugural fundraising event, Barrels R Art. “Our mission is to provide a platform for local artists to apply their talent and showcase their creative synergies to another great art form: the creation of wine,” said Bob Schiebelhut principal at Tolosa. Each artist was given a 60 gallon barrel to transform into their unique work of art. Each barrel will be a one of a kind original. Santa Maria Valley Wine Country Announces Wine and Art Passport Event, July 25-27 The Santa Maria Valley Wine Country will be hosting a wine and art experience featuring eight local wineries – The Wine and Art Passport Event, July 25-27. The event includes both large and boutique wineries. In addition to wine tasting, each winery will feature artists displaying their work and offering pieces for purchase. Tasting rooms will be open 11 a.m. to 4 p.m. for wine tasting and art exhibition all three days. Advance tickets are available at the discounted price of $30 and include a Riedel glass (you can choose from one of three pickup loca-

The Stolpman Vineyards Tasting Room is located in charming downtown Solvang at 1659 Copenhagen Drive in Solvang, near the intersection of First Street.
