SALISBURY VINEYARDS Farming in California Since 1850 Genetic Code or Madness? by Jennifer Salisbury Rucks

I

remember the early Saturday mornings with my Dad. I would pull on my “sodhopper” boots to prepare for a day of farming. In the passenger seat of his cream Ranchero, I would make him play that Debby Boone soundtrack over and over. I was only seven and made up all of the words, but he didn’t care … and that endless smell of ripe tomatoes still gives me a sense of comfort. There must be a scientific explanation for the kids of farmers. I do believe that there is a genetic code involved. You inherit a stomach strong enough to last through each bud break and harvest, continuing regardless of the outcome. I tried to escape the legacy (now eight generations of California farmers), thinking I was a “City Girl,” but that only lasted until I had children and then realized that I wanted them to grow up the same way as I did, running through the fields and singing endless songs with my best companion, a white Lab named Mich.

In 1996, a month after I had graduated from Cal Poly and had moved to the Hollywood Hills, my parents decided to move closer to my maternal grandparents on the Central Coast. Avila Beach is where my parents met, fell in love and had their first home – so it was after all, a homecoming. Moving from his family’s Sacramento Delta Farm was a stretch for my father, John Salisbury, but Avila was the only other place he could live. Prior to the move, my Dad spoke to his longtime, Agricultural Leadership friend, Bob Steinhauer (Beringer) and asked him where he would “put his money in winegrapes.” The response was fortunately “on the Central Coast.” Dad did not waste much time, creating a custom harvesting company and purchasing, developing and reselling grape-growing properties (250 acres) at the height of the Paso Robles buildup. But the drive to Paso became old and the landscape around Avila Valley became more interesting. This happened to be Avila Beach’s lowest time, with the big oil cleanup, planning and redevelopment. But John had kept his eye on the hillside off San Luis Bay Drive and there www.winecountrythisweek.com

in 2000, he began planting the ever difficult Pinot Noir, Chardonnay, Pinot Grigio and Syrah. Not satisfied with just having vineyards, in the fall of 2000, John put some money down on an old, dilapidated schoolhouse, envisioning its glory at the turn of the last century. It was a huge renovation project, but he convinced a handful of investors/friends to believe in “his dream.” Five years later after all of the holdups in planning and building we opened our Salisbury Vineyards’ Schoolhouse tasting room in Avila Valley on May 7, 2005. Our opening wasn’t perfect, the countertops were still made of plywood and my second born was only five weeks old, tucked in a tasting bar cubby helping us charge our first customers. The schoolhouse’s history approaches us constantly with those who “went to school there, squatted there, wanted to do something with that place or wanted someone else to do something with that place.” There is something ancient and palpable in the schoolhouse and we are so fortunate that it communicates all our family’s desires: family, farming, community, celebra-

tion and life. All of our varietals have won awards and our stored inventory quickly sells out of our tasting room. There is usually a family member there to sell you our goods, and then if your timing is right, Dad will give you a “Winegrape 101” trolley tour of the vineyard. We do have our traditional side, but are experimental with our sustainable vineyard practices, screwcaps and Pinot Naturale™ – our Pinot Noir without the skins. RIO SECO

W

hen Tom and Carol Hinkle first glimpsed the site where they would eventually establish Rio Seco Vineyard and Winery, they both thought the same thing. It was a mess. They saw more than a dozen or so abandoned cars, remnants of a charred home, and chicken and pig pens. Then there were the bullet holes piercing the walls of an old barn where authorities had busted one of the area’s largest marijuana-growing rings. But as a professional baseball scout with more than 25 years experience, Tom Hinkle has developed his ability to witness potential that others might overlook. “He could look past the mess, to the site, and saw the promise and so many possibilities,” Carol Hinkle said of her husband. That promise has been kept. Despite a schedule that keeps him on the road much of the year, Hinkle and his wife, a retired schoolteacher, have developed Rio Seco into a respected winery that produces

about 4,000 cases annually. Thirty of the ranch’s 64 acres are planted, with a little more than half growing Cabernet Sauvignon, Zinfandel and Cabernet Franc. Hinkle said after much investigation, he also decided to plant Roussanne and Viognier as the winery’s white varietals. Rio Seco’s blend of Viognier and Orange Muscat is playfully named “Rio Vio.” The Hinkles, who live a few miles south of Paso Robles in Atascadero, knew they wanted to stay in San Luis Obispo County even after Tom left his job in 1980 as assistant coach for the Cal Poly baseball team to become a scout. Hinkle, an All-American catcher signed in 1963 by the Detroit Tigers, is responsible for recruiting future Hall of Fame shortstop Ozzie Smith to Cal Poly. Some sound investments enabled the couple to buy the 64-acre spread on Paso Robles’ east side overlooking a dry creek (hence, Rio Seco) in 1996. The site had been used to make a B-movie called “The Junkman,” which Hinkle said is why so many beat-up cars littered the grounds. They were bonded in 1998 and their www.winecountrythisweek.com

initial vintages were made under the direction of a consulting winemaker. But in 2000, the Hinkles purchased winemaking equipment from Pesenti Winery when it was sold to Turley Cellars. The decision to buy the equipment, instead of paying a consulting winemaker, was empowering, said Carol Hinkle. They were now in control of their wine from vineyard to bottle. Along with assistant winemaker Eric Bauer (who pitched for Hinkle at Cal Poly during the early 1970s), Hinkle began crafting single-varietal wines along with blends with baseball-themed labels – Clubhouse Red and the Rio Seco Vineyard Paso Robles MVP Reserve Red Table Wine. Hinkle scouts his grapes the same way he eyes ballplayers, looking for nuances that distinguish great fruit from good fruit. Like most good winemakers, Hinkle believes quality wines are “made” in the vineyards. Annual Basil Festival Set for July 21, 22 An action-packed weekend is planned for the 16th annual Basil Festival on Saturday and Sunday, July 21 and 22 at Lone Madrone Herb Farm & Tasting Room. The farm, formerly known as Sycamore Farm, is located at 2485 Hwy. 46 West in Paso Robles. The event runs both days from 11 a.m. to 4 p.m., and all proceeds will benefit the Make a Wish Foundation. Guests will discover the delights of basil beer, basil ice cream and basil chocolates, as well as a pesto contest, wine tasting, art projects for kids and demonstrations by local artists. Cuisine prepared by Dining with Andre will be available for purchase. Saturday’s pesto contest is open to everyone, with three categories: traditional pesto, original recipe and crowd favorite. Sunday is Family Day at the Basil Festival, with lots of activities for kids. Available will be a Make a Wish quilt project, with squares of fabric for people to create colorful messages. These squares will be assembled into a quilt at a later date by the Almond Country Quilters and then auctioned off. Children can also make flowered hats and bead bracelets, and everyone who buys a four-inch potted plant may paint a pot to put it in. Steve Crouch and

friends will offer story telling, and there will be honey tasting and demonstrations about composting. Adults can participate in Lone Madrone wine tasting, try three types of basil beer provided by Firestone and taste herbal wines. Proceeds from the sale of tshirts, pesto tasting tickets, and basil beer will benefit the Make a Wish Foundation. Entry donations of $5 per couple are suggested (children are free). It is our hope that the Basil Festival will raise $5,000 for the Make a Wish Foundation, which will grant a wish for a local child. TASTE The Revolution Will be Poured by Mark Storer

T

aste transcends trends. It’s not what’s in, but what will stay. To have taste is to have style, feeling combined with sense. Taste strikes a balance. And certainly the winemakers of the San Luis Obispo Vintner’s Association were thinking of these things, along with a few others, when they decided to open their downtown SLO tasting room called simply, TASTE. TASTE is unlike any other wine tasting room to this point in America. That’s changing rapidly, though, as more and more wine tasting facilities adopt the Italian mechanism called Enomatic and install them in their stores and tasting locations. The Enomatic is a relatively complex device that holds any number of bottles of wine, locks them in place and provides them with needed nitrogen so the wine doesn’t spoil. Along with the nitrogen, the bottle is connected to a tube system through which the wine can flow – provided the patron inserts his or her prepaid card – into a glass. The result is simple;

patrons can simply choose a wine and pay a nominal fee (around $1.85) for a one-ounce taste (on Tuesdays at TASTE, you get two ounces for the same price!). Start by prepaying and loading your card with as much money as you’d care to spend, and simply help yourself to the wines of San Luis Obispo County. “It’s certainly user friendly,” says Becky Gray of The SLO Vintner’s Association. “TASTE is really revolutionizing wine tasting and it’s great to have been here at the start of it.” TASTE truly does belong in the hippest town on the Central Coast. The relatively small collective of 16 wineries in the San Luis Obispo area knew they had to stand out when showing their wines. Most people don’t think of SLO as Wine Country and TASTE is out to show them that indeed it is. Much like the cutting edge technology of web 2.0 services in which anyone can contribute to the content of a web-page or Internet site, TASTE allows you to choose your own wines, to experiment with your own tastes and decide which ones you like www.winecountrythisweek.com

without being told what’s in and what’s not. Glasses of wine can be purchased as well as one-ounce pours. There’s an outdoor patio perfect for sipping, talking and people watching. Inside the relatively small space, the walls are adorned with professional black and white portraits of SLO’s winemakers and their families. There is no need for a large tasting room staff as pouring is your job and so there are only one or two people behind the counter – fully versed in the intricacies of the wines you’re drinking in case you have questions. TASTE is a way of life, then. It’s chance to think about your own tastes, your own desires for a glass of wine – and exercise them yourself. This time, the revolution won’t be televised, it’ll simply pour into your glass. Central Coast Renaissance Festival Returns, July 21 & 22 An English Renaissance-era village will magically appear in San Luis Obispo’s El Chorro Regional Park when the Central Coast Renaissance Festival celebrates its 23rd annual summer event on July 21 and 22. More than 800 costumed actors, dancers, musicians, vendors and street characters will create a unique experience for guests, who can indulge in great food and drink, enjoy unique entertainment and shop for Renaissance-inspired crafts at more than 80 shops featuring jewelry, clothing, artwork, leather, drinking vessels, swords and many more period items. Continuous entertainment can be found on multiple stages and throughout the village. A highlight of the day is the Royal Joust, held twice daily. Melt butter in medium-large skillet over medium heat. Saute garlic in butter for 2-3 minutes and then add onion and sauté for another 2 minutes. Add tarragon, thyme, the bottle of Viognier, the broth and bring to a boil. Reduce to a simmer and add chicken breasts. Make sure liquid covers the chicken breasts or they will not cook evenly. Cover and simmer for about 10-12 minutes.

ARUGULA, KALAMATA OLIVE, AND TOMATO SALAD Over a bed of Whole Wheat Couscous topped with a Shallot Lemon Vinaigrette

• 2 cups arugula • 1/4 cup Kalamata olives, pitted and cut into halves • 1/2 cup cherry tomatoes, quartered • 1/2 cup whole wheat Couscous • 1/2 cup water Vinaigrette: • 1 shallot, quartered • 2 Tbs. olive oil • 1-1/2 Tbs. seasoned rice vpinegar • Fresh ground salt and pepper • 1/4 cup fresh squeezed lemon juice To make vinaigrette, combine vinaigrette ingredients in food processor and blend until shallot is finely chopped. Store in fridge until ready to use. For salad combine arugula, olives, and tomatoes in a bowl and sprinkle with fresh ground salt and pepper. Set aside. Heat water in small saucepan and bring to a boil. Add couscous and cover and immediately remove from heat. Toss salad mixture with shallot vinaigrette and serve over a bed of couscous. Serves 2

2007 Winery Music Awards Competition Opens The 2007 Winery Music Awards competition, the Paso Roblesbased showcase of original music artists from across the US and Canada who are unsigned with major record labels, kicked off its five-concert series of competitions in June with five female artists competing for a spot at the final competition in October and a chance to win prizes, cash and a breakthrough recording contract. The June event was held at Maloy O’Neill Vineyards in Paso Robles and featured a variety of musical genres, including pop, rock, country and folk, performed by artists from Los Angeles, San Diego, Sacramento and Portland, OR. “We are very excited about the caliber of talent that we have playing at this summer’s competition,” says Kathy Kelly, producer of the Winery Music Awards. “It just happened that all of the first five artists were female because of how the schedule worked out, but the July through September Elimination Rounds will be fairly balanced between male and female artists.” A panel of notable judges influential in the music, entertainment and wine industries votes its choices for best artists of the competition. Artists are judged in the categories of originality, musicianship and, most importantly, marketability to the wineconsuming market. The competition is open to the music genres of: jazz, rock, blues, new age, acoustic, country, folk, soft rock, reggae and adult contemporary. women aged 21-54 The Grand Prize winner of the previous Winery Music Awards competition, held in 2005, was Arroyo Grande’s rock group, Threes and Nines, who is releasing their first CD this year after winning a recording contract with RNB Music (www.rnbtunes.com), a Los Angeles-based record label. The group’s self-titled CD, will be distributed worldwide by Fontana Distribution, a division of Universal Music. Rio Seco Vineyard & Winery is the philosophy that guides his winemaking, said Hinkle. “The hard part of this business is farming,” he said while walking through the vineyard on a recent postcard-perfect morning. “We really work to get quality fruit.” Rio Seco’s red wines spend up to 24 months in the barrel, then another eight months to a year in the bottle, before their release. Road trips provide Hinkle with plenty of time to mull ideas for the winery. “Tom’s an idea guy,” said Carol. One of those ideas is to build a wood-fire pizza oven to supplement the recently-completed stone barbecue. Step-by-step directions Hinkle downloaded from the Internet sit on a table in the tasting room. He also wants to build a weekend getaway for guests on the winery grounds, what Carol jokingly called a “B and no B.” The barbecue’s put to good use during the summer at Rio Seco’s popular Friday Fun Nights. What started five years ago as a small gathering for friends has steadily grown, with live music, good wine and breathtaking sunsets attracting more and more visitors. Barbecue cooked by Hinkle, when he’s in town, is $6, making it one of the best bargains in the Wine Country. The Hinkles don’t even mind if guests bring their own picnic food

Get the Scoop on Poop at Discovery Museum Bird Dung, Tar Pits and Storm Drains Star in Three New Educational Exhibits at Interactive Children’s Museum

Number two is now number one at the Santa Maria Valley Discovery Museum with the launch of the “Whose Poop Is That?” exhibit, which teaches children to identify birds by the nature of their “splay” or, for lack of a better word that makes children squeal, poop. The exhibit joins Trouble in The Tar Pits and Storm Water Santa Maria Style as one of three new attractions. Each designed to teach, entertain and raise awareness in children of varying ages.

Whose Poop is That? This new environmentally themed exhibit, supported by the Coastal Resource Enhancement Fund, explains all those bird droppings on your windshield and sidewalks. Visitors learn to name and identify local coastal and pelagic birds; understand avian diets; and match bird splay to the correct species. “Trouble in the Tar Pits” is an interactive exhibit hosted by Leander, an extinct American lion. Leander invites kids to recover and identify fossils, learn about tar pits and associated animals. Children who choose to take on the role of Leander must “feed” Leander while avoiding the dangers of the tar pits. If Leander doesn’t eat enough of the other animal species, such as bison, or, if he steps into the hot tar, the game will end. While educational, this exhibit also offers the chance to do some fancy footwork such as walking, leaping and feeding Leander.

What is in your drain? “Storm Water Santa Maria Style” follows the path that water takes from the street in a Santa Maria neighborhood to Santa Maria area parks. This exhibit teaches children that discarding old oil, cigarette butts or other contraband into the gutter and down the drain can ultimately be harmful to our environment, parks, wildlife and loved ones. Smiling families dine at sidewalk cafés with checkered tableclothes and umbrellas. Starry-eyed couples toast each other with wine. Artists wearing bérets paint at their easels. The air is filled with music, laughter and the tempting aromas of French cuisine. Surely this must be France? Actually, it’s the 20th Annual French Festival in Santa Barbara, Saturday and Sunday, July 14 and 15 (Bastille Day Weekend), from 11 a.m. to 7 p.m. in Santa Barbara’s Oak Park. Admission is free. While Parisians celebrate the French Revolution 8,000 miles away, Californians will revel in the sights, sounds, foods and joie de vivre of France at the largest French celebration in the Western United States. More than 20,000 people are expected to attend. It’s where America celebrates France! Non-stop free entertainment fills three stages, including cancan, Moroccan belly dancers, grand opera, hot jazz a la Django Reinhardt, the Femmes Fatales Drag Review, French Tahitian dance, African drumming and dance, Carribbean komba music, and cabaret music in the tradition of Edith Piaf, Maurice Chevalier and Josephine Baker. Wandering mimes, jugglers and accordion players will perform throughout the crowd. There’s also lots for the kids to do. Dozens of chefs prepare fine French food. Enjoy Perrier, Kronenbourg French beer, wine, Champagne, Calistoga and soft drinks.
