ombine 14 years as a chef at a beloved Southern California restaurant, a work ethic that takes nothing for granted, some hearty Italian roots and more than 50 acres of vineyards on the east side of Paso Robles and you have the ingredients of Falcon Nest Vineyard and Winery. Francesco Grande owns Falcon Nest with his wife, Carol, and is the winemaker. Leaving behind a successful restaurant and starting a winery made perfect sense, said Francesco. “Wine has always been part of my job,” he said, referring to the extensive wine lists he compiled. Indeed, he sees a winemaker’s task as a natural extension of a chef’s. “To me,” he said, “making wine is like cooking. I don’t fuss around too much.” Grande said he’s guided in his winemaking by the same philosophy which proved successful as a chef – know what consumers want and provide quality at a reasonable cost. With that in mind, Falcon Nest wines are made in a bold, fruit-forward style without an oversupply of tannins. They are smoothed

out with aging in French oak that typically lasts at least two years and can extend another 24 months after that. The 53 acres of vineyards are planted to varietals that have put Paso Robles at the forefront of California wine producers – Zinfandel, Syrah, Cabernet Sauvignon and Merlot. Grande is a native of southern Italy and that’s reflected the moment you walk into the winery’s tasting room. Shelves are lined with a variety of imported pastas and homemade sauces. Fresh eggs are also for sale, compliments of the various members of the poultry family visitors often hear upon arriving at the winery. There are a handful of tables where guests can enjoy a plate of antipasto and a bottle of wine or a more robust lunch. A recent menu featured selections such as chicken parmigiana, chicken marsala and pork cilantro. Not surprisingly, a larger seating area attached to the existing tasting room is already under construction. The Grandes’ vision for Falcon Nest also includes a bed and breakfast inn. rable experience as much as a memorable wine, said Carol Grande. “Most people know more about wine than they used to,” her husband added, “about what they like. We’re trying to give them an experience, not just sell them wine. They want to meet the people who made the wine, find out the story behind the wine.” The Grandes are more than willing to share those stories. An affable pair, they quickly make visitors feel at home. It’s easy to see Francesco in his former career mingling with guests at his restaurant, talking about the dishes he’s prepared. Seeds of the transition from restauranteurs in fast-paced Southern California to winery owners on a rural country road were planted nearly two decades ago. On a wine-tasting vacation to Paso Robles 17 years ago, the Grandes – like many others before them – fell in love with the area. Having been advised by their accountant to find a tax write-off, the couple acquired the 150-acre spread along with four partners in 1993. The other investors, however, slowly peeled off, leaving the Grandes as the sole owners of the vineyards and winery. They planted the vineyards in 1994 and

waited for them to begin producing fruit, splitting their time between Paso Robles and their Simi Valley restaurant. The Grandes did much of the work themselves. “If you want to do it right, it’s hard work,” said Francesco. “We were planting vines, pulling weeds.” The vineyards are planted in an east-to-west direction, maximizing sun exposure to achieve desired ripeness. The vines produce small yields, leading to intensely flavored fruit. Falcon Nest was bonded in 2004 and, finally, they decided to sell the restaurant and move permanently to Paso. “It was getting too hectic,” said Francesco. “We needed to make a choice.” They never looked back. Falcon Nest is now producing about 5,000 cases annually, and the Grandes say they are in a position to steadily increase that amount over the next several years. They’ve recently retained some seller representatives to help market Falcon Nest wines to other regions of the state and nationwide. Grande, an effervescent gentleman, only sounds a weary note when he speaks of keeping up with the myriad – and ever-changing – state laws governing shipments of wines to consumers. “That’s the hardest part,” he laments. “Making the wine is the easiest part of my life.” The Falcon Nest Vineyard and Winery tasting room is open from 10 a.m. to 7:30 p.m. To locate the winery, take Highway 46 East from Highway 101 to Union Road and turn right. Highway 46 West in Paso Robles – The Real Mother Road By Mark Storer

T

he competition within the wine world is, to put it mildly, fierce. In this world, the microcosm of the small winery is instructive. How can small producers making between 500 and 5,000 cases of wine a year compete with wineries who produce well over 100,000 cases a year? The answer, of course, is the wine itself. After all, if the wine is goodpeople will drink it. But there’s more to that equation. Marketing becomes of primary importance and so it is no wonder when groups of smaller wineries band together to show off their product. The Highway 46 West Winery Group of Paso Robles is an answer to the age-old question of winemaking Davids and Goliaths and is a unique response to getting smaller wineries more well known. Executive Director Kristin Odenwald likens the group to a family. “We were formed to bring people to the West Side and help each other out,” she says. That simplicity is the key to success. Highway 46 West leads across undulating hills where rolling vineyards with names that have made their mark, stand among majestic oaks and soaring views. Brian Benson Cellars, Castoro Cellars, Dark Star Cellars, Doce Robles, Eagle Castle, Fratelli Perata, Grey Wolf, Hunt Cellars, JanKris Winery, Midnight Cellars, Peachy Canyon, Windward Vineyard and Rotta Winery make up the group and their location in the Templeton Gap makes their wines special. “We get the sea breeze in the afternoon and the fog that comes up from Cambria and so while the days are warm – even hot, the evenings cool down and provide a great growing climate,” says Odenwald. But the group is more than that. These are not just cooperative businesses that have bonded together, but longtime neighbors and friends who spend time with each other, talk and play – and even work together. The unique wineries themselves are testa-

ments to the sense of place, of home that wine lovers get when they visit. Grey Wolf, for example, and even Peachy Canyon, are essentially old homes that now boast wineries as residents. And it’s that home-style feeling that has bred a passion for these winemakers and their wines. Indeed, these wineries have all won awards in various categories for everything from Syrah to Zinfandel to Cabernet Sauvignon. So it is that with smaller production come many benefits. The concentration for these winemakers remains their connection with the land on which they grow grapes and make www.winecountrythisweek.com

wine. Their bond with their employees and each other is as important as the quality of the wine they make. In the end, they are able to concentrate on what they love doing while helping each other along the way. Aaron Palmer, tasting room manager at Castoro Cellars puts it another way, “it’s really neat to be part of a group all focused on the same thing, making great wines. We all know each other’s wines pretty well and so when someone is looking for a specific flavor profile we know right where to send them. It’s very much like a family.” The group is a spin-off of the Paso Robles Wine Country Alliance and some of the wineries are still members of that group as well. “We began with the West Fest 2003,” says Odenwald. “The idea was just to do a Passport wine-tasting where people were free to go from winery to winery and stamp their passport.” Customers who go to seven wineries get a handsome West Side poster. Customers who go to all 13 wineries get that same poster signed by all of the winemakers and thus began a tradition. In 2004, the group made their connection formal and began the Group. The Fog Catcher and Best Western Fireside Inn’s in Cambria as well as the Grapeline of Paso Robles and Canyon Villa Bed and Breakfast also in Paso Robles all sponsor West Fest now and customers get a chance to win a stay at any of these properties. The West Fest will be held this year on September 8th and features the Tom Nolan Band, a Southern California Blues outfit that has played on the West Side before. The event kicks off at Peachy Canyon Winery at 2 pm with catering by Dining with Andre of Paso Robles. To keep things safe, the Grapeline, a local tour company and a co-sponsor of the event, will provide shuttles between wineries. The festival will also include a silent auction featuring local wines and tasting room items and gifts. Tickets are $40 per person or $75 per couple.

Central Coast Winemakers to Stand Off at Upcoming Cook-off Visitors Invited to Paso Robles to Help Choose the Evening’s "Best" You be the judge. On Saturday, August 11, people will travel to Paso Robles from all over to cast their votes as more than 30 of the Central Coast’s finest winemakers compete – but not for the “Best Wine Award.” No, this time attendees will vote for the “WinemakerChef” for the evening, as vintners combine their favorite culinary creation with their wines while wooing the attendees for their votes. The event will be held at the newly remodeled River Oaks Hot Springs & Spa. Pasolivo Olive Oil is the major sponsor for the Ninth Annual Winemakers’ Invitational Cook-off, where winemakers, including Opolo Vineyards, Eberle, Justin, Robert Hall, Tobin James and J. Lohr to name a few, will prepare unique culinary cuisine to pair with their favorite wines. “The winemakers love to participate because it breaks from the traditional wine-tasting event,” comments Josh Yaguda, whose family owns Pasolivo Olive Oil. “They get to showcase their finest wines and compete by cooking a dish that will bring out the greatest of qualities in their wines.” The winemakerchef with the most attendee votes at the end of the evening wins the People’s Choice Award. When asked about some of the delectable food that one might

expect at the cook-off, Yaguda laughs, “That’s top secret. The winemaker-chefs prefer not to share what they are preparing in advance because they want to keep their competitive edge.” In addition to the People’s Choice Award, local renowned chefs will also be “tasting and voting” to determine which winemaker-chef will win this year’s coveted Judges’ Award. This sell-out event is expected to draw close to 1,000 attendees. “The word is out about the popularity of this event, so this year, we had to create an event website so people could conveniently purchase tickets online,” says Sally Davis, event chair for the Paso Robles Rotary Club, the host of the event. All proceeds will benefit the Paso Rotary’s Harlow Ford Scholarship Foundation. Over the past 8 years, the Winemakers’ Invitational Cook-off has raised more than $200,000. This year, the Foundation awarded $30,000 to 15 local, graduating high school seniors. STOLPMAN VINEYARDS Where Wine is Made in the Vineyard by Tom Stolpman

W

ine lovers often give lip service to the concept that wine, particularly great wine, is made in the vineyard. At Stolpman, we believe that our Estate Vineyard gives us the opportunity to put outstanding wines in the bottle for our customers. Marilyn and I purchased the “ranch” in Ballard Canyon after several years of searching California for the ideal site. In Ballard Canyon, we found an outcropping of limestone soils with heavy clay top soil. (Limestone is found in areas like Chablis, the right bank of the Gironde in Bordeaux, Champagne, the Rhône and Italy.) After years of working with the vines, it became clear that the potential of the vineyard could not be reached with the vines planted in the early to mid 1990s, before high density vineyards were fully appreciated in California. Beginning in 2004, our team made a decision to begin redeveloping blocks, replacing outmoded vineyards with

state-of-the-art, 21st century plantings. In 2004, we began with the insight that higher density vineyards, while expensive to plant and expensive to farm, because of the need for new equipment to navigate the narrow rows, would allow us to grow fruit with more concentration and structure. The first step was to lay out approximately eight acres on Limestone Hill (the Ridge which fronts Ballard Canyon Road). At about 2500 vines per acre, this is more that three times the density of the blocks planted in this area in 1992. The Sangiovese and Merlot from these small blocks is spectacular – plan to taste the wines in 2008. At the same time we replanted three, our first block with Syrah panted on its own roots. All of our other vines are planted on phylloxera-resistant rootstock; given our experience with Syrah, we felt that a trial with our own rooted vines would give us a chance to see if Syrah really does better when not grafted. We are keeping are fingers crossed – no phylloxera, please! Two blocks were redeveloped in 2005. Ten acres on Rhône Ridge (long-time fans of www.winecountrythisweek.com

our wines will remember our Rhône Ridge Cuvée, made with Syrah, Grenache and Mourvèdre grown on the ridge) had been lying fallow after the Grenache and Mourvèdre were removed. Our nurseries gave us virus-infected vines which made it almost impossible to ripen the fruit. After collaborations between Sashi Moorman, our winemaker; Alberto Antonini, our consultant from Tuscany; and Jeff Newton and Ruben Solorzano of Coastal Vineyard Care Associates (our vineyard manager); Syrah, was planted at a density of three thousand vines per acre. These blocks, which total about 8 acres, are on some of the highest elevations on the Estate and promise to deliver Angeli quality fruit beginning with the 2007 harvest. At the same time we grafted more than 20 acres of Merlot to Syrah, Grenache and a new varietal for Stolpman, Petite Sirah – but with a twist. Rather than grafting with one graft per vine, we used two grafts, training one shoot to the fruit wire to begin a new trellis, and training the other to grow underground; See Stolpman Vineyards, page 27

Silver Stone 2004 Tempranillo Takes ‘Best of Show’ Silver Stone Wines of Paso Robles won the coveted Best of Show award at the 2007 Los Angeles International Wine and Spirits Competition for their 2004 Tempranillo. The results were announced at the Wine & Cars Under the Stars gala at the Fairplex in Los Angeles on June 16. T

he people that make wine and run wineries tend toward the eclectic in their interests, past careers and experiences. Of no one is this more true than Terry Culton of Adelaida Cellars. This social worker, turned winemaker via his friends and family brings a wealth of experience with him – and not just a little serendipitous fortune. His path to winemaking is now carved in legend. On a social work-related visit to a small town in Northern California called Philo, Culton happened upon an old friend, Bob Nye, at the famed sparkling wine maker, Scharffenberger Cellars. The visit changed his life and the course of his career. Culton’s wife Kathleen was accepted at Cal Poly, San Luis Obispo in 1991 to get her B.S is bio-chemistry and so the pair moved to Paso Robles to be close to the campus. That same year, Culton worked the crush at Creston Manor and was subsequently hired by famed Central Coast winemaker and mentor, Ken Volk of Wild Horse. According to Culton, Volk was a generous and giving teacher and he was quickly promoted to

cellar master for Wild Horse. With solid winemaking and cellar master experience under his belt, the Cultons moved back to the North Coast where Terry became cellar master yet again with Edmeades Cellars and from there, he went on to work at Willamette Valley Vineyards which produced some 90,000 cases of wine annually. That experience was invaluable and it helped propel him back across the California border when he was offered the assistant winemaker position at Calera Wine Company in San Benito County. The experiences with Wild Horse, Willamette and Calera made Culton something of an expert in limestone soil Pinot Noir, which remains a passion for him. It wasn’t until 2003 that Culton accepted the position with Adelaida as head winewww.winecountrythisweek.com

maker. With a complex four-tier winemaking program, Culton began to carve out one of the more famous niches in Paso Robles wine making. Adelaida boasts a reserve label (prices range between $35 and $75 a bottle), a white label ($20 to $30 a bottle), the SLO label ($15 to $20 a bottle) and the Schoolhouse label ($13 to $15 a bottle). Each label represents a different set of vineyards and fruit levels used in the wines. This consumerbased structure is one of the reasons why Adelaida has garnered so much press attention. The wines are clearly labeled and there are no hidden agendas in any of the wines – just good, honest winemaking from some of the best fruit that Culton can find. From the renowned reserve label Cabernet Sauvignon to the more moderately priced, yet delectable Schoolhouse Rousanne, Culton has fashioned Adelaida as a maverick in the Central Coast wine community. Enter Cinema E Vino Paradiso is the unique new business venture that’s taking California’s central wine region by storm. Founded by Gina DeGirolamo and Melita Toscano, Cinema E Vino turns scenic vineyards into open-air theaters, allowing movie lovers to sample wines, eat Italian cuisine and enjoy classic films all at the same time. “This is the true meaning of ‘la dolce vita,’” explains DeGirolamo, who said she and Toscano brainstormed their idea with area vintners, winery owners, wine room managers and others before launching the business in January. “It’s like spending an

evening in Tuscany, only better, because this is a luxury everyone can afford.” The evening begins with a private wine tasting at select Paso Robles vineyards like Cass, Villicana, Rio Seco, Maloy O’Neill and Gainey in Santa Ynez. Guests then take specially prepared dinner baskets, blankets and lawn chairs to the 10' x 14' movie screen, where they can lounge and enjoy classic films ranging from “Some Like It Hot” and “Breakfast at Tiffany’s” to “Grease” the sing-a-long.

Outstanding Performances Continue at Summer-Long Competition of Original Music Outstanding performances continue at the 2007 Winery Music Awards competition, the Paso Robles-based showcase of original music artists from across the US who are unsigned with major record labels. Each of five semi-final concerts feature five original music artists competing for a spot at the final competition on October 7 and a chance to win prizes, cash and a breakthrough recording contract. The summer-long series of concerts brings together a variety of musical genres performed by artists across the country – from Los Angeles, CA to Portland, OR to New York City. “This music competition showcases the extraordinary “undiscovered” talent in original music,” says Kathy Kelly, producer of the Winery Music Awards. “Anyone who appreciates quality original music should come to any one of the elimination round concerts to hear it for themselves. And the winery atmosphere makes it even more enjoyable.” A total of twenty unsigned, original music artists compete at the Winery Music Awards Semi-Final Elimination Round concerts, held one Saturday each month from June to September, with the Final competition on Sunday, October 7. Music and entertainment industry professionals judge artist performances in the categories of Originality, Musicianship and Marketability to the prime wine-consuming market – men and women aged 21 to 54. Attendees enjoy fine wine, food and quality original music in a variety of genres surrounded by rows of vineyards and stacks of wine barrels. The breakdown of scores earned by each artist is posted on the website for the Winery Music Awards, www.winerymusicawards.com. WestFest 2007 is the fourth annual Wine and Blues Festival, with major sponsorship from Hampton Inns and Suites, Grapeline Express, Canyon Villa Bed & Breakfast, and Farm Credit West, Fog Catcher Inn and Best Western Fireside Inn, which is produced by the Hwy 46 West Wineries in Paso Robles, California. The event this year will be held Saturday, September 8th at Peachy Canyon Winery located off of Highway 46 West on Bethel Road. Your ticket entitles you to wine club discounts at all participating wineries for the entire weekend, and admission to the festival to hear Rockin’ Blues. The centerpiece of the weekend is the festival where each winery will pour their awardwinning wines. Your ticket also becomes your raffle number for great gifts including two six-liter wine bottles etched and hand-painted with the WestFest logo. Over three hundred guests coming from as far away as Washington State attended the first annual event. The event has limited seating and tickets are sold in advance by the participating wineries. Time, price, food and entertainment to be announced.

Enjoy the Fabulous Wines, Views of B & E Vineyards Just a few years ago women winemakers were a novelty. Only a handful of persistent and talented females were able to push their way to the top in a very competitive field. More and more though, women are not only at the helm of some very prestigious wine operations, they are also garnering their share of accolades and awards. Patricia Bello of B&E Vineyards is a perfect example of the creative spirit that epitomized the women of the vine. Patricia Bello Patricia did not come to her calling in the usual fashion. She and her husband, Jerry began by planting grapes and selling them to local vintners. Patricia, a cutting horse trainer and breeder left the farming duties to Jerry. The vineyards provided her with a marvelous view from her hilltop home and she came to love their brilliant displays in the fall and spring, but winemaking was not something she even considered. Along the way though, she developed an expensive habit. “I love a good bottle of wine but unfortunately I seem to particularly like the ones that cost a

My goal was to produce a really great wine that was also affordable.” With the assistance of other local winemakers, Patricia honed her craft and became a truly exceptional winemaker, overseeing the production of nearly 4000 cases of Cabernet Sauvignon, Merlot, Syrah and a red blend called Red Rhythm. Her insistence on a twenty month aging in French oak barrels produces a rich, velvety wine that has helped her meet her goal of a creating fine wines that will fit into almost anyone’s budget. This year her 2004 Cabernet took the gold at the Paso Robles County Fair and her Syrah and Red Rhythm both won gold medals at the San Francisco Chronicle’s Wine Competition. B&E Vineyards is located on Creston Road in Paso Robles. A drive out to their tasting room will not only provide one with the opportunity to enjoy fabulous wines, but a chance to take in the awe-inspiring view of rolling vineyards that Patricia so loves. then up a stake planted three feet from the mother vine, doubling the density from 720 vines per acre to 1540. The first fruit, harvested in 2006, is making very, very good wines! In 2006, Sashi, Peter Hunken, (now our Director of Marketing and Sales) and Ruben went to France and Italy to visit vineyards and wineries, looking for new ideas for our wine production. While in Côte Rôtie, Ruben was fascinated by the ultra-high-density style of planting used there. After a year of going without new planting (high density vineyards cost about $35,000 to plant and bring to harvest), Ruben suggested the brilliant idea of planting a Côte Rôtie style block on a steep slope facing Ballard Canyon Road. As you may know, Côte Rôtie produces some of the finest Syrah wines in the world. Many folks driving along the road stop and try to figure out what is going on with “tepees” on the side of the hill! Stakes are angled, about 18 inches apart, meeting at the top about six feet in the air. Syrah cuttings were then planted at the base of each stake, to be trained up the stake and head pruned. With a planting of 5,800 vines, this one-acre block may be the highest density in the United States. Look for “Super Syrah” from these vines in the 2009 Vintage. We also have a ten-acre block on Whale Hill which was planted to Cabernet Sauvignon. Who knows what we will plant there! Another future planting will be on about on Limestone Hill, once planted to
