Member Recipe of the Month: Winston’s Grille Shrimp and Grits Ingredients: 1 tsp unsalted butter 1 tbsp olive oil 1/4 tsp salt 1/4 tsp pepper 1/2 oz chopped garlic 2 oz chicken stock 1/2 oz chopped basil 2 oz diced chef style tomatoes 6oz creamy grits 2 pieces chopped bacon 2 oz sliced shitake mushrooms 8 each 31/36 peeled and deveined shrimp

Creamy Grits Ingredients: 1 qt heavy cream 2 c grits 1 qt water 4 oz unsalted butter 2 tbsp kosher salt 1 tsp black ground pepper Procedure: 1. Place heavy cream, water, unsalted butter, kosher salt and pepper in a pot and bring to a boil. 2. Slowly pour in grits and return to a boil. 3. Turn heat down to low and simmer for 6 minutes until grits are thick but not dry. * This makes 16 6 oz portions of grits.

Procedure: 1. Heat olive oil in pan. 2. Add bacon, cook until crispy. 3. Add shrimp, shallots, mushrooms and salt and pepper and toss. 4. Add 2 oz of chicken stock. Want to share? 5. North Carolina Beer Industry is Booming

D

id you know that North Carolina is one of the best states in the country for local breweries and craft beer? The economic climate has been tough on many businesses, but one of North Carolina industries is booming – the beer industry. They have only been legal since 1985, nonetheless there are a number of microbreweries producing a variety of beers all across the state of North Carolina. Robert Poitras, owner of Carolina Brewery—the Triangle’s oldest brewery, has seen the success of the industry unfold since he opened up his establishment in 1995. “I am very excited about the NC beer industry and the quality of the local beers being produced,” Poitras said. “It is nice to be able to visit different parts of the state and sample their local beers. The NC consumer is voting with their dollars by purchasing NC beers. We like this trend and expect it to continue for a long time.” Carolina Brewery recently has signed a distribution deal with Harris Incorporated to enable wider availability of their award winning craft brewed beers in bars, restaurants, grocery stores and other retail accounts in the Triangle area. The distribution deal has already resulted in Carolina Brewery beer being sold for the first time at Harris Teeter

Member Profile: Maggiano’s Little Italy

F

or seven years, the Streets of Southpoint mall, in Durham, North Carolina, have been illuminated by the red and yellow marquee of one of the classiest restaurants in town. Maggiano’s Little Italy, an Italian-style chain of casual dining restaurants with locations throughout the United States, has been a significant attraction to families in the area since it opened it’s revolving door for business. With its large portions and family-friendly environment, the restaurant has been an immense success, and has maintained a strong customer base despite the rough economic climate. “Our goal is to bring family and friends together for special occasions,” says General Manager Kurt Larkins, “and we take reservations two months in advance, so that helps.” Anyone who has successfully gotten reservations would know that on any given night, but especially on a weekend, business is booming. Evidence to that is the fact that OpenTable.com awarded Maggiano’s with the Diner’s Choice Most Booked award for 2008, and the reservations website once again shows Maggiano’s as the most booked restaurant for 2009.

Carolina Beer ...from page 1 grocery stores and served on tap at Maggiano’s Little Italy (see member profile). Meanwhile, microbreweries continue to pop up all over North Carolina. In his spare time from his job at Cisco, Steve Kramling and two partners pulled together equipment and created Lonerider Brewing Company in a Raleigh warehouse. Another, Fullsteam, has just opened in Durham. In fact, according to brewpubzone.com, there are at least 36 microbreweries sprinkled throughout North Carolina in cities like Ashville, Winston Salem, Greenville, Greensboro and Wilmington. Besides the obvious quality of the product, why has North Carolina beer been so successful even in this difficult time? It is most likely due to the reasonable prices. Craft beer is proving to be an affordable luxury as more and more beer consumers are discovering every day.

Poitras believes that beer fans are converting to craft beers to get more flavor while saving money over the more well known brands. “Now that there is more consumer choice with increased local beers and “Pop the Cap” beers (over 6% alcohol) consumers are able to sample and find new favorites,” he said. “We recently brought on distributors to expand our beers into the NC marketplace. For years we self distributed, but the headaches of doing that for a small business became too much. So now we are focused on making our quality beers in bigger volumes and our distributor partners are doing a great job selling and delivering.” For now, the industry seems to be booming for a number of reasons, but most of all, the dedication of those who have been going the extra mile to producing high quality craft beer for the people of North Carolina. NCRLA urges all members to promote North Carolina products in their place of business. Check with your local distributers to find out which NC beers you can have in your restaurant and show out of town visitors that the best beer can be found in North Carolina.

“We had a slight dip on banquets but weekend activity has been very good,” said Larkins. Part of what has made Maggiano’s so successful has been its large portions, which allows diners to experience the cuisine for multiple days for a relatively low price. Recently, the restaurant even began offering a promotion called Today and Tomorrow, which offers two meals for the price of one. With the promotion, a customer can dine-in today and take home an additional meal for tomorrow all for the price of one dish . The menu is limited on this special but their best offerings like the Chicken Pesto Linguine, Baked Ziti with Sausage and the Lasagna are included. “Today and Tomorrow has really driven positive numbers,” said Larkin, “you can’t beat two for the price of one. We’re not trying to make people gain a lot of weight, but it is old school Italian. If you eat here, you’re probably going to have enough food left over for the next day or maybe even two days.”

The Situation: On July 24 and October 5, AH&LA sent media advisories highlighting the widespread coverage of videos taken of ESPN reporter Erin Andrews reportedly via a hotel peephole, as well as the arrest of a man and the ensuing scrutiny on guest information protocol. On October 12, Inside Edition aired a segment in which they visited several hotels to reserve a room next to an employee. In each case, without any questions asked, the reservationist complied. Read AH&LA’s statement on guest information.

What can you do? • AH&LA encourages members to review your hotels’ security procedures with all staff. • Share these security breaches with your staff, using the incidents as examples of “what not to do,” therefore reinforcing your policies. Your Questions Answered Question: What conditions does my restaurant need to meet in order for a sprinkler system to be required by law? Answer: In 2009, the N.C. Building Code Council clarified the code requirement for sprinkler systems. An automatic sprinkler system is required for new restaurants 1) with a minimum seating capacity of 300 persons or more, 2) where the area exceeds 5,000 sq. ft., or 3) where the restaurant is located on a floor other than the ground floor. Sprinklers are required for nightclubs, if the capacity is 100 persons or more. For information regarding the fire codes that may affect your business, contact the Office of the State Fire Marshall at (800) 634-7854 or in Raleigh at (919) 661-5880. Question: What are the laws regarding how many hours I can schedule a worker that has not yet turned 16? Answer: Minors between the ages of 14 and 15 may be employed: • Outside of school hours; • Not more than three hours a day on school days; • Not more than eight hours a day on non-school days; • Not more than 18 hours in any school week; • Not more than 40 hours in any non-school week; and • Only between the hours of 7 a.m. and 7 p.m. except from June 1 through Labor Day, during which time their work may end no later than 9 p.m.

The 10th Annual N.C. State Fair Wine Competition, held October 7-8 in Raleigh, had 416 wines submitted by 51 N.C. wineries. Biltmore Winery led the medal count with 42 awards. Best Sparkling Wine went to Shelton Vineyards for their Blanc de Blanc Brut 2005. On November 16, 2009 the National Gingerbread House Competition will be held in Asheville, North Carolina. An annual holiday tradition at the Grove Park Inn Resort and Spa. Over 300 entries from 20 states. 4 age categories. Delight in the imagination shown in these sugar-and-spice creations, strolling through the competition is a sure way to be swept up in the holiday spirit. The gingerbread houses will be on display from Nov. 18, 2009-Jan. 3, 2010. Chapel Hill’s historic Franklin St. has a new healthy sensation! Butternut Squash has just opened for business and seeks to provide a menu that explores the wonderful vegetarian foods from around the world. Raleigh based Concord Hospitality Enterprises is forming a $300 million private-equity fund to acquire distressed hotels and debt. The fund, expected to close in the first quarter of next year, will target upscale properties such as Sheraton, Westin and Courtyard by Marriott, as well as properties that could convert to those brands. Taste of the Beach at The Outer Banks, North Carolina. March 11-14, 2010 will bring four days of food, drink & fun. Featuring wine tastings, cooking classes, special menu presentations, guest chef appearances, brewery tours and an exciting array of creative combinations of culinary delights and fun activities on the Outer Banks. April 21-24, 2010 will be Charlotte Wine and Food Weekend! The event, which is held in the spring of each even-numbered year, attracts guest winemakers and winery owners from all over the world and has grown into one of the largest events of its kind in the Southeast. Carolina Chocolate Festival to be held in February 2010 - date tba - in Morehead City, North Carolina. Just in time for Valentine’s Day, enjoy a weekend of chocolate delights at this annual celebration. In 2009, all proceeds from the event were donated to local charities, including PAWS and the Boys and Girls club. The Grand Bohemian Hotel Asheville, a Kessler Collection luxury property, has opened just steps away from the Biltmore Estate. The hotel emulates a European rustic and elegant hunting lodge that would have belonged to the Biltmore Estate. The hotel features 104 guestrooms and suites, and its design incorporates natural and traditional elements such as stone flooring, distressed carved oak millwork, and a large flagstone fireplace.
