SHERRY There was a time when fortified wine was to the British Empire what Coca-Cola is to America – the juice de jour. And, like much human endeavor, the raison d’être of fortified wine is a practical one: the most cost effective way to keep wine fresh during long voyages to tropical colonial outposts was to leave it sweet or add extra spirit as a preservative. From those humble beginnings has sprung a multitude of styles of some of the world’s most long lived and memorable wines.
