Blue Cheeses Great Hill Blue (raw cows milk), candied kumquats (Marion, Massachusetts) – Semi-firm and dry with an earthy blue flavor Cashel Blue (cows milk), honeycomb (Tipperary, Ireland) - Creamy blue with a voluptuous texture and a mild tang Goat's Milk Cheeses Selles sur Cher, pickled cherries (Loire Valley, France) - Ash covered with a slight salty-sweetness and nice tang Le Sarlet, marcona almonds (Poitou, France)- Bloomy rind with a hint of ooze and light refreshing flavors Pate de Cabra, rose petal jam (Zaragoza, Spain) -Pungent, tangy and aromatic with a washed rind, made in very small quantities Sheep's Milk Cheeses Pyrenées Ossau Iraty, membrillo (Ossau Valley, France) - Grassy & nutty flavors with a slightly firm texture Queijo de Azeitão, dried apricots (Beira, Portugal) – Renneted with cardoons, with a soft center, sharp tang and the flavor of fresh cream Nisa, peppadew peppers (add 2.)
