GREY WOLF CELLARS Keeping it in the Pack

W
hen Joe Barton took over at Grey Wolf Cellars, it wasn’t necessarily a happy occasion. Barton’s father passed away suddenly in a car crash at 55 years old and it left the family devastated. But since that time, Joe and mom Shirlene have taken the wolf by the ears, so to speak, and turned out amazing wine from one of the most celebrated vineyard growing regions in California. Highway 46 West has become home to so many great wineries that driving its length from Paso Robles in the east to Cambria in the west can be a daylong wine tasting experience. Burton’s Grey Wolf Cellars, a small house sitting atop a hill on the north side of the road, overlooks his vineyards as well as quite a few of his neighbors. He’s also added a new patio for customers to sit and relax on so that they too can enjoy the views and the rolling oaks of the seemingly endless winding hills. But it’s not just topography that Grey Wolf has going for it. It is good, even great wines that Barton is making on a consistent basis.

When I spoke to Barton in the past, he was humble in his response. “I let the vineyard do the talking. I really want to le the grape do the talking, you know?” Indeed, the grapes are doing the talking and Barton has received not just a lot of good press, but a lot of great reviews. Grey Wolf’s 2006 “Soulmate,” A blend of 50% Syrah, 25% Grenache and 25% Petite Sirah, scored a 90 from Robert Parker and the Chanticleer Cuvee, so named because the grapes come from Grey Wolf’s Chanticleer vineyard, scored a 92. The Chanticleer is a blend of 63% Syrah, 25% Petite Sirah and 12% Zinfandel. Meanwhile, Barton has his eyes on the future. 2009 will see construction of a new production building just behind the old farmhouse itself. “The intention is not necessarily to expand production greatly but to help streamline the process,” says Colleen Cave, Grey Wolf’s Tasting Room Manager. Cave indicated that Grey Wolf is working smarter to produce its stable of great wines. “Joe has been doing a lot of work around the place,” she added. The varietals are indeed standout, but www.winecountrythisweek.com
Barton has become known for his blends, even garnering the title “Blend Master” at the Paso Robles Zinfandel festival some years ago. Barton’s talent for blending varietals and allowing them to compliment each other has become his trademark and, like the Grey Wolf itself, Barton has been able to adapt to what is going on around him. If this year’s Petite Sirah is better, smokier and richer than last year’s, then it can be the dominant blend, etc. Barton has also taken advantage of the Pinot Noir vineyards that are coming up in Paso Robles as well. “I do about 100 cases of Pinot a year,” he says. Grey Wolf Cellars is also a part of the Highway 46 West Wine Association. As part of group, Barton has been able to tap into other vineyards than his own and work with other winemakers in planning and discussing events, techniques and shared concerns. The group has banded together to form one of the more innovative and fun wine tours in the Paso Robles AVA. A trip across Highway 46 west is a trip through diverse microclimates perfect for growing different grape varietals and making great wine. The great wine, though, is also a product of one of the most unique grape growing

Cool, moist Pacific air works its way up the canyon and graces the vines with its presence while the general heat of the late morning and early afternoon keeps the grapes thriving. That cool air is one of the reasons several vineyards started planting Pinot Noir, but the region is home to an abundant number of varietals and all of them thrive in this special region. Grey Wolf’s production is about 4,000 cases a year and Barton intends to keep it relatively small to keep an eye on quality. He’s added new equipment and focused more on sustainable practices as well and this has added to the quality of Grey Wolf’s wines. Keeping Grey Wolf in the family was a priority for the Barton’s dating back to their first Vineyard planting in the late 1990s. The centerpiece of the tasting room is a beautiful family portrait featuring Joe, his sister, mom Shirlene and his later father Joe Sr. It’s that feeling of closeness, of working together that has allowed Joe Barton the chance to create some of the most unique and wonderful wines in the region. Paso Robles ‘Taste of Downtown’ – Fine Cuisine, Music & Art On Saturday, September 20, the 11th Annual Taste of Downtown promises a superb culinary, artistic and musical experience in historic downtown Paso Robles. With the purchase of the $25 Taste of Downtown ticket pass, participants will sample the creations of 35 local restaurants, a brewery, wineries, ice cream and coffee houses as well as free admission to an open-air concert. Downtown Paso Robles also will host the 7th annual Arte de Tiza on Saturday, September 20th sponsored by the Paso Robles Art Association, Rabobank, Santa Lucia Bank, First Bank of San Luis Obispo, and WalMart. The chalk-art celebration will offer a visual feast of chalk murals created by area artists on the sidewalk of Pine Street between 11th and 12th streets. Artwork will be in progress beginning at 8 a.m. the morning of the Taste. From 11 a.m. to 4 p.m., ticket holders will stroll from eatery to eatery, sampling the cuisine of 35 fine dining establishments, wineries and brewery, some so new that townspeople may not have discovered them yet. Participating eateries and wine tasting for wineries located outside the downtown core will offer their creations in the park. The Taste passes also will admit attendees to the concert at the bandstand in the park from 2 to 4 p.m. playing a variety of genres. The Taste of Downtown ticket passes are available for $25. PREFERRED RESTAURANTS MAMA’S MEATBALL One pretty reliable way to find out just how good the food at a local restaurant is, is to ask somebody in the restaurant business. Ask a bartender, a waiter, anyone in fact, what they think of Mama’s meatballs in San Luis Obispo and their lips begin to quiver, their eyes roll towards the heavens, they sigh; that is how good Mama’s Meatball is. Set in a small courtyard off of one of the town’s main streets, in a place called the Old Creamery, Mama’s Meatball is actually divided in two. On the right is the take-out where people line up to get their orders of meatballs and more. To the left, fronted by a huge-trunked tree and a water fountain, is the intimate restaurant with it’s mural of the Mediterranean across the back. Meatballs aside, the restaurant, under owner and chef Nicola Allegretta, offers a wide range of authentic Italian dishes, many of them

INTELLIGENCE FOR THE WINE CONSUMER
How does wine get its color? White wine, rosé wine, red wine. Together they span a range of color from very pale yellow to pink to deep purple. There’s a world of differences among the styles of these wines and the ways they are made. But the way in which they each achieve their own degree of color is simply dependent upon how much time the grapes skins spend in contact with the grape juice. As the juice from crushed red grapes remains in contact with the grape skins, the pigments of the skins add color to the juice. This is called the maceration time. Depending on the wine and the winemaker’s preference, it could last from several days to several weeks. The longer the maceration period, the darker the wine’s final color. Throughout the maceration, the skins tend to rise to the top, from the carbon dioxide that is released during fermentation. This “cap” of skins is regularly pushed back into the juice, or “punched down,” to extract as much color from the skins as possible. Before white wine is fermented, the juice is separated from the skins, thereby having little or no contact with the grape skins. White wine can be made from either red or white grapes because the juice coming from any grape is always clear, but only red grapes will be used to make red wine. When rosé wine is being made, the grape skins are left in contact with the fermenting juice for a time period just long enough to create a pink-colored juice. Then the skins are removed and the remaining juice is fermented in the same manner as juice for making white wine. PER BACCO CELLARS by Michael Cervin o be “Per Baccoed” is to have a “wow” moment, and that’s just what happens when people come into contact with Per Bacco wines. The tasting room sits just off the 101 freeway near San Luis Obispo and isn’t the typical tasting room, but rather is filled with barrels and fermentation equipment. The brain child of Craig Shannon and Cafe Roma restaurant owner Marco Rizzo, the focus is on a restrained style of winemaking, one that allows the nuances of the grape to shine through. With an enthusiasm for Pinot Noir, Per Bacco has set a new bar for quality wine from San Luis Obispo County. It’s rather odd then, that when they first launched in 1998, Pinot Noir was a tough sell. At that time in the wine history of California, wineries were gearing up for Syrah. “Everyone thought the next big thing was going to be Syrah,” said winemaker Craig Shannon. Per Bacco didn’t want to be like everyone else so they decided to go with Pinot Noir, in spite of the clear indications that Syrah would be the new “it” wine. “We

were looking at the Pinots around us and they were doing what California always does, these big barnstormer wines,” he said. “We wanted the elegance, the sensual nuances of Pinot Noir which is a food friendly with good acid structure.” But selling a wine nobody wanted proved daunting. Shannon said that many Pinot Noir producers were actually trying to dump their Pinot fruit on the bulk market. And then something happened. A little movie called Sideways came out and was nominated for multiple Academy Awards. The movie

extolled the virtues of Pinot Noir over every other wine. Suddenly everyone wanted Pinot Noir. And Per Bacco had been making it all along, refining their touch and producing excellent versions. Craig, an avid surfer, also scored very well with the national press on his very first release of Pinot. Though Per Bacco doesn’t own any vineyards (“I did my years of purgatory with the wind and the fog,” Shannon admits) they source fruit from multiple vineyards, which allows them to, “concentrate 100 percent on the wine,” Shannon said. “It’s impossible to have the one ultimate piece of ground.” They may not have the ideal ground, but they are making the ideal wines. From small batches of Pinot Noir, to Chardonnay to Syrah, Petite Sirah and Pinot Grigio, the wines are focused, handcrafted and true to the varietal characteristics of each grape. Carina Cellars Presents ‘Three People, Seven Places’ Carina Cellars is proud to represent Santa Barbara artist Katie Desrochers in the tasting room for the first show in their Fall Art Series. A recent graduate from UC Santa Barbara with degrees in both English and Philosophy, Desrochers is a completely self-taught artist and a self-proclaimed painter since childhood. Attributing much of the influences on her current work to her studies at UCSB, Desrochers enjoys focusing on painting portraits of people and places. “I try to reconcile the surreality of memory and hindsight with the reality of faces and representation,” said Desrochers. Upon returning from three months spent in Europe, Desrochers had also amassed a wealth of photographs and memories which have inspired several pieces for this show. One rather dark and ethereal piece depicts a night spent in Prague, Czech Republic, while a series of three portraits captures herself and her two best friends at various stages of their journey.

West Fest Wine and Blues Festival at 46 West Wineries Come and enjoy the fifth annual Wine and Blues Festival, September 13, produced by the fifteen Hwy 46 West Wineries in Paso Robles. The Guy Budd Band will be playing blues in the Peachy Canyon Winery Gazebo from 4 to 7 p.m. while fifteen wineries from the 46 West group pour award-winning wines. FALCON NEST WINERY Just Like a Trip to Tuscany If you’ve ever had the good fortune to visit a winery in Italy, you know what it’s like to enjoy the combination of great wine, beautiful scenery and most of all, warm and welcoming people. Now you don’t have to endure a 12-hour plane flight to experience the delights of Italy. Falcon Nest Winery is the creation of Francesco Grande and his lovely wife, Carolynn. Francesco was born in Calabria and grew up in the Tuscany region of Italy. Like so many of his fellow countrymen, his passion for food and wine has been the focus of his life. For twenty-eight years he ran a successful and very, very busy restaurant in Los Angeles. It took a long-time friend and customer to convince him that he needed a little vacation. A trip up to the Paso Robles wine-growing region was just supposed to provide a little rest and relaxation. But with only one look at the stunningly beautiful rolling hills of Central California, Francesco knew that it was time for a new challenge. It was time to return to his roots. “Wine has been in my family for centuries. My father was a winemaker, my grandfather was a winemaker as was his father before him and his father before him! In Italy, it is a way of life,” says Francesco. With the gusto he gave to his cooking, Francesco has turned his land into some of the finest vineyards in the area. His picturesque little winery on the top of the hill looks over a seemingly endless sea of vines. He now has fifty-five acres planted in Cabernet, Merlot, Syrah, Petite Verdot and Zinfandel. “I love the art of cooking, but once the food is on the table, it is soon gone. There is an art to winemaking as well plus it lasts a lot longer. With aging wine becomes better. Food becomes worse!” says Francesco. Francesco has not totally hung up his chef’s apron, though. The tasting room offers an array of his handmade sauces and Italian specialties. Guests are often treated to tasty morsels along side the fine wines of Falcon Nest. Over the years the landscape of the Santa Maria Valley has steadily evolved and, unbeknownst to many, offers one of the most unique Wine Country experiences on the Central Coast. While traveling Highway 101 into Santa Maria, a glance to the west offers views of a growing city that takes pride in its historic roots. A view to the east offers a variety of agricultural landscapes with a vineyard here and there, steadily increasing until you realize it: you are in Wine Country, Santa Maria Valley Wine Country. The region encompasses more than 50 wineries, with an ideal setting for Rhône and Burgundian varietals. Proximity to the coast, an average temperature around 64 degrees, surrounding mountain ranges and cool winds out of the northwest come together where the Santa Maria River winds through a myriad of elevated plateaus. Santa Maria Valley is the only region on the west coasts of North and South America where two transverse mountain ranges are located, creating a unique funnel effect, pushing breezes into the valley.
