tangent Explore the Limitless Possibilities of Alternative White Wines
L
aunched just last year, tangent focuses exclusively on vibrant alternative white wines. Made of grapes grown primarily in the Edna Valley, each wine presents lively acidity, minerality and pure varietal character. Created by third-generation Edna Valley grape-growing pioneers John Niven and Michael Blaney, along with veteran winemaker Christian Roguenant, their second vintage is set to be released next month. The lineup will include Albariño, Viognier, Pinot Blanc, Pinot Gris, Sauvignon Blanc, and a blend called Ecclestone, all bottled under screwcap. John and Michael’s grandparents, Jack and Catharine Niven, were among the first to plant wine grapes in the Edna Valley more than 30 years ago. The family recognized the Edna Valley as having one of the longest growing seasons in California, culminating in fully ripe grapes with good acid structure each vintage. As they looked to the future, it was clear that the next, and then the third, generation would develop and grow the

family business into the new millennium. The Niven family currently owns and operates Baileyana Winery, Paragon Vineyard Company, Orcutt Road Cellars, and they are partners with Diageo in Edna Valley Vineyards. John and Michael were given carte blanche to look at the portfolio with an eye for what could be missing. Their brainstorming brought about the cutting-edge tangent concept. www.winecountrythisweek.com
Literally meaning “a departure from the ordinary,” the name tangent is meant to convey the family’s commitment to white wines other than the mainstream Chardonnay. Bottled entirely with screwcap closures, tangent wines are meant to be enjoyed when young and fresh. Winemaker Christian Roguenant sees the screwcap as a true advantage. “The screwcap ensures retention of the bright aromatics and flavors I taste when we bottle the wine,” he says. “The person drinking it will get to enjoy that same refreshing experience. Plus, it is just plain easier to open!” The family’s commitment to the success of this fresh project begins in the vineyard. “tangent is an exciting and logical next step for us,” says John Niven. “Edna Valley provides the perfect conditions for growing these grapes, and the marketplace is more than ready for these wines. We already grow most of the Tangent varietals, and are currently in the process of planting more. In fact, we’re putting in 50 acres of Albariño,

making it the biggest Albariño vineyard outside of Spain and Portugal.” Made to be enjoyed with food, tangent occupies a rapidly growing niche of crisp, refreshing white wines. It is the first winery to dedicate its entire production to this category, and Roguenant is well-suited to making esoteric wines. “I learned to love wines made of grapes picked a bit earlier, with higher acids and lower sugar levels, while making Champagne in France and sparkling wines in California,” he says. “The varietally correct flavors in the grapes we harvest here remind me of those experiences, and lend themselves perfectly to this style. No oak contact is necessary, as my aim is to preserve the freshness of each wine and let the varietal speak for itself.” tangent’s website, www.tangentwines.com, is well-designed, crisp and clean, just like the wines. It is not only easy to navigate, but is a virtual encyclopedia of alternative white varietals. They have taken an educational stance and afford consumers not only tangent-specific information, but insights into the origin of each varietal and how each evolved from old-world winemaking into the current realm. The tangent tasting room is housed in the historic Independence Schoolhouse, a one-room school built by local farm workers in 1909. Fully restored by the Nivens in 1998, it stands in the heart of the Edna Valley. Verandas expand on all sides, overlooking carefully manicured vineyards. Plan for a bit of extra time to linger, as it is a fabulous place to stop and relax. Inside, the tangent wines are poured along side its sister brand Baileyana. The room is filled with self-indulgent gourmet foods, unique and interesting giftware, and carefully chosen clothing items. It all adds up to a wonderful tasting experience. As the world of alternative whites is limitless, John and Michael’s brainstorming never seems to stop. In 2007 they are planting more varietals including Riesling, Grenache Blanc and even Grüner Veltliner. SALISBURY VINEYARDS A Family Operation, Indeed by Dave Wilcox
I
t’s not an unusual story. After a lifetime of hard work and raising a family, John Salisbury decided to try his hand at the wine business. Now erase the romantic image of a “gentleman farmer” who decided to retire to the Wine Country and purchased a few acres of vineyards as something of a hobby. John Salisbury is a sixth-generation California farmer who has no plans to retire and has no idea how to be a gentleman farmer. His dream is to be working the vineyards well into his 90s, cane in one hand, pruning shears in the other, while his grandchildren – the eighth generation of farmers – run the operation. Not a bad legacy. “That’s my goal in life,” Salisbury, who will turn 65 this year, said recently, standing in the century-old schoolhouse he had renovated to serve as the tasting room for Salisbury Vineyards near Avila Beach. It’s a local landmark just off Highway 101 between San Luis Obispo and Pismo Beach. Salisbury Vineyards is, indeed, a family

operation. John Salisbury’s daughter, Jennifer Salisbury Rucks, and her husband, Kevin run most of the business operations. John’s wife, Maridel, coordinates the fine art gallery that is www.winecountrythisweek.com
part of the tasting room. Even his son, an artist who lives in New Orleans, provides art for the stunning labels. “My job is farming and keeping an eye on the winemakers,” said John Salisbury. Salisbury uses a trio of experienced winemakers, including Harold Osborne, who spent 10 years at Kendall-Jackson and now works for nearby Kelsey See Canyon Winery. Osborne is responsible for, among other wines, the unique Pinot Naturale. Steve Rasmussen, who was the winemaker for Talley Vineyards for 18 years, and Signe Zoller, formerly of Meridian, also produce wines for Salisbury. “That’s why we started out of the block so well,” Salisbury said of the winemakers’ talents. Salisbury has planted 40 acres off San Luis Bay Drive, near See Canyon, about three miles from the popular town of Avila Beach. He has another 10 acres on the east side of Paso Robles, split between Cabernet Sauvignon and Syrah. About half of the Avila Valley vineyard is Pinot Noir, with Chardonnay, Pinot Grigio and a cool-weather Syrah among the other varietals.

WINE COUNTRY THIS WEEK WINERY FEATURE Although only a few miles from the ocean, the Avila Valley is colder and gets more sun than most people think, said Salisbury. Beach residents, only a couple of miles south, know they can get a reprieve from the fog by hopping in their cars and heading to Avila. “The Chumash called it the ‘Hole in the Sky’,” said Salisbury. Salisbury Vineyards currently produces between 4,500 and 5,000 cases annually, but John Salisbury said he expects to soon push that number to 8,000. While Salisbury defers to his daughter as the brains behind the business, she quickly asserts that her father is the visionary. “He comes up with the clever ideas,” she said. “He’s really the entrepreneurial spirit.” That type of forward thinking is exemplified by Salisbury’s idea to plant three acres of Albariño, a white varietal immensely popular in Spain which remains relatively unknown among American wine drinkers. Salisbury and a number of others expect that to change, with Albariño’s complex, but very accessible, structure appealing to the legions of Chardonnay fans. The varietal is now being grown primarily in southern Oregon, the Santa Ynez Valley and Napa’s Carneros region. In San Luis Obispo County, 50 acres of Albariño are planted in the Edna Valley. According to a review of one Albariño, it has some of the citrusy, grassy flavors of Sauvignon Blanc, flashes of the richer peach and pineapple flavors of Viognier, and the delicate, minerally character of Riesling. Already a popular stop for wine tasting, with trolley tours of the vineyards and the fine art gallery, Salisbury is gearing up for the spring and summer season with a number of events. It will be among several San Luis Obispo-area wineries participating May 3-6 in the annual “Roll Out the Barrels” event sponsored by the SLO Vintners Association. On Saturday and Sunday there will be live music, gourmet food and olive oil tastings and barrel samples. The following week, on May 12, the Salisbury Schoolhouse Tasting Room will be the site of a fund raiser for the Port San Luis Lighthouse, located near Avila Beach. The “Raise the Roof” event is scheduled for 6 p.m. and will include wine, appetizers, and silent and live auctions. Tickets are $65 per person. Then, on May 20, Salisbury will host the first of its 2007 Schoolhouse Rock series of Sunday afternoon concerts on the patio, featuring a variety of musical styles. After a lifetime of farming, John Salisbury knows that working the land is a precarious occupation subject to boom-and-bust cycles. “You’re living on the edge, depending on the crop,” he said. But as a sixth-generation farmer, Salisbury also knows a good thing when he sees it. Surveying his surroundings, he sums up, “great location, great wine.” In any schoolhouse, that equals success. riving down Vineyard Drive in Paso Robles, you are embraced on all sides by massive oak trees and rolling vineyards until you hit the bend in the road that signals the presence of olive country. back to the U.S. starting in the early 1990s. It was then that she began planting olive trees, starting with a few hundred and finally growing her orchard to more than 9000 trees in more than a dozen varietals. Since then, the family has seen its olive oil operation grow to more than 3000 gallons, and its oils sold everywhere from Crate & Barrel to Dean and Deluca, Tokyo. Locally, it’s served tableside at both Villa Creek and Artisan restaurants in Paso Robles, and is used for drizzling on pizzas at the Nancy Silverton/ Mario Batali eatery MOZZA in Los Angeles. “It’s wonderful to be recognized in the industry, but I’d have to say that what’s even more meaningful to us is how we’ve been supported and embraced by the community here in Paso Robles,” says Joshua’s wife Joeli, who handles daily operations, sales and marketing. “Without the interest of the people who bring their out-of-town guests to our tasting room time and again, the wineries sending people our way, and people like Chef Tom at Villa Creek who just know how to use our olive oils and make them shine, we just

eciding whether to make the Hunt Cellars tasting room your first or last stop on a day of wine tasting is a tough choice. On the one hand, the multiple awardwinning winery is a can’t-miss spot in the Paso Robles Wine Country and you wouldn’t want to run out of time to get there. On the other, you’ll likely find it hard to leave once you’ve arrived. Step into the remodeled farmhouse and you’ll see a gleaming, white baby grand piano, a testament to the musical background of the winery’s owner and winemaker, David Hunt. The next thing you’ll notice is the massive, curving bar made of red oak with a red mahogany finish. Hunt and a friend handcrafted the bar, echoing the hands-on style he brings to crafting the muscular red wines that have earned raves. Opened in 1999, the structure sits perched amid a little more than three acres of shady eucalyptus and oak trees and a sprawling, lush lawn ideal for picnicking.

Wrapped around the building is a 1,200square-foot veranda with a number of tables overlooking the grounds. It’s the kind of place where a family might plunk down a couple of lawn chairs and play ball with their dog. In fact, said Tammy Schaefer, that’s just what happened a few weeks ago. Schaefer, the tasting room manager and director of Hunt Cellars’ wine club, exudes a personality as warm as the Tuscan-style interior walls. Visitors are welcomed as old friends, not tourists just passing through. Lingering is encouraged. Tasting lists include six samples for $5. Reserve vintages are $10. They always end with one of Hunt Cellars’ Ports. Hunt Cellars is gaining considerable notice for its Ports – the April issue of Wine Enthusiast magazine awarded 93 points to its Oldie But Goodie Tawny Port – and the tasting room offers a unique – not to mention decadent – way to sample one of them. They’re called Chocolate Zinfandel Port Shooters. Gourmet dark chocolate cups, filled to the brim with Port. “There’s a lot of ways that you can do it, www.winecountrythisweek.com
depending on how brave you are,” Schaefer replied playfully. “Some prefer the ‘sip and nibble, nibble and sip,’ method,” she said. Others pop the luscious delicacy in their mouth all at once. “We sell these like there’s no tomorrow.” With a full kitchen, the tasting room also hosts winemaker dinners with up to 40 guests. David Hunt personally selects eight to ten wines to pair with each of eight courses, and tells the story of each wine as a new course is served. Once the dinner is finished, Hunt retires to the piano to entertain the satiated guests. Hunt is planning to break ground soon on a new tasting room at the same site, with a Colonial style reminiscent of the winery’s labels. The existing tasting room will be transformed into Oakdale Market, which he said will sell specialty gourmet foods ideal for picnics. Winemaker Profile: Peachy Canyon

W
hen Josh Beckett got a degree in English from the University of San Diego, wine was the farthest thing from his mind. True, that in his youth he worked for the likes of Robert Nadeau (Nadeau Cellars) and Toby Shumrich (Tobin James Cellars), winemakers who have earned fame and credit for bringing Paso Robles to wine greatness. True, he was born to winemaking parents and grew up in the city of Paso Robles. But perhaps because of these things, Josh walked away from this beautiful Central Coast town for the beach climes of San Diego. “I had no desire to get involved,” says Beckett. “I went to manage a surf shop and was going to be a school teacher. I just never saw the opportunity that I had.” Owned by Josh’s parents, that opportunity was Peachy Canyon winery and its now famous Zinfandel wines among other varietals. Josh had grown up in the wine business, working harvests, crushing grapes and learning from the very best winemakers how wine worked

and how it was made. Things change. Josh Beckett, at 33 years old, is now the winemaker at Peachy Canyon. Overseeing production of some 84,000 cases of wine a year, he did some extension classes from UC Davis to get a little honing on what is otherwise a working man’s education in wine. “I learned this business hands-on from the bottom up,” he says. Josh has overseen the recent changes at Peachy Canyon and put the family winery back on the map again after a few years of slow down. “We hit a growth spurt and the wines got too clean and too boring so we’ve taken it back and gotten back to our roots.” He oversees every step of the process now and is involved at all levels working with his assistant, Linda Baher, a recent graduate of Fresno State University’s oenology program. “It’s real hands on winemaking now and we want to let the fruit shine through.” The focus on quality has paid off with critical acclaim and a loyal following. Josh has taken the reigns and made family a Peachy Canyon priority. “I love harvest time the most, seeing the www.winecountrythisweek.com
fruit come in and thinking about what we’re going to do with it. Everybody’s there and we keep it fun and keep everybody involved,” he says. From office staff to vineyard workers, Josh gets input from the Peachy Canyon family and the wines once again represent a return to handcrafted, hands-on production. The results are self-evident in wine made carefully and joyfully by the second generation of Beckett’s to run the operation. Who knows? With his wife Gibsey, a young daughter and a child on the way, maybe a third generation isn’t so far off, either. Paso Robles Wine Festival Celebrates 25th Anniversary The annual Paso Robles Wine Festival will celebrate its 25th Anniversary on Saturday, May 19. In recognition of this 25-year-old wine tasting celebration, the Paso Robles Wine Country Alliance is opening the doors one hour early to those who purchase a Silver Pass. The new limited Silver Pass admission is $75 and allows wine enthusiasts the opportunity to experience one of the largest outdoor wine tasting festivals in California, a full hour before general admission ($50). Silver Pass tickets are available for advance purchase only and are now available on line at www.pasowine.com. “We see this as an added value for fans of Paso Robles Wine Country to sample an array of their favorite brands before the whole event,” states Stacie Jacob, Wine Country Alliance Executive Director. “Silver Pass visitors are able to enjoy the designated tasting area with exclusivity and visit each tasting booth with relative ease.”

Pinot Noirs and Paellas at Windward Vineyard’s Pinot and Paella Cook-off 16 Great Chefs and 13 Paso Pinot Noir Producers Sunday, June 10, at the Templeton Community Park, 2-5pm The Templeton Community Park is the stage for the 4th Annual Pinot and Paella Cook-off. The area’s best chefs compete with unique paella recipes, paired with wine from a dozen Paso Robles Pinot Noir producers. The CookOff and Live Auction benefit the Paso Robles Youth Arts Foundation (PRYAF). The 4th Annual Pinot and Paella Cook-off will feature delights of the Spanish beat, paella, live music and dance. Sixteen chefs compete in a friendly competition in several categories judged by local celebrities and attendees in the coveted “Peoples Choice Award.” Thirteen Pinot Noir producers from Paso Robles complement the paella competition. This year’s live auction will feature large format collectors bottles filled with a one-of-a-kind Paso Pinot blend. In addition, this year’s festival will include live Latin dance music and a salsa dance exposition will delight attendees and get them moving on the dance floor! Last years event raised $28,000 for PRYAF, and this year should once again sell out. The Paso Robles Youth Arts Foundation makes training in the arts available to all children in the community through drama, music, dance and other creative venues. “The children of our communities are our most important assets and need to be supported,” says the founder of PRYAF, Donna Berg. INGREDIENTS: • 1/2 lb shrimp, peeled and deveined • 1/2 lb monkfish or halibut cut, into 1 oz. pieces • 1 lb small squid bodies, cleaned and cut into rings and tentacles • 15 baby artichokes, cleaned and cut in half • 4 Tbs squid ink (available through Central Coast Seafoods in Atascadero) • 8 cloves garlic, sliced • 2 Tbs parsley, minced • 8 cups fish broth or clam juice • 1/4 tsp saffron • Lemon juice • 1/4 cup olive oil, preferably virgin • 1 onion, diced • 2 red bell peppers, diced • 2 tomatoes, diced • 1 Tbs. smoked paprika • 3 cups Spanish rice (Bomba) METHOD: In a food processor add 4 cloves of garlic, parsley and lemon juice (4 tablespoons). Puree ingredients, then add squid ink and puree again. You should end up with a black, loose pesto. Salt and pepper all seafood. Heat paella pan over medium-high heat. Heat olive oil. Sear all seafood to medium rare and reserve on a plate. Add artichokes, onions and remaining garlic. Sauté until onions are soft. Add tomatoes, peppers, smoked paprika and saffron. Sauté until the tomatoes no longer seem wet. In a “cross” pattern add the rice to the pan, Stirring continually cook the rice and coat it with the vegetable mixture. Add stock, reserving 2 cups for later. Stir the rice and broth together and reduce heat to medium low to low. Stir in squid ink “pesto” and let simmer for 10 minutes. The stock will start to evaporate, when small bubbles start to appear in the rice add 1 cup of stock and salt and pepper to taste. Let cook for another 10 minutes. Add the seafood and any residual liquid from seafood. Let simmer until there is no more liquid visible and seafood is cooked through. (Do not overcook seafood.) Remove from heat and let stand for 5 minutes.

Fifteenth Annual Hospice du Rhône, May 3-5 by Michael Rockich What is it about Rhône style wines that attracts? What are some descriptors that bring to mind Rhône style wines? Here are a few that may work: exciting, fun, electric, friendly, summertime, picnic, barbeque. And that’s not to forget the rich, thick, luscious, dark Syrahs that can be plenty serious. A great place to taste the multitude of Rhône style wines is at the world’s largest annual celebration of domestic and international Rhône style wines, the Hospice du Rhône (HdR). The HdR will take place at the California Mid-State Fairgrounds in Paso Robles, May 3-5. Red, white, and pink wines will gush as vintners from around the globe pour. The theme for the 15th annual HdR is appropriately, “Annie get your glass.” There will be ample opportunity to get an introduction to, or enhance your continuing education about Rhône style wines. Several seminars will focus on various wines, vintners, or regions of Rhône style wines. Winegrowers will be present at seminars to pour and discourse on their wines. There will be ample opportunity to pair Rhône wines with fine cuisine. On Friday the Rhône Fête Feast luncheon takes place. At the Friday evening Dine Around chefs from top restaurants in the
area will prepare special dinners featuring gourmet cuisine for guests. The following day the Saturday Luncheon is held, and will be followed by the One-of-a Kind Barrel Auction. The Farewell Gala dinner on Saturday evening usually features grilled fare, and is an occasion to taste a wide variety of Rhône style wines by sampling, sharing and exchanging bottles with other guests. The HdR begins Thursday with the annual bowling tournament for fans and vintners. Friday and Saturday mornings continental breakfast is waiting for guests at the fairgrounds. Roll Out the Barrels in San Luis Obispo San Luis Obispo Vintners Association announced the expansion of their popular Roll Out The Barrels weekend event. The new addition this year will be, Barrels in the Plaza, Thursday evening in downtown SLO’s mission plaza from 5:30 to 7:30 p.m. This portion of the weekend will focus primarily on “locally grown, locally made” as SLO Vintner’s partner up with local food producers and vendors to celebrate a complete culinary experience right from the terroir of SLO. “We are very excited about the ‘locally grown, locally made’ evening, which gives us a chance to celebrate not only the wine but an entire culinary experience of SLO”, said Becky Gray, San Luis Obispo Vintners Executive Director. The weekend itinerary includes four days of celebration beginning Thursday, May 3 with Barrels In The Plaza (5:30-7:30 p.m.); on Friday, May 4 it’s Winemaker Dinners; on Saturday and Sunday, May 5 and 6 it’s Passport to SLO Wine Country. The annual two-day passport portion (Saturday and Sunday), will allow visitors to San Luis Obispo entry to 16 wineries where they will experience wine and food 1 pairings, reserve barrel tastings, entertain-

The tasting rooms of Highway 46 West invite you to enjoy our neighborhood, relax under the spell of our friendly environment and savor life while sipping our spectacular wines. The participating wineries consist of Brian Benson Cellars, Castoro Cellars, Dark Star Cellars, Doce Robles, Eagle Castle, Fratelli Perata, Grey Wolf, Hunt Cellars, JanKris Winery, Midnight Cellars, Peachy Canyon, Windward Vineyard and Rotta Winery and are all included on the 46 West Passport. The passport is your map to the Westside, including descriptions and hours for each winery. Just like a travel passport you will get a unique stamp from each winery. Once you get 7 stamps you will receive a beautifully designed poster of all the participating wineries labels. When your passport is full with all thirteen stamps, your gift is another poster signed by all of the winemakers and entry into a quarterly drawing for prizes from a weekend stay at one of the groups hotel sponsors to a guided tasting tour. Throughout the year the group puts on other events such as Tax Revolt Weekend and West Fest. West Fest is the big event of the year. All thirteen wineries come together to pour great wines while guests listen to blues music and enjoy delicious food from local caterers.
