GREY WOLF CELLARS It’s All About the Wine by Mark Storer

T

he sound of machinery and men working permeates the weekday atmosphere around the Grey Wolf winery. Tractors, backhoes and pounding hammers are a stark contrast to the rolling green vineyards that steep themselves beneath age-old oak trees standing sentinel above all. Overseeing the chaos, I found Joe Barton, owner and winemaker, as the old farmhouse that has become the Grey Wolf den undergoes landscape construction. The redwood deck finally weathered and gave way to stamped concrete and a new patio will be placed on the side yard to accommodate wine-aficionados who frequent the west-side Paso Robles facility on Highway 46. Grey Wolf is thriving. When Joe Barton was just 24 years old, however, he had to take the reins of the fledgling family business and become the proprietor and leader of the pack. Joe’s father was killed in a traffic accident in 1998 at the age of young age of 50. Four years previously, the elder Barton and his wife and two kids had moved to Paso Robles from Bakersfield to

begin the dream of a winery called Grey Wolf. It was a family business and the name reflected that commitment to the family, a group of dedicated individuals working together as a team, a pack. Producing small lots of quality wines, Grey Wolf developed a following that is once again steadily growing under the scion of the family. www.winecountrythisweek.com

The younger Barton had just finished an internship with Kendall Jackson when the tragedy occurred. He’d graduated previously from Cal Poly, San Luis Obispo with a degree in Fruit Science. “I was unsure of myself. But, I got some good help and I was given encouragement,” says Barton, now 33. Barton’s mother still plays a role at the winery and is involved in the business, but it is Joe who runs the day to day wine-making operations. With about 12 acres under vines on 15 acres of property, Grey Wolf is one of the boutique wineries that continue to grow in quality if not quantity. “We do about 4,000 cases a year and really, I don’t want to do a whole lot more. We’re going to try to compete in quality and develop this property for better grapes as well as buy the best fruit I can find,” says Barton. Indeed, his manner is manic and he talks constantly, getting more animated as he begins talking about wine. “All the staff’s in here. When it comes to the wine, it’s just me and Enrique,” says Barton. Preferring to keep a close eye on everything he does, Barton doesn’t employ many people on the wine-making staff. His

WINE COUNTRY THIS WEEK WINERY FEATURE assistant, Enrique, has known him since those days in the 90’s and occasionally, he will have an intern or student employee from the University. “But like I tell them, if I teach you right—then this [Grey Wolf] shouldn’t be your job. You should move on from here.” Grey Wolf’s quality has gone up and that’s not just subjective. Barton is receiving more awards and more press attention as he continues to put quality at the top of his priorities. “You’re making these wines when you’re harvesting them,” he says. “I’m looking at the fruit and deciding what I’m going to do with it, if I’m going to blend it and now, I’ve sort of found my niche as to where I’m getting fruit from—so I know what to expect for the most part.” He’s positively giddy when it comes to the process. Speaking in bigger gestures, he talks about wine-making in the reckless way of a child stringing sentences together when he’s encountered his first passion. It’s evident that Barton is in his element, focusing on all of the particulars and nuances that make a wine great. “I’m using more and more new oak. Before, I was using about 20% whereas now, I’m up to probably 50% new oak, and a lot of it Hungarian,” says Barton. “The largest proportion of my barrels is between one and four years old.” He speaks of “before” as though it were a time etched in stone, and maybe it is for him. Before is when Grey Wolf was a small producer with a relatively loyal wine club and not a whole lot more. There is no date that defines it, but he is no longer in the “before” apparently. Now, Grey Wolf is focusing on the wine, not the club. Now, Grey Wolf is producing high quality wines in small lots and focusing on the fruit, the process and the brand. In other words, it’s all about the wine. “I like making Zinfandel still quite a bit and that’s become a real focus right now. We’re growing Syrah, Petite Sirah, Malbec, Cabernet Sauvignon, Cabernet Franc and some Grenache on the estate now,” says Barton. “I really love Cab Franc, but it’s not producing the way I want it to and it’s not the quality I’m looking for. It’s a struggler vine and it’s inconsistent. Cab Franc is the one I’ve really struggled to find a good source for.” Barton is also experimenting with Tempranillo and other Spanish varietals. The Westside micro-climate in Paso Robles means more ocean influence as the breeze actually picks up in the afternoons cooling off and even bringing fog to the region that can vary from the daytime and nighttime temperatures as much as 50 degrees. “Malbec is my favorite right now. But even that doesn’t really thrive like I want it to, here [in this climate]. I’m getting a good source, though. It’s got that good strong mouth-feel and it’s a great wine.” Barton’s goal is to create what he calls a “pull-market.” He’d rather have his wines being pulled than having to push them. It’s no exercise in esotericism that quality is job one at Grey Wolf. “Ultimately, if you’re making a good wine, it will market itself. I mean, it’s such a corporate business now. I don’t even see how I could get to the size that some of these guys are doing,” he says. But there is still room for boutique wineries. “If you’re good at it and you’re making a solid wine, there’s a market there for you.” Grey Wolf Cellars is located on Highway 46 West in Paso Robles just 2.5 miles west of Highway 101. www.winecountrythisweek.com

Sharing the Crisis and the Dream at the Midlife Crisis Winery “Midlife Crisis – what a great name – why did you call it that?” Kevin and Jill Mittan, the owners of Midlife Crisis Winery, are used to this question and many others. The Midlife Crisis Winery is pouring at the Paso Robles Wine Festival for the third time as the festival celebrates its 25th anniversary. The premiere Midlife Crisis pouring in 2005 was as unorthodox as the winery name. Midlife Crisis poured barrel samples (and only barrel samples) of their 2004 first vintage Pinot Grigio, Zinfandel and Syrah to an enthusiastic crowd. But what is the real answer to the winery being named the Midlife Crisis Winery? Jill’s flip-quick answer is because she is the same age as Disneyland. The real answer is a lot more complex – as are all things in life – and involves many reasons too numerous to name all coming together in a moment of crisis. The result became an overwhelming desire to chase an impossible dream, to believe in it totally and a determination to make it real. They threw caution to the wind once the decision was made to start the winery. In less than four months, they sold their house in Los Angeles, bought land in Paso Robles, started the winery and crushed their first grapes. Both agree that if they took the time to stop and think, there might not be a winery today.

But there is a winery – at least a pretty good start of one. The 2004 vintage numbered about 850 cases and featured ten wines including Pinot Grigio, Chardonnay, Syrah, Sangiovese, Barbera, Merlot, Zinfandel, a red blend and two sparkling wines (the last three named for the couple’s Australian Shepherds) and is virtually sold out. The 2004 wines won more than a dozen awards including three gold medals. Production doubled in 2005 and a limited release Rosé of Syrah was added to the wine list. The 2005 vintage premiered in January and has already garnered two gold medals. The 2006 wines are in the barrel and feature the addition of Nebbiolo to Midlife Crisis’ line of wine. Winemaking and all other duties are a shared responsibility for Jill and Kevin. The wines reflect their love of food friendly wines. The wines are started in neutral oak until the essence of the fruit has a chance to emerge. Then, oak is used carefully to enhance, not overpower, the fruit. balanced wines that pair well with food but that can also stand alone. In September of 2005, the Mittans opened a cooperative wine tasting room in downtown Paso Robles called Wines on Pine. In November of 2006, Midlife Crisis Winery went solo. The tasting room at 1244 Pine Street became the tasting room for the Midlife Crisis Winery only. Aided by tasting room manager and wine maven, Allison Groves, the tasting room is open five days a week allowing the Mittans to make wines on the weekend. You see, as the dream becomes real and the winery grows, day jobs in Los Angeles support it. Five days a week, the Mittans are working in LA in the entertainment industry and two days a week, they are in Paso making wine and pushing the dream along. The next phase of the dream is the development of a winery and vineyard on their property and of, eventually, making wine full time in Paso Robles. Paso Robles Wine Festival is a Celebration of Growth Learn more about the Paso Robles wine industry’s growth during the 25-day countdown It all started on Saturday, May 19, 1983 when 17 Paso Robles wineries came together in the downtown city park to showcase their artistry for the First Annual Paso Robles Wine Festival. These visionaries organized themselves to create a marquee event for the burgeoning wine industry that at the time totaled 17 wineries in Paso Robles. Today, there are 170 wineries in Paso Robles with more than 90 producers that showcase their wines during this annual jubilee. On Saturday, May 19, the Paso Robles wine industry will celebrate the 25th Annual Paso Robles Wine Festival in the downtown city park, where it all began. “We used half the park the first year,” says Herman Schwartz, founding member of the Paso Robles Wine Festival Committee. “I worked with an advanced art student for the first logo of the festival, lined up the T-shirts we sold and guaranteed the sales. We may have had 1,200 or 1,500 people that year. That started the ball rolling.” The Paso Robles Wine Festival, always held the third weekend of May, is one of the largest outdoor wine festivals in the State of California. Approximately 6,500 tickets are sold annually to wine enthusiasts traveling to Paso Robles from all over the nation. “I remember in 1985 when we were up to 22 wineries in the park and people were coming from as far away as the East Coast just for the festival,” states Gary Eberle, owner of Eberle Winery. “It was then that I really knew we were onto something (Wine Festival) good.” Today, the wine industry of Paso Robles and San Luis Obispo County is responsible for $113M in tourism expenditures. In 1983, there were a total of 5,159 vineyard acres in the Paso Robles American Viticultural Area (AVA), which also found its start that year. The growing landscape was in its youth and on the cusp of tremendous growth. An early estimate from 1983 states that $10M in income was derived annually from the vineyard side of the industry. Twenty-five years later there are more than 170 wineries in the Paso Robles AVA, with 26,000 vineyard acres growing 40 different varietals. The economic impact of wine and wine grapes in Paso Robles and San Luis Obispo County equates to $1.8B. Paso Robles Wine Country is the third largest and fastest growing wine region in California. “As the Wine Industry of Paso Robles grows and matures, so does the Paso Robles Wine Festival,” said Stacie Jacob, executive director of the Paso Robles Wine Country Alliance. “What rings true throughout the last 25 years is that the Wine Festival continues to be a celebration about the world-class wines produced in Paso Robles. The entire community comes together for this annual showcase.” The 25th Annual Paso Robles Wine Festival weekend is May 18 through 20. The marquee event in the park is Saturday, May 19, and will feature more than 90 wineries pouring more than 150 distinct and different wines from Paso Robles. New to the festival is the Silver Pass admission ticket, in recognition of the 25th year. The new limited Silver Pass admission is $75 and allows wine enthusiasts the opportunity to experience one of the

he Pleasant Valley may be the offbroadway tasting sect of Paso Robles, but Silver Horse Vineyard and Winery is more than happy to call it home. One of the charms, aside from being minutes from the downtown square, is that on a given Saturday as limo groups turn many Highway 46 wineries into a Mardi Gras undo itself, the new stunning tasting room that the Kroener Family opened in early 2005 is the perfect locale for those seeking exciting big red blends in a setting that showcases Paso Wine Country at its best. “Silver Horse represents a whole lifestyle,” winemaker Stephen Kroener says. “The tasting room is down home, comfy, cozy and elegant.” The Kroeners embarked on this winery adventure in 1996, and a renovation of the existing operation soon followed. “Our

We do make a Syrah to appease the masses.” Within three years, Silver Horse Winery will be 100% estate grown. In the tasting room, a $5 fee gets you a full tasting of the current releases. For a $10 fee you can taste and leave with the handsome Spieglau tasting glass. “It’s just a very friendly place to be,” Stephen sums it up. “We have people come in and taste and hang out for half an hour. Winemaker Profile: Windward Vineyard

ears before the current Pinot Noir renaissance began, Marc Goldberg and his wife, Maggie D’Ambrosia, established Windward Vineyard with the idea of doing one thing and doing it well – producing nothing less than “a great American, Burgundian-style Pinot Noir.” A dozen years after its first release, Windward remains “exclusively Pinot Noir.” Goldberg’s path to owning a winery devoted to Pinot Noir began in the mid-1950s in Pittsburg. Burgundy’s great wines seduced Goldberg at an early age. As he and D’Ambrosia traveled the country, however, they found the “New World” Pinots didn’t inspire similar passion. That is until 1987, when they tasted a 1976 Pinot produced by Hoffman Mountain Ranch (HMR). “It was just glorious,” recalled Goldberg. Goldberg and D’Ambrosia set out to find terroir similar to that of HMR. They found it in an old barley farm in the Templeton Gap region west of Paso Robles, where ocean breezes sweep through on their way inland. The chalky, well-drained soil combined with

daily temperature extremes of as much as 50 degrees are ideal for producing Pinot Noir, said Goldberg. They planted the vineyard in 1989 and by 1995 released their first estate-bottled vintage. Only grapes grown at Windward Vineyard are used in the wine, in the “Monopole” style of complete viticultural control over the vineyard and the winemaking. Indeed, Goldberg says a profile of a winemaker who produces Pinot Noir is really a profile of the vineyard. That is where the finicky grape’s character is shaped, year in and year out. “I’m not the winemaker,” said Goldberg. “I’m the wine shepherd. Windward Vineyard is the winemaker. You let the vineyard express itself in the glass.” While Goldberg, who worked as a hospital administrator until retiring in 1995, enjoys the life as proprietor of a winery, he quickly grew tired of the stuffy, de rigeur winemaker dinners. Now 74, Goldberg sought to establish a more relaxed event involving food and wine. The result was the “Pinot and Paella CookOff,” pairing Pinot Noir with the traditional Spanish dish featuring rice, saffron, shellfish, www.winecountrythisweek.com

sausage, or whatever other ingredient that’s available. Windward hosted the first event and Goldberg said they had to turn away about 150 people. Goldberg and D’Ambrosia then decided to make it a community event, with all proceeds donated to the Paso Robles Youth Arts Foundation. Last year, the cook-off raised $28,000 for the foundation. This year’s fourth annual “Pinot and Paella Cook-Off” is June 10th at Templeton Community Park. Sixteen chefs will offer their interpretations of paella, with 12 Paso Robles wineries pouring Pinot Noir. Visitors vote for the best dish (last year’s winner included duck legs, Mexican-style chorizo, ham and tiger shrimp.) That 12 wineries from the area are pouring Pinot is something of a story in itself, noted Goldberg, recalling that when he established Windward in 1989 there were 12 wineries total in Paso Robles. Held on the grounds of select Paso Robles wineries, the Winery Music Awards competition (www.winerymusicawards.com) showcases the best original, unsigned music artists in California and beyond with a backdrop of grapevines, stacks of wine barrels and the smell of fermenting wine in the air. The artists compete for significant prizes contributed by a variety of sponsor companies within and outside the music industry. A panel of notable judges influential in the music, entertainment and wine industries votes its choices for best artists of the competition. Artists are judged in the categories of originality, musicianship and, most importantly, marketability to the wine-consuming market. The competition is open to the music genres of: jazz, rock, blues, new age, acoustic, country, folk, soft rock, reggae and adult contemporary. The Grand Prize winner of the previous Winery Music Awards competition, held in 2005, was Arroyo Grande’s rock group, Threes and Nines, who is releasing their first CD this year after winning a recording contract with RNB Music (www.rnbtunes.com), a Los Angeles-based record label. The group’s self-titled CD, will be distributed worldwide by Fontana Distribution, a division of Universal Music. A second CD, titled Blend, featuring a compilation of many of the 2005 artists complete with artist bios and liner notes on the Paso Robles Wine Region, will also be released by RNB Music this summer and will be available for sale at all Winery Music Awards concerts and the website. The Winery Music Awards qualifying concerts are held on one Saturday each month from June to September, with the Final competition and Awards show on Saturday, October 6. Confirmed hosting wineries include Maloy-O’Neill Winery (www.maloyoneill.com) and Silver Horse Winery (www.silverhorse.com). “I had the opportunity to be a part of the 2005 Winery Music Awards by pouring my wine for some of the judges at a private tasting. I am excited to be a host winery for this year’s Winery Music Awards. Music and wine are a perfect pairing and this event celebrates that pairing perfectly,” says Shannon O’Neill of Maloy-O’Neill Winery. Stephen Kroener of Silver Horse Winery adds, “We’re thrilled to be a host venue for the 2007 Winery Music Awards. JUSTIN Chardonnay Perfectly Paired with Green Asparagus Salad When attempting to create a perfect pairing of wine and food, vegetables are not among the foods that commonly come to mind as starting points. Their bitter components can make wine pairing difficult. But when searching for perfectly healthy foods, asparagus is arguably among the best. It has high nutrient density, is rich in folic acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin. Asparagus has no fat or cholesterol and is low in sodium. So, in an effort to create a perfect pairing of wine with one of earth’s hard-to-pair, yet perfect foods, Executive Chef Ryan Swarthout at JUSTIN Vineyards & Winery in Paso Robles selects a crisp 2006 JUSTIN Chardonnay. “The 2006 JUSTIN Chardonnay is not a buttery-style wine, and it’s not over oaked,” explains Swarthout. “The fruit aspect cuts through the bitterness of the asparagus while the goat cheese element is contrasted nicely by the acidity of the wine.” The JUSTIN Chardonnay has aromas of green apple and pineapple, opens with a burst of lively apricot and lemon, and finishes with smooth notes of honey and vanilla cream. GREEN ASPARAGUS SALAD BLACK TRUFFLES AND CHÈVRE GOAT CHEESE VINAIGRETTE

Serves 6-8

• 1 bunch asparagus • 1 tbsp. of canned black truffle peelings • 1 oz. Chèvre goat cheese • 2 each whole peeled shallots • 1 clove garlic • 2 tbsp. whole grain Dijon mustard • 1/4 cup sherry vinegar • 1-1/2 cups olive oil (extra virgin) • Salt and pepper for seasoning • Micro greens for garnish Preparation for the Asparagus: Bring 2 quarts of water to a boil. Prepare an ice bath. Cut the bottoms of the asparagus off. When the water has reached a boil blanch for 30 to 45 seconds. Remove from the boiling water and place into the ice bath. Preparation for the Vinaigrette: Bring the goat cheese to room temperature. Rough chop the shallots and the garlic clove. Heat 1 tbsp. of olive oil over medium high heat and sauté the shallot and garlic until caramelized. Place the goat cheese, shallots, garlic, dijon mustard and sherry vinegar into a blender. Puree until smooth, with the blender still running slowly drizzle in the olive oil. Season with salt and pepper. Assembly: Slice the blanched asparagus very thinly and place into a mixing bowl. Add the black truffle peelings and drizzle about 2 tablespoons of the vinaigrette into the same bowl. Mix the asparagus, truffle peelings and the vinaigrette all together. Place into a ring mould and press firmly to pack together. Remove ring mould, garnish with the micro greens and enjoy with a glass of JUSTIN Chardonnay.

Black Hand Cellars’ Journey Has Just Begun The family at Black Hand Cellars is a husband and wife team, Tom and Terrie Banish, with a young daughter, Cassidie, to keep them on their toes. It all started with their honeymoon trip through the Russian River Valley north toward California’s border, Humbolt County. Through this experience, the focus from being in the fishery business changed dramatically to the wine business, but with one thing in common … the desire to produce quality out of God’s green earth. After returning from this adventure, Tom and Terrie continued the journey in a bath tub in Ventura County with strawberries, making great “drink me now and don’t call me early tomorrow” strawberry wine! From there they joined “Cellarmasters” in Woodland Hills, CA and learned the ropes of making quality wine. Many classes and awards later, they made a commitment to their passion to produce quality wine for everyone to enjoy. The vineyard, Torie Ranch (Tom + Terrie = Torie), is located on the west side of San Miguel with nearly three acres planted in the Estrella River and French clones of Syrah. The vineyard is farmed by hand, using the latest vineyard practices to produce quality grapes for their Syrah. Tom is the winemaker, whose background includes more than seven years experience with the Central Coast’s very own

prestigious wineries, such as Justin, Treana and Zenaida. Today, Tom is a consulting winemaker, full-time assistant winemaker for Paso Robles Wine Services along with being a father, husband and running a vineyard and boutique winery, Black Hand Cellars. The name, Black Hand Cellars, evolved through many stories from the great-grandmother on the Banish side of the family about how her husband made great wine, and how the Black Hand Mafia found a liking to his wine and would seek him out for it. Hence, the name Black Hand Cellars. From this era they found the stories of his great-grandfather’s experiences interesting. With their identity chosen, they have enjoyed focusing the theme around the lifestyle of the roaring ’20s along with saluting the stained hands of workers harvesting the rich, red wine varietals. The logo ties in their daughter, Cassidie’s hand print, as she was born when they harvested the first grapes off Torie Ranch into the first Black Hand Cellars bottle, the 2002 Syrah, which was bottled when she turned one year old. 12th Annual Atascadero Wine Festival, June 22-23 The 12th Annual Atascadero Wine Festival on Friday and Saturday, June 22-23, promises to be a very special weekend. Friday morning, you can tee it up at the Atascadero Chamber of Commerce Golf Tournament at Chalk Mountain Golf Course. Your $90 entry fee includes greens fee, cart, lunch, drinks, and goody bag, and benefits the Chamber of Commerce. On Friday evening, the Wine Festival starts its celebration at Atascadero’s scenic Pavilion on the Lake. Enjoy an exclusive live auction benefiting the Charles Paddock Zoo, as well as a unique gourmet winemaker dinner created by several acclaimed local chefs and paired with wonderful Central Coast wines. Cost for the Friday evening event, which starts at 6 p.m. is $100. The Lakeside Wine Tasting and Fine Arts Festival held Saturday afternoon at Atascadero Lake Park from 11:30 a.m. to 4 p.m. will feature the wines of over 100 Central Coast wineries. The ticket price – $30 in advance, $35 at the door – includes a commemorative wine glass, ten tasting tickets, and live music from noon to 4 p.m. Food will be available for purchase1 from a variety of local restaurants. Held in

conjunction with the Atascadero Art Association, the Saturday event will also feature the works of several local artists, and this year’s event will also feature a number of local crafts people as well. July 13th Friday Night Wine and Cheese The Highway 46 West Wineries Group is having another great Friday night Wine and Cheese Event. The group of 13 wineries will be tasting will taste award-winning wines. Great cheese and breads will be available for tasting to complement the wine. The event will be held at Doce Robles Winery on Friday, July 13 from 6 to 8 p.m. The admission for the event is $15 per person and $25 per couple, tickets sold at the door. The participating wineries consist of Brian Benson Cellars, Castoro Cellars, Dark Star Cellars, Doce Robles, Eagle Castle, Fratelli Perata, Grey Wolf, Hunt Cellars, JanKris Winery, Midnight Cellars, Peachy Canyon, Windward Vineyard and Rotta Winery and are all included on the 46 West Passport. The passport is your map to the Westside, including descriptions and hours for each winery. Just like a travel passport you will get a unique stamp from each winery. Once you get 7 stamps you will receive a beautifully designed poster of all the participating wineries labels. When your passport is full with all thirteen stamps, your gift is another poster signed by all of the winemakers and entry into a quarterly drawing for prizes from a weekend stay at one of the groups hotel sponsors to a guided tasting tour. Throughout the year the group puts on other events such as Tax Revolt Weekend and West Fest. West Fest is the big event of the year. All thirteen wineries come together to pour great wines while guests listen to blues music and enjoy delicious food from local caterers.
