HALTER RANCH A Carefully Farmed Vineyard on a Ranch Rich with History

T

he earliest deed on record for this sprawling ranch in the Adelaida area was to Paso Robles pioneer Edwin Smith in the 1880s. The ranch was later broken up, and in 1943 the MacGilllivray family purchased the portion that encompassed what is now Halter Ranch. Swiss-born businessman/environmentalist Hansjörg Wyss bought 900 acres of the property in 2000, including the Victorian farmhouse built by Smith. Along with an enthusiastic, hard-working team, Wyss has put more than seven years and much care into his property. In the 250-acre vineyard, each block has been carefully planted to not only the variety best suited for each, but on particular rootstock and with certain clones. Additionally, the farmhouse has been completely renovated, and the groundwork has been laid for a new, state-of-the-art winery.

VINEYARD The estate Halter Ranch Vineyard was initiated in 1996 and has since been expanded to its present 250 acres under the direction of Winegrower Mitch Wyss. His dedication to sustainable farming practices is evident; organic methods of fertilization, weed removal, pest control and mildew protection are used whenever possible. “Sustainable farming not only respects and protects the land and the people who work it,” says Wyss, “it also results in wines that more eloquently express their provenance.” Wyss applied the same sort of dedication and passion when planting the estate vineyard. There are 19 grape varieties planted in 42 separate vineyard blocks delineated primarily based on soil types, which range from calcareous clay to clay loam with shale deposits.

About 60% are Bordeaux varieties and 40% Rhône varieties, plus a bit of Zinfandel. Selected for their individual characteristics, such as small clusters and berry sizes, Wyss carefully chose multiple clones (genetic variations) and rootstocks for each variety. Additionally, the vines occupy the steepest, most south-facing slopes on the property, which reach an elevation of 1800 feet and provide excellent water drainage and sun exposure. These slopes are also rich in limestone, a feature of many of the world’s finest vineyards. When these conditions synergistically come together (well-drained soils, low-yielding clones and high-density plantings), small crops of intensely flavored fruit are the result; the prerequisite for making superb wines.

WINES The wide range of varieties grown in their estate vineyard affords Winemaker Bill Sheffer the opportunity to produce not only wines of a single variety like Syrah and Cabernet Sauvignon but also creative blends like his Ranch Red. Sheffer’s wines are rich and genuine, each expressing varietal character as well as the unique attributes of the estate vineyard. “My aim with these wines is to make them drinkable upon release,” he says, “but also to balance them with powerful depth and concentration, allowing them to age well in the bottle.” Current releases include 2004 Syrah, 2004 Cabernet Sauvignon, 2003 Reserve Cabernet Sauvignon, 2006 Viognier, and a 2006 Rhône style Rosé. The 2003 Synthesis Estate Reserve, Sheffer’s choice of the optimum blend from the best red wine lots of the vintage, will be released in the fall. TASTING ROOM Located about ten miles west of downtown Paso Robles on Adelaida Road, a visit to Halter Ranch is like taking a step back in time. The 19th century Victorian farmhouse stands as a welcoming beacon, with serenely beautiful gardens wrapping around the porches on all sides. KENNETH VOLK VINEYARDS Coming Around Full Circle by Mark Storer

W

hen one thinks of Central Coast wines, one automatically thinks of Paso Robles, certainly. San Luis Obispo has made a name for itself in its relatively small growing area as well. Santa Ynez comes to mind and so do Los Olivos and the Santa Rita Hills and those are the primary areas most consumers think about when it comes to Santa Barbara County. In fact, Santa Barbara County grows a large majority of its grapes in the Santa Maria Valley, north of Los Olivos, south of San Luis Obispo and east of the self-proclaimed “AllAmerican” city, Santa Maria. This is Wine Country and the list of vineyards here read like a who’s who of Central Coast farming: Cambria’s Katherine’s Vineyard, Bien Nacido, Rancho Sisquoc, Garey Vineyard. The first Vinifera grapes to come to Santa Barbara County were grown right here as well. So it is fitting that one of the names synonymous with Central Coast winemaking came here to open his eponymous winery. Ken Volk – the man who made Wild Horse, has come to Santa Maria. Purchasing what was the orig-

inal Byron winery and after that, a Robert Mondavi property, Volk bought the “fixerupper” on Tepusquet Canyon, above the creek and reinvented his wines and his company. “This is some of the nicest soil in Santa Barbara County,” says Volk who speaks excitedly when he talks about wine. “The fractured rock and sandy soils give us great drainage and produce really nice fruit.” Volk’s 12-acre winery has its own vineyard of four acres and it’s all Chardonnay. To be sure, Volk is making Pinot Noir, Chardonnay and a limted amount of Syrah, but he is able to tap into all of the vineyards in this area and is creating wines that he says, “just don’t get the recognition that they should.” Grapes like Malvasia Bianca and Verdelho are just some of the varietals Volk is making this year. If Gary Eberle is the Central Coast’s Godfather of wine, then Kenneth Volk is the heir apparent. A renaissance winemaker who majored in fruit science at Cal Poly San Luis Obispo, a major which is now tied in to the new wine and viticulture program. Volk’s prior winery has been a training ground for what he estimates is around 15 head winewww.winecountrythisweek.com

makers and operations mangers at various facilities. His farming interests go well beyond the vineyard, too, and into heirloom varieties of various vegetables and fruits. He has a habit of making big changes to get the job done. When he purchased the Kenneth Volk Winery, for example, the hillside that overlooks the creek was covered in poison oak. “I’m pretty fair skinned and this stuff eats me up. So, I found a couple of workers who were immune to poison oak, believe it or not, and I paid them to literally repel down the hillside and tear out all the poison oak. We replaced it with some native sage and manzanita that we got out of Las Palitas nursery in Santa Margarita.” Ever the fruit-scientist, Volk goes all over the Central Coast in search of grapes he wants. But now that he is in Santa Barbara County, so much of the fruit he gets from the area arrives at his winery earlier in the day. “When we were in Templeton, I was lucky to get the fruit by two in the afternoon. Now during harvest, I get it as early as 6 a.m.,” he says. The added advantage, of course, is that See Kenneth Volk Vineyards, page 25

16th Annual Basil Festival Set for July 21 and 22 An action-packed weekend is planned for the 16th annual Basil Festival on Saturday and Sunday, July 21 and 22 at Lone Madrone Herb Farm & Tasting Room. The farm, formerly known as Sycamore Farm, is located at 2485 Hwy. 46 West in Paso Robles. The event runs both days from 11 a.m. to 4 p.m., and all proceeds will benefit the Make a Wish Foundation. Guests will discover the delights of basil beer, basil ice cream and basil chocolates, as well as a pesto contest, wine tasting, art projects for kids and demonstrations by local artists. Cuisine prepared by Dining with Andre will be available for purchase. Saturday’s pesto contest is open to everyone, with three categories: traditional pesto, original recipe and crowd favorite. Crowd judging in the pesto contest begins at noon. Festival goers may purchase pesto sampling tickets for $3 each, which allow a vote for crowd favorite. Winners’ recipes will be published locally. Julie & the Bad Dogs with Louie Ortega will entertain with the blues from 1 to 4 p.m. on Saturday. Basil Festival t-shirts will be available for purchase as part of the fundraiser. Sunday is Family Day at the Basil Festival, with lots of activities for kids. Available will be a Make a Wish quilt project, with squares of fabric for people to create colorful messages. These squares will be assembled into a quilt at a later date by the Almond Country Quilters and then auctioned off. Children can also make flowered hats and bead bracelets, and everyone who buys a four-inch potted plant may paint a pot to put it in. Steve Crouch and friends will offer story telling, and there will be honey tasting and demonstrations about composting. Adults can participate in Lone Madrone wine tasting, try three types of basil beer provided by Firestone and taste herbal wines. Proceeds from the sale of t-shirts, pesto tasting tickets, and basil beer will benefit the Make a Wish Foundation. Entry donations of $5 per couple are suggested (children are free). It is our hope that the Basil Festival will raise $5,000 for the Make a Wish Foundation, which will grant a wish for a local child. MINASSIAN-YOUNG Big Wines from a Family Winery in a Serene Setting

A

s you drive along Peachy Canyon Road you experience a different kind of silence. Roll the windows down and listen for the distant sound of a tractor and the smell of the dry grass fields. The twisting road leads you past families of quail bobbing across your path, and it slows you down. As you experience these sights and sounds you will also glimpse the geology that has made Paso Robles famous. Limestone soil is known throughout the world to be a highly desirable component for cultivating fine wine grapes. It is no surprise when you find the entrance to Minassian-Young Vineyards you notice a dry stack wall of the calcareous rocks that abound here. Proceeding up the driveway of this small family vineyard you pass 27-yearold head-pruned vines, your views of the Zinfandel vineyard unfold. The vineyard is dry farmed, or farmed only with the rainfall from that year, “Which not only makes big wines but truly reflects the climate of that year,” according to David Young the proprietor, winemaker and vineyard manager. Park your car at the crest of the hill and you will have a sweeping panorama of the vineyards and walnut orchards along with the

ambling Peachy Canyon Road below. When you enter the tasting room, the persimmon painted walls draw you in to a bright and vibrant mood. “I modeled the tasting room after my sister’s dining room in San Francisco; it has such great warmth and interest to it.” Inside this lovely room you will be greeted with a warm welcome and offered a sample of their latest releases. The name Minassian-Young comes from the surnames of David’s parents. Christine was born in the Far East; her heritage is Armenian, English and Burmese. After traveling to London and then settling in California she met and married Conrad, whose Scottish ancestor left a small village near Glasgow to build sawmills in Vancouver and then helped settle Hawaii. They met at Cal Poly San Luis Obispo and have kept the ties to the area and school for more than 40 years. David chose the name to represent both sides of the family. Currently Minassian-Young is producing Rhônes, Zinfandels, Bordeauxs and a few Spanish style blends. “The Central Coast is great because there are cool- and warmweather climates allowing us to focus on a www.winecountrythisweek.com

wide range of varietals. Our basic wine philosophy is to do no harm, if we and our winegrowers have done their jobs right, the grapes should be near perfect, and we try to maintain that integrity through the wine making process. We are really excited having entered in the first year of our organic certification.” David tells that summer is a favorite time of year because “it is our last chance to let our hair down before harvest.” The winery’s next event is “August Moon in the Adelaida School House” (August 25). The event will feature all sixteen Far Out Wineries pouring collaborative blends of eight different wines. “This is just a good old-fashioned barbecue in Wine Country.” Before you leave, take a last look at the winery and surroundings. If you are lucky a hawk will swoop by, his feathered wings take him just above the vines stitched along the hills. You can’t imagine this spot should ever be anything but the family winery it is. Baileyana Grand Firepeak Cuvee Chardonnay Perfectly Paired with Chicken Breasts with Pear Chutney Situated in a region known for long summer days and distinctive evening fog, the grapes for the Grand Firepeak Cuvee Chardonnay ripened at lower than usual ripeness in 2005 due to an extremely cool September. Thus, the citrus flavors come through without the high alcohol, and with a firm acidic structure. The result: a style reminiscent of genuine white Burgundy. Pairing this wine with a Chicken Breasts with Pear Chutney recipe balances the sweetness from the chutney with the acidity of the wine, a match that is guaranteed to refresh during dinner on the patio on a warm summer evening. “Leading with rich pineapple and hints of pear, this wine is crisp, fresh and lively,” says winemaker Christian Roguenant. “Our trademark mineral qualities exist, along with lime and other citrus characteristics.” Baileyana focuses on making Chardonnay, Pinot Noir and Syrah from their estate Firepeak Vineyard, planted to many new French clones. It runs right up to the base of Islay Mountain, only four miles as the seagull flies from the Pacific Ocean. The soils here are heavily influenced by layers of fossilized seashells left behind 25 million years back when the seas rose at the end of the last Ice Age. The soils are made more complex by eroded volcanic rock. The Baileyana tasting room is located at the restored historic one-room Independence Schoolhouse built in the heart of the Edna Valley in 1909. The combination of brown sugar and white wine vinegar balances the chutney flavors to marry perfectly with Baileyana Grand Firepeak Cuvee Chardonnay. • 2 teaspoons olive oil, divided • 6 boneless, skinless chicken breast halves • Salt • Pepper • 1/3 cup red onion, finely chopped • 1/3 cup red pepper, finely chopped • 2 tablespoons brown sugar • 2 tablespoons white wine vinegar • 1 tablespoon white wine • 2 teaspoons fresh sage, chopped • 1/2 teaspoon mustard seeds • 2 cups pears, Bosc or Bartlett, cored and chopped (about 2 pears) Preheat oven to 375 degrees. Heat 1 teaspoon olive oil in large oven-safe skillet over medium-high heat. Sprinkle chicken with salt and pepper to taste and sauté in pan until browned, about 3 minutes per side. Remove to plate and cover. Reduce heat to medium and add 1 teaspoon olive oil. Sauté onion and red pepper for 4 minutes, stirring frequently. Add sugar, vinegar, wine, sage, mustard seeds, 1/2 teaspoon salt and 1/4 teaspoon pepper and bring to a boil. Reduce heat and simmer for 5 minutes. Add pear and increase heat back to medium. Cook 10 minutes, stirring frequently, until pear is tender. Place chicken breasts in pan on top of chutney. Cover loosely with foil and bake at 375 degrees for 15 minutes, until chicken is cooked through. Serve chicken breast with chutney spooned over top. Serves 6

H

igh upon a hill overlooking the vineyards of Justin Vineyards & Winery is a majestic 15,000-square-foot chateau, built by owners Justin and Deborah Baldwin, that underscores their dedication to produce world-class Bordeaux-style wines. It’s a reminder that no corners are cut at Justin, and those lofty standards certainly extend to the winery’s tasting room. From the polished copper tasting bars and limestone floors to the handsome display of wines in wooden bins, the Justin tasting room evokes a classy, yet relaxed atmosphere. Seth Engel, the tasting room manager who’s been with Justin for almost five years, said the winery is generally not just another stop on a day of wine tasting for most visitors. Part of that is due to Justin’s reputation for producing world-class wines, and partly because the winery and vineyards are nestled in the rolling hills on the western edge of the Paso Robles Wine Country. Near the end of a twisting, undulating two-lane country road, Justin is no spur-ofthe-moment visit.

Many of those sampling wines at the Justin tasting room, said Engel, “are passionate about wine and are determined to find us.” In other words, “they are looking for the good stuff.” A flight of five tastings is available at $5 per person. On the day I visited, Engel poured a crisp 2006 Sauvignon Blanc, followed by a Chardonnay of the same vintage, a 2005 Cabernet Sauvignon and a 2005 Syrah. The ultimate sample was of a 2006 Deborah’s Delight, which is indeed a delightful blend of Orange Muscat and Viognier. With the naturally beautiful surroundings of the Paso Robles countryside enhanced by a stunning English garden, guests often linger on the Justin grounds. Picnickers can purchase from an eclectic array of cheeses sold at the tasting room. A couple and their young son sat beside a small pool that can be used by guests in one of the four suites of the JustInn. You can enhance the tasting experience – and gain a greater appreciation of the winemaking process – with a winery tour. Tours, offered twice daily for $10, last about an hour. A highlight is walking through some of the 17,000 square feet of caves the Baldwins excavated when they built their facility, where many barrels are now stored. A handful of cracks lining the cave walls are a reminder of the December 2003 earthquake that shook the Paso Robles area. Dramatically housed at the end of one corridor within the caves is the Isosceles Library. There, reminiscent of the great French Chateau wineries, are stored for posterity approximately 250 bottles of each Isosceles vintage beginning with 2000. 2007 Winery Music Awards Competition Opens The 2007 Winery Music Awards competition, the Paso Roblesbased showcase of original music artists from across the US and Canada who are unsigned with major record labels, kicked off its five-concert series of competitions in June with five female artists competing for a spot at the final competition in October and a chance to win prizes, cash and a breakthrough recording contract. The June event was held at Maloy O’Neill Vineyards in Paso Robles and featured a variety of musical genres, including pop, rock, country and folk, performed by artists from Los Angeles, San Diego, Sacramento and Portland, OR. “We are very excited about the caliber of talent that we have playing at this summer’s competition,” says Kathy Kelly, producer of the Winery Music Awards. “It just happened that all of the first five artists were female because of how the schedule worked out, but the July through September Elimination Rounds will be fairly balanced between male and female artists.” A panel of notable judges influential in the music, entertainment and wine industries votes its choices for best artists of the competition. Artists are judged in the categories of originality, musicianship and, most importantly, marketability to the wineconsuming market. The competition is open to the music genres of: jazz, rock, blues, new age, acoustic, country, folk, soft rock, reggae and adult contemporary. June artists were Kerri Dopart, San Diego, CA, Rocky Gaines, Los Angeles, CA; Debra Arlyn, Portland, OR; Shannon Curtis, Sacramento, CA and Kimberly Jean, Los Angeles, CA. Hearing relatively unknown artists perform wonderful music is like tasting a new wine for the first time and absolutely loving it – both moments are experiences to be savored. A total of twenty unsigned, original music artists compete at the Winery Music Awards Semi-Final Elimination Round concerts, held on one Saturday each month from June to September, with the final competition on Sunday, October 7. Founded and produced by Kathy Kelly Productions, Inc., the competition was created out of the growing popularity of quality musical performances at many wineries throughout California. Artist performances are judged by music and entertainment industry professionals in the categories of originality, musicianship and marketability to the prime wine-consuming market, men and

women aged 21-54 The Grand Prize winner of the previous Winery Music Awards competition, held in 2005, was Arroyo Grande’s rock group, Threes and Nines, who is releasing their first CD this year after winning a recording contract with RNB Music (www.rnbtunes.com), a Los Angeles-based record label. The group’s self-titled CD, will be distributed worldwide by Fontana Distribution, a division of Universal Music. Penman Springs Follows the Tradition of Fine Wines Established in 1996, Penman Springs’ artisan vineyard is 40 acres of beautiful hilltop overlooking the east side of Paso Robles. The property was previously home to two other premium labels, and judging from Penman Springs first releases, the tradition of fine wine production is in good hands. Toni and Sharon Baron planted the first grapevines on the property in 1981, and established Baron Vineyards as part of a joint venture with Kolb Vineyards across Union Road. A former fireman, Baron continues to produce his “Fire House” red and white wines, which understandably enjoy a loyal following in fire stations across the country. In the early 1990s, Gary and Becky Porter joined with Joseph and Shirlene Barton to purchase the vineyard and renamed it Grey Wolf Cellars and Vineyards. (The Bartons have since moved Grey Wolf Cellars to its current location on Highway 46 West). Gary decided the future of the property lay in red wine production and decided to graft over the existing Sauvignon Blanc vines to Merlot, Zinfandel and Cabernet Sauvignon. He also created a beautiful one-acre terraced vineyard that has matured to produce rich Merlot fruit. The property’s new life as Penman Springs started in 1996, when Carl and Beth McCasland made farming their future and moved their

two high school girls to Paso Robles. For Carl, it was a return to his boyhood dream, albeit via the somewhat circuitous route of San Francisco, Plymouth, Michigan and El Paso, Texas. A serious student and successful businessman, Carl read every available book and article, took every class offered, and began to see a clear vision of the future for Penman Springs Vineyard. He tested soils and leaves, consulted with experts, began to enrich the soils where he determined necessary, developed new wells, refurbished existing trellises and replanted missing vines. Carl also looked for ways to expand the vineyards. In addition to expanding upon the existing Merlot vines, he planted a five-acre block of Syrah and replanted five acres of existing vineyards to Petite Sirah. The McCaslands realized the first harvest of those varieties in 2000 and 2001, respectively. After carefully planning the changes in the vineyard, Carl planned the winemaking in an equally methodical fashion. He found a small stemmer, crusher and small bladder press, and in the fall of 1998, Carl and Winemaker Larry Roberts began “the crush” with Penman Springs’ own Merlot and Cabernet Sauvignon grapes. The 1998 vintages offered, Merlot, Cabernet Sauvignon, Muscat Blanc and Chardonnay. A dessert Muscat patterned after the great Australian fortified Muscats was released in 2001, and future plans include varietal releases of Syrah and Petite Sirah. The McCaslands invite you to their tasting room to taste the wines, wander the vineyard and enroll as a “Pen Pal” wine club member.

Now, the old schoolhouse is open for tasting of Salisbury’s wine seven days a week. Jennifer and her husband, Kevin (also a professional skateboarder) work with John Salisbury in maintaining all operations. With their two children and a past filled with varied and diverse career interests like skatepark owners, artists, and now vintners, the two have made a home here in SLO County in this unique facility. The tasting room also has a gallery, Salisbury Fine Art, owned by her mother, Maridel Salisbury and represents more than 150 recognized artists nationally and even internationally. The wines of Salisbury are as varied and diverse as is the family and the tasting room features the family’s Pinot Noir, cool-climate Syrah, Paso Robles Zinfandel, Chardonnay and even some Cabernet. About Salisbury Vineyards John Salisbury – a farmer and wine-grape grower whose roots go all the way up to the Sacramento Delta area where the Salisbury family has been farming in Walnut Grove, CA since 1850 – began growing grapes in the Paso Robles area in 1997. Kenneth Volk Vineyards it gives this consummate winemaker the chance to work more efficiently and effectively. “We run a 24-hour operation, especially during harvest, and it’s nice to be closer to the vineyards I’m using.” Still, Volk gets Bordeaux varietals from the Paso Robles area as well as Viognier from Templeton. His truck and his dog Lola, along with four other dogs, are well traveled over the vineyards of the Central Coast. Coming full-circle back to Santa Barbara County, Volk is happier with his lot now. “If I’ve learned anything in the wine business, I don’t show it because I got back into it,” he laughs. “I like a challenge, though – and I like to experiment and try new things.” At Wild Horse, Volk was spending more and more time on the administrative side of the business and that isn’t what he wanted. “But now, I spend 60% of my time in the vineyards and the winery.” Volk also spends a good deal of time at his alma mater, Cal Poly. He is working on the fundraising and planning side of building a

research winery at the university. The curriculum has been approved and now, he’s working on getting instructors and staff hired. “That’s hard, though because the cost of living versus what the university is paying is pretty steep.” He is a tireless recruiter and advocate for the university and the new winery gives him a chance to be more involved there. “I’m fortunate enough to have a strong operations manager in Michael Brughelli and a good staff,” says Volk. His role is not only winery owner, but winemaker as well. “We’re pretty lean, but we’re where we need to be at this point in time.” Focusing on sales and marketing, Volk has partnered with several distributors in various places across the United States where he wants his wines to have a presence. “I want to try to keep this so that it’s still fun and manageable,” he says. “I don’t want to get too far ahead of myself.” Volk’s family is based in San Luis Obispo and time with them is important, too. “But I may start another winery in Paso Robles and I have some other ideas as well.” It’s no surprise, then, that the man who invented Wild Horse – and reinvented himself – still has a little of that wildness left in him. Smiling families dine at sidewalk cafés with checkered tableclothes and umbrellas. Starry-eyed couples toast each other with wine. Artists wearing bérets paint at their easels. The air is filled with music, laughter and the tempting aromas of French cuisine. Surely this must be France? Actually, it’s the 20th Annual French Festival in Santa Barbara, Saturday and Sunday, July 14 and 15 (Bastille Day Weekend), from 11 a.m. to 7 p.m. in Santa Barbara’s Oak Park. Admission is free. While Parisians celebrate the French Revolution 8,000 miles away, Californians will revel in the sights, sounds, foods and joie de vivre of France at the largest French celebration in the Western United States. More than 20,000 people are expected to attend. It’s where America celebrates France! Non-stop free entertainment fills three stages, including cancan, Moroccan belly dancers, grand opera, hot jazz a la Django Reinhardt, the Femmes Fatales Drag Review, French Tahitian dance, African drumming and dance, Carribbean komba music, and cabaret music in the tradition of Edith Piaf, Maurice Chevalier and Josephine Baker. Wandering mimes, jugglers and accordion players will perform throughout the crowd. There’s also lots for the kids to do. Dozens of chefs prepare fine French food. Enjoy Perrier, Kronenbourg French beer, wine, Champagne, Calistoga and soft drinks.
