ARROYO ROBLES WINERY A Shore Thing

B

akersfield isn’t that far from Paso Robles, at least as the crow flies, but the two regions are vastly different in terms of most everything, including wine. Quite frankly, there aren’t any wines in Bakersfield. But Paso, now that’s a different story. Bob Shore grew up in Bakersfield and is the kind of guy who can do anything well. Originally in the oil and gas business as a petroleum engineer, he moved into farm management using his background in earth sciences, then into wine. His tasting room in downtown Paso Robles could not be more perfectly sited for its needs. The prime location is bright and airy, with large windows looking into the park. Currently producing about 3,500 cases, Bob’s wines are well priced and promoted by word of mouth. The goal is to reach about 6,000 cases and with distribution currently in 30 states, he’s well on his way to achieving that goal, too. Arroyo Robles opened their tasting room in March of 2006. But their foray into wine began much earlier. Bob was born and raised

in Bakersfield and got into the gas and oil business, “for thirty successful years,” he said. During that time he toyed with homemade beer and wine, but didn’t take it too seriously. But then the opportunity arose for he and his brother to go into business together, and they bought a lab in Visalia, California that focused on soil, pedial and water analysis, predominately for the agriculture industry in California’s fertile Central Valley. “We quickly gravitated toward supporting the wine industry, recommending rootstock, nutrient programs and high altitude photography for soil mapping,” Bob said. They parlayed the business into being consultants across the state for both large and small wineries. They originally bought a vineyard across the street from Tobin James as an experimental vineyard to employ different growing techniques such as trellising, canopy management and stressing the vines. But again timing played a roll. The chance to sell the property at a nice profit arose and they used the funds from that sale to buy their current vineyard off San Marcos Road. Then in 1997, they were asked if they wanted some Merlot fruit from Bien Nacido Vineyard. “We made 55 www.winecountrythisweek.com

cases of fabulous Merlot,” Bob said. From there it was only a matter of time before they launched their own label. Located directly across from Paso Robles’ downtown historic city park, Arroyo Robles offers wine of course, but also a plethora of other items in their well stocked tasting room, including books, multiple gift items and maple syrup and pancake mix – a sort of homage to a property they owned back in Vermont. Even now they offer a pancake breakfast before all the major wine festivals in town. One of their former properties was studded with oak trees and had an arroyo, (a Spanish term for creek) running through it, so the name flowed quite easily. The tree itself is actually a specific tree, one of the many oaks that line Highway 46, though it’s on someone else’s property. Arroyo Robles is family owned and they are proud of it. “There are some real pluses in working with my kids, my wife and grandson. Being a family owned business, it’s a little more real, we all pick grapes, crush them and move barrels around,” Bob confided. He paused and thought for a

WINE COUNTRY THIS WEEK WINE COUNTRY NEWS moment about his last comment. “There are times when being a winemaker is priceless.” Bob’s wife Tanis and their kids Jason and Brianna are hard at work under Bob’s direction. A broad portfolio of wine is made by Bob including the standard offerings like Chardonnay, Zinfandel and Syrah, but they have also branched off into Viognier, Tempranillo, two Rosés and several Ports. Not one to rest on his laurels, Bob also produces two sparkling wines, one of which is a sweet almond sparkler. And the people keep coming. One day when Bob was manning the tasting room, he mentioned the diversity of people who showed up to taste Arroyo Robles wines. “Recently in the tasting room on the same day I had people from England, Atascadero, Florida, Chicago, New Jersey and the Bay Area.” Perhaps it’s reminiscent of the movie Field of Dreams: If you make it, they will drink it. And Paso Robles is bulging with new wineries. “The more people that come here to make really good wine only benefits Paso Robles,” Bob believes. His own approach to wine is low key and modest. “If you can make bread and wash dishes, you can make wine,” he advises. Certainly it’s not that simple, but fortunately, Bob Shore and his family keep the rest of us happy by consistently producing great wines with a local influence. t all started in January when Anglim Winery’s 2005 Viognier earned a gold medal at the San Francisco Chronicle Wine Competition. Then midway through the year, their 2005 Zinfandel and Grenache wines each won a gold medal at the San Francisco International Wine Competition – one of the largest and most influential international wine competitions in the country. Further acclaim came when Robert Parker’s Wine Advocate magazine gave their 2006 Viognier an “outstanding” 90-point rating. “It is great to have our wines win such recognition, but it’s also a wonderful experience to see people enjoying them in our tasting room and get their feedback,” said Steffanie Anglim. The critically acclaimed 2006 Viognier was made from grapes grown in the Bien Nacido Vineyard in Santa Maria. “They are widely considered to be a top producer. Their fruit is beautiful,” Steve Anglim said. “The Viognier grapes had a remarkable core of acidity balanced with ripe fruit flavors.” Fermented cold, the Viognier was evenly distributed in three types of containers: neutral French oak barrels, stainless steel barrels and stainless steel tanks. The result is characteristics of apricots and honeysuckle tones balanced by a hint of tangerine blossom and a mineral finish. It is still available – but probably not for long – at $24 a bottle. The fruit for the award-winning 2005 Anglim Zinfandel came from St. Peter of Alcantara Vineyard, a small estate on the west side near Templeton. A rich and lively wine, the Zin was made the way Zinfandel used to be made, according to Steve, and has “a bright fruit core, with a richness and

complexity that comes from the dry-farm process, which concentrates the flavor.” Although the 2005 Zinfandel is sold out, Anglim has just released the 2006 vintage. The highly touted Grenache is still available, also for $24 a bottle. This “fruity and spicy” blend contains 20 percent Syrah. “It was one of my Holy Grails. Grenache grapes can be both frustrating and rewarding. They want to overproduce, which dilutes the intensity, so I had to find growers who don’t allow that to happen. Then I added some Syrah for depth and structure, and a little more color,” Steve explained. When you visit Anglim Winery’s tasting room in downtown Paso Robles, located a few blocks off the park at 740 Pine Street, not only do you get to sample award-winning wines, but you also get a taste of history. Located in the old Paso Robles railroad depot, the tasting room contains the original flooring and windows of the old train station and attracts a number of train buffs, in addition to wine lovers. It all makes for a lively atmosphere, Steffanie says. “We want people to feel comfortable in our tasting room, whether they are new to wine tasting or old pros.” On three Saturday nights in August – 16, 23 and 30 from 5 to 7 p.m. – you will also find working artists and live music in the tasting room, as Anglim Winery participates in the Paso Art, Wine and Song event going on at all of the downtown wineries. Dubbed Venti Cinque Anni, Italian for 25 years, the blend includes Castoro’s Syrah, Cabernet Sauvignon and their famous Zinfandel as well as some others. The Castoro name, which means “beaver” in Italian, comes from a boyhood nickname that Niels had. It has come to be the symbol for the winery that calls its product, “dam fine wine.” With a focus on sustainable practices and farming vineyards with a minimum of synthetic products, Castoro has become one of the “old school” wineries that has consistently focused on hand-crafted quality wines. Winemaker Tom Myers, along with owners Niels and Bimmer Udsen, already have 100 acres of Castoro vineyards certified organic by the California Certified Organic Farmer’s Association and Castoro is dedicated to continuing their work. Niels Udsen and the crew at Castoro have also been working hard to get the new Whale Rock vineyard up and running. A west side vineyard in Paso Robles with cool afternoon and evening ocean breezes, the vineyard will be dedicated to Chardonnay and Pinot Noir. Castoro Cellars began the festivities on July 26th, celebrating the summer with its annual Al Fresco Dinner featuring San Luis Obispo caterer, Upper Crust. The dinner focused on Italian dishes paired with Castoro wines and Mike Maguire, a local musician, was the entertainment for the evening.

On August 10, Castoro will offer its free Lazy Local Concert featuring the band New Five Cent. Pack a picnic and come to Castoro from 1 to 4 p.m. to relax, enjoy the music and sip the wine. INTELLIGENCE FOR THE WINE CONSUMER

What is malolactic fermentation? This term refers to a secondary fermentation process that takes place after the initial alcoholic fermentation is complete. Its contribution to a wine includes flavor enhancement, acid reduction and stability for aging. Acids are some of the components that are present in wine after primary fermentation, along with alcohol, tannin and other compounds that together create a balanced and tasteful wine. One of the acids, malic acid, can sometimes be desirous in certain wines, like Riesling, and in others, like Chardonnay, it may create a crisp sharpness. Whether or not this is beneficial to the enjoyment of the wine is up to the winemaker. But in cases where the level of acidity creates some unpleasant characteristic to the wine, then a reduced level of malic acid is needed. To achieve this, malolactic fermentation will be started that converts the harsher malic (and some citric) acid to softer lactic acid. You can associate malic acid with the kind found in apples and lactic acid with that found in milk.

Upon completion of the malolactic fermentation, the wine’s flavors become a little more pronounced and texture a little rounder on the palate. The process has an added bonus of helping to make the wine less susceptible to problems triggered by bacteria while aging in the bottle. Most red wines have undergone malolactic fermentation along with many Chardonnays. The result is a smoother, more interesting wine with greater long-term potential.

17th Annual Basil Festival Set for August 16, 17 An action-packed weekend is planned for the 17th annual Basil Festival on Saturday and Sunday, August 16 and 17 at Lone Madrone Tasting Room and Organic Herb Farm. Lone Madrone is located at 2485 Highway 46 West in Paso Robles (the old Sycamore Farms property). Proceeds from this year’s event will benefit KCBX FM public radio, with a portion going to the Paso Robles Boys & Girls Club. This year’s festival takes advantage of the lovely Paso Robles

Patrons will discover the refreshing taste of basil beer and basil ice cream, great wine and local cuisine while grooving to the tunes of local musicians Three-Quarter Time and Ras Danny and the Reggae All-Stars. There will be a pesto contest on Saturday judged by local celebrity judges. Prizes will be awarded in three categories: traditional pesto, original/creative recipe and crowd favorite. All pesto contest entrants will receive a complimentary 250 ml bottle of Olio Nuevo organic olive oil. Pesto entries must be checked in by 1 pm on Saturday, with a minimum of 2 cups per entry and must be accompanied by an entry form. Café Vio was on the verge of closing. Having been opened at a building known in Paso Robles as the Granary, near the railroad crossing, the café was sinking into a morass of pre-packaged foods and a bit of coffee. Yet the local constituents, in love with their gathering place, simply refused to let it die and help came in the form of Alan and Nina Courtney, Café Vio’s own Calvary who arrived in October of last year. “I love my little place,” says Nina Courtney, who is truly at home here. “I just saw the potential to make some changes and we did that and now, things are looking up.” Gathering advice from a group of regular customers she and Alan refer to as “The Board of Directors,” the pair got rid of the pre-packaged foods and hired a professional chef to at once simplify the menu and charge it with new quality and life. The menu now includes fresh breads and pastries baked right on the premises, meats that the Chef prepares himself in the kitchen whether roasting succulent turkey or preparing lean pastrami for the delicious sandwiches, and a focus on fresh produce. “And the coffee is still the very best in town,” says Nina. “It has to be because my husband loves, and I mean loves, good coffee.” Open daily for breakfast with a fresh menu featuring egg specialties and fresh pastries, the Courtneys have seen to it that Café Vio stays open until past dinner time. “One thing the Board told us was that the previous owners closed too much,” says Nina. “So, we’re open now from early morning until sometime after the last few customers leave which is usually around 7 or 8 o’clock.” The lunch menu serves as well for a dinner menu and customers seem to prefer it that way. The ambience of the place has changed as well. Simple white walls have now been replaced by warm colors with plenty of artwork including one whole section dedicated to Western art. “We have a new artist each month and it’s been such a treat,” says Nina. “We have the artists come in every second Friday of the month and feature their work and it’s been really popular.” The restaurant itself is broken up into separate “living rooms” each connoted by a different color scheme and various kinds of comfortable furniture. From couches to cushy chairs to kitchen tables for larger groups, Café Vio feels very much like homemade and it’s that atmosphere that keeps regulars coming back. The food is exceptionally good with the meats as tender and juicy as they can be. Fresh produce adorns the sandwich plates and homemade dressings, freshly baked breads and freshly brewed teas and coffees are in constant demand. In short, Café Vio has once again put the life back in Vio.

Eberle 2007 Mill Road Viognier Perfectly Paired with Abalone

Classic and elegant are two words that describe both the wine and the dish in this pairing. Abalone is a gourmet shellfish popular for centuries for its delicate flavor. However, California Red Abalone, once available in bountiful quantities along the West Coast, is now scarce, forcing restrictions on commercial diving. But the Abalone Farm of Cayucos operates a controlled environment of growing abalone, starting from a microscopicsize fertilized egg to 4-1/2 inch adult abalone, primarily for supplying fine restaurants around the world, but also for selling to the general public. The recipe created by Chef Chris Kobayashi of Paso Robles’ Artisan restaurant is a classic application of this rare world-class delicacy paired with a classic Rhône-style Viognier wine from Eberle Winery of Paso Robles. (The recipe even includes Paso Robles-grown olive oil as an ingredient.) The fresh, clean taste of the Cayucos Red Abalone with Heirloom Tomato Salad, Bacon and Mint joins seamlessly with the crisp, fruity style of the Eberle Mill Road Viognier. The wine, from grapes grown in rocky loam soils and exposed to the warm days and cool nights of Paso Robles, is described by winemaker Ben Mayo: “A classic floral bouquet of litchi, honeysuckle and apricot reveal mouthwatering flavors of melon and peach. An elegant afternoon wine to enjoy by the glass or a perfect complement to your favorite evening seafood or creamy pasta dish.” Eberle Winery is widely recognized as a pioneer in California Rhône varietals, such as Syrah and Viognier. CALIFORNIA RED ABALONE WITH HEIRLOOM CHERRY TOMATO SALAD, BACON & MINT • 4 each Cayucos red abalone steaks, about 1-1/4 ounce each • 1 pint heirloom cherry tomatoes, halved • 4 each bacon, sliced and fat rendered • 1/2 cup cleaned purslane leaves • 10 each large mint leaves, chiffonade • 1/4 cup sherry vinaigrette • 1/2 Tbsp. butter • Salt and pepper to taste • Cornmeal for dusting • Olive Oil for sautéing • Pasolivo Lemon Extra Vrigin Olive Oil • Buckwheat Sprouts for garnish In a medium bowl, combine the cherry tomatoes, bacon, purslane, mint and vinaigrette. Season with salt and pepper. Reserve. Heat a medium sauté pan over medium high heat. Place a scant 2 tablespoons of olive oil in the pan and swirl. Lightly dust the steaks in the cornmeal and sauté about 20 seconds each side adding the butter in about 10 seconds into the process (overcooking will lead to toughness). Remove from heat and drain on paper towels. Divide the tomato mixture on four plates. Place the abalone on top of each mound. Garnish with the buckwheat sprouts and drizzle a little bit of the lemon olive oil on and around – serve immediately. Serves four as an appetizer or two as a light meal

Sylvester Vineyards and Winery Presents its New Wine Park and Events Center Sylvester Vineyards and Winery recently opened its new events center to the community of San Luis Obispo County. Sylvester Vineyards has been a local winery in the Paso Robles area since 1995. The name Sylvester was not only chosen after the owner Sylvester Feichtinger but also for its Austrian meaning of “celebration.” Since the opening of the tasting room Sylvester Vineyards and Winery has received several prestigious awards for their two reserve wine labels. Through the years of recognition Sylvester Vineyards and Winery has continued to grow creating new avenues of entertainment for their customers to enjoy. Sylvester’s new Wine Park and Events Center was created in March 2008 and was finished just in time for the Paso Robles Wine Festival that took place May of this year. This 50,000-square-foot outdoor events center lies on the property adjacent to the Sylvester Winery tasting room and is surrounded by several varietals of grapevines. This lush outdoor center includes a 20-foot amphitheater and stage, an available outdoor kitchen, three vintage Pullman train cars from the 1940s which are open to the public and pond with rock waterfall which is home to two beautiful swans. This unique events center gives customers an Old World feel with the charm of the winery’s scenic view and family traditions. Currently the Wine Park and Events Center is available for both public and private functions. Sylvester Winery is also hosting its Summer Sunset Series of events. Customers and wine club members alike are welcomed to join the festivities that include a variety of events. The next event will be an Open Mic night on August 16th that will feature talented, local performers. Tolosa Blends Fine Wine, Fine Art to Benefit Local Schools auctioneer Gil Stork as Master of Ceremonies. Guests will have a chance to mingle with the artists and bid on the individual art barrels. The elegant evening will be catered by the incomparable Megan Loring and paired with Tolosas fine wines. TEACh Foundation (The Endowment for the Advancement of Children) was chosen as the beneficiary for the evenings proceeds. The timing for this funding for the local schools couldn’t be more fortuitous with the recent state-wide budget cuts. The TEACh Foundation goal is to build a permanent

endowment that will directly be distributed to the San Luis Coastal Unified School District – the funds support all schools grades K-12 in San Luis Coastal Unified. “The money raised will go directly to the classroom, allowing students to participate in programs that they may not normally be able to receive,” Maria Slavin, TEACh Foundation President, said. “Our mission statement is, a quality education is a lifetime gift .We hope the endowment will continue to grow even after we are a all long gone,” commented Ms. Slavin.

Over the years the landscape of the Santa Maria Valley has steadily evolved and, unbeknownst to many, offers one of the most unique Wine Country experiences on the Central Coast. While traveling Highway 101 into Santa Maria, a glance to the west offers views of a growing city that takes pride in its historic roots. A view to the east offers a variety of agricultural landscapes with a vineyard here and there, steadily increasing until you realize it: you are in Wine Country, Santa Maria Valley Wine Country. The region encompasses more than 50 wineries, with an ideal setting for Rhône and Burgundian varietals. Proximity to the coast, an average temperature around 64 degrees, surrounding mountain ranges and cool winds out of the northwest come together where the Santa Maria River winds through a myriad of elevated plateaus. Carina Cellars Presents ‘Three People, Seven Places’ spent in Prague, Czech Republic, while a series of three portraits captures herself and her two best friends at various stages of their journey. “I don’t see art as anything but illustration,” Desrochers states. “In each piece I try to convey a certain theme or feeling that I experienced, which is why all my subject matter is usually so personal.” There are seven main paintings that will be on display, each depicting the three friends in other cities such as London, Florence, Venice, Paris, Mainz and Zurich. A recent graduate from UC Santa Barbara with degrees in both English and Philosophy, Desrochers is a completely self-taught artist and a self-proclaimed painter since childhood. Attributing much of the influences on her current work to her studies at UCSB, Desrochers enjoys focusing on painting portraits of people and places. “I try to reconcile the surreality of memory and hindsight with the reality of faces and representation,” said Desrochers. “A lot of my work has a
