JADA VINEYARD & WINERY by Dave Wilcox Driving the road leading up to Jada Vineyard & Winery, you are guided by two rows of olive trees. They are a reminder of what initially brought Jack Messina and his wife, Robyn, out west from Florida to California wine country. But it’s the acres of vineyards growing on the rolling hills beyond the olive trees that have led wine lovers to seek out Jada’s acclaimed wines. Blessed with rocky, limestone-rich soils and a location in a notch of the Templeton Gap on Paso Robles’ cooler Westside, Jada has quickly become one of the most talked-about wineries to emerge on the Central Coast in the last five years. Concentrating on Rhône- and Bordeauxstyle blends, Messina and his winemaking team, including Scott Hawley, are excited about the upcoming harvest. “I don’t think we could’ve asked for a better set,” said Assistant Winemaker David Rudnick. This will mark the second year Jada will produce its wines exclusively on site, having completed a state-of-the-art winery and tasting room in 2008. The winery’s first three vintages, beginning in 2005, were made using

facilities at nearby Calcareous and Denner vineyards. Messina, who maintains his Florida practice as a heart surgeon, spends as much time as possible at the winery. His plans of growing olives changed when he was told by a friend that Paso Robles was emerging as a worldclass wine region. He purchased the 90-acre property where Jada is now located in 1999. Approximately 65 acres are now planted, including some vines that are more than 30 years old. The vineyard is now planted to nine varietals, with Cabernet Sauvignon and Syrah commanding the most acreage. Messina stays involved with all aspects of the winery, from vineyard management to bottling. While Jada focuses on blends, the winery produces a 100 percent Syrah under the name Jersey Girl; attributed to his wife’s home state. Jada’s stable of wines all carry labels that reflect some personal connection for Messina. There’s the Jack of Hearts, an estate blend of Cabernet Sauvignon, Petit Verdot and Merlot. There’s also Passing By – primarily estate Cabernet Sauvignon with a splash of Merlot – refers to Messina’s practice as a heart surgeon of the reported beneficial effects of red wine. Jada’s wines have earned raves from critics,

of the 2005 Mirror, an estate blend of Syrah, Cabernet Sauvignon and Merlot, Stephen Tanzer’s International Wine Cellar publication wrote, “Lush and creamy on the alluringly spicy, sweet and persistent finish.” In awarding 90 points to the 2005 Jersey Girl, it wrote that it “has the depth to age, but this is delicious now.” Jada’s production is about 2,500 cases for the current vintage, a slight bump up from their first vintage. But the winery is committed to remaining a small, familyowned operation focused on producing quality estate wines. Indeed, that’s one of the main reasons Rudnick joined Jada as assistant winemaker after working in many other wine-producing regions, including New Zealand. While Jada’s red wines are aged in oak barrels, its standout white blend, called XCV, also spends time in two egg-shaped, concrete fermenters. The “eggs,” as they are affectionately called at the winery, are 150-gallon containers that are far more than a novelty. Although unusual, assistant winemaker Rudnick points out that “concrete’s been around forever” as a container in which to age wine. Like wood, concrete’s surface is porous. Its

advantage, however, is its relative immunity to temperature fluctuations. “It breathes like a barrel,” said Rudnick, “but regulates temperature 100 percent better than wood ever will.” In a sense, he said, it provides the best features of both wood and stainless steel containers. The concrete containers are located in one of the winery’s barrel rooms, which are on the ground level of what was an old, red barn that’s been converted into a winery and tasting room. Upstairs, the former living quarters in now the tasting room, with outdoor decking where visitors can enjoy views of the vineyards and surrounding hillsides. Gourmet, estate-grown olive oil is also sold at the tasting room. Another feature of the tasting room is an adjacent, climate-controlled room surrounded by glass walls, where bottles are stored until they are opened for guests. Jada Vineyard & Winery is located at 5620 Vineyard Drive, off Highway 46 West. The tasting room is open Monday and Thursdays from noon to 5 p.m. and Friday through Sunday from 10 a.m. to 5 p.m. Guests will enjoy Jada ines paired with gourmet artisan cheeses provided by local gourmet cheese shop Vivant for a $10 fee. The SLO Down Pub: Buy Local The Central Coast town of Arroyo Grande is a gem of a city. It’s downtown, often referred to as “the Village” is a unique blend of shops and galleries punctuated by restaurants and even a bakery or two. Stolpman Vineyards 2005 Angeli Blanc Perfectly Paired with Halibut Mango Ceviche

Originating in South America, ceviche is a traditional Spanish fish dish marinated in a lemon and lime juice. The acidity in the citrus fruit acts in a way that “cooks” the proteins in the fish, contributing to its other purpose of adding flavor. This Halibut Mango Ceviche from Stolpman Vineyards takes the usual lemon and lime juice as step one in a simple, yet flavorful recipe, then escalates the fun with the addition of tequila, jalapeno chili peppers, green bell pepper and onions. Together, they all combine nicely to give the dish style with a little kick. The marinating time to prepare the recipe comes to a full two hours but the results are well worth the wait. When searching for an appropriate wine to pair with a dish that offers a hot and spicy crispness, wine with ripe fruit flavors and a hint of sugar will compliment the spice in food. The Stolpman 2005 Angeli Blanc is a refreshing off-dry, “Late Harvest” wine made from the Rousanne grape, a grape typically used in Stolpman’s flagship white wine, “L’Avion.” In November of 2005, while picking the Rousanne, the winemaking crew at Stolpman noticed early indications of “noblerot”, also known as Botrytis, on some of the grapes. Botrytis is the mold that makes grapes more concentrated in sugar and, ultimately, flavor – as well as giving them a shriveled appearance. Stolpman’s head winemaker Sashi Moorman allowed the grapes to stay on the vine and develop more flavors before he pressed the grapes and fermented the juice until nearly dry. The resulting wine is something magical, and we named it “Angeli Blanc” after “Angeli”, our most prized Syrah. Left with approximately 1% residual sugar and a hint of effervescence, this wine is the ultimate pairing for spicy food, especially when served well chilled. You can experience Stolpman wines at their tasting room’s new location in Los Olivos. HALIBUT MANGO CEVICHE • 1-1/2 pounds skinless, boneless halibut, cut into 1/2 inch cubes • 1/3 cup fresh lime juice • 1/4 cup fresh lemon juice • 1/4 cup tequila • 3 jalapeno chili peppers, seeded and minced • 1 mango - peeled, seeded and diced • 1 green bell pepper, seeded and finely chopped • 1/2 cup finely chopped Vidalia or other sweet onion • 1/2 cup finely chopped red onion • 1 mango - peeled, seeded and diced • 1/2 bunch chopped fresh cilantro • 1/4 cup chopped fresh parsley • 1 teaspoon salt, or to taste Combine cubed halibut, lime juice, lemon juice, tequila, minced jalapeno peppers and one diced mango in a non-metallic bowl. Cover and refrigerate for 1-1/2 hours. After the ceviche has marinated for 1-1/2 hours, add the green pepper, sweet onion and red onion. Mix well, then recover and refrigerate another 30 minutes. Fold in the remaining diced mango, cilantro and parsley; season to taste with salt before serving.

THACHER WINERY For decades quarter horses, cattle and cowboys roamed the grassy hills of the old Kentucky Ranch. Today, Thacher Winery is full of casual charm, reminiscent of California past and present. We are a new, family-run, boutique winery located at the historic Kentucky Ranch in the Adelaida Hills of Westside, Paso Robles. The ranch was part of a 4,000 acre Spanish land grant until 1869 after which it became a thriving quarter horse breeding operation. We also enjoy an abundance of wildlife including deer, coyotes, bobcats, turkeys and the occasional mountain lion. The Zinfandel and Petit Syrah vineyard was planted in spring of 2007. Construction of the tasting room and 4600-square-foot winery was completed in 2008, just in time for our fourth harvest of about 33 tons of premium wine grapes. Production in ’08 was about 1800 cases – almost double the production of previous years. Through very small distribution outlets we are able to pour six currently released wines in the tasting room and also by appointment at the ranch.

We are pouring ’05 and ’06 varietals that include Zinfandel and Viognier from Paso Robles and Syrah from southern Monterey County. Our just bottled 2007 wines include three Zinfandels; one from Paso Robles, one reserve and a vineyard designate. We also have a Paso Robles Syrah for the first time and our first blend of Zinfandel, Mourvedre and Grenache. This one is aptly called “Controlled Chaos.” Very appropriate when you have finished construction of a winery, opened a tasting room, were thrown into your first home crush and had a third baby all in the same few weeks! A Hastings Ranch Viognier is also in the ’08 lineup, and of course our award- winning Coast View Vineyard, Monterey Syrah. This Syrah has received gold medals in ’08 and ’09 at the SF Chronicle. The rapidly growing Thacher Wine Club is intimate at the moment and is definitely something to jump on before the generous discount expires. We offer 20% off of a case of wine per year. Our shipments are divided in half and we also invite club members to barrel taste by appointment with their friends and family. Winemaker Profile: Cantara Cellars’Mike & Chris Brown by Mark Storer Mike and Chris Brown often think about how they got into the wine business. The couple lives and raised a family in Ventura County and both have “day jobs” in manufacturing. But a trip to Oregon sparked the Brown’s interest in winemaking. “We were tasting the great Pinot Noirs of the Northwest,” says Mike, “when we sort of looked at each other and said, ‘we can do this.’ Our first thought was actually to relocate to Oregon before we came back home and spent some time on my parents’ ranch in Lodi.” Neither, however, wanted to move and the fruit they wanted was available to them in one of the great vineyard regions of California. “For several years, we thought about living in Lodi,” says Mike. Again, though, the idea of uprooting the family was not a happy one and Mike says, “we didn’t need to move to make it work.” So it was that Cantara Cellars was born. The Brown’s found some space in an industrial park in Camarillo, right off the 101 freeway, and brought their Lodi fruit south to begin making wine. Like so many winemakers, what started off as an interesting hobby blossomed into a passion and then into a business. Now producing some 2000 cases of wine a year, Cantara’s wine club has grown to more than 300 people and the winery’s “pick-up parties” that take place three times a year, are crowded affairs full of happy club members who come to the winery bringing pot luck or to enjoy a catered meal and to share a little food, a few stories and some great wine. The Brown’s even hire local musicians to play live and entertain for the evening. The tasting room is located at the winery and is modern and comfortable with a glass semi-circle wine bar and various merchandise including wine and cook books, Cantara Cellars paraphernalia and wine glasses and crystal. The Brown’s also take a lot of pride in sharing not just the finished product with their customers, but the whole process. So, on various weekends, you’ll find Mike holding court and doing “blending parties” in which guests are invited to help Mike decide on wine blends for the upcoming releases. “You follow the fundamentals in winemaking and generally speaking, you’ll do fine,” says Mike. “But there are a lot of things, a lot of components to it as well. “We get great complexity for example,” Mike says, “from the yeasts we choose. I can create different tastes and get different results not just from the fruit, but from the yeasts we use as well.” Ever the careful manufacturer, Mike spends a lot of time with each barrel of wine deciding how best to bring out the true essence of the quality fruit he uses. Each wine spends more than a year in the barrel and you won’t find the Brown’s rushing anything to the tasting room until it’s ready. COSTA DE ORO by Mark Storer Costa De’ Oro is Gary and Teresa Burk’s little piece of heaven. Gary, a farmer by trade and inheritance, has taken farming to the next level and while maintaining a good many acres of strawberries among other fruits and vegetables, he’s also growing great grapes and making great wine. But it’s not the only thing Costa De Oro has going for it. The tasting room simply cannot be missed as it sits directly off the 101 Freeway in Santa Maria. The little building on the side of the road serves its turn not just as home to Burk’s wines, but as a kind of grocery featuring his family’s local produce and other snacks and food. If that weren’t enough, Costa De Oro features music nights with local talent taking the stage in the tasting room called “Friday Night Wine Downs” with wine tasting, cheese plates and music. Don’t let all the activity fool you. Costa De Oro’s wines regularly score in the high 90s in various publications and the number of gold

medals that festoon Burk’s wines are too numerous to count. The focus of Costa De Oro is crafting serious and focused wines that express the fruit from the Central Coast of California. Coast. The choice made, you can still see the farmer take the stage once in a while and play his sax on Friday night’s Wine Downs. But the farm and the vineyard are never too far from Burk’s mind. During harvest season, customers can take tours of the vineyards and the farm and learn about grape growing along the Gold Coast. The Burk family thinks that learning more about the wine one drinks enhances the experience that much more and to that end, they want Costa De Oro to be an accessible winery as well as one that produces award winning wines.
