Fermentation ：

Yeast + Sugar = Alcohol + Carbon dioxide

经过压榨和去梗程序后，再将果肉、果核、果皮统统 装进发酵桶中进行第一道 发酵。在发酵过程，会产生酒精和二氧化碳。

• Pressing: Pressing is the act of applying order to separate juice.

经过第一道发酵，再进行压榨将果肉、果核、果皮统统 分开套取果 汁。

• Second Fermentation ： dioxide

Yeast + Sugar = Alcohol + Carbon

将果汁装进不锈钢桶，再加入酵母进行第二道发酵。在发酵 过程，会产生酒精和二氧化碳。

橡木桶存 放在地 窖继 续发酵 ： -

温度红酒 12-14 白酒 8-10 湿度 65-80 没有异味或强烈味道 没有震动 没有强烈的光线

Maturation in Oak Casks: - Temperature 12 - 14 degrees C for reds - Temperature 8 - 10 degrees C for whites - Humidity 65 - 80% - Free from odour - Free from vibrations - No or minimum light

• Bottling: Wine is filled into bottles using bottling machines. They are then corked, foiled and labeled.
