Review of the Past Lesson

Before we will proceed with our new topic, let us have a quick review of what we had discussed yesterday.

Our topic last meeting was all about the sequence of table service

What was our topic yesterday? Very good!

Ma’am the sequence of table service are welcoming the guest,seating the guest,presenting the menu and taking the order.

Who can cite what are the sequence of table’s service? Yes,thank you.

Ma’am the other sequence of table service are placing the order to the kitchen,serving food,clearing the tables,presenting the guest’s bill and bidding goodbye.

So our objectives for today that we need to attain are the following: At the end of the 60-minute lesson, the students will be able to:  

Discuss the basic standard in fine dining. Appreciate the importance the basic standard in fine dining.

E. Unlocking of Difficult Term This morning we will be dealing with the words “Cutlery” and Table Napkin “”. Cutlery-Implement for cutting and eating food. So anyone who can give me the synonym of the word cutlery Ma’am the word I can associate with the cutlery is or any word you can associate flatware, silverware or tableware such as spoon, with? knives, fork. Okay very good!

Next, what is Table Napkin? Table Napkin – A piece of material (such as cloth or paper) used at a table to wipe the lips or fingers and protect the clothes.

. F. Lecture Discussion Fine Dining A style of eating that usually takes place in expensive restaurants, where especially good food is served to people, often in a formal way. The fine dining is a restaurant concept offering guest the finest in food, service, and atmosphere

Ma’am table napkin is a piece of material (such as cloth or paper) used at a table to wipe the lips or fingers and protect the clothes.

1 .The Attire Suit and tie, lounge dress (formal attire).Collared shirts are preferred for men, and some restaurants also require a sport jacket or tie in order to be fully dressed. For ladies, skirts or dresses or other nice clothing are recommended.

2. The Table Napkin Upon sitting down at the table, the napkin should be unfolded and placed on one’s lap.

3. The Menu If unsure of what to order, ask a waiter to make some recommendations. One thing that should never be done, however, is to ask the chef to alter a dish for your specifications.

4. The Glasses . When making a toast, never clink glasses manners to make eye contact with one’s dining companions when toasting.

5. The Wine When you plan your food- wine matches. You choose the wine base on how it will complement the food.

6.The Cutlery

Fine dining cutlery often overwhelms people with the various utensils used for different courses. For those confused about which fork to use with which course, the rule of thumb is to start at the outside and work your way inward.

A. Application Class let us have an activity.This is what we called “CABBAGE GAME”. I have here a crashed rolled paper with questions that are based on the discussions. All you have to do is to pass this crashed rolled paper to your seatmates while singing leron2 sinta and when I said stop, you need to read loudly and follow what’s inside the paper and answer. Are you ready class?

The following questions inside the paper  What comes to your mind when you hear the word fine dining?  How to use table napkin?  What is the proper attire in fine dining?  Cite one of the basic standard in fine dining and explain?  What is wine and its function?  In a table setting what is the basic rule?  Give example of the glasses found in a fine dining and iits uses?  As a student what is the essence Of knowing the basic standard in fine dining?  Have you experienced fine dining, If yes what have you observed on its menu?
