Beat pork with meat hammer to make it more tender, then marinated in fresh milk to remove stinking smell of pork for ½ hour. Heat vegetable stock in large sauce pan, add soy sauce, sake, rice vinegar, mirin and sugar. Stirring occasionally until sauce reduced by ¼, put in grated ginger and stir for a while. Decrease temperature, warm sauce with low heat. Heat vegetable oil in fry pan, fried pork until brown. Pour ginger sauce in fry pan and simmer for 3 minutes to make sure that flavor of ginger sauce was absorbed by pork. Serve immediately with fine chopped green cabbage and fresh grated ginger.
