Stir-fried Beef with Ginger Ingredients (serves 5) 400 g beef - sliced with fat removed 2 cm young ginger - shredded 2 cloves garlic - minced 1 small green or red capsicum - sliced 3 dsp unsaturated oil 2 dsp water Marinate 1 1/2 dsp wine 2 dsp oyster sauce 1 dsp light soya sauce 1/2 tsp sugar 1 dsp cornflour

Marinate sliced beef and refrigerate for 3 to 4 hours. Heat oil and fry ginger and garlic until golden brown. Add marinated beef slices and stir-fry over medium heat for 2 minutes. Add sliced capsicum and water stir-fry for another 2 to 3 minutes. Garnish and serve.

Young corn or celery may be added for variety. To cut beef into thin slices, partially freeze it first for about 30 minutes.
