1/3 cup of Olive Oil 1 Small Onion, minced 2-3 cloves of garlic, crushed 1 generous pinch of saffron 3 skinless Chicken Breasts, cut in large chunks 2 green peppers, sliced 1 red pepper, sliced 2 artichokes 1 tsp of yellow food coloring 2 cups of tomatoe sauce 1 tsp sugar 4 cups of short grained rice 7 cups of water Salt 6 large shrimps (leave shell on) 6 calamari 6 clams
PREPARATION 1. Saute onion, parsley, and garlic in olive oil until the onion begins to become transparent. 2. Add saffron, chicken, peppers, artichokes and saute until chicken has become white. 3. Add tomato sauce, sugar, food coloring. Stir it. Add the rice & water and bring it to boil. Salt to taste and let it boil for 5 minutes, stirring it occasionally. 4. Add shrimps calamari and clams. Let it boil an additional 5 minutes, stirring occasionally.Turn the heat down and simmer for 10 minutes, stirring occasionally. 5. After 20 minutes, the liquid should have evaporated. Turn off the heat, and leave to stand for five minutes (If the rice appears to be getting too dry during the last 10 minutes, add more water).
