Baker is co-owner of both the Lincoln and Auburn Awful Annie’s with husband Don Baker and they will head over to their son, Brian’s, house for Thanksgiving. A tradition in their family, which was started by Baker’s grandmother, is to make that day’s turkey dance. “We dance the turkey before we stuff him,” Baker said. “He goes on the side of the sink and does a can-can.” This year’s turkey dance will be special because it will be the first time Baker will dance a turkey for a grandchild, which would be her son, Adam’s, 19month-old son. Her sons enjoyed it when her grandmother made the turkey dance and so Baker wants her grandkids to enjoy the tradition started by her grandma. “She was a fun lady,” Baker said about her grandmother. “She was always doing something for the kids.” Baker and her family will enjoy two turkeys for this year’s dinner, one being cooked in the oven and the other on the bar-

Bake that is featured in Awful Annie’s cookbook, “Edible Encore.” The cookbook is currently sold out, but a revised edition of the cookbook will be available for purchase from Awful Annie’s at the end of November. Baker said that the restaurant on 490 G St. will offer up some specials for the coming Thanksgiving holiday in November. But don’t try to have dinner on Thanksgiving Day because Awful Annie’s will be closed that day. And the owners will be busy dancing “the turkey.”

FOUR-LAYER PUMPKIN CAKE Cake ingredients: 1 yellow cake mix 1-cup canned pumpkin ½-cup milk 4 large eggs 1/3-cup oil ¾- tsp. Pumpkin pie spice Frosting ingredients: 8-ounces cream cheese, softened ¾-cup powdered sugar ¾- tsp. Pumpkin pie spice 3-cups whipping cream 1-cup canned pumpkin ½- cup bottled caramel sauce ½-cup whole pecans Cake Instructions: Preheat oven to 350

Instructions: Cut up fresh broccoli and cook until al dente. Cook onions in boiling salted water until tender. Drain. In saucepan, melt half of the margarine.

Pour into pans and bake 25 minutes or until toothpick comes out clean. Cool completely. Run knife around edges of pan and place on two plates. Frosting instructions: Beat cream cheese until smooth and creamy. Add powdered sugar and pumpkin pie spice. Mix well. Add cream and 1-cup

Blend in flour, salt and dash of pepper. Add milk. Cook, stirring in cream cheese until smooth. Place vegetables in a 1½ quart casserole. Pour sauce mixture over and mix lightly. Top with cheddar cheese. Melt the remaining margarine, toss with breadcrumbs. Sprinkle crumbs on casserole. Bake at 350 degrees until heated through, 40 to 45 minutes. For breadcrumbs, tear 3 or 4 slices of sourdough or wheat bread into small pieces and place in blender. Run on high for 2 to 3 minutes, until crumbly. Recipe courtesy of Jai Baker

Stack and frost top. Use all of the whipping cream and cheese mixture. Chill. Just before serving, drizzle ½ cup of caramel sauce over cake (store bought is fine) and top with toasted whole pecans. PUMPKIN MAPLE BREAD

PUMPKIN CHIPOTLE SOUP

Ingredients: 2-½ cups all purpose flour 1 cup sugar ½-cup quick-cooking oats 2-tsp. baking soda 1-tsp. ground Allspice 2 cups canned solid packed pumpkin 1 cup chopped pecans ½- cup maple syrup ¼-cup vegetable oil 2 egg whites

Ingredients: 2 tbs. Canola oil 1 onion, chopped 3 stalks celery, chopped 3 green onions, chopped 2-tbs. Chipotle chilies ½-tsp. Ground Cumin 1-tsp. Chili powder ¼-tsp. nutmeg 3 tbs. Brown sugar 7 cups low-fat chicken broth 1 29-ounce and 1 15-ounce canned pumpkin-pie mix ½-cup half and half

Instructions: Preheat over to 350 degrees. Grease and flour a loaf pan. Combine first 6 ingredients and set aside. Mix pumpkin and next 4 ingredients in large bowl. Stir dry ingredients into pumpkin mixture. Spoon batter into prepared pan and bake 50-60 minutes until firm to touch.

Instructions: Saute both onions and celery until

tender, about 10 minutes. Add spices and chilies, mix well. Add remaining ingredients, except half and half. Bring to a boil. Thicken with Annie’s Roux (see below). Puree in batches in a blender on low speed. Add half and half and stir to mix well.

Melt butter in saucepan, slowly adding flour. Stir constantly with wire whisk, until thick and smooth. (it binds quickly). Add this by the tablespoonful to soups to thicken, whisking until melted. This roux can also be made with margarine but it is definitely not as rich tasting!

Thanksgiving memories, special meaning BY STEPHANIE DUMM NEWS MESSENGER REPORTER

The News Messenger recently asked residents from Lincoln Manor what their favorite Thanksgiving memories are and what Thanksgiving means to them. Lincoln Manor is a skilled nursing facility at 1550 Third St. since 1987. Lincoln Manor residents will celebrate Thanksgiving with the traditional holiday meal. Family members are invited.

Jennifer Bonner, 62 Jennifer Bonner said that her favorite memories of Thanksgiving had been when she and her late husband would have her parents over for Thanksgiving. “We always had my mom and dad come to Thanksgiving and we made a big Thanksgiving dinner,” Bonner said. She said that they would make her dad a steak for dinner “because he doesn’t like turkey.” “He’d eat the things that went with it,” Bonner said. “He cooked the turkey but didn’t eat it.” The family would usually sit around and watch television after dinner, Bonner reminisced. “I’m thankful for my family, friends, church, Lincoln Manor and the staff,” she added.

Washington D.C. “My husband waited all year long to take a vacation and we waited until Thanksgiving,” Beach said. She said they took the kids out of school for the vacation and it snowed. It was her favorite memory because, Beach said, “he didn’t get to take a vacation until then.” This Thanksgiving, Beach said she is thankful. “I’m grateful for what I have, I’m happy,” Beach said. “I’m thankful for my family.”

She has cooked many Thanksgiving dinners, Vancleve said, and the “end result” is her favorite part of cooking the meal. “The end result is bringing in that beautiful turkey on a tray,” Vancleve said.

Vancleve, the Thanksgiving holiday is important to her. “(It means) the chance to get together with relatives and friends, and share a meal,” Vancleve said. She said that the “traditional turkey” is her favorite food from a Thanksgiving feast. “I guess because we always did a turkey for Thanksgiving,” Vancleve replied, when asked why turkey is her favorite part of the meal.

Mary Odum, 85 Mary Odum said that her favorite Thanksgiving memories are from going to her mom and dad’s house with her family. “We really made a day of it,” she said, adding that her family would arrive for the Thanksgiving festivities around 10 a.m., and they would usually eat around 2 p.m. Odum said that she would make the stuffing every year, and that her mom would always take care of the turkey. She said that her family did this just about every year. “What we always did was get together with family,” Odum said. “It was always noisy and happy.” For Odum, Thanksgiving is about family. “It’s a time of family getting together, and we always thank God for his blessings throughout the year.”

Georgia Miller, 94 Thanksgiving for Georgia Miller means being thankful for a few different reasons. “First, it’s to be thankful for the many things in life,” Miller said. “The oth-

er is family getting together, caring and sharing.” When preparing Thanksgiving dinner in the past, Miller said, she enjoyed the fun of preparing for the “wonderful Thanksgiving dinner.” She also said she enjoyed the time during the dinner itself, “from hugging and loving the little ones, to hearing the stories of the older one.”

Ruth Breckenridge, 87 Ruth Breckenridge said that her favorite part of Thanksgiving is the dinner itself. But she “isn’t too keen” on what after dinner entails. “I just like the whole thing, except washing the dishes after,” Breckenridge said. Breckenridge has cooked Thanksgiving dinner “many years” and her favorite part of the meal is the pumpkin pie. Most of the time, she said, her family would serve a turkey for dinner but they sometimes had chicken. Other favorite parts of Thanksgiving for Breckenridge are that “everyone’s so happy” and “all the little kids running around.”

The Altar Society is part of St. Joseph’s Church. “We’ve been doing it for over 12 years,” Pickell said. “(It’s) a way to give back to the community and say thanks to God.”
