Although not the best of circumstances, Corky said he plans on making the most of the situation. “I’m going to take some time off to spend with my wife and kids,” Corky said.

“We’ll be going to Monterey at the end of the summer.” Alison Lukins said she and her family will be

doing “the usual” by going camping at Rawlins Lake with friends. “We take a trailer and just head up there,” Lukins

said. “We’ll go swimming and keep cool.” Heading half an ocean away from Lincoln is Leland Rice, who will

travel to the Hawaiian Islands June 21 to celebrate a wedding and his own 27th birthday. “I’m going to Kauai and Maui,” Rice said. “Other than that, I’ll just be working.” Traveling the opposite way this summer is Lincoln resident Tony Breitahaupt – but he’s not coming back. “We’re moving to Wyoming,” Breitahaupt said. “I inherited a rock shop. We’re going to take it over and learn about fossils.” Breitahaupt said he expects to be buying, selling and trading fossils before summer is over. On the other end of the age spectrum from fossils is one of Lincoln’s newest

residents, who will be coming into the world this summer, according to expecting mother Linnea Roberts, adding that having a baby will be her summer’s work. For 5-year-old Alec Roberts, a new sibling isn’t the only exciting aspect of the approaching summer. “I get to play sports,” Alec said, adding that he will be playing soccer with his friends. While not playing soccer, Alec will be racing his Matchbox cars, which he eagerly opened just after getting out of the Target store last Thursday. GRILLED MANGO WITH SPICY RUM GLAZE AND VANILLA ICE CREAM Makes 4 servings Prep time: 15 minutes Cook time: 20 minutes 4 tablespoons unsalted butter 2 tablespoons unsweetened pineapple juice 1-1/2 tablespoons honey ½-teaspoon chili powder 1/2 -teaspoon cayenne pepper 2 tablespoons dark rum 2 firm mangos, peeled pitted and sliced into strips Nonstick cooking spray 1 pint vanilla ice cream ½-cup flaked coconut sweetened, lightly toasted 1/4 -cup sliced almonds, lightly toasted 4 lime wedges (optional)

juice, honey, chili powder and cayenne pepper in small saucepan over medium heat; bring to a boil. Reduce heat and simmer, stirring occasionally, over medium heat, until mixture begins to thicken slightly, about 10 minutes. Stir in rum; remove glaze from heat. Set aside to cool completely. Brush mango slices with some of the glaze and let stand 10 minutes. Spray nonstick ridged grill pan with nonstick spray and set over medium-high heat. Add mango slices and grill, turning occasionally, over medium-low heat, until browned and nicely marked, 3 to 5 minutes. Place two mango slices in each of 4 dessert bowls. Top each serving with 1 scoop ice cream, 2 tablespoons toasted coconut, and 1 tablespoon almonds; top with additional mango slices. Drizzle with remaining glaze.
