Description Rujak Cingur is one of the traditional foods that are easily found in the area of East Java, especially Surabaya. Rujak Cingur is made from fruits and vegetables. Such as young mango, pineapple, cucumber, tofu, tempeh, kangkung, bean sprout, and lontong. All served with black sauce. Black sauce is made from garlic, chili, peanuts, onion, salt, sugar, water, petis, and slice of young banana. The step to make Rujak Cingur is first, clean all vegetables then cook. Second, peel and clean all the fruit and then slice into small pieces. Third, prepare the sauce by grind or blend all the ingredients, then add a little of water to make it thicker. Last, serve: cut lontong into small slices, then arrange it on the plate, add cooked vegetables, fruits, fried tofu, fried tempeh, cingur (cooked buffalo or beef lips), and then pour with the sauce. Rujak Cingur can be eaten with krupuk.
