PER BACCO CELLARS Where the Wine Speaks for Itself Longtime friends Craig Shannon and Marco Rizzo shared many meals filled with conversations of one day making wine together. Craig, a third-generation vineyard manager, had mastered the art of growing grapes and knew it would translate into crafting a superior product. Marco, owner of Café Roma, knew it would be a successful partnership and a perfect fit for the restaurant. They both agreed on the fundamental idea of pairing the best possible fruit with solid winemaking in order to produce wines of distinction. Marco’s childhood of reading comic books in Italy gave him an idea for the label. Perbacco is a northern Italian phrase used to describe an unexpected surprise but it literally means “for Bacchus,” the Roman god of the vine. While on a fishing trip in Mexico, Craig received a call from Marco with surprising news. Opportunity had struck when an older Chardonnay vineyard in Edna Valley came up for lease. They jumped at the chance to farm it and before they knew it their first vintage of Chardonnay received 90 points. They specialized in Chardonnay

and Sangiovese but they soon looked for another red varietal. In 2002, they decided to try a relatively unpopular red grape to fit their growing line of wines. At the time, Pinot Noir was something that not a lot of people wanted to touch. However, with their first vintage Per Bacco beat out 350 other wineries San Francisco’s Pinot Noir Shootout and scored 91 points from Wine Enthusiast. Two years later the “Sideways” phenomenon occurred and the rest is history. With Craig’s farming background and ties to the land, Per Bacco’s location on the historic Filiponni Ranch in San Luis Obispo

is a perfect fit. Visiting the tasting room, which is located inside the winery, can truly demystify the winemaking process as well as provide the best tasting room experience in the area. The goal is to provide a unique and educational tasting experience while escaping from the hustle and bustle of a larger winery. While the wines are superior, you will not find fancy window dressings to impress the crowds; instead, they leave that up to the wine. At certain times of the year you can taste their award-winning Pinot Grigio out of the tank along with an informal tour of the winery. Currently, Per Bacco Cellars produces Pinot Grigio, Chardonnay, Pinot Noir, Syrah, Petite Sirah and a late harvest Zinfandel Port. The Dionysus Pinot Noir is a Barrel Select Reserve and has consistently rated the highest of their wines. Per Bacco Cellars is located at 1850 Calle Joaquin Road in San Luis Obispo. The Central Coast’s Premier Wine Tasting and Auction Features Wineries and Restaurants from the San Luis Obispo Region San Luis Obispo Vintners Association announces their 19th Annual Harvest Celebration, November 6th-8th. The Grand Tasting and Auction will take place on Saturday, November 7th from 1 to 5 p.m. at the Avila Beach Golf Resort. More than 50 wineries and restaurants from the San Luis Obispo region are featured in the scenic seaside setting of the Avila Beach Golf Resort. Winemakers, local chefs and wine lovers share the fruits of their labor and passion for the art of winemaking. For locals, and those from out of the area, this is a great time to explore San Luis Obispo and discover the culinary treasures of our unique region. Harvest celebrations take place all weekend and kick off on Friday night with winemaker dinners that offer a great value. Hit the SLO Wine Trail on Sunday and visit participating wineries during their annual open houses. Wine growing in San Luis Obispo County stretches back to the missionary days of California viticulture, when the first grapevines were planted by the Franciscan padres who settled California in the 1880s. Winemaker Profile: Pismo Beach Winery

MARTIN & BRYAN FRIEDMAN by Mark Storer The passion of winemaking draws millions of people each year. It’s quite like the entertainment business in many respects and you’ll often hear people speak of it in just those colloquial terms. “I got the bug when I was a waitress,” or “I came out west on vacation and went to a winery and I was hooked…” It’s common enough now that it could be the new Hollywood, a kind of repository for those seeking their field of dreams. But these fields are not baseball diamonds, they’re vineyards. So begins the story of Martin and Bryan Friedman, brothers who co-own Pismo Beach Winery and serve as the winemakers as well. Pismo Beach winery is a family business that goes back a long way and a little farther north. The brothers planted a Cabernet Sauvignon vineyard on land that Martin owned in San Mateo County. “There was never an intention to go into the wine business,” says Brian. “I made beer at my house and liked wine, but

we didn’t intend to make a business out of it.” That was in the 1990s when Martin decided to sell his manufacturing business in the Bay Area and move to the Central Coast to “de-stress.” Martin bought six acres of land in the Edna Valley and planted Pinot Noir grapes there. “I contracted grapes to other wineries and I kept some for myself and made Pinot Noir in small batches,” said Martin. He entered his Pinot Noir in the Mid-State Fair’s home winemaking competition and he took the gold medal in 2005. “That got me thinking a bit more about it. It was a hobby that blossomed into a career.” That hobby wound up on a piece of property that the Friedman’s owned in Pismo Beach. “There wasn’t a winery in Pismo and that appealed to us,” said Martin. Meanwhile, Bryan lives on an apple orchard at the base of See Canyon where he too is now growing grapes. Along with their own vineyards, the brothers purchase grapes and make Cabernet Sauvignon, Petit Sirah, Zinfandel, Barbera,

Chardonnay and of course, Pinot Noir. Pismo Beach Winery opened its doors on New Year’s Eve of 2008. Less than a year later, the winery’s club is approaching 100 members and local restaurants are featuring their wines. “We prefer an old world style of making wine. It’s hand-crafted,” says Bryan. “We pitchfork our grapes into the crusher and we are very hands on throughout the process,” he says. “It’s a lot like cooking,” says Bryian. “I love to cook and you want people to like what you make and to enjoy it. Winemaking is a lot like that. You make the best product you can make and you hope people like it,” he says. The brothers are committed to sustainability, too. “We use very few chemicals in the vineyard or in the winery. We try to keep it pretty natural,” Brian adds. HEARTHSTONE WINERY by Mark Storer Vineyard Drive gently dips and curves through hillsides dotted with coastal live oaks and straw-colored grasses, a classic wine country backroad where visitors are treated to serene landscapes along with memorable wines. Sitting atop one hillside overlooking such a landscape is the Hearthstone Vineyard & Winery tasting room, an intimate venue that opened a mere five months ago. There is little to distract from the wine inside the warm, casual tasting room. At a scant 1,000 square feet, there is nothing gimmicky about the interior. An attractive patio furnished with comfortable Balau hardwood furniture and shaded by oaks provides an ideal spot to enjoy a bottle of wine on a warm fall afternoon. “We want to stay pretty simple,” said Connie McBride, the tasting room manager. “We’re here to showcase the wines.” Hearthstone’s wines are 100 percent estate grown on a 40-acre vineyard in the Adelaida region west of Paso Robles and less than 10 miles from the Pacific Ocean. Longtime horticulturist and Hearthstone owner, Hoy Buell, planted the vineyard in the late 1990s on a steep, limestone-rich hillside that at some points rises 1,400 feet above sea level. Buell offers winemaker Paul Ayers plenty to tinker with, having planted 18 varietals in Hearthstone’s vineyard, using superior, carefully selected clones and rootstocks. “I like diversity and trying new things,” said Buell. “We’re here to provide an exceptional experience tasting wines.” Buell initially started Hearthstone as a grower, selling his fruit to other wineries. He is hardly a newcomer to the plant-growing business, having owned Greenheart Farms – a wholesale flower and vegetable nursery in southern San Luis Obispo County – for more than 30 years. Hearthstone’s signature wine is a proprietary Rhône-style blend of Grenache and Syrah bearing the name Slipstone. The 2006 Slipstone being poured recently at the tasting room earned the Gold Sweepstakes at the 2009 San Diego Wine Competition. While Hearthstone produces 100 percent varietal wines, Buell is a fan of blends. “Blends are really unique,” he said, and offer consumers something can’t find anywhere else. Indeed, remarked Buell, repeat visitors to Hearthstone’s tasting room will usually find the flight of wines being offered quite a bit different than the selection tasted earlier. “We produce small lots of really interesting, unique wines,” summarizes Buell. “That’s what we’re making.” Although concentrating primarily on red varietals, Hearthstone’s Pearl is a platinum award-winning blend of Viognier and Rousanne. With annual production at about 1,000 cases, Hearthstone sells its

wines exclusively through the tasting room or via membership in its wine club. There is no retail distribution. The Hearthstone tasting room is at 5070 Vineyard Dr. off Highway 46 West. It is open Thursday through Monday from 11 a.m. to 5 p.m. There is a $7 tasting fee that includes a stemless, crystal glass. They opened the new tasting room on Vineyard Drive just last month, and hope to sell most of their production direct to the public, and avoid distribution. “My model is to slowly grow a 40-acre vineyard into full usage through efforts both in our tasting room and wine club,” Buell explains. “The whole goal here is to have excellent wines at reasonable prices.” Most their wines are priced from $18 to $32 – a value, they say, compared to other west side wines. The new tasting room is not big – only 1,000 square feet – but it has sweeping views of the west side hills, and has the warmth, comfort and friendly ambiance that Buell initially intended the Hearthstone to reflect.

INTELLIGENCE FOR THE WINE CONSUMER

Which wines are compatible with a wide variety of foods? This question arises often when I am out to dinner with a group of people. I am asked to pick a wine for the table that will satisfy everyone. This is almost impossible, not only because each person has their own preference for wine, but each will order his or her own dinner independent of the others, which will invariably result in a wide variety of foods on the table. The problem therefore becomes how to satisfy as many people as possible with one wine selection. Depending on the number of people at the table, one way to approach the task is to order both a white and a red wine. This is always my first choice when dining with more four or more people. The wines I like to select on these occasions are light-bodied whites and medium-bodied reds. For white, I find Sauvignon Blanc to be very versatile with almost all fish, vegetarian and chicken dishes. This wine typically has a crisp, refreshing feel and doesn’t dominate food flavors. People who say they will only drink white wines will pretty much always feel comfortable with a Sauvignon Blanc. With the red wine selection for a group there are two roads I can take, depending on the style of restaurant we’re in. If meat and game dishes and other big, flavorful meals dominate the menu, I like to make the red choice a blended wine. This could be one of many different

blends that are popular today, such as Cabernet Sauvignon combined with Merlot, Cabernet with Shiraz, or Cabernet with Sangiovese. These wines combine richness of flavor with a smoothness that will appeal to many red wine drinkers. If, however, the menu is mostly middle-of-theroad style with pastas, chicken, light sauces and salads, I will usually select a Pinot Noir. This wine is probably the most versatile of all reds, and will usually appeal to both red and white wine lovers. When dining in French restaurants, you can call out for a red Burgundy and know you will get a Pinot Noir. When you are unsure of which wine to order with a large group, these suggestions will help your odds of pleasing the most people. In a quality restaurant, there is usually a wine expert on hand who can make suggestions, and you should feel free to take advantage of their knowledge of the menu and their wines that pair best with it.

J. LOHR VINEYARDS & WINES Defining the Future by Michael Cervin Jerry Lohr is arguably one of the pioneers of Paso Robles wine country. He’s been at the game for more than 30 years, and during that time has helped place Paso Robles and Monterey squarely on the world wine map. Originally from South Dakota (itself home to just over a half dozen wineries), Jerry Lohr migrated to the Central Coast and opened up one of the very first wine centers in 1974 in San Jose, long before wine was even part of the American lexicon. Appreciating the viability of the Paso Robles region, Lohr opened up a second wine center in 2001. Two tasting rooms, two different counties, Lohr understands the complexities of both growing regions and wanted to capitalize on the uniqueness of the areas. “We focus on flavor from vineyard to bottle,” says Director of Winemaking, EVP/COO Jeff Meier. With a variety of vineyards, including plantings in the Napa Valley, Lohr and Meier have the ability to pick and choose what they want to produce. Paso Robles has become one of the main regions for the red wines. “When we first went to Paso Robles in the early 1980s,” says Meier, “we talked to a lot of people,

tasted a lot of wine, and decided that Paso was particularly good for Cabernet Sauvignon. Over the years, we learned that the other Bordeaux varieties also do extremely well here.” In 1998, Meier and Lohr decided to try expanding on the Meritage notion by looking at the potential of Merlot and Cabernet Franc as lead varieties. Their tasting trials confirmed what they had suspected all along. “Today, we do some special farming in certain vineyard plots that we’ve identified as best for those varieties,” says Meier. J. Lohr has long produced a wide variety of wines, from standard offerings like Chardonnay, Cabernet Sauvignon and Merlot to some rather obscure wines like the oftmisunderstood Valdiguié, a light red wine that has proven to be something of a successful anomaly. “Valdiguié is a red wine with training wheels,” Meier admits. “It is suited to a nouveau style of red wine, sort of like Beaujolais on steroids. Yes it’s a novelty, but it sells well, and we have international distribution.” They produce about 15,000 cases of Valdiguié from Monterey County each year. They have also become well known for their Estates Bay Mist White Riesling, also from the Monterey region. No fly-by-night

success story, the 2008 vintage was their 32nd consecutive year for this wine. Owning their own vineyards is crucial in part because, as Meier says, “a consistent source of fruit is good to have. It helps you control your own destiny.” Today, J. Lohr wines are available throughout the United States and in more than 25 countries worldwide. The goal of J. Lohr has always been to produce varietals that can compete with the finest in the world, using a style that focuses on flavor and complexity, utilizing vineyard selection, technology, innovation and attention to detail. This goal has led Jerry Lohr and his team to develop three tiers of wines produced from estate vineyards. The J. Lohr Cuvée Series expresses their top wines. “The idea of the Cuvée Series,” says Lohr, “was to allow our winemakers a chance to blend small premium lots into cuvées that represent the basic varietals grown in Bordeaux. It’s not that we want our wines to resemble their French counterparts, but rather that each one is meant to showcase what that mix of grapes does here in Paso Robles, which we believe to be a region worthy of influencing the world.” The J. Lohr Vineyard Series includes Pinot Noir, Riesling and Chardonnay from the

Arroyo Seco region of Monterey County, Cabernet Sauvignon and Petite Sirah from Paso Robles, and Sauvignon Blanc and Cabernet Sauvignon from Carol’s Vineyard in northern St. Helena in the Napa Valley. Los Olivos ‘Day in the Country’ – October 17 29th Annual Event Celebrates with Music, Food, Wine, Crafts and More The Los Olivos Business Organization (LOBO) will once again host the 29th annual festival, “Los Olivos Day in the Country,” on Saturday, October 17, 2009. A family favorite, the event takes place in the center of the town of Los Olivos with proceeds supporting town beautification, flagpole and street maintenance, and other community events. “Los Olivos Day in the Country is a truly special event for our town. Wine, Women and a Few Good Men – Artwork by Joan Jones at Carina Cellars Exhibition Runs Through November 30, 2009 Carina Cellars is proud to feature the artwork of Lompoc artist Joan Jones, which is on display in their tasting room in Los Olivos throughout October and November. Jones’s passion for the human figure is evident in this show, which will include pastel and watercolor originals from live models, as well as giclee fine art prints of the same. “Both men and women model for workshops I participate in, and I love working on each – the male for his more pronounced muscle definition and the female, no matter her size, for her curves,” Jones said. With a fine winery showing her work, Jones will also include pastel paintings and prints of local vineyards, hence the show’s theme. Although Jones considers watercolor her primary medium, recently to prepare for this show, she has worked more in pastels, a medium suited to her skills as a draftsman. “As with many of us, I am a ‘work-in-progress.’ My studies will never be complete, but this area to me is the ‘mecca’ for all the arts, including the visual arts. I feel so very lucky to have landed here,” Jones said, adding that, “the Lord has blessed me with good health, good teachers and the support of family and friends in the pursuit of my craft.”

Step Back in Time at Old Creek Ranch by Mark Storer Antonio Riva probably looked through tear-stained and homesick eyes as he gazed on the gently rolling hills, oak trees and sage brush that dotted the Ojai landscape before him. According to the one time internationally celebrated chef, the land reminded him of home and so he purchased it and built a winery there. It was the late 1800s and the booming beach community of Ventura, a few miles down the hill, was speckled with oil drills and ships moving into the pier to load and unload. It’s that history that still sits atop Old Creek Road where John and Carmel Whitman, along with their daughter Campbell, a professional chef, and winemaker Mike Meagher produce unique wines from grapes purchased throughout California, mostly in Santa Barbara County. “There was a vineyard here,” says Whitman, “and we grew grapes up through 2000. That was the last harvest.” The vineyards of the Ojai valley area, which boasted several wineries and is still home to a hardfighting number of them, was decimated by the glassy winged sharpshooter and Pierce’s disease. But a winery had existed on the property since the 1800s and Whitman was determined to see it through. “We like to think we’ve stopped time here,” he says of the winery’s tasting room. “It still kind of looks like 1942 in here.” The dark wood

floors and old fashioned bar dominate the space with a stone fireplace at the back and a couch where you are liable to find one of several winery dogs lounging about as you walk in. “We want to make interesting wines,” says Whitman. “We want them to be expressive of the fruit and really, to just be neat.”

Learning from Adam Tolmach of the Ojai vineyard the practice of contracting to buy fruit by the acre instead of by the ton, Whitman and Meagher spend a good deal of their time traveling to the vineyards with whom they work and finding the acreage that speaks to them. “We’ve worked a lot with White Hawk vineyard, Vogelzang and others,” says Meagher. “We’re looking for vintners that share our point of view. I feel like the less you interfere with the fruit, the better,” he adds. Meagher is a UC Davis grad who worked with Tolmach in years past and also produces wine under his own label. Producing some 2000 cases of wine a year, Old Creek Ranch sells 90 percent of it either through its 200 member wine club or out the door of the winery itself. Sure, you’ll find a beautiful Cabernet Sauvignon and an utterly smooth Syrah at Old Creek Ranch. But you’ll also find Grenache, Carignan, Tempranillo and others. “I like the wines of Southern France and Spain and I like to taste things I haven’t before,” says Whitman. “Most wineries are out to get scores from publications. We’re not. I mean, we’ve done pretty well, but we want to make good

JADA VINEYARD & WINERY by Michael Cervin The name Jada, at least according to Jada Vineyard & Winery, is the name of a fishing boat in the village of Castellammare de Golfo (Castle by the Sea) a city located in Northern Sicily. Jada owner Jack Messina’s father was born near there and immigrated to the states at age 11, so they will tell you. Then comes the caveat. “We will leave it up to your imagination how much of this is factual.” And thus starts the relationship with Jada Vineyard & Winery in Paso Robles. From the rather unconventional tasting room to the wines themselves, Jada is rethinking wine and how wines should be marketed. Wines at Jada go by unique names like XCV, a white blend of Viognier, Roussanne and Grenache Blanc; and Mirror, a mix of Syrah, Cabernet Sauvignon and Petit Verdot; Hell’s Kitchen, another blend of Syrah, Grenache, Mourvedre and Tannat; and Jack of Hearts, a Bordeaux blend of Cabernet Sauvignon, Petit Verdot and Merlot. All the names have a story that goes with them, but

that is something you will want to visit Jada to sort out. The stacked stone walls and arched iron gate that fronts the highway will lead you alongside a line of mature fruitless plum trees. These are the visual cues to lead you toward the tasting room. Once inside, the stained concrete floor, alight with a colorful pattern, lifts the eye up to the soft wood tones of the sleek tasting bar. The ceiling narrows down, forcing the eyes to the windows behind the tasting bar with beautiful views to the vineyards. Or step into the next room, known as

the viewing deck, an expansive area of tables and chairs which allows views of the vines and nearby properties. The facility is a hip modern design, which juxtaposes the earthy, laid back rolling hills. One of the unique things about Jada is that cheeses from Paso Robles local cheese shop, Vivant, are out every day, and pair with what they are currently pouring. The staff assists consumers to taste the wine, the cheese and then the wine again. They also offer some gift items, but the focus in primarily on the wines and views. Also, make sure you sample Jada’s Tuscan-style olive oil made from olives grown on the estate. Ask the tasting room staff to tell you a Jada folklore story or two, sip your wine and enjoy the experience.
