KELSEY SEE CANYON Old World Tradition – Cutting Edge Wines by Mark Storer
S
ee Canyon sits nearly smack dab in the center between Los Angeles and San Francisco. This lush and lazy canyon is divided by a ribbon of road and punctuated throughout with creeks and foliage. As the canyon winds toward the ocean, it opens slightly and veers off to the north and south where apple orchards and vineyards take advantage of the cool Pacific breezes and produce unparalleled fruit. It’s here that Dick and Dolores Kelsey along with their sons Keith and Richard planted their own roots. Kelsey See Canyon winery sits off of the See Canyon exit just south of San Luis Obispo to the west of the 101 freeway. It’s more likely that you’ll notice the apple orchards before you see the vineyards. They are there, though. Two acres of Chardonnay along with a small plot of Pinot Noir with which the Kelsey’s have created a unique niche in the world of winemaking. What started in 1999 as a kind of retirement hobby for Dick Kelsey has now blossomed into a thriving winery that produces around 3500 cases of wine a year and boasts a winemaker whose own experience is world renowned. Harold Osborne’s career is now nearly legend and includes a degree from

California State University, Fresno, a year at UC Davis, nine years at Schramsberg, harvests and winemaking in France, Australia and even at Cloudy Bay Winery in New Zealand as well as winemaking with MaisonDeutz, now known as Laetitia Winery and Cambria Winery in Santa Maria. This renaissance winemaker settled in with the Kelsey family when he became convinced that the cool climate of the San Luis Obispo region would be ideal for Sauviwww.winecountrythisweek.com
gnon Blanc. “I bought Sauvignon Blanc grapes from the Edna Valley in 2001-2002,” says Osborne. “It was pretty good fruit, but it didn’t have that fresh, lively, zesty New Zealand style. It’s just not in the grapes.” He wasn’t deterred. “I sort of got engulfed in Dick’s operation and never got out,” says Osborne. Kelsey was making wine himself, “but he called it Kelsey Vino Yucky,” laughs Osborne. “I sort of took the winemaker job, took the ‘yucky’ out, and here I am today.” Osborne’s dedication to creating fresh, crisp and flavorful wines shows in his experiments with the Kelsey’s orchards as well. The winery’s wine club members and those who come to the tasting room are enamored by the Apple Chardonnay and the Apple Merlot that Osborne tried on a fluke one day by blending 50 percent apple juice with 50 percent wine. “Dick’s son was making the juice and had some extra. I thought what would happen if we blended it and refermented.” The result is a Chardonnay with crisp apple flavor that still maintains its wine nuance and subtle flavors. “It’s hugely popular,” says Osborne. “It usually sells out, 95 percent of it or so, at the cellar door.” Cellar door is what the Australians call the tasting room. “It’s a better term,” he says. Some of it also goes to the Apple Farm
WINE COUNTRY THIS WEEK WINE COUNTRY NEWS restaurant and hotel in San Luis Obispo. The Apple Merlot has, of course, a different character. “It doesn’t have the crispness that the Chardonnay has. It’s got more of a red apple crispness to it,” says Osborne. “It’s like a braeburn rather than a granny smith. The Merlot is a lot more structured than the Chardonnay and you still get those nice cherry flavors coming through, too.” While the Apple Chardonnay sees minimal to no oak, the Merlot sees only a little bit as well. It’s not just novelty wines at Kelsey, though. Osborne is busy creating a Central Coast cult wine in Kelsey See Canyon’s Estate Pinot Noir. The Kelsey’s grow a small block of Pinot on their property and last year, it yielded only two barrels. Out of that, 600 bottles were produced which will go mostly to wine club members. The Kelsey property borders the Salisbury Vineyards in See Canyon and Osborne works with John Salisbury frequently, purchasing fruit from the vineyard and consulting in their winemaking as well. Osborne is not content to let sleeping dogs lie, either. His craftsman style of winemaking bucks a lot of the old trends and he favors using less oak, even on the red wines that Kelsey See Canyon produces. “Pinot Noir is delicate, so why put it in oak for so long? We need to start re-thinking Pinot Noir. The French have to hide their meat in sauces – and we’re hiding our wines in oak,” he says. Kelsey See Canyon also produces their estate Chardonnay in a similar fashion and while Osborne is on hand to make sure fermentation goes according to plan, he’s not heavy handed in using oak in the wines. “We’re about the fruit and letting it express itself through the wine,” he says. In that same spirit, Osborne has created Kelsey’s Platinum Pinot Noir. “It’s essentially a white Pinot,” he says. “We get the fruit in early while it’s still cool and we press it immediately; no crushing or destemming, just pressing very gently. We get that juice off as fast as we can and there’s an absence of color – none really at all.” The Pinot Noir for the Platinum series comes from the Salisbury Vineyard. “We’ve been really happy with the fruit there.” Using methods he learned in France and at Schramsberg and Maison-Deutz for sparkling wine, the Platinum Pinot is handled using Methode Champenoise press cycle in order to get the juice as fresh as possible. “As soon as we start seeing color in the juice, we press it off and stop.” Kelsey See Canyon also produces Cabernet Sauvignon and Merlot from vineyards in Paso Robles owned by Richard Kelsey, Dick and Dolores’s son. There’s also a beautiful Paso Robles Zinfandel. Rounding out the Kelsey collection with unique Ports, one made from Pinot Noir called Esprit de Pinot, and another made from Zinfandel, Osborne has helped Kelsey See Canyon create bold and new wines in using old world techniques. “The Esprit de Pinot is a pink Port and it’s pretty unusual,” he adds. Perhaps it’s the ocean influence or maybe the cooler temperatures, at times more than 40 degrees cooler than the Paso Robles wine region to the north. Whatever it is, Kelsey See Canyon has taken advantage of it. “Goût du Sel - The smell of the ocean salt in the air.”

Minassian-Young Welcomes Harvest & Celebrates its Newly Remodeled Tasting Room In 2004, Minassian-Young Vineyards opened its doors to the public and now, four years later, the winery has a new look. The focus of the renovation is to allow guests to fully appreciate the beautiful settings, sense of place and inner workings of the winery. On the south side of the tasting room, three double French doors overlook estate vines and the walnut orchard surrounded by the Santa Lucia Mountains. Framing the tasting room is a new pergola and patio. A seven-foot window on the north side gives guests a glimpse of the working cellar. Keeping sustainability in mind, this remodel was completed with minimal impact by recycling all lumber, doors and windowpanes to Recyclers and Architectural Salvage (Paso Robles, CA). In addition, solar tubes, energy efficient appliances, tankless water heaters and water-efficient toilettes have been installed. In the near future, solar panels will help offset its energy usage. Completion of the remodel is planned for early October. To celebrate and welcome harvest season, they will be pouring their latest fall releases and, Paso’s favorite artisan bread maker, Chef Ciro Pascuito will delight guests with rustic Italian dishes prepared in the wood-fired oven and grill at Minassian-Young. New Paso Robles Wine Tasting Event Embraces the Up-and-Coming Wine Connoisseur Tickets Now on Sale for CRAVE – A Paso Robles Wine Experience – October 24 Paso Robles comes to San Luis Obispo this October for a wine tasting that is sure to satisfy all your cravings! The Paso Robles Wine Country Alliance announced that tickets for CRAVE – A Paso Robles Wine Experience are now on sale. Research shows that the “millennial” generation (21 – 29) has a high interest in the appreciation of wine through tasting and education. CRAVE is a new spin on wine tasting that blends tradition with a hip tasting experience. CRAVE takes place on Friday, October 24 from 7:30 to 10:30 p.m. at the Veterans Hall in San Luis Obispo (801 Grand Avenue). Nine different Paso wine varietal bars will be featured and paired with the finest fare of San Luis Obispo County. More than 55 Paso Robles wineries will showcase a single wine from their portfolio. The CRAVE experience is perfectly complemented by D.J. Flight, a frequent D.J. of Native Restaurant & Lounge, in a relaxed atmosphere. Three drop-off spots include the Cal Poly Student Union, Laguna Shopping Center and Downtown SLO. Responsible tasting is also an important element of CRAVE. Practice of the Four S’s of responsible tasting – swirl, smell, sip, spit – is a valuable way for wine enthusiasts to experience and understand each wine from first to last taste. o worries about the weak dollar if you want to travel to France or Italy and do some wine tasting this year. You can have all of the ambience of a Mediterranean villa in Paso Robles at Villa Valdemosa, a 10-acre estate with a luxurious bed and breakfast inn – just 10 minutes east of downtown Paso, and yet a world away. Vineyards are under development on the property for a boutique winery planned for construction next year. Perched on a hilltop, the inn offers “forever” views of surrounding vineyards, olive groves and lavender. A range of wellappointed suites — called “Bordeaux,” “Petite Syrah” and “Syrah” – are available at prices that undercut the rates of area hotels that have much less to offer. For as little as $165 per night (stay mid-
week for two nights and save an additional $50), travelers can relax in a spacious room with private bath and patio, or take a dip in the outdoor pool and spa, while enjoying a sunset view and wine tasting. Owner Tom Roebuck is himself a winemaker and you might even talk him into serving up his private reserves, such as the 2003 Mystral, a gold-medal-winning red blend. While you won’t see a television screen in the 5,000-square-foot villa, you will be soothed by the strains of Mozart from an
extensive stereo network. You might even be treated to some live grand piano or guitar music, courtesy of local musicians who occasionally drop by. Near-term plans include hosting house concerts and cinema and wine under the stars. In the mornings, guests who stay in the 400-square-foot Bordeaux suite, which offers a soaking tub and a walk-in waterfall shower for only $235 a night, may step into the loggia, where a real fireplace takes the chill off the morning air. You have to wonder what Old Timers would say when they saw the word “The Way Station” emblazoned on the outside of this handsome restored building in the middle of Cayucos just across from the ocean. And then went inside and were confronted by one of best wine (and wines by the glass) lists around. The food is also a long way above anything you might have found in this charming seaside town at the turn-of-thecentury. • 1/4 cup all-purpose flour • Salt and freshly ground pepper • 1 large egg • 1 tablespoon water • 1/4 cup panko bread crumbs • 2 tablespoons ground almonds • 1 (8-ounce) slice manchego cheese, about 1-inch thick • 2 tablespoons olive oil • Hot Garlic Vinaigrette, recipe follows • 1/4 cup slivered almonds, lightly toasted • 2 tablespoons coarsely chopped flat-leaf parsley Set up three bowls: one with flour seasoned with salt and pepper, one with egg and 1 tablespoon of water and seasoned with salt and pepper, and one with the bread crumbs and ground almonds. Preheat oven to 450 degrees F. Cut cheese into two equal pieces. Dredge the cheese first in the flour, then in the egg wash, and finally in the bread crumbs. Place the cheese in a small cazuela, drizzle with olive oil, and season with salt and pepper. Bake in the oven for 5 to 7 minutes or until golden brown and the cheese is soft. Immediately drizzle with the Hot Garlic Vinaigrette and sprinkle with slivered almonds and parsley. Serve with warm crusty bread. Hot Garlic Vinaigrette: • 1/4 cup olive oil • 3 cloves garlic, finely chopped • 2 tablespoons aged Sherry vinegar • Salt and freshly ground black pepper Heat oil over low heat in small saute pan. Add garlic and cook until light golden brown. Remove from heat and whisk in the vinegar. Season with salt and pepper.

SCULPTERRA WINERY by Dave Wilcox ith its spectacular sculpture gardens featuring larger-than-life bronze and granite works that include a prancing horse and a prowling feline, the Sculpterra Winery Tasting Room quickly grabbed attention in the Paso Robles wine region. Now about to celebrate its first anniversary in October, Sculpterra – like an intriguing wine – continues to develop character over time. “We wanted to bring something new to the area by combining outdoor art and the vineyard,” said Paul Frankel, the assistant winemaker and son of owner Dr. Warren Frankel. Although the winery is only a year old, the Frankel family has owned the gorgeous 90-acre ranch in the Linne Valley east of Paso Robles for nearly 30 years. A pistachio orchard was planted before the vineyards, and bowls of the estate-grown nuts are on the tasting room’s attractive stained concrete bar. The warmly-decorated tasting room, featuring a number of miniature sculptures that are each for sale, was once a welding shop itself. African mahogany double doors

provide access to the barrel room, while there is plenty of wood and stone throughout the room. Large windows provide glimpses of an outdoor picnic area, which includes a 10-ton granite sculpture of a stalking cat. Martha Clyde, the gracious tasting room manager who also oversees the winery’s wholesale operations, said the unique venue provides a number of opportunities. “We’re still inventing ourselves,” said Clyde. “There are just so many possibilities.” The winery recently hosted an intimate evening in which guests were treated to soloists serenading each of the gently-illuminated sculptures with different instruments. “It was magical,” said Clyde. “At night, this venue just completely changes character.” While the sculpture gardens are worthy of a visit by themselves, Sculpterra’s wines are also turning heads. Cabernet Sauvignon is its flagship varietal, said the younger Frankel, with both the 2005 and 2006 vintages capturing gold medals. Besides the Cabernet Sauvignon, the estate vineyards include plantings of Zinfandel, Merlot, Cabernet Franc, Mouvedre, Petite Sirah and Viognier. Pioneer Day is Still Going Strong in Paso Robles History is always in style in Paso Robles and nowhere is that more apparent than at the annual Pioneer Day celebration taking place Saturday, October 11, in downtown Paso Robles. What originally started 78 years ago as a way to thank World Famous Barbary Coast Girls farmers and ranchers for all of their hard work on behalf of the community has actually changed very little over the years. The original motto “Leave Your Pocketbook at Home” is still in place. The parade is still filled with farming equipment, horses and children and locals still line Spring Street for the parade and flock to the park for the free Bean Feed afterward. There will be some new faces in this year’s parade. Local Olympic Silver Medalist Gina Miles will be in the parade, no word on if she’ll be riding McKinlaugh. Kids’ Costume and Pets Contest Gymkhana entries are way up

When the French find out you are a winemaker, they really open up to you,” says Tom, who is a member of the local French Club in Paso Robles, where he has the chance to practice speaking the language and meet others interested in food, wine and French culture. Villa Valdemosa is a favorite spot for honeymooners who have wed at nearby Stillwater Winery, or at other “back roads” wineries. A special Champagne brunch is served to the newlyweds. The villa also hosts catered private parties and events for up to 50 people. A cancer survivor, Tom likes to host charity benefits, too. Two new suites under construction will be completed soon. The “Provence” and the “St. Emillion,” decorated with the vibrant color schemes of their namesake Old World regions, will offer king-size sleigh beds, private baths, Jacuzzi tubs and private patios with sunset views. These 400-square-foot suites go for $250 per night. Like the original rooms, the new suites will each include a flat-panel DVD system and free access to a selection of more than 500 movies. To finance the expansion, Tom is creating an opportunity for private individuals to invest $5000-$10,000 for an above-market return (6%) for up to two years. “There will also be B&B and winery benefits – fun things like special dinners, exclusive winery and B&B packages,” he explained. “It will be a lot of fun for those involved. I am calling it the Founders Club.” Tom’s vineyard is staked and the vines will soon go in – not the typical Cab and Chardonnay but Rhône varieties such as Mourvedre, Viognier and two or three clones of Grenache, as well as a Bordeaux known as Alicante Bouchet, since Tom’s specialty is unique blends. Tom believes the location of the villa in the heart of the Paso wine country is ideal. “We’re jut 10 minutes from the restaurants, shops and tasting rooms in Paso Robles, and only 45 minutes or so from Cambria, the Hearst Castle and San Simeon. Guests can also take advantage of complimentary visits to the Kennedy Fitness Center in Paso,” he explained. “After a day of wine tasting and seeing the local sights – perhaps picking up gems on Moonstone Beach and viewing the antics of the elephant seals at San Simeon – you can come back here, relax out on the terrace under the stars and be transported half way around the world to Tuscany or Provence,” he said. The fall season is fast approaching and along with it comes Santa Maria’s annual tribute to arts and grape harvest in our community! Celebrating its 25th year, the Autumn Arts Grapes and Grains Festival is once again offering a quality, fun-filled community festival on Saturday, October 4, from 10 a.m. to 4 p.m. at the Civic Center-McClelland Street Corridor (by the new Public Library)! Vintners Take a Break from ‘Crush’ to Celebrate Harvest They’re up before dawn, snipping the first clusters of the day’s pick off the vines by the headlights of the tractors. The hum of de-stemmers and wine presses join with the chatter and laughter in the cellar as the first wines of the 2008 vintage are crushed, stomped, punched down and pressed off. Aromas of fermenting wine and new barrels are ever present as wine hoses snake through the winery, “cellar rats” move barrels here and there, lab analysis is carefully done and the day’s work begins to end. Cleaning and sanitation of equipment is finally completed as the sun is setting on the day. Next day, repeat! The 2008 Harvest started mid-August in Santa Barbara County, and after eight weeks of exhilarating, exciting and yet exhausting work, winemakers and growers are ready to take a break for a day and celebrate the joys of harvest. They will join with their chef compatriots in Wine Country cuisine, specialty food purveyors and local bands for an afternoon of great wines, superb foods, live and lively music and companionship with friends old and new. The annual Celebration of Harvest festival will once again be held on the beautiful grounds of the Rancho Sisquoc Winery, located on the

outskirts of Santa Maria, on October 11th, from 1 to 4 p.m. The 100+ members of the Vintners’ Association will all be there, pouring their most current wines, and they will be joined by over two dozen local chefs, caterers and specialty food purveyors to showcase the bounty of this unique agricultural paradise. Vintners’ have also donated a plethora of large format bottle wines, special dinners at their wineries and gift-boxed verticals for a Silent Auction, which will benefit local charities. And to make the day even more festive, local bands will get guests up off their lawn blankets and kicking up their heels on Rancho Sisquoc’s grassy slopes! Celebration of Harvest, however, is more than just the festival itself! Visitors can purchase a “Vintners’ Visa” – a four day passport for tastings and special offers at more than thirty participating wineries – to take a leisurely stroll through the wine trails of the area, and many wineries are planning special events over the weekend.
