ARROYO ROBLES WINERY by Brianna Shore At any vineyard or winery, harvest is considered our “crazy” time. Every year you think that you are prepared to bring your fruit to the winery for processing and that first step to the bottle is taken. For my family, starting a winery was never supposed to be the full-time job. My dad, Bob Shore, started his career in the oil industry over in Bakersfield straight out of college. After spending 30 years there he decided it was time for a change. Moving into wine started as a side project, which turned into the full-time family business in 2005. Now working side-by-side with Dad, my brother Jason, my mom Tanis, my 3-year-old son Chris and two dogs, Emma and Riley, are making dreams a reality. Our current tasting menu includes best of class Estate Tempranillo, gold medal Chardonnays, three different blends – including one named for our dogs Emma and Riley – and our double gold Grand Cuvee Sparkling Wine. Harvest is my favorite time of the year. We get the chance to show all those that visit how the process starts, and they can take

that knowledge home with them as well as a bottle of great wine. Festivals and events focusing around the excitement of the annual grape harvest keep the tradition and anticipation in full bloom. This year we will be having our third annual Grape Stomp and Barn Dance on October 17th from 6 to 11 p.m. as part of the Paso Robles Harvest Festival. Always a great night, we encourage people to roll up their pants and get their feet purple! Come in and see one of the family in our downtown Paso Robles Tasting Room, located on the corner of 12th and Park Street. We are open daily from 11 a.m. to 7 p.m. On September 22, 2009, in the midst of starting to harvest on our Estate Vineyard, my dad Bob Shore was seriously injured. He is recovering nicely now but it was a serious moment for everyone in our family and friends around us. Here is a note that he wrote to all of those around us that have helped our family in this crazy time we call harvest: Thank You! Thank you to God for the inspiration to make it through this harvest… For wrapping me in your loving protective arms that Tuesday morning. Christopher, Bri, Jason

and Tanis: thank you for everything. Thank you to the San Miguel Fire Department Emergency Rescue Team: Scott, Phil, Eric and Kelly. Thank you to Oscar, Jason, the ambulance team, the doctors, nurses, staff and therapy team at Twin Cities Hospital. Thanks to all the people whose faces I didn’t see but were there to help that morning. Thank you for saving my life. Unbounded thanks to my children Jason and Brianna, Scott, Chris, Oscar and the countless others who are helping us bring our grapes in. For all of you who have prayed, called, given comfort, sent cards, sent flowers, given hugs and supported us during this crisis, thank you more than I can say. God bless you all. I learned what it means to say a prayer and receive God’s gifts. The greatest of which is my harvest of friends! The Central Coast’s Premier Wine Tasting and Auction Features Wineries and Restaurants from the San Luis Obispo Region San Luis Obispo Vintners Association announces their 19th Annual Harvest Celebration, November 6th-8th. The Grand Tasting and Auction will take place on Saturday, November 7th from 1 to 5 p.m. at the Avila Beach Golf Resort. More than 50 wineries and restaurants from the San Luis Obispo region are featured in the scenic seaside setting of the Avila Beach Golf Resort. Winemakers, local chefs and wine lovers share the fruits of their labor and passion for the art of winemaking. For locals, and those from out of the area, this is a great time to explore San Luis Obispo and discover the culinary treasures of our unique region. Harvest celebrations take place all weekend and kick off on Friday night with winemaker dinners that offer a great value. Wineries and restaurants partner to provide festive food and wine experiences at various winery and restaurant locations in San Luis Obispo. Hit the SLO Wine Trail on Sunday and visit participating wineries during their annual open houses. The weekend provides enthusiasts a chance to discover the distinct characteristics of San Luis Obispo while meeting the people that created the wines. Wine growing in San Luis Obispo County stretches back to the missionary days of California viticulture, when the first grapevines were planted by the Franciscan padres who settled California in the 1880s. Today, because of this region’s ideal world-class microclimate and soils, wine grapes are the leading crop in San Luis Obispo County. Tickets to the Saturday, Harvest Celebration are $80 and available on their website, along with a list of weekend activities, at www.slowine.com. This year, private tables are back! Tables of eight can be purchased for $800. There are a lot of new components added to this years Grand Tasting in Avila Beach. First off is the “locals” special entry price. For those attendees living in SLO County, you can purchase a ticket for $10 off the standard price. Secondly the vintners have added a “Futures Barrel Tasting” and for just $20 more you can get into the event an hour earlier than everyone else for a special Barrel Tasting and Futures Auction, where you will be able to purchase a case of wine that hasn’t even hit the bottle yet! MARTIN & BRYAN FRIEDMAN by Mark Storer The passion of winemaking draws millions of people each year. It’s quite like the entertainment business in many respects and you’ll often hear people speak of it in just those colloquial terms. “I got the bug when I was a waitress,” or “I came out west on vacation and went to a winery and I was hooked…” It’s common enough now that it could be the new Hollywood, a kind of repository for those seeking their field of dreams. But these fields are not baseball diamonds, they’re vineyards. So begins the story of Martin and Bryan Friedman, brothers who co-own Pismo Beach Winery and serve as the winemakers as well. Pismo Beach winery is a family business that goes back a long way and a little farther north. The brothers planted a Cabernet Sauvignon vineyard on land that Martin owned in San Mateo County. “There was never an intention to go into the wine business,” says Brian. “I made beer at my house and liked wine, but

we didn’t intend to make a business out of it.” That was in the 1990s when Martin decided to sell his manufacturing business in the Bay Area and move to the Central Coast to “de-stress.” Martin bought six acres of land in the Edna Valley and planted Pinot Noir grapes there. “I contracted grapes to other wineries and I kept some for myself and made Pinot Noir in small batches,” said Martin. He entered his Pinot Noir in the Mid-State Fair’s home winemaking competition and he took the gold medal in 2005. “That got me thinking a bit more about it. It was a hobby that blossomed into a career.” That hobby wound up on a piece of property that the Friedman’s owned in Pismo Beach. “There wasn’t a winery in Pismo and that appealed to us,” said Martin. Meanwhile, Bryan lives on an apple orchard at the base of See Canyon where he too is now growing grapes. Along with their own vineyards, the brothers purchase grapes and make Cabernet Sauvignon, Petit Sirah, Zinfandel, Barbera,

Chardonnay and of course, Pinot Noir. Pismo Beach Winery opened its doors on New Year’s Eve of 2008. Less than a year later, the winery’s club is approaching 100 members and local restaurants are featuring their wines. “We prefer an old world style of making wine. It’s hand-crafted,” says Bryan. “We pitchfork our grapes into the crusher and we are very hands on throughout the process,” he says. “It’s a lot like cooking,” says Bryian. “I love to cook and you want people to like what you make and to enjoy it. Winemaking is a lot like that. You make the best product you can make and you hope people like it,” he says. The brothers are committed to sustainability, too. “We use very few chemicals in the vineyard or in the winery. We try to keep it pretty natural,” Brian adds. INTELLIGENCE FOR THE WINE CONSUMER

Which wines are compatible with a wide variety of foods? This question arises often when I am out to dinner with a group of people. I am asked to pick a wine for the table that will satisfy everyone. This is almost impossible, not only because each person has their own preference for wine, but each will order his or her own dinner independent of the others, which will invariably result in a wide variety of foods on the table. The problem therefore becomes how to satisfy as many people as possible with one wine selection. Depending on the number of people at the table, one way to approach the task is to order both a white and a red wine. This is always my first choice when dining with more four or more people. The wines I like to select on these occasions are light-bodied whites and medium-bodied reds. For white, I find Sauvignon Blanc to be very versatile with almost all fish, vegetarian and chicken dishes. This wine typically has a crisp, refreshing feel and doesn’t dominate food flavors. People who say they will only drink white wines will pretty much always feel comfortable with a Sauvignon Blanc. With the red wine selection for a group there are two roads I can take, depending on the style of restaurant we’re in. If meat and game dishes and other big, flavorful meals dominate the menu, I like to make the red choice a blended wine. This could be one of many different

blends that are popular today, such as Cabernet Sauvignon combined with Merlot, Cabernet with Shiraz, or Cabernet with Sangiovese. These wines combine richness of flavor with a smoothness that will appeal to many red wine drinkers. If, however, the menu is mostly middle-of-theroad style with pastas, chicken, light sauces and salads, I will usually select a Pinot Noir. This wine is probably the most versatile of all reds, and will usually appeal to both red and white wine lovers. When dining in French restaurants, you can call out for a red Burgundy and know you will get a Pinot Noir. When you are unsure of which wine to order with a large group, these suggestions will help your odds of pleasing the most people. In a quality restaurant, there is usually a wine expert on hand who can make suggestions, and you should feel free to take advantage of their knowledge of the menu and their wines that pair best with it.

HALTER RANCH VINEYARD by Dave Wilcox Standing next to a magnificent, centuries-old oak tree overlooking the Halter Ranch vineyards, in the distance you can see the spot where a new, state-of-the-art winery will soon be built. Tradition and progress, combined in a seamless transition. Halter Ranch Vineyard is a dynamic winery founded by a European entrepreneur whose appreciation of fine wine and respect for the environment guides the decisions at the historic property west of Paso Robles. The 120-year-old Halter Ranch, with its Victorian-style farmhouse, red-roofed barn and old bunkhouse, is steeped in history. That history, though, had lost some of its charm until Hansjörg Wyss, a Swiss businessman with a fondness for the American West, purchased 900 acres of the original 3,000-acre ranch in 2000, knowing the site was ideally suited to produce world-class wine grapes. With an appreciation of the past and an eye on the future, Wyss and his small team of dedicated employees have restored the historic ranch in an ongoing project, while nurturing 240 acres of vineyards planted to 20 varieties in the Adelaida area west of Paso Robles – making it one of the most diverse vineyards on the Central Coast. “Part of the charm of this place are the old buildings,” said Leslie Wyss, the ranch manager whose husband, Mitch, is Halter Ranch’s grower. Ironically, they are not related to Hansjörg Wyss. “He really has a long-term approach to developing this vineyard and this winery,” Leslie Wyss said of the Hansjörg’s plans. Crucial to the far-sighted approach is Wyss’ commitment to preserving the environment. That commitment can be traced to a summer years ago when Wyss – while attending the Harvard University Graduate School of Business – spent months hiking and camping in Colorado. His success in business enabled him to establish the Wyss Foundation, which has helped preserve nearly five million acres of wilderness in the U.S. He also serves on the boards of the Wilderness Society and the Grand Canyon Trust. So it’s not surprising that Halter Ranch Vineyard sought and received

the Sustainability in Practice (SIP) certification as part of a pilot program developed by the Central Coast Vineyard Team. That non-profit group is made up of grape growers, wineries, researchers and natural resource professionals whose mission is to promote sustainable wine-grape growing on the Central Coast. Halter Ranch grower Mitch Wyss led the winery’s vineyard team in its efforts to qualify for the SIP certification, an arduous process requiring the winery to achieve and document 40 separate requirements. The SIP certification goes well beyond agricultural measures employed by organic and Biodynamically®-farmed vineyards, including such areas as equitable treatment of employees and continuing education. The environmental benefits of following sustainable practices extends to the construction of the new, 20,000-square-foot winery, as well. “The building will be better insulated, and we’ll incorporate solar panels,” said Winemaker Bill Sheffer. “All winery wastewater will be recycled into our vineyards and we’ll use less water for barrel washing, as well as saving energy by using gravity flow rather than pumps.” Currently, Halter Ranch uses two small buildings – one for fermentation, one for barrel aging – as its winery. “Overall, our winery operations will be far more energy-efficient,” said Sheffer, “which fits perfectly with our philosophy of sustainability.” The new facility is also part of Pacific Gas & Electric Co.’s “Savings by Design” program, which awards credits and rebates for designing a new building to be as energy-efficient as possible. Access to the new winery site will be via a recently-completed covered bridge spanning Las Tablas Creek, which connects the historic barnyard to the wood-framed winery. Amid the buzz of the new construction and the re-planting of portions of the vineyard, Halter Ranch continues to produce award-winning wines that include a number of unique blends. Halter Ranch fans and those who have yet to discover the winery should keep an eye out for the October release of the 2005 Ancestor, an Estate Reserve Bordeaux-style blend that earned a gold medal at the San Francisco International Wine Competition. Named for the stately oak that

sits atop one of the vineyard’s steep slopes, Ancestor is aged in French oak for 18 months before spending an additional two years in the bottle before its release. While Halter Ranch is planted primarily to red varieties, including the recent introduction of Tempranillo and Petite Sirah, winemaker Sheffer is grooming an impressive white wine program enhanced by the acquisition of a new bladder press. The white wine program has been focused on Sauvignon Blanc, Viognier, Marsanne and Roussanne. This year, Grenache Blanc and Picpoul, an ancient, highly acidic grape used primarily in blending, have been added to the winery’s production. Halter Ranch is also introducing a new Rhône-style white blend, called Côtes de Paso Blanc, using 2008 vintage fruit. It’s a blend of Roussanne and Marsanne, with a splash of Viognier. The Halter Ranch tasting room is at 8910 Adelaida Road, accessible either from Highway 101 or Highway 46 West. Los Olivos ‘Day in the Country’ – October 17 29th Annual Event Celebrates with Music, Food, Wine, Crafts and More The Los Olivos Business Organization (LOBO) will once again host the 29th annual festival, “Los Olivos Day in the Country,” on Saturday, October 17, 2009. A family favorite, the event takes place in the center of the town of Los Olivos with proceeds supporting town beautification, flagpole and street maintenance, and other community events. “Los Olivos Day in the Country is a truly special event for our town. Wine, Women and a Few Good Men – Artwork by Joan Jones at Carina Cellars Exhibition Runs Through November 30, 2009 Carina Cellars is proud to feature the artwork of Lompoc artist Joan Jones, which is on display in their tasting room in Los Olivos throughout October and November. Jones’s passion for the human figure is evident in this show, which will include pastel and watercolor originals from live models, as well as giclee fine art prints of the same. “Both men and women model for workshops I participate in, and I love working on each – the male for his more pronounced muscle definition and the female, no matter her size, for her curves,” Jones said. With a fine winery showing her work, Jones will also include pastel paintings and prints of local vineyards, hence the show’s theme. Although Jones considers watercolor her primary medium, recently to prepare for this show, she has worked more in pastels, a medium suited to her skills as a draftsman. “As with many of us, I am a ‘work-in-progress.’ My studies will never be complete, but this area to me is the ‘mecca’ for all the arts, including the visual arts. I feel so very lucky to have landed here,” Jones said, adding that, “the Lord has blessed me with good health, good teachers and the support of family and friends in the pursuit of my craft.”

Step Back in Time at Old Creek Ranch by Mark Storer Antonio Riva probably looked through tear-stained and homesick eyes as he gazed on the gently rolling hills, oak trees and sage brush that dotted the Ojai landscape before him. According to the one time internationally celebrated chef, the land reminded him of home and so he purchased it and built a winery there. It was the late 1800s and the booming beach community of Ventura, a few miles down the hill, was speckled with oil drills and ships moving into the pier to load and unload. It’s that history that still sits atop Old Creek Road where John and Carmel Whitman, along with their daughter Campbell, a professional chef, and winemaker Mike Meagher produce unique wines from grapes purchased throughout California, mostly in Santa Barbara County. “There was a vineyard here,” says Whitman, “and we grew grapes up through 2000. That was the last harvest.” The vineyards of the Ojai valley area, which boasted several wineries and is still home to a hardfighting number of them, was decimated by the glassy winged sharpshooter and Pierce’s disease. But a winery had existed on the property since the 1800s and Whitman was determined to see it through. “We like to think we’ve stopped time here,” he says of the winery’s tasting room. “It still kind of looks like 1942 in here.” The dark wood

floors and old fashioned bar dominate the space with a stone fireplace at the back and a couch where you are liable to find one of several winery dogs lounging about as you walk in. “We want to make interesting wines,” says Whitman. “We want them to be expressive of the fruit and really, to just be neat.”

Learning from Adam Tolmach of the Ojai vineyard the practice of contracting to buy fruit by the acre instead of by the ton, Whitman and Meagher spend a good deal of their time traveling to the vineyards with whom they work and finding the acreage that speaks to them. “We’ve worked a lot with White Hawk vineyard, Vogelzang and others,” says Meagher. “We’re looking for vintners that share our point of view. I feel like the less you interfere with the fruit, the better,” he adds. Meagher is a UC Davis grad who worked with Tolmach in years past and also produces wine under his own label. Producing some 2000 cases of wine a year, Old Creek Ranch sells 90 percent of it either through its 200 member wine club or out the door of the winery itself. Sure, you’ll find a beautiful Cabernet Sauvignon and an utterly smooth Syrah at Old Creek Ranch. But you’ll also find Grenache, Carignan, Tempranillo and others. “I like the wines of Southern France and Spain and I like to taste things I haven’t before,” says Whitman. “Most wineries are out to get scores from publications. We’re not. I mean, we’ve done pretty well, but we want to make good

wine, that’s all.” If it is scores you seek, though, look no further. The 2005 San Francisco International Wine Competition awarded Old Creek Ranch the gold medal for its Sangiovese.
