PISMO BEACH WINERY Something Old, Something New by Mark Storer
P
ismo Beach is California. If aliens landed on earth and had to find a spot that exemplified this state, it would be Pismo Beach. The surf culture thrives here and in many ways, Pismo retains some of the same charm it maintained throughout the ’50s and ’60s as a surf town. The broad boardwalk, the wide, flat beach with sun worshippers, joggers, surfers, swimmers, ATV riders and wildlife enthusiasts combing up and down the sand, looking for their own spot, their own happiness.vThat’s Pismo Beach. But Pismo is also a stone’s throw from San Luis Obispo. Turn off the 101 freeway on See Canyon Drive, and you’ll be in wine country in less than 10 minutes. Throughout the Central Coast’s explosion into the new California wine center, Pismo has reaped the benefits as the town that houses surf, sun, restaurants – and wine. So, it is no wonder that when Martin, Bryan and Bryan’s wife Lena Friedman moved to the Central Coast after purchasing vineyard land in the Edna Valley that they built Pismo’s first official winery eponymously named for the town in which it resides.

Like so many people who leave careers and businesses to follow Bacchus into the world of wine, Matin Friedman owned a manufacturing company in the Bay area. Wine is, after all, a manufacturing business and so after having a vineyard in northern California’s Redwood City growing Cabernet Sauvignon, Friedman bought three acres in San Luis Obispo’s Edna Valley and planted them all with Pinot Noir and two more acres have been planted at Bryan’s ranch as well. “Over previous years, we’d been selling our grapes to other wineries but in 2008, we kept the whole crop for ourselves,” says Friedman. Open for only five months, the winery already boasts a small and growing wine club of more than 60 customers. “It’s all pretty new and we’re just getting started,” says Martin. The Friedmans entered the Los Angeles County Fair wine competition as well as submitted wines to Wine Spectator among others for judgment. “We’ve won gold medals before for our home winemaking,” he says. “But now, we’re a business and it counts, I guess.” Producing some 1500 cases for 2008, the Friedmans are convinced that the family focus on hand-crafted, labor intensive wines has
paid off. “We take time to do processes that the bigger wineries can’t or won’t do,” he says. “We don’t make any blends yet. We’re only interested in single varietals and making those the very best they can be.” Using all French oak barrels and buying grapes from some of the finest vineyards just north of Pismo in Paso Robles, Santa Margarita and San Miguel, the Friedmans make sure that every wine sees at least a year in barrel. “We also see to it that the grapes we buy come from sustainable vineyards and we don’t use any chemicals or any of that in our processing,” he adds. Located just north of the Pismo Beach Outlet Center on Five Cities Drive, the Pismo Beach Winery has an inviting tasting room and winery all in one storefront location. A crush pad out back and a 100-year-old wine bar inside allows the family to show and share his processes as well as share his wines. “We get a lot of great comments on our tasting room. It’s certainly customer service friendly,” says Martin. Friedman is also a student of the Central Coast’s bounty and so his focus is on wines that have proven track records here. His own estate Pinot Noir is at the heart of it all, of

course, but Pismo Beach Winery also produces Cabernet Sauvignon, Zinfandel, Chardonnay, Petit Sirah, Barbera and a very special Central Coast specialty. “We make a hard sparkling apple cider from local apples,” says Martin. “The apple orchards just up the road in Avila Valley are great and a good resource for us.” Those orchards belong to Bryan Friedman and it is the same ranch where the new Pinot Noir vines have been planted. Hard cider has gained popularity in recent years as an alternative to beer and the Central Coast’s apple orchards have become ripe pickings for savvy beverage makers. Local artist Toby Shulz has also added to the Pismo Beach allure by designing labels for the winery that are all Pismo Beach landscapes. There are plans to have those works turned into posters and canvas and make them available to the public. Being the only winery in Pismo Beach is something of a coup, of course. But Pismo isn’t off the beaten path or out of the way. It is, in fact, one of the real gems of the Central Coast and it has, pound for pound, a larger number of tourists than most other Central Coast cities do on any given day. “We’re the first ones here,” says Martin. “The only ones.” That may change of course but it won’t much matter according to Friedman. The quality of the wines, the beauty of the landscape and the focus on customer service will remain no matter who comes or goes and for beach goers who want to try a little bit of the bounty of Central Coast wines, they can do it without even being completely dried off from a day at the beach, which is just a few blocks away. 21st Annual Live Oak Music Festival It’s the 21st Annual Live Oak Music Festival, a three-day concert and camping event held every year on Father’s Day weekend at the Live Oak Camp Grounds, in the beautiful and peaceful hills off Hwy 154, above Santa Barbara. California Barrel Crafts Offers Unique Pieces Made from Barrel Staves

The day Marv Kohlman picked up a handful of barrel staves from a local barrel seller, he wasn’t quite sure what he was going to do with them. A tennis court builder, Marv has spent the last decade building structures for a variety of sports venues. But when he saw the raw beauty of the barrel wood, he knew he needed to explore the possibilities. And so California Barrel Crafts was born. Marv took the staves home, sanding and refinishing them, and carefully exploring the curves and character of the wood. His first creation was a wine cart, framed in antique bronze, with a sturdy butcher block top, glass rack above and sanded and stained staves serving as bottle rack below. Then he began to tinker with the finishes and materials, eventually developing a full suite of handmade wine carts available for $595 and up. But Marv’s creativity continued and one-by-one he began creating other items. Some were based on other products he had seen, while others were born purely of his ingenuity. He now offers a full range of gifts and home goods honed from the barrels of Central Coast wineries. There are balance racks: staves shaped into arcs, with the neck of the bottle going into a small hole placed just so, tilting the arc to form a neck-down bottle holder (available for one, two or three bottles, starting at only $15). There are serving arcs: staves shaped to fit over the bottle neck and hold two wine glasses for an elegant arrangement. And then there are the paintings… Many Central Coast oenophiles know Andre Averseng as a master chef, catering many high-end winemaker dinners and teaching gourmet cooking classes throughout the region. But few know him as a painter. When Marv showed Andre the things he was building, Andre was immediately taken. “I had taken some staves, sanded them down, then fitted them into a sort of rounded canvas to be hung on the wall,” explained Marv. “I was showing them to Andre, and he asked if he asked if he could paint them.” And paint, he did. The duo have created a collection of single and doublesided art pieces featuring vineyard and wine motifs. The paintings are done on either the convex or concave side of the staves (or both) in a range of sizes. The collection has been selling at wine events around the state to great response. “These are truly one-of-a-kind pieces,” said Marv. “They aren’t mass produced. The canvases are built by hand here in wine country from local barrels, then Andre has added his personal touch to make them works of art.” Another friend informed Marv about the fallen redwoods after the Big Sur fire, offering him wood he could use in his woodworking projects. Marv visited Big Sur, and returned to the Central Coast with dramatic, wide slabs of solid redwood. “So far, the redwood has become a beautiful eight-foot bar, designed to mount to three full barrels that have been customized for storage and finished to match,” said Marv. “But the possibilities are endless.” Marv’s full range of offerings can be viewed at www.CaliforniaBarrelCrafts.com, including custom wine cart options and bare stave canvases. CALIFORNIA WINE FESTIVAL July 16-18 in Santa Barbara Now in it’s sixth year, the California Wine Festival has expanded to three days of wine events scheduled for July 16-18 in picturesque Santa Barbara. “We’re expecting a great festival this year, Director Don Fritzen said. “We’ve rolled back our ticket prices to 2005 levels so our wine-loving guests can afford to come this year, bring their friends and have a wonderful time.” Organizers are expecting a wide variety of wineries from every wine region in California to pour at the three events, plus regional microbreweries, some imported wine representatives and even vodka and tequila tasting exhibitors. A new evening of premium wine tasting, great food and music that reflects Santa Barbara’s Spanish colonial roots has been added. “We wanted to create a new event that would appeal primarily to local wine lovers. The new event, called “Old Spanish Nights,” is on a Thursday and will attract locals more than the weekend events,” Kami Fritzen said. and its pure magic.” With the time of the event being pushed to the evening from 4 to 8 p.m. the wineries and event goers avoid the possibility of pouring and drinking wine in hot summer weather, at the same time taking advantage of Atascadero’s warm, summer nights. “The response from the wineries has been phenomenal,” stated Gail Kudlac, winery coordinator. “They are excited about the time change and believe that the evening temperatures will lend a more comfortable atmosphere and hope it will attract more wine tasters.” Katy Smith of Firestone Vineyard in Paso Robles stated she looks forward to the more intimate and artistic setting of this festival also, which sets it apart from other large wine tasting events saying, “It’s a beautiful location and lets me be more interactive with the tasters.” Festival goers will embark on a wine and culinary adventure served up by some of the best local restaurateurs on the Central Coast, who will not only serve their finest cuisine but will offer their wine pairing expertise as well. INTELLIGENCE FOR THE WINE CONSUMER

What is corked wine? There’s a lot of talk about corked wine among winemakers, but, oddly enough, relatively little among wine consumers. It could ruin the day for a winemaker, but will likely go unnoticed by the average wine drinker. Still, the industry is taking steps, some might describe them as drastic, to greatly reduce, and ultimately eliminate, corked wines from the wine scene altogether. A corked wine is not what you may think it is. It is not a wine that has been oxidized because of a dry cork that does not seal out air properly. And it is not a wine that has pieces of broken cork floating inside. Rather, it is a wine that has been tainted by a cork that contains a chemical called TCA. The result is a smell that is obvious to anyone who makes, sells or recommends wine for a living, but may not be so easily detectable by the average wine consumer. A corked wine is described as having an odor of mustiness, dampness, wet cardboard and other unflattering comparisons. When you stick your nose in the glass the first time, the scent can sometimes be jarring. Other times it is subtle. In either case, the wine is certainly
drinkable without causing harm. The problem is that it tends to destroy the fine fragrances of fruit that the winemaker has taken pains to bring forward. This is the main reason the winemaking industry has begun using alternative methods of bottle closure, including twist caps, which have a zero chance of getting TCA contamination. In the process of manufacturing natural corks, steps are taken to be sure the material is kept clean, all the way through to packaging. Tests are done on samples to check for levels of TCA. Unfortunately, in cases that are estimated to range from 2% to 10%, tainted corks will slip by, get shipped to wineries with TCA levels above the average threshold of detection and end up as closures in bottles. When ordering wine in a restaurant, if you suspect it may be corked, don’t hesitate to ask for a second opinion. You should be able to tell from a few good sniffs of the wine inside a glass. Concentrate on what you smell, and think about the words above that I used to describe a corked wine. If any of them apply, chances are the wine is tainted and will not be nearly as enjoyable as it was intended to be. If the wine is purchased at a retailer it’s not so easy to send it back, but if you do return the unfinished bottle, be sure to explain the “off” aroma correctly. To encourage event attendance and participation in its “Make It a Winemakers’ Weekend,” lodging/ticket discounts have been

arranged with four Paso Robles hotels: Hampton Inns and Suites, La Bellasera Hotel; La Quinta Inns and Suites; and The Paso Robles Inn. The packages will offer discounted accommodations and Winemakers’ Cookoff tickets plus optional round-trip transportation between the event and participating hotels. “Offering accommodation and ticket packages is an indication of our growing sophistication as a major event host,” said Doug Mondo, the 2009 Rotary Winemakers’ Cookoff chair. “By also encouraging participating Cookoff wineries to add events and discounts during Cookoff weekend, it is a great way for us to boost event attendance and full weekend visits to our area. If we’re successful, everyone involved wins: our charity, our sponsors, our event attendees, area hotels, supporting wineries and our local economy.” A newly remodeled and enhanced Winemakers’ Cookoff website has also just been completed to better assist prospective attendees. P erfect P airs Meatloaf Paired with Zin City Rollers Reserve Zinfandel
If you are going to tweak an American institution that is as loved and time-tested as meat loaf, you should know what you are doing. If not, you risk a permanent relocation from the kitchen to a less critical room of the house. Fortunately, the people at Sort This Out Cellars have honored the iconic meatloaf with a first class recipe and a fun wine to pair with it. MEATLOAF WITH ZIN CITY ZINFANDEL REDUCTION SAUCE Ingredients: • 1 tablespoon olive oil • 1 tablespoon butter • 1 small onion, finely chopped • 2 cloves garlic, minced • 1 medium red bell pepper, seeded and finely chopped • 1 medium carrot, peeled and finely chopped • 1 stalk celery, finely chopped • 1/2 lb mushrooms, stems removed and finely chopped • 1 tablespoon whole grain mustard • 2 teaspoon sea salt • 2 teaspoon fresh ground pepper • 1 teaspoon red pepper flake (optional) • 1/2 cup fresh breadcrumbs • 1/2 cup parsley, chopped • 1 lb ground buffalo (Check your local specialty grocer. Substitute ground beef) • 1/2 lb ground pork • 1/2 lb ground veal (Check your local specialty grocer.) • 2 eggs, lightly beaten • 6 shallots, peeled, halved • 6 plum tomatoes halved • 1 cup Sort This Out Cellars Zin City Zinfandel Preheat oven to 350° Heat a heavy (cast iron is ideal) sauté pan over medium high heat. Add olive oil and butter, as butter finishes foaming add first 6 ingredients. Cook, stirring regularly until vegetables are soft and slightly caramelized. Add the mustard, salt, pepper and red pepper flake. Stir in breadcrumbs, and parsley set aside to cool. In a large bowl, mix together the buffalo, pork and veal, add the cooled vegetables and eggs, thoroughly combine. Transfer the mixture to an 11" x 14" roasting pan, form the meatloaf mixture into a rectangle approximately 6 x 8 in size. Toss the tomatoes and shallots in the pan around the meatloaf, season with salt and pepper. Bake for approximately 50 minutes. Remove the meatloaf from pan to a cutting board, with a slotted spoon carefully remove the tomatoes and shallots set aside. Heat the roasting pan on the stovetop, add the Sort This Out Cellars Zin City Zinfandel and whisk to loosen the brown bits from the bottom of the pan. Once reduced by half, add the tomatoes and shallots back in and stir to combine. Let the sauce simmer for a few minutes while you slice the meatloaf. Place the sliced meatloaf on a warmed serving platter top with the tomato/shallot sauce. Serve accompanied by fluffy mashed potatoes and green beans with almonds. Enjoy!

WOOD WINERY Blending Business & Family Together Wood Winery is a unique “boutique” winery, owned and operated by Craig and Sheri Wood and is located right here on the Central Coast of California. It is a small, family business that relies on the help they get from the four generations living on the estate. From the 95-year-old matriarch to 12-year-old Jackson, it is truly a family affair. “I don’t consider myself a winemaker,” says Craig. “I’m a winegrower. Winemakers fix problems that come up. I grow the fruit. That’s where the wine is made first,” he adds. Wood wines spend two years in the barrel and a year in the bottle before they are released. “I’m just now drinking through some of my ’04s and ’05s,” says Craig. “Owning a winery is a lot of hard work and I think having my family so involved (from planting to consumption) makes it all worthwhile,” says Sheri, manager of the tasting room. The winery, specializing in Syrah and one of the only Cabernet Sauvignon vineyards ripened in the San Luis Obispo area, is currently producing some exceptional blends. “We have three blends

released right now that are our most popular wines in the tasting room. I am really into drinking blends and it seems like our customers are, too,” states Sheri. The 2005 Raffiné, a Bordeaux-style blend, is made up of Cabernet Sauvignon, Cabernet Franc and Malbec. The name means “refined” in French and that it is. Wood Winery pairs this with some nice, dark cherry chocolates and says the flavors explode in your mouth. It really is a sensory treat. One of their many unique labels, Raffiné, pictured above, is a golden sun amidst a backdrop of vineyard planted hills. Raffiné retails for $18 a bottle. The 2005 Syranet, a blend of Syrah and Cabernet, and as the name imparts is their own named creation and design. Like a serenade, this wine will sing to you. The blend of 60% Syrah from the awardwinning Gina’s vineyard and 40% Cabernet Sauvignon from Jackson’s vineyard won a gold medal last year at the California State Fair, which is understandable once you taste this wine. The Syranet was also just awarded a Silver Medal at the San Francisco
Chronicle wine competition in February of this year. It is Sheri’s all-time favorite and the biggest seller in the Arroyo Grande Tasting Room – a very balanced wine with dark black fruit, complexity and a yummy finish. Retail price is $32. Bling…the name says it all. Wood Winery's newest release and featured wine, is a proprietary blend of Syrah, Cab Franc and Malbec. Not only does the wine taste great, (an oak laden fruit bomb), it is a marketing sensation! The stunning black and silver label is so elegant against the black bottle. But it only gets better. Each bottle is embellished with Swarovski Austrian crystals. Each crystal is hand applied and makes this bottle not only enjoyable to look at but “people just can’t throw them away. Customers buy one to drink and one to display,” says Sheri, the creator of the design. The idea came to her in the middle of the night and has since exploded their sales. Boutiques up and down the state are fighting over exclusive selling rights. Not just wine bars, but regular stores and specialty shops. Event

San Luis Obispo International Film Festival Offers Expanded Summer Youth Filmmaking Program The San Luis Obispo International Film Festival (SLOIFF) is excited to announce an expanded four-week summer workshop program for aspiring young filmmakers. A grant from the San Luis Obispo County Community Foundation’s Holser Educational Fund for the Performing Arts, has made it possible for the SLOIFF to offer workshops for three age groups, from July 20 to August 14. Each workshop will be limited to twelve young people who will learn the basics of filmmaking by forming a “film crew” to write, produce, direct, perform in, edit and even promote their own short film. The final films will be screened for parents and friends on the final day of the workshop during Farmer’s Market on the Court Street Terrace, and will also be screened at the SLOIFF’s 2010 Youth Filmmaking Showcase next March. Two two-week workshops are scheduled as follows:

• Students entering third to fifth grades 9 a.m. to 12 p.m., Monday through Thursday. Entering sixth to eighth grades are from 1 to 4 p.m. Monday though Thursday. • Grades nine through 12, July 20-30 from 5 to 8 p.m • One-week intensive for teens, from tenth grade through graduated seniors, August 1014 from 10 a.m. to 4pm. The intensive workshop will be taught by Alan Fraser and
feature guest instructors who will do one-day sessions on editing, lighting, cinematography, acting and more. Professional filmmakers/ teachers, Aaron Metchik and Alan Fraser will be teaching the workshops. Aaron is a UCLA film school graduate and has been writing, directing and producing short films for more than a decade. Aaron will teach the three sessions, July 20-30. There will
be another instructor for the August 13 session, also a professional filmmaker, who will be announced soon. Each session is $250. There are a limited number of halftuition scholarships available. 42nd Annual Kiwanis Citrus Festival, July 17-19 Known as the “Citrus Capital of the World” because of its expansive lemon and orange orchards, the City of Santa Paula celebrates the fruit of California every year with the popular Kiwanis Citrus Festival. The 42nd Annual Kiwanis Citrus Festival is a full weekend of headline entertainment, carnival rides, a downtown parade, car show, citrus and avocado pavilion, specialty foods, arts and crafts vendors, family fun stage, and fruity fun and games. The festival starts at 5 p.m. on Friday, July 17, and runs through Sunday, July 19. The Citrus Festival features a spectacular lineup of headline entertainment, featuring El Chicano and Tierra on Friday night; Dazz Band on Saturday night and Carmen Jara Cantando con Banda and Los Cadetes de Linares on Sunday night. Music lovers can enjoy the headline entertainment and DJ music under the trees in the Bud Light Beer Lounge. Festival Parade on July 18th is a genuine hometown parade with classic cars, bands, community group floats, an antique fire engine, and local equestrians. The parade starts at 10 a.m. on Main Street in downtown Santa Paula between 7th and 11th Streets. Classic and antique autos will be on display at the entrance to the Citrus Festival beginning 12 p.m. on Saturday, July 18. The Citrus Festival is packed with information and displays about the fruit of California, citrus ranching, and its agricultural heritage. The popular carnival rides run all three days as well (5 to 11 p.m. on Friday and noon to 11 p.m. on Saturday and Sunday). Daily admission to the Citrus Festival is $5 for adults and $1 for children (12 and under). Admission includes all of the daily live music and entertainment. Tickets for the carnival rides are sold separately at the carnival entrance. Winemaker Profile: Carina Cellars

H
arvest is always an exciting time for a winemaker, but this year promises to be even more special for Carina Cellars’ Joey Tensley. This will be the first crop harvested from the winery’s 83-acre Rancho del Cielo vineyard – of which 22 acres are planted – on Paso Robles’ west side. “I’m really looking forward to our first crop,” said Tensley. Up to now, Carina Cellars has sourced all of its fruit from some of the top vineyards in Santa Barbara and San Luis Obispo counties. For Tensley, whose name is virtually synonymous with Syrah in the world of winemaking, the Carina Cellars vineyard offers him the opportunity to showcase the unique characteristics of the chalky, steep hilltop location in Paso Robles’ Adelaida region. Rancho del Cielo, or Ranch of the Sky, reaches 1,925 feet at its highest elevation – among the highest vineyards on the California coast. Varietals planted there are Syrah, Grenache, Mouvedre and Viognier – the calling cards of the Carina Cellars label. At 38, Tensley has already worked in the wine industry for about 20 years, starting as a cellar rat while still a teenager and eventually

establishing himself as one of the Central Coast’s top young winemakers. Tensley was first bitten by the wine bug when he traveled to France as a 12-year-old to play in a youth soccer tournament. His dreams of becoming a winemaker were reinforced as a teenager working in a deli and wine shop in Bakersfield. “That’s when I really got into it,” he said. Moving to Santa Barbara for school, said Tensley, opened the opportunity to work in the wine industry. He quickly worked his way up, landing a job as assistant winemaker at Babcock Vineyards in 1996. It was there that he truly learned the importance of individual vineyards and that great wines are made with great grapes. Tensley launched his own label in 1998, focusing almost exclusively on vineyarddesignated Syrahs. He was somewhat of a pioneer, with very few wineries producing Syrah at the time. “I think in this area Syrah is a great fit,” he said. “There are so many micro-climates, different soil types. With Syrah, it’s all about the resources.” Tensley carried his minimalist philosophy to Carina Cellars in 2001, when he joined with owner David Hardee to launch the Los Olivos-based winery.
At Carina, Tensley makes Viognier, Mourvedre, Petite Sirah, along with Rhônestyle blends called Clairvoyant and Sibylline. That’s in addition to multiple Syrahs released each vintage from vineyards in Ballard Canyon, Colson Canyon and the Santa Ynez Valley. Tensley also created a Syrah that includes seven percent Viognier – dubbed, logically, 7 Percent – that has become a Carina Cellars favorite. “Viognier really adds a lot of nose to the wine,” he said, “while the Syrah gives it weight.” None of Tensley’s wines see much time in new oak, which he said tends to mask the vineyard characteristics. And, while many winemakers talk of letting the vineyard express itself, Tensley truly takes a hands-off approach. “It’s all about the vineyard.” For Tensley and Carina Cellars this year, that remark takes on special significance. T
he first thing you notice as you step out of your car onto the bluff-top tasting room of Silver Horse Winery is how quiet it is. It’s almost serene. Then you notice the views of a vast sky with simple rolling hills that begin to dissipate in the distance. Silver Horse is located only eight miles from the highway, but you’d never know it. You’re deep into Paso Robles wine country. Winemaker Stephen Kroener describes his hand-crafted premium wines as, “100percent food-friendly.” The tasting room opened in 2005 as a family endeavor. “As a family, we’re always looking to combine our love of food with our love of wine. As a winemaker, I want to create wines, whether they are varietal-driven or blends, that have nice, bright notes and a well balanced structure that is sturdy without being overpowering.” The Silver Horse portfolio includes only one white wine, Albarino, as well as Cabernet Sauvignon, Merlot, Petite Sirah and several blended wines. The interior of the Spanishstyled tasting room is comfortable with a vaulted ceiling, wood-burning fireplace and leather club chairs. Autumnal tones and
Southwest art creates a warm, relaxed vibe. On either side of the tasting bar, window cut outs allow for views into the barrel room. Outside there are bocce ball courts and, fittingly, horseshoes. Stephen was asked by the Paso Robles
