SAN MARCOS CREEK Almost All in the Family by Mark Storer

ling and Annette Traylor came to the Central Coast to retire back in 1980. The high school sweethearts who got married and raised a family, started thinking about their future together. Now married for 55 years in 2008, they came from the Los Angeles suburbs to Paso Robles and found abundant acreage. Like most people looking for paradise on the Central Coast, they found it here. They purchased a large plot of land about five miles north of Paso Robles along Highway 101 bordered on the west by San Marcos Creek and on the East by the Salinas River. By the early-1990s, the Traylors decided to put the land they’d purchased to good use and make it work to provide an income. They planted about 40 acres of vineyards on the west and east side of the 101 and Fling began to sell grapes to local winemakers like Tobin James, Round Hill, Peachy Canyon and even some grapes to Mirrasou up north. In their retirement, the pair became farmers and over time realized that they were growing quality fruit. At first, they had no intention of making wine, but once they were

entrenched in the area, it was time to think a little bigger. “That’s when they started a dialogue with Brady and me,” says Cathy Winter of San Marcos Creek Vineyards. “We were both working in Southern California, but dad wanted to start making wine instead of just selling the grapes,” she said. Cathy is Fling and Annette’s daughter and they knew that she and her husband had spent time around www.winecountrythisweek.com

vineyards, traveling to Wine Country with friends and even getting to know a few winemakers. “We’d been around vineyards before and knew about the work involved, but other than that, we were mostly wine drinkers, not winemakers.” That all changed in 2002 when the Winters decided to join Cathy’s parents on the Central Coast and begin turning San Marcos Vineyards into a winery. Officially located on the 101 freeway, just north of Paso Robles, San Marcos Creek winds through softly rolling farmland and hills divided in a Vshape between the Salinas River and the creek. Because of its location and the hilly nature of the vineyards, many microclimates exist and the result is premium wine grapes with abundant flavor characteristics. Cathy and Brady brought their son, Andrew, with them and headed north to take the reigns of the winery working their first harvest in 2002. With about 40 acres under vines, all of them red varietals, it wasn’t hard to see where the quality would come from. “We have 14 wines on the tasting menu,” says Cathy. “Only two of those are white wines, Chardonnay and Viognier, which are our only wines that are not estate.”

WINE COUNTRY THIS WEEK WINE COUNTRY NEWS San Marcos Creek Vineyards is the only winery located directly along the 101. It can be seen from the freeway as one drives north out of Paso Robles about five miles. “Mom and Dad found the perfect spot,” says Cathy. “The San Marcos Creek and the Salinas River provide a great water table and because we have vines on both the east and west side of the freeway, we get different flavor profiles in our wines.” San Marcos Creek grows Syrah, for example, on both sides of the freeway and though they are the same varietal planted not very far from each other, the tastes are different. The west side Syrah almost gets a cool-climate Syrah profile while the east side is more of a warm climate Syrah. Assisted by Paul Ayers, a winemaker and consultant who taught Brady a lot about the art of winemaking, he learned what he needed to do to produce great wines. “Paul lives on the property and has been a wonderful resource for us,” says Cathy. “He’s been instrumental in helping us grow.” In the vineyards, Miguel Uribe is the manager who tends the vines and makes certain that the farming goes according to plan. Also on the property are Cathy’s parents, Fling and Annette. “They’re in their 70s now but they help out when they can. Dad’s still in charge of making the labels, overall winery and vineyard production, and they’ll both come down and help us pour at events and such,” she adds. Making some 4000 cases of wine a year, San Marcos Creek’s Zinfandel is their top seller. It’s no wonder of course, the warm Paso Robles AVA climate is Zinfandel country. “We also make an Estate Reserve Cabernet Sauvignon that is just wonderful,” says Cathy. She’s not the only one who thinks so, the wine has been a Best of Class medal winner. For that matter, San Marcos Creek’s Zinfandel and Petite Sirah are gold medal winners as well; the Zin from the San Francisco Chronicle Wine Competition and the Petite Sirah from the Los Angeles International Wine and Spirits Competition and the winery boasts a whole bunch of other awards for its wine, too. “We even make a White Merlot,” says Cathy. San Marcos Creek isn’t the first to make the varietal. The wine is made merely by pressing off the juice of Merlot fruit immediately upon harvest and not allowing the fruit to sit on the skins. The result is a sweeter, fruitier and simple wine, slightly pink in color that makes a great summer-time refresher. “It’s not the idyllic slow-paced life you’d think it would be,” Cathy laughs. “We bottle two or three times a year, the tasting room is open seven days a week and we’re in doing punch down or racking or something just about every day.” The Winter family takes Wednesdays off to get a little down time, Cathy says. “But if it’s harvest, Brady doesn’t take the time. He’s always here. Sometimes, he even drags our son down here to help out, but he’s not sure he wants to follow us into the business. He’s still in high school and thinks that the barrel room smells awful,” she laughs. On a good night the moon’s still casting shadows along the rows and an owl bares its underside to the headlights. The window is rolled down to hear the quiet and let out some rock and roll before the harvest processional begins. As you clear the first rise, the lights in the barn lets you know that Oscar’s already there getting things going. You park and walk over to the Ford tractor and turn the key and things have started. Another pair of headlights pull in and park and Jason hops out to help you load three picking bins on the trailer. Then you start the diesel engine and crank the mast on the portable lights. Sylvester Vineyards Celebrates the Harvest Season This summer the Sylvester Vineyards & Winery had plenty to celebrate with the grand opening of its Events Center and Wine Park. The Paso Robles Wine Country Alliance announced that tickets for CRAVE – A Paso Robles Wine Experience are now on sale. ven as the Paso Robles wine region continues to tap its seemingly unlimited potential, few venues in the area approach Vina Robles’ stunning, 14,000square-foot hospitality center. Sparing no expense, winery owner Hans Nef has realized a vision of building a center that both echoes California’s mission history and captures the elegance of Nef’s European heritage. The setting in the heart of Paso Robles Wine Country along Highway 46 East makes Vina Robles an ideal choice for weddings and corporate events. Only five minutes to downtown hotels, Vina Robles also overlooks the popular Hunter Ranch Golf Course and offers sweeping vistas of vineyards and oak woodlands. “We wanted to make this a hospitality center that will draw people from throughout California, and beyond,” said Carrie ZuurLopez, Vina Robles’ tasting room manager. Zuur-Lopez and her staff welcomes visitors to a gourmet market and tasting room whose vaulted ceilings and picture windows are accompanied by a wood-burning fireplace that lends warmth to the 1,600-square-foot space. Its comfortable tasting bar encourages guests to linger and enjoy the art prominently displayed.

Adjacent to the tasting room is Vina Robles’ Signature Room, a versatile area equipped with state-of-the-art audio-visual equipment. It’s easy to imagine corporate seminars, wedding receptions and exclusive winemaker dinners all taking advantage of the room, which opens onto a peaceful patio that includes a wall fountain and newlycompleted barbecue island. Events at Vina Robles will also benefit from access to a large commercial kitchen, which is currently under construction. Zuur-Lopez said the kitchen’s floor plan was designed with extensive input from local chefs to maximize its potential. Although the extensive amenities suggests a large-scale production winery, Vina Robles remains committed to hand-crafted wines made primarily from estate-grown varietals ideally suited to the Paso Robles climate. Production is less than 20,000 cases annually. “We don’t want to increase our production too much,” said Zuur-Lopez, “because we want to retain what we have now in terms of quality.” Indeed, if Vina Robles’ hospitality center has been turning heads since opening a little more than a year ago, its wines produced by winemaker Matthias Gubler have also been attracting well-deserved attention. strate balance, elegance and complexity. The 2007 Sauvignon Blanc, using fruit from its Jardine vineyard, earned a mention in September’s issue of Wine Enthusiast magazine as a Best Buy. The same issue also awarded the Vina Robles 2006 Red4 – a blend of Syrah, Petite Sirah, Touriga and Tannat – with a Best Buy nod. Both of those wines are available as part of the “Estate Tasting” menu offered to visitors at no charge, one of three options to choose from at the tasting room. “Reserve Tasting” menus feature the winery’s limited production wines for a $5 fee. Among those premium selections is the Vina Robles 2005 Signature blend, made from three grape varieties that winemaker Gubler feels “are the ultimate expression of Vina Robles’ terroir.” It blends the Bordeaux varietals Petit Verdot and Cabernet Sauvignon with the Rhone varietal Syrah. It recently won Best in Class at the West Coast Wine Competition in Santa Rosa. The Signature blend, along with the other wines on the Reserve Tasting list, can also be paired with artisan cheeses from Vivant for a $10 fee. Café Vio was on the verge of closing. Having been opened at a building known in Paso Robles as the Granary, near the railroad crossing, the café was sinking into a morass of pre-packaged foods and a bit of coffee. Yet the local constituents, in love with their gathering place, simply refused to let it die and help came in the form of Alan and Nina Courtney, Café Vio’s own Calvary who arrived in October of last year. “I love my little place,” says Nina Courtney, who is truly at home here. “I just saw the potential to make some changes and we did that and now, things are looking up.” Gathering advice from a group of regular customers she and Alan refer to as “The Board of Directors,” the pair got rid of the pre-packaged foods and hired a professional chef to at once simplify the menu and charge it with new quality and life. The menu now includes fresh breads and pastries baked right on the premises, meats that the Chef prepares himself in the kitchen whether roasting succulent turkey or preparing lean pastrami for the delicious sandwiches, and a focus on fresh produce. “And the coffee is still the very best in town,” says Nina.

“It has to be because my husband loves, and I mean loves, good coffee.” Open daily for breakfast with a fresh menu featuring egg specialties and fresh pastries, the Courtneys have seen to it that Café Vio stays open until past dinner time. “One thing the Board told us was that the previous owners closed too much,” says Nina. “So, we’re open now from early morning until sometime after the last few customers leave which is usually around 7 or 8 o’clock.” The lunch menu serves as well for a dinner menu and customers seem to prefer it that way. The ambience of the place has changed as well. Simple white walls have now been replaced by warm colors with plenty of artwork including one whole section dedicated to Western art. “We have a new artist each month and it’s been such a treat,” says Nina. “We have the artists come in every second Friday of the month and feature their work and it’s been really popular.” The restaurant itself is broken up into separate “living rooms” each connoted by a different color scheme and various kinds of comfortable furniture. From couches to cushy chairs to kitchen tables for larger groups, Café Vio feels very much like homemade and it’s that atmosphere that keeps regulars coming back. The food is exceptionally good with the meats as tender and juicy as they can be. Fresh produce adorns the sandwich plates and homemade dressings, freshly baked breads and freshly brewed teas and coffees are in constant demand. In short, Café Vio has once again put the life back in Vio.

J. PAUL ROSILEZ by Mark Storer J. Paul Rosilez wines have been making waves all over the Central Coast. Since 1999, J. Paul, “Joey” to his family and friends, has been making wines commercially beginning back in the mid-’90s at the family home near Lodi in the San Joaquin Valley. Joey and his family bought property in Paso Robles during that time and slowly, the family moved to the Central Coast where winemaking would become part of the family business. Sourcing the grapes solely from the Herder vineyard on the east side of Paso Robles, Rosilez has been living a double life as a winemaker and a pharmacist, his “day job” at Ralph’s Market in Los Osos, just outside of San Luis Obispo. Most days, Rosilez will put in a minimum of 12 hours if not more. It’s not uncommon for him to be at work all day and in the winery until the wee hours of the morning doing what needs to be done. But if it sounds like a one-man operation, rest assured it isn’t. There’s simply no way Rosilez could succeed without his family, particularly his mother and father, Barbara and Joe Sr. They are responsible for the

massive 2000-square-foot tasting room, located on the winery’s property on Dry Creek Road in Paso Robles. “We’re a pretty close family,” says Barbara from the J. Paul Rosilez tasting room where she works seven days a week. “When one needs help, the others are there to help.” While their son toils the day away dispensing antibiotics, blood pressure medication and other necessaries for his customers, Barbara and Joe spend their days running the housesized tasting room, talking to customers, telling their favorite stories about their son’s winemaking and generally, working pretty hard to sell wine and make sure customers are taken care of. “We like doing it a lot,” says Barbara. “We like to work one-on-one with people and tell them the story of the winery and how it all got started.” Barbara and Joe also take a good deal of pride in growing the J. Paul Rosilez wine club and seeing to it that members get to taste these premium, hand-crafted wines as soon as they become available. The wine club remains popular and is growing rapidly and the fall is a great time to join. “During October, if you join the wine club, you get a discount of 50 www.winecountrythisweek.com

percent on purchases of six bottles or more,” Barbara says. Normally, wine club members already enjoy a 30 percent discount on all wines and get two shipments per year of six bottles each.” It may be one of the best wine club deals on the Central Coast, actually. “I have to say, I really like the Zin we make and the one we call Apothecary.” Named for Joey, Apothecary is what some winemakers have referred to as a super-Tuscan in that it blends 80 percent Cabernet Sauvignon and 20 percent Sangiovese. “I like them so well, I have a glass of one before dinner, not during,” laughs Barbara. Joe Sr.’s favorite wine is the Viognier, a beautifully crafted white wine with stone fruit flavors and a round, delicate finish. “That’s the wine he drinks everynight with a bowl of popcorn,” adds Barbara. J. Paul Rosilez winery produces about 3000 cases of wine a year. And so far, making and selling the wine is still all in the family. is now daylight in your 60-foot diameter. Now more cars headlights are flashing through the vineyard. The crews are here and we’re ready to go. Within three to four hours its sunrise and you’ve got four tons of grapes. The eight or nine bins are loaded on the truck and trailer and you’re off to the winery. Fifteen hours later you’ve completed the winery work and you’re ready for tomorrow’s harvest. While the harvest is the end of growing the grapes, crush is the start of making the wine! Our red wine grapes start in the winery on an elevated, vibrating sorting table. Just the good fruit drops into the crusher – destemmer. We adjust the rollers so very little crushing occurs and we keep many whole berries to extend the fermentation. After destemming they drop onto the post-sort vibrating sorting table to remove any remaining stems, raisins, green seeds, etc. Then on to the fermentation bins or barrels. This year approximately 12% of our red wine will be fermented in French oak barrels. The balance will be hand-punched down in open-top fermentors. After fermentation is complete, the must is pressed off and the ageing in barrels starts.

We make a wide range of wines, probably because so many winegrapes grow well in Paso Robles. We love the different flavors and try to honor the true tastes of each varietal of wine. But we also enjoy blending different varietals to make delicious, complex wines. This year our Tempranillo, Syrah Rosé and Little Star won top awards. Our ports made from Tempranillo, Syrah and Cabernet Sauvignon all sold out. Our new Ports can’t be named Ports because of label restrictions. So we’ll soon be releasing a Zinfandel and Viognier Orilla Del Paso’s. Our Chardonnay, Viognier, Syrah, Cabernet Sauvignon, Cuvee and Almond Sparklers were all big hits in the tasting room. or most people, baseball is nothing like wine. But for Tom Hinkle, the two are interrelated. Tom was a former Major League Baseball scout, visiting high school, college and semi-pro games, searching for the best young talent out there. “But I never really had time to taste wine,” Tom said. He was busy scouting, though occasionally he’d stop by wineries in Napa just to look around. He planted vineyards on his property in Paso Robles in 1997 and began the wine game while still scouting across the U.S. Having since retired from 28 years of scouting, Tom and his wife Carol now spend their time farming, making and selling wine and running the tasting room. The tasting room is a red barn with a trellised patio covered with grapes that provide shade. The views from this covered porch are vintage Paso Robles; gentle rolling hills, punctuated with mature oak trees, brown grass and glimpses of nearby vineyards. Tom sprayed the interior walls with a protective coating to help keep it cool inside and set up a functional, if modest, tasting area. The wood bar is all hand made, worn and full of character. In addition to the wines, Tom produces olive oil from trees on his 63acre property. He just likes the challenge of something new. Rio Seco is a hands-on winery with Tom and Carol doing just about everything themselves. That includes Tom learning the art of winemaking. “Do I have formal training? No,” Tom grins. “Hours on the crush pad? Yes!” Tom’s a believer that you learn by doing, something he picked up at college at Cal Poly Pomona. “Making wine isn’t rocket science,” Tom says. Plus there’s the advantage of having a supportive winemaking community near him. And perhaps the toughest part of making wine? “You ruin a lot of clothes,” he says. The wines run the gamut from a light Roussanne to a hefty white blend called VIO RIO, a blend of Orange Muscat and Viognier, which the Hinkles affectionately call “mama’s moonshine” because of its 16.6 percent alcohol. Rio Seco is especially known for its Cabernet Franc as well as Syrah, Cabernet Sauvignon and their award-winning Zinfandels. Their reds are all mild tannin wines, meant to be consumed soon. Four times a year they offer a Texas Hold ’em tournament where the grand prize is a free one-year wine club membership. “Not only do we have Texas Hold ’em … we are best known for our Friday Night Concert Series,” Tom adds. “Live music, barbecue and wine for $8 – all summer long. We’ve been doing this for six years now. It’s family friendly and really great music!” The tasting fee is $5 and is applied towards any wine purchase. No wines are off limits, so if it’s open, the Hinkles will pour it. Rio Seco Vineyard is located at 4295 Union Road in Paso Robles and they are open from 11 a.m. to 5 p.m. daily. Los Olivos ‘Day in the Country’ Event Set for Oct. 18 The Los Olivos Business Organization (LOBO) will once again host its annual festival, “Los Olivos Day in the Country,” on Saturday, October 18. Voted “Best Family Event,” the 28th year for the event takes place in the center of the town of Los Olivos with proceeds supporting town beautification, flagpole and street maintenance, and other community events. Peter Feldmann and The Very Lonesome Boys will headline the entertainment for the day along with the parade through town, a 5K walk and run in the morning, kids’ activities, food, artisan crafts and much more. The event will begin with a series of 5K runs and a walk sponsored by Platinum Performance. Peter Feldmann & The Very Lonesome Boys, who delighted the crowd last year, will be returning again this year with a lively bluegrass concert from 11:30 a.m. to 3:30 p.m. in Lavinia Campbell Park. A perennial favorite, the Apple Pie Contest, will be held at 9 a.m. Pie bakers of all ages are invited to test their skills and enter a pie into one of the categories: Best Traditional Double Crust, Best Non-Traditional Apple Pie, Best Apple Tart or Best French Apple Pie. Also returning this year is the very popular, “Zoo to You,” presentation of live animals native to North America. It is hosted by the renowned Wildling Art Museum, located between St. Mark’s Church and Mattei’s Tavern.
