S

herman Smoot is having fun. A lot of fun. And Smoot, a former commercial airline pilot who spent years traveling the globe and continues to race small aircraft, knows how to have fun. The primary source of his joy these days, though, is Bella Luna Winery, where he and his lifelong buddy, Kevin Healey, are producing some of the state’s finest Italian varietal wines only a few miles from where they graduated from high school about 40 years ago. “I love wine, I love the camaraderie of the wine industry, especially in this area,” said Smoot. “It’s still like a family. If you have a problem, you call up another winemaker and they’ll come over and give you a hand. Everybody helps everybody.” Located in Templeton on a winding road where horse ranches are as common as wineries, Bella Luna was founded in 1998 when the fiveacre vineyard was planted to Sangiovese and Cabernet Sauvignon. Originally, said Smoot, the idea was simply to grow grapes and sell them, but he and Healey quickly decided they wanted to make wine. “We’ve never looked back.” With good reason. Bella Luna routinely sells out the approximately 1,000 cases it produces annually and there’s a waiting list for its wine club. Bella Luna’s program focuses primarily on dry-farmed, head-trained Italian varietals. The two acres of Sangiovese planted at Bella Luna, according to Smoot, are among the only dry-farmed, head-trained vines of that varietal grown in California. In their winemaking, Healey and Smoot use native yeast and the wine is aged in neutral oak and is unfiltered and unfined. The result, said Smoot, are crisp, dry red wines with varietal character and balance. Dry-farmed vineyards produce lower yields, but higher-quality fruit, he said.

And that’s the key for Bella Luna, where Smoot and Healey are constantly striving to make the “perfect bottle of wine,” rather than boost production beyond the 1,000 cases produced annually. “Kevin and I do all the work,” said Smoot, smiling. “We’re too old to have employees. One thousand cases is how hard we want to work.” Smoot said Healey’s knack for managing dry-farmed vineyards is invaluable. “He’s the best.” Healey first learned about viticulture – specifically the importance of dry farming – when he spent a decade working a vineyard in the Adelaida Hills west of Paso Robles with Mel Casteel. The winemaking skills he picked up in those 10 years were later honed working with the Pesenti winery and its longtime winemaker, Frank Nerelli. Healey worked for nearly 20 years with Pesenti. Now, he devotes his specialized viticultural skills to Bella Luna. The vineyard finds its truest expression in Bella Luna’s Estate Riserva, a blend of about 70 percent Sangiovese and 30 percent Cabernet Sauvignon. Smoot, however, said the 2006 vintage, to be released next year, will be the last of that blend. Instead, Bella Luna next year will release a 2005 blend called Bellacaia that is 70 percent Cabernet Sauvignon and 30 percent Sangiovese. One of the benefits of this change is enabling the winery to produce more of its single varietal Sangiovese, a wine that is proving more and more popular among Bella Luna’s consumers. The Sangiovese is produced using primarily estate-grown grapes, with a small percentage coming from the Adelaida region west of Paso Robles. Smoot said the aging Sangiovese vines grown at Bella Luna are gaining increasing character with each passing year. Kevin and Sherman also make a Barbera called Lot One. The 2005 vintage was their “first lot” and sold out prior to bottling so they increased production from the previous 45 cases to approximately 180

cases beginning with the 2006 vintage. This red is truly a delight to drink. Besides the Italian varietals, Bella Luna has also found success with the Spanish grape Tempranillo. Bottled under the label “Tempestuous,” the winery’s 2003 vintage earned Top 10 honors at a Cal-Italia event in San Francisco – despite the fact it included only a splash of Sangiovese. Of the handful of varietals produced by Bella Luna, none are white. So why only red wines? As Smoot tells the tale, he was at an upscale restaurant in Mexico treating his mom and his Italian step-father, Dominic, to a first-class lobster dinner. Perusing the wine list, Smoot settled on the most expensive bottle of white wine to impress Dom. The sommelier presented the bottle, recalled Smoot, who tasted to ensure it was acceptable. Indeed it was, but Smoot’s step-father covered his glass with his hand when the sommelier attempted to pour. Dominic looked him straight in the eye, remembered Smoot, and said, “Son, white wine to an Italian is like skim milk to a farm boy!” Lesson learned. One of the joys of owning an artisan winery, said Smoot, is having the freedom to tinker with the grapes, blending varietals any number of ways to see what emerges from the barrel. “We do some pretty radical things here,” said Smoot. “We have a lot of fun.” And, he joked, if their adventurous winemaking style yields lessthan-satisfactory results, “we’ve got nobody to blame except each other.” Bella Luna Winery is located at 1850 Templeton Road, a couple of miles south of the small town of Templeton. POZO VALLEY Five Generations of Farming

I

t’s a true family affair with the Arnold family who planted their 32-acre vineyard in 1995 and released their first vintage of wine in 2003 under the Pozo Valley label. The Arnold family first settled in the Pozo Valley in 1919, when Thomas and Josephine Arnold sold their farm in Nebraska and moved out west. For five generations members of the Arnold family have lived and worked on the original ranch land, raising beef cattle and farming a variety of crops. Nestled beneath the Santa Lucia Mountain Range, and surrounded by National Forest, the Pozo Valley is located approximately 28 miles Northeast of San Luis Obispo on the Central California Coast. The valley maintains a coastal influence evidenced by the fog that can often be seen creeping through the mountain passes. The extreme fluctuation in daily temperature during the growing season has proven to be an ideal climate for growing flavorful varietals. Zinfandel, Cabernet Sauvignon and Merlot were the varietals chosen for their suitability to the valley’s soils and climate. It was Steve and Debbie Arnold who planted the first vines, and with the help of their children Joey and Michelle, they successfully grew quality fruit which they sold to other winemakers. Joey and Michelle eventually went on to Cal Poly and graduated in 2000 and 2002 respectively with concentrations in viticulture. After graduating from Cal Poly, Joey convinced his family to hold on to some fruit, and allow him the chance to make wine. Joey and Michelle worked together to start the Pozo Valley label, with Joey’s wife Jessica designing the label for the winery. In 2003, Pozo Valley produced 600 cases. The Pozo Valley 2003 Cabernet Sauvignon won a silver medal at the San Francisco Chronicle Wine Competition, and the 2003 Merlot won a bronze medal. “I like to enter our wines in a couple of competitions a year, both local and international to see how we compare with other wines. We have some of the toughest competition right here in our county. To be able to achieve comparable quality with the local wineries is a huge compliment in itself,” says Michelle, who covers the sales and marketing end of the boutique winery. In 2006, the total case production had gone to 2,600 cases due to excess crop last year but was brought back to about 800 cases this year. Pozo Valley continues to produce award-winning wines including a bronze medal earned at the 2008 Houston Livestock Show and International Wine Competition for their 2004 Zinfandel. This year the Arnold’s planted a small amount of Viognier in their home vineyard, adding a white wine to their line-up. Pozo Valley also offers a Late Harvest Zinfandel and a Bordeaux blend, along with the Merlot, Cabernet Sauvignon and Zinfandel. • 4 tablespoons butter • 1 large onion, chopped • 2 large carrots, chopped • 2 celery stalks, diced • 5-8 cloves garlic minced • 8 Veal shanks 1 1/2 to 2 inches thick • Flour for dredging (approximately 1/2 cup) • 1/4 cup olive oil • 2 cups dry white wine • 1 cup low sodium chicken broth • 2-1/2 cups whole canned tomatoes, drained and chopped • 1 teaspoon dried basil • 1 teaspoon dried thyme • 1/2 cup fresh Italian parsley, coarsely chopped • 2-3 bay leaves • Sea Salt and freshly ground pepper NOTE: Lamb or beef shanks can also be used if veal is not available or if an even heartier meal is desired. 1. Preheat over to 350 degrees 2. Season both sides of the veal shanks with salt and pepper to taste. Dredge veal in flour until coated. Shake off excess flour. 3. In a shallow, heavy casserole or small roaster, melt butter over medium heat. When butter is melted foaming slightly, add onions carrots, celery and garlic. Cook until onions are translucent and other vegetables are lightly colored. Set aside. 4. In a separate skillet, heat half the olive oil. Add veal shanks and cook over medium high heat until well browned. Add oil as needed. When browned, transfer shanks to casserole with the vegetables. 5. Deglaze the skillet with the white wine. Scrape all brown bits clinging to the pan and simmer until wine is reduced by about half. Add remaining ingredients (chicken broth, tomatoes and herbs) then bring all to a full rolling boil. 6. Pour the mixture over the veal and vegetables. Cover tightly and bake for 2 hours. 7. Prepare saffron rice, polenta or orzo pasta as desired near end of cooking time. 8. Spread rice, polenta or pasta on bottom of heated platter. Add veal shanks then spoon vegetable mixture over veal. Garnish with fresh parsley.

Celebrate the Season with Claiborne & Churchill by Dave Wilcox

H

olidays are a great time to venture beyond the usual food and wine pairings. The Alsatian-style wines that are the flagships of Claiborne & Churchill Winery fit perfectly on a seasonal table filled with a special feast. The Dry Gewurztraminer, for example, is a classic match with turkey and ham, in addition to savory vegetable dishes. Gourmet Magazine’s November issue recommended Claiborne & Churchill’s 2006 vintage as ideal wine for a kale dish made with garlic and cranberries. The winery also released earlier this month its 2006 PortObispo, which blends Cabernet Sauvignon and Petite Sirah grown in the Paso Robles region. “It’s a wonderful, sweet, jammy” wine, said Claiborne, that is ideally suited for a chilly evening spent by the fire after finishing a hearty meal. For New Year’s celebrations – or any special gathering during the season – Claiborne & Churchill recently released its 2006 Brut Rosé, a sparkling wine that Claiborne noted is a unusual alternative to the more common sparkling wines typically found at holiday gatherings. That’s because of the cuvee (or base wine) used by the winery, he said, a blend of Chardonnay, Riesling, Gewurztraminer and Pinot Noir. The 2006 version is the fourth sparkling wine vintage released by Claiborne & Churchill. Celebration is a theme for Thompson and Churchill in 2008, with the winery marking its 25th anniversary. Since producing fewer than 600 cases in 1983, the winery has grown to where they now produce about 10,000 cases annually. Plans for a number of special events to celebrate the milestone anniversary are in the works, including an unusual gathering at which guests will be asked to help blend wines – one white and one red – that will be released to commemorate the special year. The couple’s trail-blazing ways extend beyond pioneering wines

that bring new taste experiences to consumers. They also built a 2,500-square-foot winery and tasting room constructed with straw bales … the first of its kind. Besides the dry Gewurztraminer and Riesling, the winery also makes a Chardonnay and a Pinot Noir using grapes grown in the touted Edna Valley. You can also find a limited production of Cabernet Sauvignon made with grapes from the Paso Robles area. San Andreas West Wines Shakes Things Up on the Central Coast by Mark Storer

P

erhaps it’s the attention to detail that allows winemaking to be such a crowded field. After all, wineries and their distributors are, for the most part, small businesses dedicated to serving their customers the very best products they can muster. Sure, there are large wineries and large distributors, but they have not pushed boutique wineries out of the marketplace. San Andreas West wines, a distributor of quality, boutique wines, has definitely shaken things up on the Central Coast. A family business based in Santa Maria, San Andreas West represents about a dozen wineries, all of them Central Coast growers and vintners, who produce small lots of quality wines. “We focus on restaurants, retail markets and boutique grocery chains,” says Kimber Black, sales representative and daughter of owner Bill Bogue. “We deliver the wine using our own vehicles and handcarts. We roll up our sleeves and cover all the bases from sales to delivery,” she adds. Bill Bogue, a vineyard developer for 35 years was looking for a way to keep his family together in the business and a way to get the word out for Jim Porter's wine. Porter, along with his wie Robin a daughter of Bills, run William James Cellars and theirs is just one of the succesful client portfolios in the San Andreas West Family. Other wineries include Bodegas Paso Robles, Camino Real, Madison Cellars, Vaquero Cellars, Wedell Cellars, Nada Wines, Four Sisters, Barreto Cellars, Kaena Winery and Cayucos Cellars. “When the business opened in 2005, Tracy and I focused on SBA, SLO, Ventura and Montery counties in order to get our feet wet and tackle the local markets,” says Black. Bogue’s other daughter, Tracy formerly worked for Young’s Market distributing wine in the Sacramento, Stockton and Davis areas. With Tracy in the family business, expansion is in the works. “We charter new territory as we grow so we are currently looking for brokers outside of the territory that we cover weekly. That way we can reach further into the community,” says Bogue. San Andreas Wines, however, isn’t interested in

expansion for expansion’s sake. “We’re interested in quality first,” says Black. “We look for interesting stories, family businesses with different varietals and price points.” Among the wines they represent, Jim Porter’s William James Winery is a prime example of quality and hands on dedication. “I’ve been making wine as a hobby for a very long time, since college really,” says Porter. “But we started with William James in 2003.” This year, William James will produce about 3500 cases of Chardonnay, Pinot Noir, Grenache and Syrah. “I contract all the grapes from Santa Barbara County,” says Porter. All, that is, except some of the Grenache that comes from Monterey County. Porter’s Grenache has won him a few awards and as he focuses on handcrafted batches of quality varietal wines, he relies on San Andreas West to get out the word. “I’ve partnered with San Andreas West since we started.” Porter says that San Andreas West is the kind of distributor that boutique wineries are looking for. The focus on quality and small production creates quality wine. “Eventually, we’d like to purchase a climate controlled truck and hire a driver,” says Black. For now, though, she’s content emulating the wines and winemakers she represents, rolling up her sleeves and getting her hands on cases of wine for consumers who prefer quality over quantity.

S

teps from the ocean isn’t where someone typically finds a winery’s tasting room, but Cayucos Cellars offers a pleasant alternative for those seeking a wine-tasting excursion while visiting San Luis Obispo County’s coast. It’s more beach path than wine trail. Located in the middle of downtown Cayucos – a throwback beach town tucked off Highway 1 about five miles north of Morro Bay – the tasting room offers a relaxed spot to sample the winery’s primarily red varietals. Cayucos native Stuart Selkirk began in the 1980s making wine as a hobby, but soon found himself making more than he and his friends could drink. So he decided to transform an old dairy barn on a ranch in the picturesque hills east of Cayucos into a winery. Cayucos Cellars remains a small, family-run winery, producing only about 800 cases annually. Chances are excellent that visitors stopping by the tasting room will be served by either Stuart or Laura Selkirk, or their son, Clay, since that pretty much encompasses the winery’s staff. (The Selkirks also have another son, Ross, and a daughter, Paige.) Besides giving you insight into the wine, Stuart, was formerly general contractor, can tell you about remodeling the tasting room himself. Cayucos Cellars first opened a tasting room just up the block from its current location, sharing a morsel of space in the corner of a gift

shop. After three years there, the Selkirks remodeled what was a Hawaiian shirt shop. At 375 square feet, it’s cozy but with enough room at the tasting bar for a halfdozen or so visitors to comfortably sip their wine. Outside, a small patio with a couple of tables allows guests to enjoy the fresh ocean air. The unique tasting bar was fashioned by Selkirk using Monterey pine from a tree that died in Morro Bay and a trio of wine barrels. He also salvaged 14x14 bridge timbers to make cabinets and redwood is also used. Warm, Tuscan-style colors add to the appealing interior. Relatively older vintages are offered on the tasting room’s current list of wines being poured, including 1999 and 2000 Pinot Noirs. There are also 2002 and 2003 Cabernet Sauvignons, along with a 2001 Zinfandel, among the roster of wines. With the exception of a small vineyard on his ranch, Selkirk sources most of the grapes for his wine from vineyards in the Templeton Gap and Adelaida regions of the Paso Robles appellation. Primarily a self-taught winemaker – among those he learned from include Central Coast wine industry pioneer John Munch – Selkirk uses neutral oak and interferes as little as possible in crafting his wines. Are You Daring Enough to Participate in the 27th Annual Cayucos Polar Bear Dip? In 1981, Carlin Soulé and his wife, Margaret, began the Polar Bear Dip at noon on New Year’s Day with about six brave souls. The polar bears would have to totally (head to toe) immerse their bodies into these waters. Costumes were allowed but no wetsuits. People began to make this crazy dip for various reasons: to cure a hangover, to cleanse for the new year; or just because it seemed to be the thing to do. The dip began to grow every year thereafter and Carlin Soulé continued to participate up to and including the year he died in 1987. His legacy has lived on and continued to grow. Now families have made it their New Year’s tradition. Young and old participate with awards being

Thirty Days in Tuscany: Photos of the Val d’Orcia Carina Cellars welcomes Jules Reuter to the tasting room for his second show, and the first of the Winter Art Series at Carina Cellars. After 23 year as a Visual Effects Editor for NBC and Fox Network, Reuter was able to hone his visual skills and develop aesthetic sensibilities. Then in 2004, after retiring from network television, Reuter moved to Guadalupe on California’s beautiful Central Coast, where he currently resides as a landscape and travel photographer. Reuter finds himself particularly drawn to the landscapes of California, especially the Guadalupe-Nipomo dunes. Recently though, Reuter has begun to explore other areas of the world for their natural beauty, which led him to spend a month in Tuscany, Italy. The result

of this trip is Reuter’s current exhibition in the Carina Cellars Tasting Room, a collection of photographs of the Val d’Orcia, which were captured using a Leica D-Lux II camera. Reuter’s philosophy as a photographer is that “your negatives should be as close as possible to what you print,” which is why he uses minimal darkroom or computer manipulation of his images. The vibrant colors and stark contrasts presented in this show allow the viewer to experience the beauty of Tuscany, as Reuter witnessed it himself.
