Objective
Molecular Gastronomy has been introduced at the end of the 1980’s, as a specific part of food science devoted to home or restaurant culinary transformations. This scientific discipline is studying cooking from the chemical and physical point of view. After decades of interest, it would be useful to present some results of investigations, as well as informations taken from food chemistry and food physics, as applied to this activity (cooking) done by millions of people in the world. In particular, it is very important to show to a large audience how cooking is mainly (for the technical part, not the artistic part) chemistry and physics, as this would be the base of a better acceptance of science in daily life, and in food in particular. It is decided that the TG prepares for IUPAC (Division 7 : chemistry and human health) a series of papers on Molecular Gastronomy. These papers should be published in a special issue of IUPAC Journal, and also under the form of books. A site could be added for popularization of the material. The first document, on Molecular Gastronomy (only the scientific phenomena of culinary transformations –home or restaurants, the industrial point of view should not be considered), could be followed by other books, on : - Cooking and metabolism (including accessibility of nutriments…) - Cooking and health (including polyphenols, endocrine modifyers from food…) - Cooking and culture These others publications would be part of other projects proposed to IUPAC.

This expectation has been borne out through an exploratory exercise held during 2003-2004 in which nearly 5000 students participated from over 40 schools in Delhi, Mumbai, Kanpur and Kota (near Jaipur).
