Manali is a very beautiful place in Himachal Pradesh. It is surrounded by the Himalayas and the Beas River flows through the entire belt of this Hill station.

We just wanted to convey our appreciation to the people who introduced us to QVI (especially to Dr. Rudy & Angela Susanto) as it enabled us to spend a week of luxury vacation last month in a top rated resort (Mittersill) situated in the White Mountains of New Hampshire.

The excellent location of the resort gave a beautiful panoramic view of the Turunc bay. The pantry was well equipped for our daily needs. The shuttle service to and from the resort was wonderful. As we were at the end of holiday season some of the activities were cancelled, but we kept ourselves busy all the time. We had not one but many memorable experiences like - visit to Epheses, Dalaman, trekking, going for a mudbath, Turkish night ...& many others. They have very friendly customer service and excellent service by the resort staff but a tour guide could have been better. We will recommend the hotel to our friends.

My vacation was a fantastic experience and this was my 3rd visit to this beautiful state. The ice clad mountains and the beautiful river and valleys are breathtaking and you feel like you are in the heaven. I thoroughly enjoyed Ice Skiing and roaming in the streets of Manali and Shimla. Shimla is also a very beautiful Hill station and the Green valley point located in Shimla is one of the best places I have ever been to. The Railway line of Shimla-Kalka is the one located at a highest altitude. Hotel Angels Inn, Manali is located on a very picturesque location. • Plan your itinerary to include breaks at your child’s usual meal times and in locations where food is readily available. If on the road, pre-pack sandwiches to tide them first.

Before you depart, let your children burn off some energy by walking them around the airport (as opposed to carrying them). Allow them to sleep a little past their bedtime the night before so they can actually nap on the plane. While in flight, make sure they are comfortable and occupied. Request for a basinet if you are with an infant. Prepare your children for the experience by describing what they can expect to feel (turbulence, ear-pressure, etc.) and let them know that this is normal. To relieve ear pain during takeoff and landing, offer a bottle or pacifier, or a lollipop for older children to encourage swallowing and opening the ear passage.

Keeping the children occupied A family vacation is the time to bond with your loved ones and of course, have fun! But without the right activities to keep your kids occupied, your well-planned holiday could turn into a nightmare. One simple solution is to have them take pictures during the holiday. Photography is a great way to get children involved and it helps them improve their sense of observation. • Use disposable cameras as they are light and easy to use and are not as expensive as your own camera. They can be carried in a backpack or worn on a string round your child’s neck. • Get your kid started by providing the inspiration like pointing out a unique building or a new animal. Once they

Adapting children to new dishes in a foreign land will probably be a trying experience for them and for you. The following tips will ensure you are prepared each time they shout, “Mom, I’m hungry”. • Introduce your children to your destination’s food before you depart. They may be more likely to try a new dish in a restaurant in your neighbourhood rather than in a completely new place.

• For fussy eaters, bring some healthy snacks from home to help them adapt. Select individually wrapped, easy to carry items such as juice, cereal and crackers. • When travelling with infants bring enough formula or baby food for the entire length of your stay. • Carry water at all times.

When travelling with kids, the first aid kit is a must-have on your vacation packing list. Take into consideration the age of the children, any recurring illnesses in the family and the travel destination and activities you plan to undertake. You don’t need to buy a first aid box, just pack the contents of your first aid kit in a waterproof container with a properly fitting lid. A zippered plastic bag, Tupperware container, or old lunchbox all work well. Check expiry dates on all the items and ask your pharmacist for advice on keeping the contents of your kit effective and safe to use.

• Avoid health problems. Avoid street side food stalls if possible, wash your hands before eating and drink bottled water.

• Petroleum jelly or diaper rash cream

The next time you’re thinking about your summer vacation or weekend getaway with kids, don’t let the fear of travelling with the little ones impact your choices. All it takes is some planning ahead and you will find that yes, your kids can travel with minimal fuss.

ON THE RUNWAY

An insight into Malaysia’s most charming destination - Penang Widely known as the Pearl of the Orient, Penang’s natural beauty, exotic heritage and sights have made it one of the most popular destinations in the region. Located on the North-West coast of the Malaysian peninsular by the Straits of Malacca, Penang is the second smallest state in Malaysia after Perlis. The name “Penang” comes from the modern Malay name Pulau Pinang, which means island of the betel nut tree, probably areca nut palm trees were found abundantly back then. Penang had been, prior to the English, known as a harbour for pirates. Then in 1786 the Sultan of Kedah ceded the state of Penang to Captain Francis Light of the East India Company in return for British protection. It was England’s first stronghold in Asia, and they quickly populated the island and made it an important port within the Straits of Malacca. In 30 years the population boomed from almost nil to 10,000 with Georgetown as the capital.

Penang today is a resort island in full bloom - an idyllic playground for worshippers of the sun and the sea. Its multi-racial population contributes to a wealth of cultural attractions and festivals for visitors to bring home memories of happy times in Penang. Georgetown, at the north-eastern tip of the island is the seat of administration and is also the commercial hub of the state. This bustling metropolitan city combines the best of East and West as seen in its fascinating collection of fine old buildings, each bearing the stamp of different foreign influences in its colourful history. Much of its charm also lies in its famous golden beaches and clear blue seas. If you have never been to Penang, you will be astounded by the variety and quality of food and what’s more, enjoy them at low cost street venues (available round the clock). You will be amazed by the variety of cooking styles which draw on the different backgrounds of the people of Penang, and also centuries of unique development of a distinctive Penang style. Should you wish to get away from the busy city, the idyllic beaches and soothing hills are but minutes away, while the industrial free trade zone, the “Silicon Valley of the East”, and the international airport are equally accessible. Penang is made up of a turtle-shaped island, a total of 292 square kilometres, and a strip of land called Seberang Prai on Peninsular Malaysia about 48 kilometres wide. Since 1985, the island has been joined to the mainland by the Penang Bridge, one of the longest bridges in the world.

Alternatively, travellers arriving from the mainland can hop onto the ferry and take a 20-minute ride across. There are also international flights that connect directly to the international airport on the island.

ATTRACTIONS Georgetown China Town China Town on the island stretches from Weld Quay to Lebuh Stewart, Lebuh Muntri, Lebuh Campbell and Lebuh King. Visitors will be intrigued by the many clan houses, shop houses and temples found along these streets.

Clock Tower, Pesiaran King Edward The clock tower was presented to Penang by local millionaire Cheah Chen Eok in 1897 to commemorate the Diamond Jubilee of Queen Victoria. It towers 60 feet high - one foot for each year of Her Majesty’s reign. The Queen died by the time the clock tower was finally completed in 1920.

KOMTAR, Jalan Penang The Kompleks Tun Abdul Razak, a prominent Penang landmark, houses Government departments, commercial offices, department stores, shops and restaurants. The 65-storey complex also contains theatres, squash courts and a geodesic dome which serves as a multipurpose hall, while the 55th floor offers a panoramic view of the city and on clear days, also of Gunung Jerai in Kedah.

The Penang War Museum, Batu Maung If you want to know what life was like in Penang during wartime, you’ll find some of the answers at the Penang War Museum. Housed in what was once a British fort built during World War II, the museum is the only one of its kind in the country.

Travel Information Access: By Air - The Penang International Airport is 16 km from Georgetown. Cathay Pacific, Eva Air, Malaysia Airlines, Singapore Airlines, and Thai International offer connecting flights. By Rail - Butterworth is a major station on the northsouth railway from Singapore to Bangkok. The ferry terminal to Penang Island is within walking distance from the station.

Getting Around: City Taxis - Most city taxis do not use the metre. Insist on the metre being turned on or agree on the price before you move off. Taxis normally charge between RM3.00 RM6.00 for short distances within the city. City Buses - Most of buses use coin machines to collect fares. The main bus terminals are Pengkalan Weld (ferry terminal) and KOMTAR (ground floor). George Town “Shuttle Bus” - This is a free bus service courtesy of the Georgetown Municipal Council. The route starts at the ferry terminal and passes through popular parts of Georgetown, including Komtar and Penang Road. The service runs at regular 12-minute intervals from 7:00am to 7:00pm on Mondays to Fridays and 7:00am to 2:00pm on Saturdays. There is no service on Sundays and public holidays.

Trishaws - A trishaw ride is one of the best ways of seeing Penang. Besides the novelty of travelling in this openfronted three-wheeled vehicle, trishaws allow visitors the opportunity of doing the sights at a more leisurely pace, stopping at any point to snap pictures or buy souvenirs. There is no standard fare and it would be wise to agree on the price before you step on the trishaw. For extended sightseeing, it is advisable to hire them by the hour.

Natural Gateways & Parks The Aquarium of the Fisheries Research Institute See and touch the diverse marine wonders at the Fisheries Research Institute aquarium at Batu Maung.

Beaches and Fishing Villages Most activities are centred on Batu Ferringhi, where most of the popular beach resorts are located. Their facilities include sailing, windsurfing, water scooters and waterskiing. This prime stretch of beach is always a hive of activities with elite nightspots and restaurants which come to life in the evening. Further down is the equally lovely Teluk Bahang Beach, which houses an international beach resort and is home to kampungs and a fishing village. If privacy is preferred, head for the secluded beaches of Teluk Duyung, Monkey Beach, Pantai Kerachut and Pantai Mas which are accessible via the trails in the Pantai Acheh Forest Reserve from Teluk Bahang. The Pasir Panjang Beach at the south-western tip of the island is a secluded stretch of beach and clear waters, at the end of a 25-minute hike over challenging terrain from Betong. See also Batu Maung, a small fishing village at the SouthEastern tip of the island, which owes its fame to the beach-front shrine dedicated to Admiral Cheng Ho, the famous Chinese admiral who featured prominently in the history of the Malacca Sultanate.

Botanical Gardens, Jalan Air Terjun This 30-hectare sprawling garden of flora and fauna is a favourite recreation spot for locals. While the vibrant hues of Penang’s native fauna is the prominent feature, the star attraction is the large number of macaque monkeys that greet visitors from the entrance right to the heart of the garden.

Butterfly Farm, Teluk Bahang Visitors can marvel at the hundreds of species of butterflies and local insects in their natural habitat.

Forest Recreational Park, Jalan Telok Bahang There is a bewildering range of flowering plants and numerous species of insects, exotic birds, butterflies, snakes and lizards.

Climate

Penang Hill

Penang enjoys a year-round equatorial climate which is warm and sunny, along with plentiful rainfall, especially during the southwest monsoon from April to September.

Penang Hill is made up of a series of hills which rise above the island. The peak stands at 821 metres above sea level, which makes it a cool getaway from the tropical heat below. Upon reaching the summit, one is rewarded with a panoramic view of Penang Island. There are also old bungalows, a hotel, Bird Park and walking trails which are worth checking out.

Currency Penang uses Malaysian Ringgit and USD1 is equivalent to MYR3.18.

Places of Worship Acheen Street Mosque, Lebuh Acheen The 1820 mosque features a small window halfway up the minaret which is said to have originally been a hole made by cannonball fired during the 1867 triad riots.

Church of the Holy Name of Jesus, Balik Pulau Antique stained glass from Belgium and a tenor bell from France are just two of the several unique features found in a legendary and historical church.

Dharmikarama Burmese Temple, Lorong Burma A pair of elephants guards the entrance to this Burmese temple. Within the pagoda grounds are a Boddhi tree and a wishing pond, the scene of many festivities during the water festival in April.

Kapitan Kling Mosque, Jalan Kapitan Keling Built in the early 19th century. It features an ochre yellow facade and dome-shaped minaret reflecting Moorish Islamic influence.

Kek Lok Si Temple, Ayer Itam Perhaps the finest Buddhist temple in Southeast Asia and Penang’s most popular attraction, the Kek Lok Si temple stands majestically on a hill in Ayer Itam. Construction began in 1893 and was completed in 1905. Built in tiers, the beautifully crafted “Pagoda of Ten Thousand Buddhas” took more than 20 years to build and was only completed in 1930. It combines a Chinese octagonal base, middle tiers of Thai architecture and a Burmese crown, reflecting the temple’s wide embrace of Mahayana and Theravada Buddhism. The temple also features gardens, a turtle pond, shrines and beautiful sculptures.

Kuan Yin (Goddess of Mercy) Temple, Jalan Kapitan Keling Known as the Temple of the Goddess of Mercy, this popular Taoist temple is believed to be the oldest temple in Penang, it was built in the 1800s by early Chinese settlers.

Penang State Mosque, Jalan Masjid Negeri The State Mosque features elegant modern architecture and took four years to complete. It can accommodate 5,000 worshippers for congregational prayers and is usually packed on Fridays. Permission to enter must be obtained from the State Religious department, Lebuh Pantai.

Snake Temple, Sungai Kluang The Snake Temple was built in 1850 in memory of the Buddhist priest, Choo Sor Kong, who is said to have healing powers. Legend, however, has it that the place used to be the home of a religious man who gave shelter to poisonous snakes when they sought refuge there. After his death, the snakes remained and it became a place of worship. Also known as Temple of Azure Cloud , the serpents’ shrine is an extraordinary one: poisonous pit vipers bask on altars, incense burners, candlesticks, vases and tables, underfoot and overhead.

Sri Mariamman Temple, Lebuh Queen Penang’s oldest Hindu temple which was built in 1883, is filled with colourful statues of Hindu deities. Among the priceless possessions of this ornate building is a statue of Lord Subramaniam richly decorated with gold, silver, diamonds and emeralds.

St. Anne’s Church, Bukit Mertajam From a small chapel built atop a hillock by visiting priest Fr. Adolphe Couellan in 1846, it grew to become a centre of pilgrimage in the region. Hence a bigger church was built next to the old one, now called the Shrine. The dedication of the new church with its multi-tiered Minangkabau roofs and Gothic architecture was held on the 26 July 2002.

St. George’s Church, Lebuh Farquhar Built with convict labour in 1818, the Anglican Church was named after the patron saint of England, and is one of the regions oldest. The Greek temple in the church grounds is a memorial to Francis Light.

Wat Chayamankalaram, Lorong Burma The world’s third largest reclining Buddha which measures 33 metres in length, is draped in gold-leafed saffron and reclines

on a large crematorium. This Buddhist temple is reminiscent of Bangkok’s many temples or ‘Wats’. The intricate finish of the interior in vibrant colours and designs is a sample of Thai architecture. Behind the temple is a small Thai village as well as a Thai cemetery. At this temple, the local Thais celebrate the traditional Buddhist festivals, such as Songkran and the Loy Krathong.

SPECIAL EVENTS Chap Goh Meh (February/March) Celebrated on the 15th night of the first month of the Chinese Lunar calendar. The highlight of the festival is the orange throwing ceremony in which local maidens throw oranges into the sea for would-be suitors to catch.

Penang International Triathlon (May) An annual event features a gruelling non-stop swimming-cyclingrunning race which attracts hundreds of hopeful participants to Penang.

Penang International Dragon Boat Festival (June) This water sport is gaining worldwide popularity as seen from the increasing number of international teams participating each year in the sea off Batu Uban.

Penang Flora Festival (July) Highlight of the festival is the bright display of flowers at the KOMTAR Mall.

City on Parade (July) A week-long extravaganza of food fairs, handicraft exhibitions, street concerts, cultural shows and parades.

Penang Beach Carnival (July) The one-week carnival features food promotions, inter-hotel competition, seaside festivities, cultural shows, fashion parades, and parties.

Lantern Festival (September) Mid-Autumn festival characterised by brightly lit lanterns in all shapes and colours. The festival is also associated with the mooncake, a sweet delicacy, which once carried secret messages inciting rebellion in ancient China.

Pesta Pulau Pinang (November/December) It features an annual trade fair and exhibition. Carnival rides, band performances, games and cultural shows lend a festive air.

Prana Resorts & Spa welcomes executive chef Patrick Würsching Patrick is a veteran in the culinary industry with over 40 years of experience. His career has brought him to various countries in Europe and America, acquiring and perfecting his skills in various kinds of cuisine Hailing from France, Patrick’s passion for the culinary world started at the tender age of eight where he helped his mother prepare family meals. His mother was a big influence for his passion and with his two brothers studying to be a pastry chef and a sommelier; it was also natural for him to follow in their footsteps .

Following his successes in New York, Patrick accepted a position with Trust House Forte, a catering group operating in the United Kingdom and worldwide, and represented the company in catering for the Olympics in London. Patrick stole the show and won a gold medal for his three-metre wide carved Eagle and a silver medal for his Marzipan demonstration.

Patrick started in the kitchen of a hotel in Troyes, Champagne in France, learning the art of French cuisine. After graduating from culinary school with an extensive repertoire of classic French dishes such as Canard a l’orange and soufflé Grand Marnier, Patrick honed his skills in various famous properties which included a stint with a casino in Bern, Switzerland operated by The George; the Auberge Gaglioti in Luxembourg, a two-Michelin-starred restaurant; a resort in Deauville in France and also in the army as its first class chef.

Patrick is a veteran in the culinary industry with over 40 years of experience. His career has brought him to various countries in Europe and America, acquiring and perfecting his skills in various kinds of cuisine. In addition, he also had great success in running his own restaurant in Provence- France, working at ‘The Grosvenor’ for the Duke of Westminster-United Kingdom and also cooked for Mr Michael Flatley of ‘Lord of the Dance’ in Ireland.

In 1974, joining his twin brother in Bermuda, Patrick accepted a position with the Princess Hotel where he was responsible for the buffet section which allowed his creativity to flourish. He also represented the hotel in an international culinary competition in New York where he topped the competition and was awarded gold medals for flower carving (vegetable and wax) and cooking demonstration.

The next challenge for Patrick is to assist Prana Resorts and Spa and the Amala vegetarian restaurant to create a Thaistyled international menu and also to develop the restaurant chain globally. “This will be my first stint running the kitchen of an international vegetarian resort chain. I am looking forward to this new challenge of creating interesting vegetarian dishes that will not only delight the palate of our vegetarian guests, but also our non-vegetarian guests, which would be my greatest job satisfaction,” said Chef Patrick.

FROM THE GALLEY Vegetarian Laksa Lemak Rempah paste Sambal bajak to taste 3 cups veg stock 3 cups coconut milk Mock chicken, fishballs and prawns Deep fried tofu Hard-boiled eggs - 2 Laksa leaves Rice noodles Bean spouts Salt and sugar to taste In some oil, fry the rempah paste until fragrant, oil separates and color deepens. Add stock and bring to boil. Add coconut milk and simmer. Now add the mock chicken, fishballs, shrimp, fried tofu puffs, salt and sugar. Bean sprouts should be put in 1 min before serving. In a separate saucepan, bring water to boil and blanch the rice noodles until cooked and serve in serving bowl with a bit of sambal bajak. Pour the laksa lemak over the noodles. Garnish with finely chopped laksa leaves and halved boiled egg.

Penang Rojak Ingredients: 1 small jicama (cut into small pieces) 1 cucumber (peel the skin and cut into small pieces) 1 green mango (peel the skin and cut into small pieces) 1 bean curd (boil for 3 minutes and cut into small pieces) In a large mixing bowl, mix all the ingredients. Add the sambal rojak dressing and toss well. Add in some some toasted belacan and sambal to make it even more explosive in flavor. Top the salad with some roasted sesame seeds and ground peanuts.
