Zabaglione Fredda Zabaglione is a warm egg custard laced with marsala wine and often served over fresh berries. Lighten up this classic with fresh whipped cream and serve it chilled, so it resembles an airy mousse. Serves six.

INGREDIENTS: •  6 large egg yolks •  1⁄2 cup (100 g) granulated sugar •  2 tablespoons (1 fl. oz. / 30 ml) dry marsala wine •  2 tablespoons (1 fl. oz. / 30 ml) white wine •  1 cup (8 fl. oz. / 240 ml) heavy whipping cream •  Mixed berries or amaretti cookies

PROCEDURE: •  Whisk together egg yolks and sugar until pale yellow and thickened. Add the white wine and marsala and continue to whisk until well incorporated. •  Heat water to a gentle simmer over low heat in the pan of a double boiler. Place bowl with egg yolk mixture over the water bath and whisk constantly until the mixture has doubled in volume and has thickened to light foamy custard. Remove from heat and let cool. •  Whip the cream either by hand or with an electric mixer until stiff peaks form. Fold into the zabaglione. Spoon the custard into individual glass bowls and chill until ready to serve. Serve with either fresh mixed berries or amaretti cookies. ■

How a modern-day mine disaster has turned a Pennsylvania community into a ghost town For much of its history, Centralia, Pennsylvania, had a population of around 2,000. By 1981, this had dwindled to just over 1,000—not unusual for a onetime mining town. But as of 2007, Centralia had the unwelcome distinction of being the state’s tiniest municipality, with a population of nine. The reason: an underground fire that began in 1962 has decimated the town with smoke and toxic gases and has since made history. Fire Underground is the completely updated classic account of the fire that has been raging under Centralia for decades. David DeKok tells the story of how the fire actually began and how government officials failed to take effective action. By 1981 the fire was spewing deadly gases into homes. A twelve-year-old boy dropped into a steaming hole as a congressman toured nearby. DeKok describes how the people of Centralia banded together to finally win relocation funds—and he reveals what has happened to the few remaining residents as the fiftieth anniversary of the fire’s beginning nears. David DeKok has been reporting on the Centralia mine fire for more than thirty years. While at the News-Item in Shamokin, Pennsylvania, from 1975 to 1987, he wrote more than 500 stories about Centralia’s plight. His first book on the subject, Unseen Danger, was published in 1986. The diagrammed play, “43 Double-Pinch,” was designed for short yardage and goal line situations, although it had the potential to be a big gainer from the middle of the field.









The Set Up The center is the square, with the right guard, tackle, and tight end lined to his right and the left guard and tackle to his left. The two ends are split and the halfback is lined up to the right of the quarterback,



5 to 6 yards back. The only twist in this play is that the fullback is lined up on the outside shoulder of the tight end, rather than on the same line with the halfback as was common.



This is a dive play for the halfback. “Double Pinch” is a reference to the blocking scheme, which includes two double teams, one between the center and right guard and the other between the right tackle and tight end. As diagrammed, there are three options of play, depending on how the defensive front is aligned. On the first and last version, the play is against an odd-man line, with a defensive tackle lined directly across from center. That tackle is the object of the double team between the center and right guard. The left defensive tackle is double-teamed by the right tackle and tight end. On the first version, the fullback blocks the strong side linebacker. On the third version, the fullback blocks the defensive end. In the second, or middle, diagram, the blocking schemes are set against an even defense that doesn’t have a defensive tackle lined up directly across the center. In this version, the double teams are on the same defenders but the fullback leads through the hole on to the strong side linebacker. A variation of this play was used in Super Bowl I, the first AFL-NFL championship football game, played between AFL champion Kansas City Chiefs and NFL champion Green Bay Packers, but on the left side of the ball. The Packers performed one double-team block on a play that produced a 5-yard touchdown run by halfback Elijah Pitts.
