Objectives: 1. To know what food poisoning is and how it can be caused. 2. To state at least 5 actions which could help to prevent food poisoning 3. To revise the safe use of knives the hob. 4. To learn how to use a grater safely. 5. To apply knowledge on food safety and food hygiene to the production of Pizza Toast OR Croque Monsieur OR Continental Bread Pizza 6. Guidelines: Choose from the 3 recipes that follow, as a starting point, but when you are designing the topping for your Pizza Toast consider the needs of your family. Recipe 1: Continental Bread Pizza Recipe – Serves 4 Ingredients: 1 thick French Stick or continental bread e.g. Ciabatta 1 small tin of tomatoes, or tomato Ketchup or pizza topping etc 100g cheese (grated) 1 onion 6 mushrooms 2 rashers of bacon / ham or a small tin of tuna etc. Cling film / foil to wrap pizza in when made. Method: 1. Cut bread into even pizza pieces. 2. Chop onion. 3. Fry onion and bacon together for 5 minutes, (or microwave onion for 1 minute, and bacon for 1 minute, or grill bacon until crispy). (If using tinned tomatoes, reduce tomato mixture into a thick pulp in a pan). 4. Wash and slice mushrooms, grate cheese. 5. Spread tomato mixture or ketchup over sliced bread, making sure that the entire surface is covered.

6. Add the rest of the toppings, finishing with the cheese. 7. Wrap in cling film/foil, ready to carry home. 8. At home bake at 180’C or gas 4 until golden brown and piping hot right through (about 15 minutes).
Recipe 2: Croque-monsieur
serves 1
Ingredients 30g hard cheese, e.g. Cheddar, Edam, Gruyere 1 tomato 2 slices bread, preferably wholegrain 1 slice ham
Equipment Chopping board, grater, knife, fish slice
Method 1. Preheat the grill. 2. Grate the cheese on a chopping board – divide into 3. 3. Slice the tomato. 4. Place one slice of bread on the chopping board, and top with one portion of cheese. 5. Lay the ham slice over the cheese. 6. Place the tomato slices over the ham. 7. Sprinkle another portion of cheese over the tomato. 8. Firmly press the other slice of bread on top. 9. Place the ‘sandwich’ under the hot grill. 10. When the ‘sandwich’ is golden brown, remove from the grill. 11. Turn the ‘sandwich’ over and sprinkle the remaining cheese on top. 12. Place under the grill until the cheese is melted and golden
Top tips Use different types of bread, e.g. ciabatta, bagel, wholegrain loaf.

Try adding different varieties of cheese, e.g. Mozzarella, Cheddar, Edam, Brie. Go for fruit and vegetables e.g. mushrooms, pineapple, peppers
Recipe 3: Pizza toast - Serves 2
Ingredients 2 slices bread (or a bagel or a piece of French stick sliced in half) 2 x15ml spoons tomato pizza sauce ½ yellow pepper 1 spring onion 1 mushroom 30g hard cheese, e.g. Cheddar, Edam, Gruyere ½ x 5ml spoon mixed herbs
Equipment Chopping board, knife, grater, fish slice, measuring spoons, dessert spoon
Method 1. Preheat the grill. 2. Slice the pepper, spring onion and mushroom. 3. Grate the cheese. 4. Place the bread under the grill and toast one side. 5. Remove the bread from the grill and place on the chopping board uncooked side-up. 6. Spread the tomato sauce over the bread. 7. Arrange the pepper, mushroom and onion over the slices. 8. Sprinkle the cheese and mixed herbs over the bread. 9. Place under the grill until the cheese bubbles
Top tips * Why not add cooked sausage or chicken, or canned tuna? * Add a spoon of pickle or chutney for extra bite
