Check logbook & reservation forms
Linen & Fresh flowers
Check supplies needed, make requisitions & obtain authorized signature
Obtain supplies from storeroom
Switch on electrical appliances
Only authorized person Sign out key from logbook
Check items for right quantity & quality Damaged items to be refused inform F&B mgmgt Sign items as received
Store items correctly (FIFO) Complete mise-en-place Adapt light, turn on AC, switch on music Report problems to the manager Outlet must be ready 15 minutes before opening
Outlet Closing
Clear Tables
Remove all items from the table Soiled dishes to be removed from the outlet and placed at stewarding Unused items to be placed at service counters Napkins to be placed at service station Clean tables & chairs with cloth
Flowers
Collect flower vases & flowers Deliver to florist or place in fridge
Dirty linen
Complete internal logbook & reservation forms Turn off electrical appliances & lights Lock doors & return keys to security
Count dirty linen & bind together (bundles of 10) Note quantity in outlet logbook Bring linen to housekeeping department
Sign logbook
Report problems to manager
