Prawns in Apricot & Ginger Sauce
Cooking Time: 25 minutes Ingredients: 1 tsp rosemary 3 red chilies 1 cup coriander(cilantro) and basil leaves 5-6 cloves garlic ½ inch ginger 2 dry apricots 1 tsp mustard seeds 2 tsp honey 1 tbsp lemon juice Some olive oil or any oil you prefer Salt to taste 1 stick cinnamon A onion 25-30 prawns/shrimps marinated in ½ tsp turmeric Method: In a blender jar, add 1 tsp rosemary, 3 red chilies, 1 cup coriander(cilantro) and basil leaves, 5-6 cloves garlic, ½ inch ginger, 2 dry apricots, 1 tsp mustard seeds, 2 tsp honey, 1 tbsp lemon juice, Some olive oil or any oil you prefer, 1 tsp salt and grind into a fine paste. In a cooking pot, add some olive oil 1 stick cinnamon, a diced onion and fry until the oil separates. Then add 25-30 prawns/shrimps marinated in ½ tsp turmeric powder, give a good stir and then add only ½ cup water (because it should not become a curry) and simmer until cooked well. Serve with rice or pulav.
