ood is an all important attraction for almost any destination around the world. As people become more adventurous, it has become a trend for travellers to want to try the cuisine of the place they are visiting. This is because a country’s local cuisine represents more than mere food. It represents the unfamiliar; a distinctive mark that sets it apart from another people. It is seasoned with history and makes a statement about who those people are. There is no doubt that over the years, Destination Jamaica, which includes the island’s cuisine, has been greeted with an increasing level of intrigue. Our cuisine is a delicious blend of history – a combination of ethnicity and tastes that has been thickened over the slow flame of time. The Let’s Eat Out (LEO) Restaurant Guide is a wonderful publication that allows our guests to experience all our flavours. It provides important information on various eateries on the island and highlights their speciality in meals. In this our third issue, we celebrate through a series of brief articles something close to our heart – the rapid evolution of Jamaica as a foodies paradise. The first article (pg. 12) walks you through the country’s culinary history, while the second (pg. 50) and third (pg. 62) examine the symbiotic relationship between local and international cuisine, and how each is influencing the other. Article 4 (pg. 74) follows the country’s growing wine appreciation and sophistication, and article 5 (pg. 82) posits what’s next in this impressive journey. We hope you enjoy reading these articles as much as we enjoyed writing them. We would like to play an active role in this positive development; after all, we believe the country can develop a comparative advantage on good taste. But a top-rate culinary culture has to be supported by a thriving and vibrant restaurant industry. Jamaican Cuisine

A Quick History

“Out of many, one people.” This is the Jamaican motto, and it pays tribute to the religious, cultural and racial 12 diversity of our people.

A

similar motto could describe our cuisine, which is also a melting pot of the various cultures that have helped to shape modern

Jamaica.

The unique cornucopia of smell and taste sensation called ‘Jamaican food’ probably had its origins centuries ago in the Amerindians’ pepper pots, which was filled with the day’s hunt (fish, meat, and the occasional lizards and bats), seasoned with a lot of pepper and left to stew for days. The Spaniards, who came to the ‘New World’ in the 15th and 16th centuries, brought with them rice, codfish, cattle, goats, pigs and oranges, and introduced us to escoveitched fish. The English buccaneers, active for most of the 17th century and mortal enemies of the Spaniards, did some evil things out of Port Royal, including inventing the decadent style of cooking called barbecuing. The Africans, however, had perhaps the single most important influence on our cuisine. Originally brought to Jamaica as slaves, they took with them many new crops, such as ackee, breadfruit, cassava and ochra, and blended these with many of the salted meat provided by the plantation owners to create, among others, bammy & fried fish, ackee & saltfish (the national dish), mackerel & banana, and stew(ed) peas & rice. At around the same time, the Maroons – runaway slaves who lived (and still live) autonomously in Jamaica’s hilly interior – were busy inventing “jerk” – the seasoning and the method of cooking. As it were, jerk

was somewhat serendipitous: it was the pleasant but unexpected consequence of covering the cooking pits to minimize the possibility of smoke alerting the British of the Maroons’ location. After the abolition of slavery in the 19th century, labourers were imported from China and India to work on the plantations. They brought with them their own culinary traditions, which included curried goat (from the Indians), and pak choy and stir-fry (from the Chinese). Jamaica’s traditional cuisine, then, is perfected on history and eclecticism. In more recent times, a parallel, more contemporary cuisine has emerged, complementing the traditional and enriching the overall food experience in Jamaica. This cuisine, while continuing to borrow extensively from external sources, is a lot more fluid and experimental, fusing many international dishes with traditional cuisine. For most people, especially visitors to the island, the question is: what’s the best way to experience these culinary delights, both traditional and contemporary? One could, of course, don an apron and step into the kitchen. But a far less painful way is to visit one (or two) of the hundreds of restaurants that span 13 the length and breadth of the country.

Jamaica’s cuisine has always benefited from the importation of talent. Aside from the early plantation imports, our burgeoning tourism sector brought the first notable set of overseas chefs.

A

lot of these professionals were required to prepare the international fare with which our visitors were accustomed, but many have since created fusion dishes with copious local influences. The Hilton Hotel’s Palm Court Restaurant for example, still offers a mix of French, Mediterranean and Caribbean cuisine and provides a good introduction to the origins of ceviche, stroganoff and bisque.

Other cooking émigrés fell in love with our music and culture, and have graced us with their presence and influence. Barbadian Garfield Victor now lives and works in Jamaica after training with world-renowned chef Marco Pierre White and cooking for former UK Prime Minister, Tony Blair. Victor is noted in the Caribbean and United Kingdom for his exquisite 50 culinary skills.

Celebrity Chef Marco Pierre White is noted to have a quiet love affair with Jamaica and has visited on more than one occasion. Jamaicans have themselves been creative in taking the base of many international dishes and making it our own. The local equivalent of the quiche (French), for example, is made with cassava crust, while our version of the quesadilla (Mexican) has ackee as a key ingredient, and the Panko Shrimp (Japan) is infused with mango salsa. The question remains: are these local dishes with an international flavour or international dishes with a local flavour? The influx of foreign chefs has influenced locals to improve their craft and join the ranks of the world’s best. This influence is pervasive, impacting not just the ways meals are prepared, but also how they are presented, and where they are served. Jamaican chefs have ‘graduated’ from the UTech’s School of Hospitality and Runaway Bay’s HEART Training Hotel to join other alumni at the Art Institute and Le Cordon Bleu. The ripple effect is an overall improvement in the selection and choices of our local food offering. 51

Many Jamaican chefs stand out in international culinary circles. For example, Nigel Spence, the owner and Executive Chef of Ripe Kitchen and Bar (New York) is well known for his Big Jerk Rib-Eye Steak and is a regular on cable and network TV in the US. Jason Knibb, Executive Chef of Nine-Ten Restaurant in 62 California, has trained with Wolfgang Puck

and Roy Yamaguchi, winning numerous awards for his work along the way. And Head Chef Euten Lindsay has brought the UK’s Paddington Palace into the future with his fusion specialty. Euten has worked as a chef at several top London restaurants and has pleased the palates of many prestigious clients ranging from the late Princess Diana to the current Reggae sensation Shaggy. And so, just as international chefs are influencing local cuisines, local chefs are leaving their mark – and our cuisine – abroad. Jerk chicken and rice and peas (with or without a bottle of Red Stripe) can now be found in pretty much any country in the world. Jamaican-style jerk chicken is regularly served in some of New York and London’s toniest restaurants. And traditional food such as ackee and breadfruit now find themselves on the menus of restaurants in places as far as Barcelona.

The great Greek philosopher Diogenes once mused, “What is food without wine?” Apparently, Jamaicans are increasingly asking that question as well.

We are also expanding our vocabulary. Along with soufflé and sous chef, we have added ‘sommelier’ – a knowledgeable and trained wine professional who will recommend the perfect wine to complement any meal. You’ll encounter one at many of our fine dining restaurants. Others are more itinerant, such as husband and wife team Christopher and Kerri-Anne Reckord, who are setting up wine tasting classes and wine clubs at various locations in Kingston.

ine consumption has taken off in Jamaica in the last decade. With the establishment of wine clubs and the numerous wine and cheese parties held around the island yearlong, we regularly sample and purchase wines from France, Mexico, Australia, California, and Chile.

But while sommeliers are much more common today than even two years ago, the absence of one at a restaurant generally does not impact the quality or range of wines available. Red Bones the Blues Café, for example, has an impressive wine range on hand to serve with its sautéed escargot on miniature bammy, ackee pasta and callaloo strudel.

Cool down hot and spicy Indian meals with slightly sweet and cold Riesling or Gewürztraminer. Mix Old world with new by complimenting your sushi and sashimi with a very cold glass of Riesling or Sauvignon Blanc. Take the Chili temperature down a notch with Pinot Noirs or a light Merlot. Fruity, dry whites and reds are easy accompaniments for Middle Eastern food. Choose Rosés or Rieslings. Thai dishes are as spicy as the Japanese. Order Rosé and White Zinfandels, Rieslings, Gewürztraminer or Traminer Riesling. For dishes of a floral nature such as choose a Traminer Riesling. Compliment the Vietnamese dishes with very cold, fruity, slightly sweet Rosés, White Zinfandels, Traminer Rieslings or Chardonnays. Sauvignon Blanc, Chardonnay, With oysters, order Champagne. Match Italian foods with Italian wines such as Barbera and Sangiovese (Chiantis, Brunellos) which are crisp and fruity. acid finish, deep colour and low tannin. Mousses and crème brûlée are well matched to Sauterne. Have Muscat or sweet Riesling with fruit cakes, fruit tarts and nut based pies. ocals and visitors have ample occasion to extend their palates at our Japanese, Indian, Mediterranean and Traditional restaurants. As we try new mixtures, the new age Jamaican pepper pot may include mussels, ginger seaweed and squid. Imagine the taste of an oxtail cacciatore or hamachi sashimi served with scotch bonnet paste instead of wasabi? Imagine a row of Portuguese, Vietnamese and Mexican restaurants in one of our cities. Our chefs, sommeliers and pâtissiers will be challenged to create even more exciting blends from our historically diverse influences. Taking the leap of faith, however, requires certain developments in our food industry. The Council of Caribbean Hospitality Schools should consider lobbying for a Cordon Bleu in the Caribbean. Edna Manley College of the Arts should explore a partnership with the Art Institute. New restaurants are opening every

year as more Jamaicans dine out. These restaurants must add variety in food styles, design and price. We are already seeing an increasing number of local suppliers of gourmet ingredients. This is a worthwhile trend that must continue. In future, we must demand more local cooking shows, larger and more sophisticated culinary events and competitions as Jamaicans become more sophisticated in our choice of food. The ambience must also be maintained, so collaborations with our interior decorators, preservation of our natural environment and the use of indigenous material must be encouraged. The world is already obsessed with our music, our culture and our athletes. They are ready to try our ackee quesadillas. They are ready to taste Jamaica, wrapped up in a delectable wafer of gourmet scents and heady spirits that convey our passion for life. The world is ready… and so is Jamaica! 83

I

s it such an act of heresy to wish for what you haven’t got? I pronounce strongly – No! It is this very yearning that led me from the sedentary life of accounting to stoke up the fires of a fiendish oven. Smells, bold colors, unusual textures, exotic flavors rule my world. Left to my own devices I would probably implode. It is this desire to dance on the double edge sword that I wish for dining experiences for both locals and tourists alike. Go ahead; take that chance, try something new and unusual. Walk on the wild side. Stop!! Do not think!! Just do it. It is with this capricious attitude that the restaurant and dining scene can move forward. Restaurants can think 98 outside of themselves and the box

thus giving rise to supreme creativity. The world has shrunk and so has its borders. “Fusion” is not a bad word and does not necessarily rob ones heritage. Evolution dictates the melding of cultures to create something new and harmonious that you can then “claim” as your own. Tamarind married to ginger and white rum; smoked red herring partnered with ackees; Sour sop and white chocolate- Why not? English pea bisque topped with “Run Dung” codfish wonton. These are my stock in trade. Let’s dive in head first and give in to wild abandon. Enough said.
