meet Cambodian rapper PraCh Ly from Long Beach, CA.

PraCh Ly eloquently captures a powerful voice in the music industry and is an extremely young talented Cambodian rapper from Long Beach, California. His third album, “Memoir of the Invisible War” a compilation of songs in Khmer and English that ranges in subject from Pol Pot to Modern Cambodian politics will be out this summer. Speaking with PraCh in person and getting to know his history and background is something that can only be described with multiple degrees. PraCh started rapping at a very young age and started writing his own music and composing hip-hop beats at his parent’s garage. His first CD leaked out to Cambodia and had sold over 100,000 copies. PraCh became the #1 artist in Cambodia without even knowing it himself! His lyrics depicted a life story of the Cambodian atrocities during the Khmer Rouge era and political turmoil. His first album, Delama “the end’n is just the beginn’n” was released in 2001 brought so many attention to the audience and captivated many fans to from this sensational rapper. A DJ in Cambodia at a night club got a hold of his CD and started dropping it like a “B-52” bomb hitting Cambodia. PraCh raps from his ideology and does not hide his feelings. His lyrics have been published in a book called, In the Shadow of Angkor and have been studied in many universities and colleges across America. PraCh was featured on CNN news, Asia Newsweek, VOA radio, Press Telegram, and L.A times just to name a few. PraCh third album is said to be more explicit and raw for his audience. There are a total 13 tracks for Volume One and the full master songs will be released on 7/8/09. The album will be in both Khmer and English. PraCh spent 3 months writing the songs and took a month to visit World Music in New York to study about the music industry. The album, “Memoir of the Invisible War” has a compilation of traditional Khmer music mixed with hip hop beats that PraCh had composed himself. Those that don’t know PraCh let me begin by saying he grew up in North Long Beach and Compton,

California and have lived the life out on the street where violence and murders occurred maliciously, and where dead bodies was a common thing. PraCh inspiration to rap about Cambodia came from his brother who shed in tears while telling him stories about his family history during the Khmer Rouge war in 1975. PraCh dug deeper and wanted to enlighten the new generation about the Khmer roots and history of the past. Today, PraCh is the CEO of his own record company called Mujestic Music and is also the producer of a singing group called, Universal Speakers. PraCh is also involved in making films with many record companies and is also involved in producing music for soundtracks as well. Interviewed by VEASNA PORS Adapted from actual dialogues The K’Celeb Development Team had a great opportunity to do an exclusive interview with PraCh Ly and learned so much about the acclaimed rapper. The name PraCh Ly was given by his parents and it means “Farmland”. PraCh was born in Battambang, Cambodia. [K’Celeb] How are you praCh? [PraCh]”I’m doing great I’ve just been busy working on promoting the new album”. [K’Celeb] We’ve heard a lot about you and we absolutely admired your works as an artist. So, tell us where are you from and how long have you been rapping? [PraCh] “I’m from Long Beach, California and I was born in Battambang, Cambodia. As a child I started school late, but as a child I love reading Dr. Seuss and watching Sesame Street. I grew up on a very tough street in Long Beach where violence and crime

is a common thing. I’ve lived on 69th street; it was between the border of North Long Beach and Compton and as a kid I would listened to Naz, and Snoop Dog”. [K’celeb] How did you get started with rapping? [PraCh] “My brother was in a band and I would always hang out with them as a kid and one day when they were playing the instruments I would make up beats and my brother told me I’m pretty good and he said to me you should utilize your talent and make something out of it. I really didn’t know what he was saying, but as I continued to hang out with my brother, the more questions I had for him about his past and how it was like in Cambodia. From then on my brother opened up a whole hidden world that I’ve have never heard of before and I was touched by his stories. Hearing someone I admired so much shedding tears to me about what my brother had been through made me want to learn more about our culture and past. I started mixing music in my parent’s garage and I learned how to record music from the karaoke machine, and from then on I am doing what I am today”.

[PraCh]” It will be released on July 8th 2009 the English version. [K’Celeb] Now, do you read and write Khmer?[PraCh]” No, I cannot read or write Khmer, but I was able rap it and put it to words. A matter of fact a gentleman came up to me once and told me to thank the person who wrote the lyrics to my songs and I told him I did. He said, give credit to the writer and I insist on telling him I’m the writer of my own songs and he didn’t want to believe me. Until, after 30 minutes of speaking to the guy in Khmer he was finally convinced that I am the writer. I don’t get any help from anyone because I want to be able to learn it myself and speak it from my mind of how I want things to be”. [K’Celeb] Have you been on tour and if so, where so far? Where are you promoting? [PraCh]” In 2004 I toured 23 states so far and also in Cambodia as well and in 2004 and 2005 I studied music at CLA it was under World Music based in New York. I had an opportunity to study with Master Kong Nai Cambodia Living Arts.

[K’Celeb] How many album have you released out so far and in what year?

[K’Celeb] How was life like as a child growing up what did you like to do?

[PraCh] “I have released 3 albums out so far…..the first album released in 2001 ‘Delama’ 1 The Ending Is Just The Beginning and album #2 which is The Lost Chapter-Holy Spirit Personal War Battling and recently album #3 The Invisible War”.

[PraCh]”As a kid I would play anything out on the street from “hit the can”, to rubber band games out on the streets with neighbors, but I was a good kid I would not involve myself in a gang or anything like that and I think the reason why a lot of my friends went their separate ways was because they chose a different route, but I still respect them.”

[K’Celeb] So, what are you currently working on right now? Do you have a new album out? [PraCh]” Yes, I’m currently working on a new album and it will be released in June the Khmer version and in July for the English version. I’ve decided to do it in Khmer and English to target both audiences and it took me a period of 3-months to produced all the songs. The intro of this album you will hear my mom and the outro you will hear my Dad. There’s also other people in this album as well including Sam Chhorn a famous poet and Master Gong Gru. The profit that I make in Cambodia, 75% of the sale I will give it back to CLA music and the other 25% to other organizations and the remaining 50% sold in the states I will donate it to the music organizations.” [K’Celeb] Tell us a little about the album, “Memoir of the Invisible War”. [PraCh]” The album is a little different from the previous two albums because it’s more raw and explicit than my previous two albums. It’s bigger in Epic scale and a much darker side of me. I basically address my frustration out to this album and some of my songs might have profanity, but it’s out of good nature. I rap about the war, life, politics and how I feel in general. If you look at the CD cover you will see encrypted writings in Khmer and actually if you have the code like I do the symbol represents each song title on the CD album.”

[K’Celeb] Who inspired you to be who you are today? [PraCh]”I am inspired by my parents because they are so cultured. I think they have a picture of the Angkor Wat on all corner of the wall in their house. A Buddha shrine in the living room and the scent of incense, herbs and mints reminds me of just who I am. They keep me rooted, and even though I branched out I still couldn’t leave. The countless karaoke, Khmer music and films, the many flavored foods; it’s just who they are. And when I look at them it inspires me. Even though they are here in the States they don’t let the Western world influence them, they are cultured. Not to mention they are great, humble and honorable people. I mean after the thing they have witness and gone through you would think they are fragile. But they are the opposite of that. They allow me to go out and explore the world but at the same time welcome me back with open arms and with an open mind. I don’ think they ever thought I would have a career of being a rapper, but they never second guest me either, they’ve always believe in me. I respect and admire that. They are my inspiration, to not forget who I am, where I am from and to be a better person”. [K’Celeb] Where can the fans purchase your albums at?

[PraCh]” All my music I produced it myself and wrote it as well.

Sometime change is good, and with change brings new meaning to an old testament. It sounds so cliché I know but that’s what’s going on right now with the motion of changes within Cambodia’s Music Industry. Consider Takma, the new vocal voice of M Production! If you’ve heard of or have listened to Meas Sok Sophea, then you’ll not be surprised with the same great vocal chords of Takma. Takma comes from a lineage of song writers, performers, and movie producers just to name a few. The family tree extends several generations and based on popularity in recent polls, the roots are well founded indeed. Takma has this voice that can capture you into oasis with the songs she’s able to depict from simple words. The songs that are sung from Takma are songs of passion, love, and above all, the reality of life. The interesting fact is that she was once a tomboy and who knew that a tomboy can also have the heart of a sweetheart! Introducing a new change! A change that can shed brighter light into the horizons. The question is will Takma have the opportunity to replace famed Meas Sok Sophea? That’s what on the minds of many fans that it’s considerable pressure on Takma. Despite the pressure, she’s humble and very grateful to have Meas Sok Sophea as her predecessor because it gives her a path that’s already been paved, all that she has to do is to continue the path with her own markings and footings and make her own establishments. Takma has some of the best supporting groups and who wouldn’t want to have the Nop brothers on your side, right? It’s not always easy to continue and hold the same level of excellence of Meas Sok Sophea but with her experience with several hit songs and having been an actress herself, the ratio to fail is very slim.

“I always knew I loved music and singing since I started walking,” mentioned the tomboy-singer Takma.

Khmer Celebrities Community has the privilege to interview Takma to get some juicy details about her and what we’ve uncovered will give her fans a better idea about herself as well. “I always knew I loved music and singing since I started walking,” mentioned Takma. It’s one thing to just get a career that pays the bills, but it’s another thing when you know that the career you have was actually set for you way before you knew it. That’s the case with Takma as she explains it. “My family has this career for life and it seems that almost everyone in the family tree is in the entertainment zone,” says Takma about her background. The environment and surroundings can mold you into who you are today and given the support groups of tomboy-singer, it’s no surprise that she will be part of the entertainment field. But don’t let that fool you as she is also a student studying at the Royal University of Laws and Economic Sciences studying Finance and Banking. It’s good to always have a back up plan so that if her singing and acting career do not work out for her, she can always join Cambodia’s newest groups of corporate leaders. Takma is gracing the album cover of M Production’s 8th album and has hits such as “Ke Mean Sidh” (He Has The Right), “Mean Neak Jum Nuos Oun Te (Is There Anyone Replacing Me),” and “Nat Konleng Bong-Ho Teuk Pnek”. Hello Takma! How are you doing at the moment? We are completely thrilled to be able to have you interviewed for our upcoming June issue release. To start, we would like to know the story of your childhood life. How would you describe your childhood personality as that of your personality today?

Hello KhmerCeleb! Thank you very much for having me interviewed. I feel so honored about it. If you had to ask about my childhood life, which no media ever asked me before, I would say yes. I’d also like to you. When I was a little girl, I had a characteristic of a tomboy. I was a quiet girl and I didn’t have much friends. I was (have been) close to my family, especially with my cousins. But now, things have changed. I’m more open to the World. I have more friends; friends who are artists, actors, singers… And I communicate more with other people. I’m so happy about it.

Yes I said it before. M Production is the safest home for me. It’s an umbrella where many famous artists live under. There we have the best team and the president of this label understands her artists more. The work is always fun and the internal organization is great. Yes, it’s a good home for me right now.

When did you first know you have singing talent? What about acting? Do you have any? I always knew I loved music and singing since I started walking. I’m into singing more than acting. I think I have both talents but which one is better it depends on the audience who could judge me. I started in acting career first before singing. I starred in four 35mm-film movies thus far. As we know, your family tree is remarkable in the entertainment field. Who else in the tree is pop star besides you? How famous have they gone? How did you know that? Yes, it’s true. My family has this career for life and it seems that almost everyone in the family tree is in the entertainment zone. And I’m happy I’m one of them. It starts from my parents and my uncle being movie makers, producers, my cousins Nop Bayarith and Nico who are famous singers. Nico sings for the same recording company – M Production, just to name a few. Before M Production, did you sing in a different recording company? Why did you choose M Production to be the new home? Yes, in 2005, before M Production, I was an artist in Angkor Wat recording label. This company is not local since each of the releases were sold mostly in the United States and very few are sold in Cambodia. I was less well-known and I didn’t feel like a celebrity because I was almost completely invisible. And that’s why I moved to M Production almost two years ago. I am a lot more famous in the country and I have had many

Do you think that M Production is a safe home for you?

Since this label records, how many albums or songs have been released that you’re featured in? The strangest thing in the Cambodian music industry is that very few singers have got their solo albums released in the market. Listeners wouldn’t want to buy a solo album. People buy compilation albums so they could listen to everyone. So I haven’t made my own solo album yet. Since M Production, about 20 of my songs have been recorded and 11 of them have been released to the compilation albums. I am currently on the cover of the 8th album. And my songs have been a big hit lately. Between the songs you have sung, which one is your most favorite one? Which one of your songs is the most famous one? It’s a hard question to answer. It seems like I have many of my songs that I love. But the most favorite for me is “Ke Mean Sidh” (He Has The Right). And if you asked why, I’d say I just love it (laugh). “Ke Mean Sidh,” “Mean Neak Jum Nuos Oun Te (Is the Anyone Replacing Me),” and “Nat Konleng Bong-ho Teuk Pnek” are my biggest hits in the Cambodian charts up to date. Do you think you can replace Meas Sok Sophea from the same label records? Even though some people told me that I have a good voice and it follows Meas Sok Sophea’s singing tactic, I can’t see that I’m going to replace her. I think we both have our own ways. I respect her so much. She’s like my senior and she has a great voice. She’s of my favorite singers, too. No, I don’t think I can replace her. But one day, I really do hope I could be as famous as her. What do you think about your own popularity? Have you changed ever since? Just because you’re in the industry it means you’re

a celebrity. But what makes you famous is that you bring something to people. I’m a singing artist and people are getting to know me by my songs. But I’m still me, somehow things have changed. I’m not the best singer yet but I am learning so much from what I’ve been doing. I am happy for where I stand now. My popularity is not important to me but it pushes me into doing something better for my career. It doesn’t change me. It affects me being someone I truly am (smile).

My cousins Bayarith and Nico told me before about this community and some of my friends also told me about it. But to be honest, Internet thing is what I’m just learning (laugh). But like I said before, I’m so honored to be interviewed by Khmer Celebrities Community because it’s not just local but also international. It’s wider and I heard that your Community helps pushing aspiring artists to becoming themselves and being true. I totally support that. And for the fans, I have nothing else to say but thank you so much. M Production and I promise to bring something special in the near future.

Into a little bit of your personal detail, do you have a boyfriend? Would you hide your love life to the audience? (Laugh) No, not yet! I know, “yet” is the key word. Well, if I had one, I wouldn’t want to hide. For right now, my career is what I’m focusing on. What is your plan for your future? Besides being a singer, I’m also a freshman in Finance and banking study at the Royal University of Laws and Economic Sciences. I’d like to become a banker but I would also still be a singer if fans still need me (smile). Khmer Celebrities Community is a community where Cambodian entertainment industry is supported and promoted in a free will way. Do you have any words for your fans and for the Community’s fans?

DR. BUNTHAY CHORN

When Dreams become A Reality Living in the 21st Century brings great benefits to us if we choose it correctly as with Dr. Bunthay Chorn. She’s an amazing young woman who had the goal to succeed and an opportunity to make a difference. Here’s something that’s interesting- most would-be doctors and doctors in general typically would have roots of coming from a wealthy lineage, or having parents that were doctors themselves right? Well, you’ll be intrigued to find out that those days are over and the new generation of talented doctors comes from all walks of life. Nowadays, it’s not always true to have that social stigma to get you in the doors of this profession as the people of this age are more receptive to innovation, new discoveries and above all, open minded of not having historical bias. Dr. Chorn grew up in Long Beach, California and grew up in a family filled with determination and strong-willed attitudes. Nothing will get in their way of achieving the American Dream and even despite the harsh realities of growing up in America. Many would agree that there’s not many Cambodianfemale doctors to serve the community and given the opportunity to make a difference Dr. Chorn’s vision became a reality. She wanted to have the community understand that there are talented Cambodianfemales who are making a difference and wanted to also inspire future doctors to pursue their dreams as well. Dr. Bunthay Chorn completed her undergraduate degree in Biology from the University of California, Los Angeles in 2001 (UCLA). She received her Doctor of Optometry degree from the State University of New

York College of Optometry (SUNY) in 2006. There she graduated number one in her class and received multiple awards and scholarships for academic and clinical excellence. Her academic achievements and desire to further her knowledge in the field of vision therapy earned her a respected position in the College’s Vision Therapy and Rehabilitation Residency. The rigorous one-year clinical residency program focused on didactic as well as clinical training in the evaluation and treatment of visual perceptual deficits, developmental vision anomalies, general binocular and eye movement skills deficiencies, sports vision, complex strabismus, amblyopia, and head trauma. The program also provided training in management of special populations such as infants, pediatrics, and children with special needs. Dr. Chorn also received specialty training in comprehensive eye care at Camp Pendleton Marine Base Optometry Clinic in Oceanside, California and ocular pathology at the Lawton Indian Hospital Primary Care Clinic in Oklahoma. The former allowed her to become more proficient in her examination techniques and the latter emphasized conditions such as diabetes, hypertension and glaucoma. Dr. Chorn is a published author and won the award for the Best Article in the Journal of Behavioral Optometry (2007). She has also lectured on numerous occasions on children’s visual development. K’celeb Community was honored to be invited to the grand opening of “EyeSeeYouVision” located in San Gabriel off of Valley and Del Mar. The new office was aesthetically styling with various brand names designer frames. There were great sunglasses and not to mention the high-end office is equipped with the latest equipment with great services from the staff. Dr. Bunthay Chorn gave K’celeb Development Team a grand tour of the new office and her insights on her achievements and how she was able to walk her dreams within years. Being the first Khmer woman in her community to attend a prestige Optometry college; she shared with us her inspiration for the younger generation to dream big and that working hard is the key to any success.

[Dr. Chorn] We have all label designers, so anything Italian, French and Japanese we have it all ..in the two offices. As you said it’s very high-end frames and products that’s why we have the office like this. Like you were saying earlier you don’t necessary need to get an exam just because you wear glasses or contacts it’s actually just a small part of what we do you need to come for your eye health. I’m actually a Pediatric specialist, so I see all kids and my specialty is also in vision therapy, which is a form of rehabilitation for your eyes and your brain. Not many offices do that and it happens to be my residency.. Yeah, even if you’ve never had an eye exam before you’ll never know what you will uncover. Early detection is key!

[K’Celeb] Hi Everyone we are at the grand opening of “EyeSeeYouVision” I am here with Dr. Bunthay Chorn. She will be telling us a little about herself and the grand opening of “EyeSeeYouVision”.

[Dr. Chorn] In line with the trend we have a nice modern office and here is the exam room. As you can see here this is my undergraduate diploma. I went to UCLA and the other Doctor, Doctor Tan he went to the University California Riverside. Basically, I’m from Long Beach that’s where I grew up and um.. Loved it there and a large Cambodian population.. and at the time you know not that many Cambodians let alone a girl, or woman went to college, so that was really nice I was able to do that with my parents support OMG there maybe 10 or so.. Cambodians in UCLA at that time uh hum..

[Dr. Chorn] Um.. well we have another office and it was doing well, so we thought we could do another one, so that I can be here more, so.. um.. that’s when we decided to open the office here. [K’Celeb] So, today is the grand opening? [Dr. Chorn] Yes, First time the door is open to the public (smile) everyone is welcome to come down. [K’Celeb] Where is the office located at? [Dr. Chorn] We’re in San Gabriel... like I said we have one other location too and we’re on Valley and Delmar, Fortune plaza is a brand new plaza too. [K’Celeb] Everything just looks so modern, so high tech I mean I love it. It’s so big too and you can definitely purchase all kinds of frames and sunglasses here. You can purchase frames and you don’t need to have vision problems to wear glasses, you can also protect your eyes by purchasing sunglasses as well. It’s very modern and hip and the Doctors are extremely nice.

[K’Celeb] Why don’t we take a look at the new office?

[K’Celeb]Yeah [Dr. Chorn] At that time many people finish college went straight to work, but I elected to go to Optometry school, which is just like med school a 4-year program and I went to New York, State University New York college of Optometry. Doctor Tan also went there as well; that’s how we met and that was four years and then afterward I elected to do residency in therapy Pediatric I was there for another year. A total of 9-years of school and again not too many Cambodian. Although, now it’s really nice there are a lot more Cambodians students in Optometry school. [K’Celeb] In your program?

[Dr. Chorn] I was the first in my schoolthe first Cambodian, Cambodian woman of course. [K’Celeb] You were also a President for your school? [Dr. Chorn] Yeah, my first year of school I also was a Valedictorian of my class and that was really nice um.. And residency I was the top residency grad too. [K’Celeb] So, yeah I’ve been hearing some of your achievements and accomplishments I think it’s such an inspiration for the younger generation who wants to become a Doctor. I mean is there supportive advices that you want to tell all the viewers? [Dr. Chorn] Yeah, like I said when I first started I was the only Cambodian as well as a Cambodian woman. Not many people saw that and they didn’t know about it I mean they didn’t think it was possible, “ But really you can’t let anything stand in your way you just have to work really hard and you can do anything. When I went to school everything was very hard because it’s just me I’m making my own way, but that’s fine I just worked really hard. “Don’t give up just keep trying and you’ll find your niche just keep going. People can contact me if they like and I can tell them about Optometry school. [K’Celeb] How was your experience in Grad school? [Dr. Chorn] New York was fantastic I’m kind of a city girl and New York is the biggest city in the world really, but it was really nice because it was right in the middle of Manhattan right near Time Square. It was a really nice experience and that’s the reason why I chose Suny. Our school is number 1 in Vision Therapy. [K’Celeb] Were there obstacles that you had to go through? [Dr. Chorn] Yeah, like I said not that many women.. Optometry has always been a male career. The last couple of years have been more females 50 to 60% are actually women. I grew up, my parents didn’t make a lot of money. A lot of people think they can’t afford school so a lot of people just want to get out of high

school and start working. [K’Celeb]So, what are your thoughts about K’celeb? [Dr. Chorn] I think it’s a fantastic idea we don’t have that many website, but what you guys bring to the table is really artsy, creative & the photographer is really creative. Khmer cuisine is noted for the use of prahok, a type of fermented fish paste, in many dishes as a distinctive flavouring. When prahok is not used, it is likely to be kapi) instead, a kind of fermented shrimp paste. Coconut milk is the main ingredient of many Khmer curries and desserts. Many rice varieties are available in Cambodia, including aromatic rice and glutinous or sticky rice. The latter is used more in desserts with fruits like durian. Almost every meal includes a bowl of rice.

Khmer cuisine is another name for the food widely consumed in the country Cambodia. The food of Cambodia includes tropical fruits, rice, noodles and various soups.

Cambodian cuisine also uses fish sauce widely in soups, stir-fried cuisine, and as dipping sauces. Curry dishes, known as kari shows the ties between Indian and Cambodian cuisine. The many variations of rice noodles show the influences from Chinese cuisine. Rice noodle soup, known simply as Kuyteav, is a popular dish brought to Cambodia by its Chinese settlers. Also, Banh Chiao is the Khmer version of the Vietnamese Bánh xèo. Typically, Cambodians eat their meals with at least three or four separate dishes. Each individual dish will be either sweet, sour, salty or bitter. Chilli is usually left up to the individual to add themselves. In this way Cambodians ensure that they get a bit of every flavour to satisfy their palates.

HOW WE COOK IT KhmerCeleb Online Magazine brings you this time to a cooking lesson of the most popular Khmer dish, Amok Trei, or steamed curried fish. It is fish coated in a thick coconut milk with kroeung, either steamed or baked in a cup made from banana leaves. Essential to the dish is the addition of the leaves of the noni tree and the use of fingerroot. Amok is a popular Cambodian dish which some have likened to the American Hamburger....but only inasmuch as it’s eaten frequently. The traditional (and most popular) recipe uses fish however our research shows it is quite acceptable to use chicken, lobster and even escargot (snails). The other main ingredients are coconut milk and turmeric which are essential to the dish. The traditional method of using banana leaves for cooking and serving can be got around by using collard greens or cabbage which has the added advantage that the whole thing can be eaten. Below are 2 Amok recipes for you to try: Amok Trei (Fish) and Amok Moan (Chicken). Serve with rice. Cookin approx. 100 mn

Amok Trei (Fish)

Lemon Grass ½ teasp Ground Turmeric 1 teasp Paprika 2 tbsp Fish Sauce 1 tbsp Sugar ½ teasp salt 1 x 400g/14oz tin Coconut Milk 450g/1lb White Fish Fillets, e.g. (Catfish, Cod, Haddock, Sole, Orange Roughy) 4-8 Banana leaves (depending on size) or or 8 large Dark Green Cabbage Leaves Instructions 1. Place the garlic, onion, galangal, lemon grass, turmeric, paprika, fish sauce and sugar in a blender or food processor and process until well blended. 2. Add the coconut milk and process again until thoroughly mixed. 3. Transfer the coconut mixture to a medium saucepan and bring to simmering point, stirring. Continue to cook gently for about 10 minutes until thickened. 4. Meanwhile, if using cabbage greens, place them in a large saucepan, cover with boiling water and set aside to soften. If using banana leaves, cut into pieces about 20cm/8-inches square. 5. Place the fish in a bowl, season with a little salt then pour over half the hot coconut sauce and mix well. Set the remaining sauce aside. 6. Place 1/8th of the fish mixture in the centre of each leaf and fold the edges over to form secure parcels, making sure you tuck the edges under. Steam the parcels for 1 hour.

Ingredients 1 Garlic Clove, chopped 1 Red Onion, chopped 5cm/2-inches fresh Root Galangal, chopped or ½ teasp Ground Galangal 2 tbsp chopped Lemon Grass or 2 teasp Ground

Place the garlic, onion, ginger, lemon grass, turmeric, curry powder, fish sauce and sugar in a blender or food processor and process until well blended. 2.
