ABSTRACT Background: Salmonellosis is zoonosis disease, we know as foodborne diarrheal disease and has incidence around the world. It’s called Foodborne diarrheal disease due to this infection through by food that contaminated by Salmonella sp. and causing enteritis. The incidence of salmonellosis in developing country has increase in 1980-1990, refer to increasing of livestock cultivation intensity and arise of the new salmonella’s clan. Salmonella typhi entering to human body through food and water that contaminated by this bacteria. Pathogen agent Contamination in food, such as chicken’s flesh is a serious health problem. Food Hygiene and sanitation is the attempt to control four factor healthy food, there are building/ location, tools, human, and serving methods. Objective: to identify a food that contaminated by Salmonella typhi bacteria in Mantikulore village, Palu city. Methods: This research is Observation Descriptive study. To determine the quality of fried chicken and lalapan in Bulumasomba street, Mantikulore village, Palu city. Result: Identified Listeria Monocytogenes bacteria, Citrobacter, and Hafnia alvei. Conclusion : Unidentified Salmonella typhi contamination in the restaurant on Mantikulore village Palu city. Keywords: Salmonella typhi, Chicken Flesh.
