6:30pm Guest Speaker Chef Kevin Blaylock CEC is a self-described hobby mycologist with a passion for the variety of truffles and mushrooms that are native to the Pacific Northwest. You will take a look deep into the forests of Washington state while learning the secrets of these most elusive ingredients.

My name is Janet Shaffer and I run the Baking Arts Degree program at Lake Washington Technical College. I joined the ACF and the WSCA over five years ago on behalf of my students. We became involved in student competitions and events. Since joining, I became certified myself and have won several medals in ACF sanctioned competitions. Membership has allowed me perks such as education, professional development, discounts and networking. Our members are talented industry professionals such as Chefs, Educators, Entrepreneurs and Industry Purveyors. Monthly meetings give me the opportunity to network and learn new trends and techniques. Being a member of the association has been a positive experience that I would highly recommend. Last year I was voted chapter ‘Chef of the Year’. This was quite an honor and a night that I will never forget! In January of this year, the association was involved with the Governor’s Inaugural Ball event. This coming April, we will host the ACF Regional conference and in May we will help out with the Special Olympics box lunches. There is always something happening and we invite you to come to our monthly meetings and see for yourself. 4

FEBRUARY MEETING FABULOUS SKAGIT VALLEY

OUR SPONSORS AND EDUCATIONAL RESOURCES HELP MAKE OUR ASSOCIATIONS MEETINGS POSSIBLE. WE THANK YOU! Chef Hahn and his students were incredible hosts on February 9. Local producers of beef, ice cream, wine and beverages educated us during the social hour. Prior to dinner George & Eiko Vojkovich of Skagit River Ranch talked about sustainable farming practices and how they affect our health - We are what we eat! We dined on 100% grass-fed short ribs. The beef was tender and full of natural flavor; their years of hard work certainly showed up on our dinner plates... Their ranch is located on the Skagit River near Sedro Woolley. We would like to return in the summer for a tour and picnic. Challenger Ridge provided wine, Whidbey Island Ice Cream and Northwest Agriculture Business Center added to the ingredients of the meal. Delicious. Mrs Washington, Shallon Tagg, gave a moving promotion of our food bank cookbook. As a single mother of 5 and user of the Everett Food Bank system Shallon has managed to go from 309 lbs and is now entering body building competitions. She was so excited about the cookbook and shared first hand how her daughters have enjoyed making the recipes and how the flavors have helped her stay on her diet. Stop by our booth at The Western Regional Conference and say hello - she truly is an inspiration.

ADOPT A SHIP PROGRAM A WIN-WIN EXPERIENCE

The Adopt-a-Ship program began as a partnership between Naval Supply Systems Command and the American Culinary Federation in 1998, to provide training to the Culinary Specialists who may otherwise not have had the opportunity to experience industry practices. The innovative program is designed to bring professional culinarians on board naval ships on a volunteer basis to boost food service experiences and provide continuing education in the culinary arts. The Navy is continuously seeking culinary professionals to volunteer their time and expertise to the program. It helps those that wish to seek employment in the food service industry gain valuable skills that they can use as they move forward following their career in the United States Navy. Chefs who have participated have also gained valuable experience and have loved working with the navy. Our February meeting was a huge success. Martin Hahn and his culinary students prepared a sumptuous dinner and provided excellent service for our members and special guest. Thank you Chef Hahn for an enjoyable evening at Skagit Valley College. News About Our Chapter We recently passed our bylaws and have made some changes for our annual election process. Thank you members for helping us finish this process. Updated bylaws will be posted on our website shortly. Upcoming Events We have number of events happening in the next couple of months. The Student Hot Food Team Competition is on February 28th at South Seattle Community College. We have four teams competing for our American Culinary Federation Washington State Chapter’s Championship. The teams are from South Seattle Community College, Skagit Valley College, Bellingham Technical College and Renton Technical College. Good luck to all. April 4-6th we are hosting the ACF Western Regional Conference held at Doubletree SeaTac hotel. Executive Chef Bruce Fry CEC is the host chef. If you haven’t attended an ACF conference now is the time to start. It is an incredible opportunity to get involved and to meet fellow chefs and students from the 13 western states. Some great local and national chef demonstrations, seminars and trade show will be the highlights. Our own Chef Plemmons CEC AAC will present the history of Northwest Native Cuisine featuring three different ways to prepare our treasured northwest salmon. Kevin Blaylock CEC will be showing our attendees the art of northwest truffle hunting along with a cooking demonstration. There will be competitions held at the Seattle Kitchen Academy for regional Chef of the Year, Student of the Year and the Hot Food student team’s cook-off. Our chapter “ICE BREAKER” is being held on Friday night April 3rd. We have some exciting plans for this event so mark it in your calendar now. Stay tuned for next month’s newsletter for more details.
