Chicken Nut Stir Fry
Serves 4-6. You will need: ♥ 1lb. boneless breast chicken ♥ ¾ cup orange juice ♥ 1/3 cup honeu ♥ 3tbsp. soy sauce ♥ 1 tbsp cornstarch ♥ ¼ ground ginger ♥ 2 tbsp vegetable oil ♥ 2 large carrots (sliced) ♥ 2 stalks celery (sliced ♥ ½ cup of cashew nuts or peanuts ♥ Hot, cooked rice 1. Cut chicken into thin strips, set aside. Combine the orange juice, honey, soy sauce, cornstarch and ginger into a small bowl: mix well. Also set aside. Heat 1 tbsp of oil in a large skillet over a medium-high heat. Add carrots and celery, stir-fry (just stir while its frying) for about 3 minutes. Remove veges and set aside. 2. Pour remaining 1 tbsp of oil into the skillet. Add meat, stirfry for about three minutes. Return the veges to the skillet, add sauce mixture and nut. Cook and stir over mediumhigh heat until sauce comes to a boil and thickens. Serve over rice. Enjoy!
