CLAIBORNE & CHURCHILL From the Ivory Tower to the Vineyard by Mark Storer

T

he halls of academia glow bright with independent thought, passion and skilled teachers, writers and speakers. This was the world that Claiborne (Clay) Thompson entered into in the ’70s and ’80s as a young man with an Ivy League education and a Ph.D. in Nordic studies and languages. Teaching at the University of Michigan, Thompson believed he had hit his stride and was prepared to live the life of the ivory tower academician, specialized, rare, focused and driven. Like all such things, however, the plans we make for ourselves often go awry. Thompson found himself turned off by the petty political disputes, displays of arrogance and ultimately, he was frustrated by the process which seemed to him less about the work and more about the climbing. “I was really disillusioned about my career,” says Thompson “when I took an academic related trip to California and got bitten by the wine bug. I went back to Michigan, Fredericka and I got married and we moved to California.” It was the essence of a mid-life crisis, Thompson says. Fredericka Churchill, a graduate student in German, became his wife and the two left the ivory tower for the cool breezes of the Central Coast of California. Clay got a job as a cellar worker in a winery

for six dollars an hour and somehow, the two managed not only to live, but to thrive. “It was a new lease on life,” he says. “It was a big, big change.” The big change led him to the then up and coming Edna Valley Vineyard where as Clay says, he “talked” himself into a job. “Dick Graff, who was there at the time, encouraged me to make my own wine in a corner of the cellar and so I did.” Some eight tons of grapes and 30 barrels later, Clay and Fredericka had 500 cases of wine that they made for themselves. “I’ve always been very grateful to Dick for that. There was such camaraderie then and I loved the work.” But Claiborne & Churchill wasn’t to be just one more winery dotting the rich Central Coast vineyards. Clay and Fredericka weren’t planning on making Pinot Noir and Chardonnay and throwing in their lot with the rest of the crowd. Having spent a good deal of time in Europe while taking their degrees, both had become fans of Alsace region wines, the dry Rieslings and Gewurtztraminer that in American hands have been nothing more, at times, than sugary, syrupy candied alcohol. “I’ve always maintained you can’t really duplicate a region’s wines,” says Thompson. “We don’t create our dry Riesling with that earthy quality, for example, that you find in Alsace Rieslings. But, we do give our wines barrel fermentation which gives them more

complexity in texture and structure,” he says. Even so, the first releases of Claiborne & Churchill wines didn’t catch on immediately. “I’d go to pouring events and knew there was a problem when I’d offer to pour a dry Riesling and people would respond, ‘no, thanks, I don’t like sweet wines,’” Thompson laughs. “We’ve done a bit of educating through the years and now, we’re getting a lot more attention.” That might be an understatement. At 10,000 cases of wine a year, Claiborne & Churchill is proving that American winemakers know how to handle the Alsace varietals quite well, thank you. They haven’t stopped there, either. Now, the winery produces Pinot Noir, Syrah and even Cabernet Sauvignon as well. “Pinot Noir is the grape of the Edna Valley. It seemed a natural fit for us.” So natural, in fact, that their barrel select Pinot Noir earned Thompson and his crew a gold medal from the California State Fair during the summer of ’07. The ’05 vintage was voted best Pinot Noir in the state of California. The accolades, however, are not confined to the U.S. “We sent our dry Riesling to the International Rieslings of the World Competition in Strasburg and won the gold medal there in ’03,” Thompson says. One wonders what the faces of the Europeans who know their dry Rieslings must have looked like

Perhaps it was too much academia in his previous life, but Thompson has not done any formal education in winemaking. “I think I’d had enough of academia,” he laughs. He’s done the odd weekend seminar and certainly done his share of reading, but he learned to make wine by working in wineries and making wine. “People in the wine business love to go to work and I guess I’m the same. I never thought I’d have that feeling, but I sure do now,” Thompson says. Operating from a unique straw-bale constructed winery and tasting room in the Edna Valley near San Luis Obispo, Claiborne & Churchill now makes their wines and shares them with the world every day. About a year ago, Thompson, who was still known as the winemaker, realized that it was really it was his assistant Coby Parker-Garcia who was doing all the hard work. “I thought since he was doing it all, I’d better give him the title. Sometimes I think he’s trying to show me up because he does it better than I do,” Thompson says. This coming spring will see Claiborne & Churchill holding blending parties and tastings. Edward Sellers is a passionate entrepreneur who, over the course of his career, started a number of businesses, always from the ground up and always with intense personal involvement. His love for adventure, in play as well as work, led him to master the art of sailing and, as a logical extension, piloting his own plane. When his love of fine wine paired with his entrepreneurial spirit, he was led to his next great adventure, Edward Sellers Vineyards & Wines. When Ed and his wife Dani began their journey into winemaking, little did they know they would soon be making some of the finest Rhône wines in Paso Robles. Their love of travel had already led the pair to Europe several times, where they explored the back streets and side alleys of small towns throughout France and Italy. “We were in Venice, and on this old wall we saw a faded 32-point compass rose,” explains Dani. “As in all of our previous endeavors, we needed an icon to focus our passion, energy and love for new beginnings. In this case, it was the compass rose that guided us, the same symbol that you see on our wine label today.” The fixture on old-world maps and the requisite navigational tool for generations of

intrepid and adventurous men and women spoke to the couple of their impending journey into the world of winemaking. Ed and Dani discovered Paso Robles in 2003, when their oldest and dearest friends, John and Kendall Carson, relocated there and compelled the couple to visit. They fell in love with the locale’s beautiful golden hills spotted with giant oak trees. Ed especially recognized its charm as a nascent wine region: “It’s Napa 30 years ago!” he said. The Sellers soon purchased 30 acres on Paso Robles’s celebrated West Side, identifying it as prime property for farming their beloved Rhône wine varietals. Their next mission was to find a winemaker who could match the vision for Edward Sellers Vineyards & Wines. Almost by pure luck, the brilliant and talented Amy Butler appeared. Recommended by a mutual friend, she had recently relocated to Paso Robles from Napa Valley with an estimable resume and was looking for her own winemaking adventure. She was the last piece of the puzzle. Ed and Dani knew her talents would make her the ideal creative force for their new Rhône-style winery. The goal, which Amy shared, was to use the best Paso Robles fruit available to

create elegant, balanced and food friendly wines to rival the most venerated wines of the world. In 2007, Ed and Dani’s journey continued with the opening of a tasting room in Downtown Paso Robles. With their dear friend Kendall Carson, they worked to design a warm inviting space for guests to explore and enjoy their handmade American Rhône-style wines. Kendall heads the tasting room endeavors, and it’s usually her smile that greets guests as they walk through the door. Edward Sellers specializes in small lots featuring Syrah, Grenache, Mourvedre, Roussane and Viognier as individual varietals and blends. All of the fruit is handpicked from calcareous-rich hillsides, where the vineyards have been strategically planted in small blocks to maximize the vineyards’ own unique soils, location and character. Stephen Miller and Family Honored as Paso Robles 2008 Wine Industry Person of the Year The Paso Robles Wine Country Alliance honored Stephen Miller and Family as the 2008 Wine Industry Person of the Year during the organization’s 17th annual Wine Country Gala held January 30. Miller, along with his late brother Bob, began their vision for the Central Coast wine industry in the early ’70s. From growing worldclass wine grapes at French Camp Vineyards to establishing Paso Robles Wine Services, a full-service wine processing facility, the Miller Family champions the Paso Robles American Viticulture Area (AVA) working with more than 150 brands. The Miller Family vision for the region began in the late ’60s with the purchase of the Camatta Ranch and the decision to plant wine grapes in the early ’70s. Named from the shepherds who lived there, French Camp Vineyard is home to more than 1,700 vineyard acres and 30 different varietals. The client list for the vineyard extends to more than 75 wine brands with 20 vineyard designated French Camp wines. As the acclaim for Paso Robles wine grapes grew the Miller Family recognized a need to further develop the Paso Robles AVA, help small wineries begin their businesses and keep the area’s premium fruit going into brands with appellation distinction. Paso Robles Wine Services was created in 2002. Home to more than 40 wineries the facility also offers case-good storage, barrel storage and vendors located onsite who offer direct-to-consumer shipping, trucking and sensory/laboratory services. “The Miller Family vision for Paso Robles provides a foundation for the region’s growth,” said Steve Lohr, Paso Robles Wine Country Alliance Chairman and Senior Vice President of Planning and Development for J. Winemaker Profile: Adelaida Cellars

T

erry Culton had no complaints working as assistant winemaker at San Benito County’s Calera Wine Co., refining his education under Josh Jensen, one of California’s most respected makers of Pinot Noir. But when Adelaida Cellars offered him a chance six years ago to return to the Paso Robles region – where he worked as a selfdescribed cellar rat for Wild Horse Winery in the early 1990s – Culton knew it was time to strike out on his own. “It was a chance for me to do my own thing,” said Culton. “I knew I would have total creative freedom.” Plus, he said, it gave him the chance to work with Adelaida’s HMR and Viking Estate Vineyards. Paso Robles isn’t generally noted for its Pinot Noir, but Adelaida’s HMR vineyard sits more than 1,700 feet above sea level and is a mere 16 miles from the Pacific. It is, noted Culton, the oldest vineyard planted to Pinot in San Luis Obispo or Santa Barbara counties, having been established in 1964 by Central Coast wine pioneer Dr. Stanley Hoffman. “Calera was a great place to learn, but the opportunity to work with HMR and Viking vineyards was irresistible.” Culton believes the austere, calcareous

soils of the vineyards produce superior grapes. Upon arriving at Adelaida, which was purchased in 1991 by the Van Steenwyk family, Culton made some immediate changes. One of the first steps he took was scaling back on the use of oak. He switched from American to French oak barrels, with only about 25 percent new oak. Oak should spice the wine, said Culton, not overwhelm it. “I want our wine to give you something from the beginning of your palate to the end of your palate,” said Culton. “I want people to taste our terroir, not cover it up with oak.” Under Culton’s guidance, Adelaida reduced the yields of its sustainably-farmed vineyards, producing fruit with more concentrated flavors. Culton also uses only native yeasts during fermentation and the wines are unfiltered. “I believe in minimalist handling,” he said. Culton didn’t grow up thinking he would become a winemaker. He graduated from Humboldt State University with a psychology degree, but changed careers after moving to Paso Robles in 1991 so his wife could attend Cal Poly. He wound up working for Wild Horse Winery, where owner/winemaker Ken Volk gave him the job of cellar master. It was there that Culton first worked with Pinot Noir

grapes from HMR Vineyard, which Volk purchased. Volk, said Culton, was “an incredibly gracious man” who became somewhat of a mentor to Culton and others working at Wild Horse (including Jon Priest, now the winemaker at Napa’s Etude.) “He’s responsible for a lot of us being where we are today.” Culton continued learning his craft during stints in the Anderson Valley and Oregon’s Willamette Valley, before landing at Calera. Besides Pinot Noir, Culton is producing Rhone-style reds and whites that are gaining fans and generating positive notices. Culton said 85 percent of the grapes he uses are estate-grown and he expects Adelaida to be 100 percent estate-grown within a few years. And Culton is happy to be back in Paso Robles, which he said retains the close-knit feel among winemakers that was present 15 years earlier, when only a handful of wineries existed. “I think that’s what makes the Central Coast so special.” Visit Adelaida Cellars’ winery and tasting room at 5805 Adelaida Road on the west side of Paso Robles. PREFERRED RESTAURANTS NOVO RESTAURANT Located on Higuera Street with its patio sitting luxuriously above San Luis Creek, Novo restaurant is fusion cuisine with a local heart that has captivated this Central Coast town. T

he first three requirements of real estate, they say, are location, location and location. If that’s the case, then Costa de Oro Winery in Santa Maria has mastered real estate school as well as crafting beautiful Central Coast wines. The Costa de Oro tasting room simply cannot be missed. Whether driving north or south on the 101 freeway through Santa Maria, the little building that serves as the winery’s tasting room as well as a gathering place and a place to experience some of the Central Coast’s best produce, sits right next to the Main street off ramp on Nicholson Avenue. The unique location and the home-style atmosphere is what winemaker Gary Burk and his family have been emphasizing since the production of Costa de Oro’s first wines in 1994. Burk, a trained musician who got bitten by the wine bug after a chance meeting and following friendship with Jim Clendenen of Au Bon Climat, produced one barrel each of Chardonnay and Pinot Noir under Clendenen’s guidance. Now, almost 15 years later,

Costa de Oro consistently rates scores in the ’90s with Robert Parker and James Laube as well as Gold Medals from all over the state of California including the Santa Barbara and Orange County Fairs. Apparently, though, the already unique tasting room, a veritable Central Coast landmark for wine lovers from across the United States, wasn’t quite enough for Burk. “We want to provide a little more of a lounge feel,” Burk says. “We want folks to be able to sit and relax a little more and enjoy a glass of wine and maybe some cheese and crackers or snacks.” Until now, there have been no seats in the tasting room, only the circular bar at the room’s center. But an experiment last summer with bringing musicians in on Friday nights to perform live and share an evening of relaxation, wine and entertainment, went over well with customers, so Burk is making changes. “We call them ‘Friday night wine downs’,” says Burk. “It’s a chance for folks to hang out a little and have some fun.” The events start at 4:30 and go to 7:30 p.m. Wineries aren’t known for their late night hours. Since Burk’s first love was music, he gets a chance to bring

his two passions together and has even been known to play a bit on Fridays himself, Burk is an accomplished guitarist. The New Year is seeing great things for Costa de Oro’s wines as well. The ’07 vintage, which was, by all accounts, a quality harvest, is being released and among the most impressive of the line up are Burk’s Santa Barbara County Pinot Noir and Chardonnay. Burk will also release two estate reserves wines which include Reserva Dorada, which means “reserve gold” Chardonnay and Oro Rojo, which means “red gold” Pinot Noir. Both of these wines see more new oak than some of the other wines and are given a bit more time to age. 2009 holds a great many promises for Costa de Oro and the Burk family, but of course, it’s all the more promising for those who stop by one of the most unique tasting rooms in Santa Barbara County, pull up a new chair, listen to some great music and uncork a classic bottle of Costa de Oro. Carina Cellars Opens New Paso Robles Tasting Room and Winery by Mark Storer

C

arina Cellars is a young winery, starting really in 2002 and picking up steam to become one of the most renowned producers of Central Coast Rhone varietals, and its youth might be the key to how the winery is expanding and growing. Owner David Hardee, wine maker Joey Tensley and the crew of Carina have lurched northward and have opened Carina Cellars’ Paso Robles winery while maintaining the Los Olivos property and growing it as well. The new Carina Tasting room is so far a couple of barrels and a slab of wood between them, but that will change as a new tasting room is in the works as well. Carina’s Los Olivos tasting room continues to pour their hearts out while showcasing talented local artists and providing customers with a glimpse at what Tensley has called “hands-off winemaking.” “I like to let the vineyard speak for itself,” says Tensley. “It’s all about the resources.” Tensley must have convinced Hardee of this as well because the result is a 76-acre estate in Paso Robles with 30 planted acres of vineyard with all of the Carina favorites. “We’ve got Syrah, Grenache, Mourvedre, Cabernet Sauvignon, Viognier and some Rousanne and Marsanne planted so far,” says Carina’s special events coordinator Carolyn Turner. “Joey is still our head winemaker but he has an assistant, Ryan Saccomano, who helps Joey out and will spend more time in Paso Robles as well.” The Paso Robles winery is slated to be fully open by late February, though it has been open for sometime by appointment only. The wines are all made Tensley’s way, allowing the vineyard to do the talking and creating flavorful, nuanced and complex wines focusing mostly on Rhone varietals, but with a few twists as well. Carina’s Viognier continues to be among the best selling Rhone white varietals on the Central Coast and Tensley is widely known now for making New World wines using Old World techniques, like blending a bit of Viognier in with Syrah to create a more balanced

and full-bodied wine. Carina is offering proof that even in tough economic times, there is still room for expansion and growth. Indeed, it’s what makes tough economic times a thing of the past. or most people, baseball is nothing like wine. But for Tom Hinkle, the two are interrelated. Tom was a former Major League Baseball scout, visiting high school, college and semi-pro games, searching for the best young talent out there. “But I never really had time to taste wine,” Tom said. He was busy scouting, though occasionally he’d stop by wineries in Napa just to look around. He planted vineyards on his property in Paso Robles in 1997 and began the wine game while still scouting across the U.S. Having since retired from 28 years of scouting, Tom and his Tom Hinkle wife Carol now spend their time farming, making and selling wine and running the tasting room. The tasting room is a red barn with a trellised patio covered with grapes that provide shade. The views from this covered porch are vintage Paso Robles; gentle rolling hills, punctuated with mature oak trees, brown grass and glimpses of nearby vineyards. Tom sprayed the interior walls with a protective coating to help keep it cool inside and set up a functional, if modest, tasting area. The wood bar is all hand made, worn and full of character. In addition to the wines, Tom produces olive oil from trees on his 63acre property. He just likes the challenge of something new. Rio Seco is a hands-on winery with Tom and Carol doing just about everything themselves. That includes Tom learning the art of winemaking. “Do I have formal training? No,” Tom grins. “Hours on the crush pad? Yes!” Tom’s a believer that you learn by doing, something he picked up at college at Cal Poly Pomona. “Making wine isn’t rocket science,” Tom says. Plus there’s the advantage of having a supportive winemaking community near him. And perhaps the toughest part of making wine? “You ruin a lot of clothes,” he says. The wines run the gamut from a light Roussanne to a hefty white blend called VIO RIO, a blend of Orange Muscat and Viognier, which the Hinkles affectionately call “mama’s moonshine” because of its 16.6 percent alcohol. Rio Seco is especially known for its Cabernet Franc as well as Syrah, Cabernet Sauvignon and their award-winning Zinfandels. Their reds are all mild tannin wines, meant to be consumed soon. Four times a year they offer a Texas Hold ’em tournament where the grand prize is a free one-year wine club membership. “Not only do we have Texas Hold ’em … we are best known for our Friday Night Concert Series,” Tom adds. “Live music, barbecue and wine for $8 – all summer long. We’ve been doing this for six years now. It’s family friendly and really great music!” The tasting fee is $5 and is applied towards any wine purchase. Taste the Award-Winning Wines of Cantara Cellars Cantara Cellars is a local winery producing a broad selection of award-winning red and white wines right here in Ventura County. Grapes were sourced from the Lodi appellation in Northern California to produce premium wines. Cantara Cellars began as a

small winemaking hobby in the garage of Mike and Chris Brown’s Moorpark home. With their home located in the “Cantara” section of the Serenata development it only seemed fitting to name the garage-sized winery “Cantara Cellars.” Beginning with 250 pounds of

Chardonnay hand harvested from Mike’s parents’ vineyards in Lodi, California, they fermented their first 18 gallons of wine. Over the next four years they carefully selected additional wine grape sources, increased their knowledge of winemaking, refined their wine style, expanded grape varieties and increased production. This culminated with the opening of a public tasting room in October 2007. Their 2300-square-feet production, cellaring and wine tasting facility is open each weekend from 11 a.m. to 5 p.m. and other times by appointment. Plan a visit to the tasting room to sample their current release wines and tour the winery to see what’s coming soon.
