紅燒金絲 簡介: 材料: 粉絲 30 克 五香豆腐乾 1 塊 豆腐乾 1 塊 甘荀 30 克 竹荀 30 克 冬菇 3 隻 素上湯 650 毫升 芡汁: 粟粉 1 湯匙 水 50 毫升 製法: 1.先浸粉絲,剪成 2.5 厘米長。 2.把冬菇浸軟,切幼絲。 3.將五香豆腐乾、豆腐乾、甘荀、竹荀清先並切成幼絲,預備芡汁。 4.煮沸素上湯,加入調味料、粉絲、甘荀及冬菇,煮 1 分鐘後,加入其他材料, 再煮 1 分鐘。 5.拌入芡料,至濃稠。 調味: 糖 1/4 茶匙 生抽 1/2 茶匙 老抽 3/4 茶匙 胡椒粉少許 麻油數滴
