Unit-II Synthetic soft drinks, process of manufacture of soft drinks, quality of water, for soft drinks. Food additives used in soft drinks. Quality control in a soft drink manufacturing industry. Unit-III Fruit Beverages - RTS, squash, fruit juice, nectar etc. process of manufacture & quality control in Beverage industry, FPO standares for fruit Beverages. Unit-IV Hard Drinks : Wine (Grape), pshampagne, process of their manufacture and quality control.

Unit-V Tea & coffee, chemical compositions, process of brewing & instantisation.
