Cook 1.

Discuss with the examiner how and where to shop for food and how to transport it.

Demonstrate proper storage and cooking. This must include knowledge of hygiene in the kitchen and how to prevent food poisoning.

Serve the examiner a cake or pastry dish which you have made using a previously agreed recipe.

Prepare, successfully, two sauces such as Mornay, Apple, Curry, Mustard, or Parsley,

Cook and serve, for two to four people, a three course meal including at least two cooked dishes and a sweet, previously agreed with the diners. Demonstrate the necessary preparation and serving skills.

Demonstrate four different ways of cooking potatoes (for example baked in jacket, creamed, croquettes, lyonnaise.).

7.

Plan a varied menu for yourself. This must cover a period of at least a week. Discuss your choices with the examiner.
