THE NEWS @ W ELLY LEVEL •

What, no lamb?! Here’s why … Our lambs are bred in the traditional way. Most* are kept for shearing at 14 months, giving the softest fullest 1st fleece & a superior meat from a full year’s grazing.

• Which explains our: tasty hogget, after a lamb’s 1st shearing; a fully-flavoured mutton, a couple of years on; &, every year, a fabulous fleece for knitting, weaving & other woollens!

* note the ‘most’ – there should be some lamb around Xmas. Let me know if you’d like some.

A very warm WELCOME, and big THANK YOU, to the new team in the butchery: Alun, the talent behind some scarily sharp knives; and Carys, top vac packer and labeller. (I try not to get in the way.) The results can be seen in different cuts and even better presentation. We’re also immensely proud of the new, Very Eco packaging that features that most hi-tech of 21st Century insulating material … wool. Don’t believe me? Buy a box!

It’s been a bad news year for cows who, if press reports are to be believed, have been rampaging about the countryside, bent on destroying any (farmers, walkers, politicians, dogs) who dare to venture off-road. Hmmm. Maybe this - from my sorely-missed Canadian volunteer who made Lambing 2009 a triumph - does something to restore the sociable, contemplative bovine reputation: “Oh! This is totally gross, but I'll share it anyway.... the waterproof trousers I wore everyday while doing Ystrad's most satisfying job of shoveling muck have not been washed since I was at your house [April]. Naturally they still have remnants of Irish Moiled shit on them… . They smell awful of course, but I don't mind because it reminds me of how nice your cattle were to be around.” [See why our visitors love it here. They get all the best jobs.]

Finally, I give you: Gwladys & The Bees – exciting, if unusual, additions to a conservation farm. Gwladys, a Manchester Terrier - an old, now rare British breed boasting a Royal Warrant, from Queen Victoria, for rat catching – has impressed her charming but nippy presence around the farm, paying particular attention to bony ankles. Her rodent tally, at 4 months old, reveals a daringly inventive approach: 1 mouse - snatched from the jaws of the cat. Very impressive, highly strategic … but cheating!

• The Bees, in contrast, have kept a more respectful distance than even we had hoped. A lovingly hand-built hive, superbly buzzy nucleus of bees, a Really Classy Queen & vats of sugar syrup (on account of the weather) ‘til one sunny day … they swarmed. So, honey? In your sweet dreams. No wonder they’re in trouble – don’t know what’s good for ‘em. Maybe, next year … . Ystrad, Brechfa, Carmarthenshire SA32 7QW • www.ystradorganics.co.uk • 01267 202465
