LAGER Lagers and ales are the two families of beers. The German word Lager means, "to store," and for up to three months these beers are cold-stored, settling them out, and granting a distinctly clean and balanced palate. Lager yeast works at the bottom of fermentation vessels and at cold temperatures (41º- 48º F).

PILSNER Pilsners are very clean in taste with a mild malt body. Light straw to deep golden in color, pilsners usually have a floral hop aroma and a dry, finishing bite. STOUT

These beers are dark and rich, with flavors that can be dry, sweet, silky or burnt. Porters were the original of these two styles, a favorite drink of porters in South London. ALE As the other family of beers, ales are brewed with yeast that ferments on top of the fermentation vessels and at higher temperatures (59º - 77º F). By fermenting at a higher temperature, ales have a distinct fruitiness.

LAMBIC Lambics are the most unique beers. They are spontaneously fermented with airborne wild yeast native to the Senne Valley in Belgium.
