Entries will be judged on overall presentation, most creative use of pumpkin, and most of all for flavor. Entrant’s name should be clearly marked on the bottom of the container with name and address

on back of the recipe card. All entries must be on disposable containers. Entries should be large enough to accommodate 8 servings. NO COMMERCIALLY CREATED ENTRIES WILL BE ACCEPTED. WIN $100 1ST PLACE SAVORY CATEGORY 2008: PRIZE!! 1ST PLACE Linda Jenks - Days Creek BLACK BEAN ‘N’ PUMPKIN CHILI 1 medium onion, chopped 1 medium sweet yellow pepper, chopped 3 garlic cloves, minced 2 TB. olive oil 3 cups chicken broth ½ lb. cooked turkey burger 2 smoked sausages, sliced 1 lb. cooked pumpkin, mashed 1 lb. canned tomatoes 1 pkg. McCormick’s chili seasoning 1 shot of catsup 1 shot of BBQ sauce 1 shot of Bragg’s Liquid Aminos 2 cans (15 oz. each) black beans, rinsed and drained In a large skillet, sauté the onion, yellow pepper and garlic in oil until tender. Transfer to a 5 – quart slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through. Serve with French bread. Makes about 8 servings.

How to Carve & Preserve Your Pumpkin Until Halloween Sponsored by: CANYONVILLE ACE HARDWARE (541) 839-4093

Sometimes carving a pumpkin is a daunting task. Yet, it can be easy and straightforward. The first step is to choose the right pumpkin. Get one that is symmetrical or suits the shape of your design. Whatever the case, you need your pumpkin to sit flat when on a flat surface. Choose a pumpkin without blemishes, one with smooth skin and a nicely shaped stem. Pumpkins with cracks or large flaws are harder to carve and usually don’t last as long.

Carved pumpkins will usually last at least 2 weeks. You can prevent shriveling by soaking overnight and then rubbing Vaseline (or vegetable oil) on the exposed parts right after you cut the pumpkin, but not on the inside as it could be a fire hazard if you use a flame. If your pumpkin does start to shrivel, you can soak the entire carved pumpkin for a couple of hours in water. This will re hydrate it. Or as a last resort, simply cover the entire pumpkin with a damp cloth or towel when it is not being used.

CARVING & TOOLS

Before you start the carving, you should use a water-based marker and draw the design. Should you make a mistake you will be able to erase it easily using a damp cloth or sponge. Next you will want to use a sharp knife with a straight edge to cut large areas. Have a parent or responsible older person do this for you if you are incapable. Do not use a knife with a dull blade. Very unsafe! You can pick up serrated saws from hardware stores for kids that want to join in on the action.

You can use your rind scraps to carve eyebrows, ears, tongues, etc and then pin in appropriate places with toothpicks. Other options are “Mr. Potato Head’ parts, Spanish moss, yarn or corn silk “hair”, feathers, artificial flower stems and more! Use your imagination. Instead of cutting all the way through the pumpkin, peel off layers of the skin to different thicknesses. This will give varying amounts of light, allowing for much more intricate designs.

2008 1ST PLACE WINNER JAN PURVINE Safety requires that you carve away from yourself and that youth remember to have adult supervision. Whether you are a child or an adult, do not carve your design holding the knife in a stabbing position. While you are carving, make sure there is always a portion of the knife in the pumpkin at all times. Also, use steady strokes. Cutting out the lid, requires you do so at angle. The inside diameter of the lid has to be smaller than the outside. Not doing so will result in the lid dropping right into the opening of the pumpkin. You want to be able to close the lid as you would close a lid on a cookie jar. Remove the seed and stringy flesh from inside the pumpkin with a large spoon or scoop. When you begin carving the face on the pumpkin, start near the center and work outward. Carve large features in sections. To cut details, use an X-Acto-knife. For small circles and curves, a potato peeler is a great tool. Remove carved

There should be enough holes in the pumpkin to allow ventilation for your candle. Flatten a small area inside the pumpkin for the candle to stand, but don’t dig too deeply into the pumpkin which will cause spoilage sooner. Make sure the flame of the candle does not reach the top of the pumpkin. Tea lights or votives are traditional. Lastly, soak it overnight and then rub with oil or petroleum jelly to preserve until Halloween.

However, everyone is invited to display a carved pumpkin during the dusk lighting ceremony. Please include a tea light in your pumpkin. Pumpkins must be carved and hollowed. Pumpkins will be judged on Originality and Creativity. Entry forms can be picked up at Canyonville Ace Hardware, online at canyonvillepumpkinfestival.com or at Pioneer Park at time of registration on Oct 17.

First comes the seeds from last year’s giant pumpkin. The bigger the pumpkin the seeds are harvested from the better your chances are. Genetics rule. Second, start the seeds by late April in a Greenhouse or on the windowsill. It is recommended to start at least two plants to be transplanted in late May. Wait until the weather is truly warm. Remember the good luck mentioned above. Prepare a large area, at least 10’ X 10’, with lots of organic mat-

ter (also known as manure) as the vine will send down roots at every leaf node. Continue to Fertilize, Fertilize, Fertilize with lots of nitrogen at first followed by phosphorous and Water, Water, Water. As the plant sets fruit it is important to choose just one. But be patient and choose one about 6 feet away from the beginning. Continue removing any new “babies” as they appear so all the energy will go to the Chosen One. Display - You must be able to stand your scarecrow up or have a prop for display. One way to make a post stand is to use a stake that is placed in a bucket of cement.
