Mom’s Poppy Seed Cake
2 c sugar
½ tsp salt
1 ½ c vegetable oil
1 ½ tsp baking soda
4 large eggs
½ cup chopped walnuts
1 can (15 oz.) evaporated milk
1 package Poppy Seeds
3 c flour - sifted Preheat oven to 350 degrees. In a very large bowl, combine the sugar and eggs; beat well. Add oil and cream well, about 2 minutes. In a separate medium-sized bowl, sift together the dry ingredients. Alternate adding the dry ingredients and the can of milk to the egg mixture until well combined. Gently fold in poppy seeds and walnuts. Pour into a greased bundt pan & bake 1 hour 15 minutes. For cupcakes, bake 25-30 minutes. For jumbo cupcakes, bake 35-40 minutes.
