EXECUTIVE SUMMARY I. Title : Study the Possibility of Goat Milk Product Unit in Dholpur district of Rajasthan II. Organisation : Professional Assistance for Development Action (PRADAN) III. Student’s Name : Ravi Kant Tirkey (24029) Project Background and Objectives: Under its goatary project the NGO, PRADAN is inducting goats in the village of the Dholpur district of Rajasthan. It is expecting a large amount of goat milk to be produced. So it is looking for a viable option of utilizing the goat milk. As such, the objectives of my project are a) to estimate the production of goat milk in the villages. b) to find out the products that can be commercially produced from goat milk. c) to estimate the demand of goat milk. d) to estimate the demand of goat milk product e) to find out a viable option of using goat milk. Further in order to explore the possibility for procurement of goat milk it was decided to study the existing procurement channel of buffalo milk. Methodology: The methodologies adopted were sample survey and structured interview. A sample survey of the goat rearers, based on questionnaire was conducted (to fulfill the first objective) in the villages of the Sar Mathura panchayat where PRADAN has intervened and is running SHGs. The sample was taken on the basis of the topography of the villages. Further, structured interview were conducted with a) scientists of Central Institute of Research on Goats (CIRG) b) chefs in hotels and restaurants located in Agra and Jaipur c) dieticians at hospitals in New Delhi and d) dairy owners in Ajmer, Agra and Dholpur. Besides all this, the relevant literature and websites were also referred. Scope: The scope of the project is limited to the villages of Sar Mathura panchayat, where goat owners were surveyed; to the hotels of Agra and Jaipur; to the Scientists of Central Institute of Research on Goats; to three hospitals in New Delhi and to the dairy owners in Agra, Ajmer and Dholpur. Findings: From the sample survey it was found that on an average the milk production per day per goat in the area is 0.170 litre during the lean season (i.e. March to July) and 0.550 litre during good season (ie August to February). The goat milk produced in the villages is not used; rather it is mixed with buffalo milk and sold to Dudhiyas or tea stalls. But after consulting with the scientists and after referring to the literature it was found that there are various products, like Ghee, Khoa, Chenna, Cheese (including the cottage cheese Paneer) and soap that can be prepared from goat milk (while Khoa, Chenna, Cheese and soap can be prepared exclusively from goat milk, Ghee and Khoa can be prepared by mixing with buffalo milk). But no manufacturer of the milk products exclusively uses goat milk. From the chefs it was found that goat cheese is mainly consumed in Greece and Middle-East countries. It is rarely consumed in India. Further a cost benefit analysis of a goat milk paneer making unit was done. It was based on the based on the number of goats inducted by PRADAN till now. It was found that the unit will not be viable at the present levels. The project comes out to be viable for more than 12000 goats as against the existing 2000 goat population (the number of goats inducted by PRADAN). Recommendations: At present the goat milk paneer unit may not be successful. So it should be set up only after it is possible to get milk from more number of goats. For this, an economical procurement system has to be set up in different locations. Also special efforts will be required to create acceptance of goat milk paneer as it is a new product and will have to be promoted extensively.
